Yodelay Yogurt: Good food from passion MARY HOOKHAM For Agri-View‌

VERONA, Wis. – Markus Candinas, owner of Yodelay Yogurt of Verona, has an appreciation for really good food. He says that appreciation is what started him in business. “Enjoying food has always been in my DNA,” he said. “It’s all about savoring what you eat.” Candinas opened Yodelay Yogurt in March 2017. The company produces seven different flavors of Swiss Mary yogurt made exclusively Hookham w i t h m i l k f ro m B row n Sw i s s c ows a t Vo e ge l i Farms Inc. of Monticello, Wisconsin. Candinas has his own milk truck to pick

up milk from Voegeli Farms; the milk is hauled back to Yodelay where it’s tested before being used. “We couldn’t make our yogurt without milk, and the fact that it is milk from Brown Swiss cows really just adds to the yogurt we’re making,” Candinas said. “It’s not just from a marketing standpoint. When you look at the properties of the milk, like the protein and the fat, which is a creamier fat, it makes this yogurt just so special.” Candinas said the flavor of Swiss yogurt is much richer than American yogurt, which tends to be quite mild in taste. Products like guar gum, gelatin and pectin don’t have a place in his yogurt, he said. “There are so many things that are See YOGURT, Page 5

different in Europe from what we do here with foods that we’re so familiar with,” he said. “The devil is in the details. It’s creamier and more flavorful, and the cultures come out more to make it taste richer. There is a certain amount of fruitforwardness and a unique texture.” The milk is standardized to 2 percent milkfat, so much of the fat from the raw milk is removed. Unlike most other American yogurts, Yodelay Yogurt does not use stabilizers. There is only a small amount of corn starch in the recipe, which absorbs excess fruit juice. The yogurt is healthier and more flavorful, Candinas said. “Swiss and European foods are made without that extra junk that doesn’t belong in food,” Candinas said. “If you take all-natural yogurts and set them in front of you to eat, you start noticing they just don’t taste very dairy-forward or fruitforward. There’s just not much there. All the stabilizers mute flavors and take away from our ability to taste them.” Even though Candinas said he believes the phrase “all natural” is overused in today’s food industry, he said his yogurt is more natural than most. The flavor and tartness of it make it old-fashioned and

more closely resemble older-style yogurts. “This is just a different kind of all-natural,” he said. “This could be called common sense all-natural; yogurt is something that has been made for millennia and nobody else ever added stabilizers until modern times.” Candinas completed an apprenticeship in Switzerland before opening Yodelay Yogurt. His love for Swiss foods dates back to his childhood when he regularly visited his extended family in Switzerland. He spent time there every summer with relatives, visiting bakeries and confectionaries. He said he was taken out for yogurt daily. When he was 6 years old his favorite Swiss yogurt was caramel, but today he said he enjoys the seven flavors he makes at Yodelay Yogurt. “When I had yogurt here in the U.S., I never got excited about it but when I had it in Switzerland, I would get excited and it was just a different flavor there,” he said. “It’s light and smooth and just so flavorful. The taste won me over.” Europeans indulge when it comes to food; they splurge, he said. Americans eat the same foods on a daily basis but the difference is in portion sizes. “People indulge themselves every day (in Europe),” he said. “They really enjoy

Swiss heritage, yogurt create excitement MARY HOOKHAM For Agri-View‌

MONTICELLO, Wis. – This year’s Wisconsin Farm-to-Table Dinner was held at Voegeli Farms Inc. of Monticello. The farm recently partnered with Yodelay Yogurt of Verona, Wisconsin, to produce specially crafted Swiss yogurt, something the family wanted to promote at the dinner they hosted in mid-August in their pasture. “We don’t know where this will go, but it’s a good product,” said Bryan Voegeli, who operates the farm with his brother, Jimmy, and his son, Christopher. “And sometimes you just need to give something new a try.” The picturesque dairy farm is nestled in the lush rolling hills of Green County, Wisconsin, in the southwestern part of the state. It’s home to a milking herd of 220 Brown Swiss cows; the family also farms 1,300 acres. “We got our first registered Brown Swiss cow in 1895 and we’ve had them since,” Voegeli said. “You keep something if it works for you. And it’s been the market we’re used to as well.” Members of the Voegeli family take great pride in their Swiss heritage and have been doing so for six generations. their food there. But here people eat just because the clock says it’s time. The culture is different and people eat for enjoyment I think in Europe, it’s just fun to eat. Period. Everything is a treat.” He said statistical data defines a frequent yogurt eater as someone who eats yogurt two or three times every two weeks. But many people, including most of Yodelay’s customers, eat yogurt on a daily basis. That’s one the reasons Candinas decided selling yogurt would be feasible. “The appeal with the yogurt is that it’s delicious and it’s something that really can be consumed every day,” he said. “If you finally have something that tastes like

their milk to Yodelay Yogurt. They wanted to try something new while paying tribute to the earlier generations on the farm. Most of the milk from the farm goes to Chalet Cheese Cooperative of Monroe, Wisconsin. Only a small portion goes to Yodelay Yogurt, which first began production in March 2017. The new diversification gives the Voegeli family an added layer of security in an uncertain time in the agriculture industry, Voegeli said. “The Voegelis are great partners and they have great raw material for use in yogurt making,” said Markus Candinas, owner of Yodelay Yogurt. The farm-to-table dinner was an opportunity to spread the word about the new yogurt. The dinner committee approached the Voegeli family about hosting this year at about the same time the yogurt made its debut. Timing was good, Voegeli said. “It was a perfect time to promote the yogurt, pay tribute to the Swiss heritage of our farming ancestors and get consumers connected,” he said. “But to ask 125 people to come and eat in my pasture, well, I didn’t really know what to think.

MADISON, Wis. – The International Dairy Short Course celebrates its 20th anniversary this year. Launched in 1998 by the Babcock Institute in collaboration with World Dairy Expo, the international program has attracted participants from around the world each year during the expo. The entrée was slow-roasted goat and curry yogurt marsala over rice, served with pickled veggies and cucumber yogurt. Dessert was chocolate-raspberry-yogurt cheesecake with a graham cracker crust. worked with Marlene Schmidt at World Dairy Expo to cooperatively offer the International Dairy Short Course. “We thought it would be good to offer a program for visitors who came to Madison for World Dairy Expo,” Nielson said. “The course was offered in both English and Spanish because so many visitors who attend World Dairy Expo are Spanish-speaking. We thought there would be demand for the course and it would be an extra incentive for people to come to World Dairy Expo and also have training opportunities.” In the past 20 years, more employees on U.S. dairy farms also speak Spanish and they’re encouraged to participate in the course as well. “A bonus of having a room where Spanish is offered is the conversations and sharing of knowledge and experiences that happen between participants,” Stahl Tyler said. “Of course this also happens in the English-speaking class, but it’s easier for everyone to converse in their native language.” Stahl Tyler has bachelor’s degrees in both Spanish and agricultural communications. She began working with Holstein Association USA in 1991 as its international marketing director. She later started Global Cow to offer international dairy training. Between 1998 and 2016 about 1,200 people have attended the annual course, which addresses dairy-cattle reproductive management, genomics, nutrition, forage preservation, milk quality, mastitis control and more. good number of attendees, as evidenced by this year’s group of 80 registrants. “Attendees always want the most recent research or practices, and they want to hear about dairy-cattle nutrition, forage quality, breeding protocols, and how to improve pregnancy rates, milk quality, (and) mastitis and milking routines,” Nielseon said. “Some interests have changed or evolved through the years. For example everyone seems to want to learn more about how genomics can be used in a practical way on the farm. There also seems to be increased interest in calf and heifer management to increase growth rates.” Stahl Tyler said, “We ask every year for topic ideas. Dairy farmers the world over are always interested in anything that can make their businesses more profitable. Common concerns are management, reproduction and nutrition – the better you manage all the moving parts the better your financial gains.” Stahl Tyler said she enjoys the program the most when a participant sees something that makes them light up. “I remember on one farm visit we looked at ways a refrigerator was organized,” she said. “Simple shifts in the way medicines were stored cost nothing to do, but meant less waste and better utilization. Another time we saw a sprinkler system that cost the farmer just $75 to make. It was an ingenious combination of hoses and tubing put together from off-the-shelf products See COURSE, Page 22

FOOTVILLE, Wis. – Steve and Liz Case and their son, Craig, of Footville are growing rye every year. It serves as additional feed for their 140-head herd of Holstein cows; they say they are grateful to have it. “We use it as a security blanket because if we have winter kill in the alfalfa, I know the rye will come through for us,” Steve Case said. “It’s a more guaranteed crop, and I just love it.” The Cases began growing rye about five years ago when they realized their haylage wasn’t providing all the nutritional value

acres of annual rye and 120 acres of alfalfa annually. He said they appreciate the increased milk production, high digestibility and inexpensive seed cost compared to many other crops. “This is a grass-type forage and cows love that grass,” he said. “I think other farmers are starting to pick up on the idea of using rye now. It’s good alternative forage, and it’s good for higher ground and sandy soils because alfalfa won’t grow as well there.” The biggest challenge for farmers who grow rye is harvesting in a timely manner before it goes to seed. If allowed to head out, the rye loses about 50 percent of its feed value and serves no purpose in a dairy ration. It can still be used for heifer feed at that point. There is generally about a 10-day harvest window for rye each season, Case said. “I’m a big believer that because of the winter kill on alfalfa, rye could be a second choice of forage if it’s put up right,” Case said. “My experience is that getting the rye up at the right time and watching the long-term weather forecast to find that right time is important for a good crop. A little earlier would be better than waiting a few more days to try to get more tonnage.” Even though Case has his own equipment and capabilities to harvest his rye, he said he prefers to hire Lloyd’s Custom Harvesting of Brooklyn, Wisconsin. By having his rye custom-harvested, Case said he doesn’t need to worry about equipment breakdowns while trying to beat the weather. That significantly reduces the risk of potentially losing an entire year’s worth of feed, he said. “Craig tells me I hoard my feed, but farmers have suspicions about what’s to come sometimes and I like to have plenty of feed around,” Case said. “I like my hay but I also like my backup plan. If we go into winter and I don’t have 14 bags of something sitting out back, I’m on the edge of my chair. It’s not pretty when you have to buy feed. It’s scary.” Mary Hookham is a freelance agricultural journalist and photographer from Janesville, Wisconsin. She grew up near Footville on a 140-acre beef and chicken farm and went to high school in Orfordville. She graduated from University of Wisconsin-Whitewater with a bachelor of arts degree in print journalism and a minor in English for writers.
