“Nada es verdad ni es mentira. Todo depende del cristal con el que se mira”. Apliquemos el dicho a Londres. Parte 1: ¡Hum! No se cumple. Londres es verdad. Parte 2: ¡Se cumple! La ciudad depende, totalmente, de los ojos que la miran. No es igual la ciudad para uno de los muchos jeques árabes que la visitan en verano que para uno de sus cientos de homeless (personas sin casa que viven en la calle). Los sitios donde van unos y otros hacen decididamente de Londres dos lugares que nada tienen que ver.

Ese Londres que solo ven los vagabundos se ha convertido en un tour. O, más bien, en cuatro recorridos distintos en los que estas personas acompañan y muestran esa otra versión de la ciudad a grupos de turistas y curiosos por apenas unas libras esterlinas. Un brumoso ocaso inyecta de acuarela rosácea el horizonte edificado mientras acontece el atroz embotellamiento de todos los viernes. Es igual que en aquel cuento parisino de Cortázar: Autopista hacia el sur. Sin avanzar ni retroceder durante días (quizá semanas), nació una sociedad de conductores prisioneros. Un cosmos doméstico que se extendía no más allá de algunas filas de coches. Diminuto universo con todas sus maravillas y mezquindades. Hubo lugar incluso para el efímero enamoramiento entre la conductora del Dos Caballos y el dueño del Peugeot.

Fue aquel un amor fantástico y fugaz entre dos extraños imaginados por el escritor argentino. Mas en cuanto la serpiente dormida comenzó a moverse, se deshizo el romance como lo hacen ahora mismo los rojizos cirros de este tardío crepúsculo. Por fin, comprendo. Mi conquista de París necesita de una amante que me enseñe sus secretos; una amante, sí, aunque sea imaginaria creación. La amplitud del libro culinario de Sicilia es tan grande como la cantidad de registros que uno puede encontrar en la región insular del sur de Italia. La dulce herencia árabe, la granizada clásica, un curioso bocadillo de origen palermitano y la receta de pasta más clásica del lugar conforman uno de los posibles viajes a través de la cocina popular de la isla. por Milena Fernández y David García

omos un pueblo que copia para intentar hacerlo mejor”. Ignacio Manganaro sentencia en una frase la esencia de la cultura gastronómica siciliana. Lo afirma con la seguridad que otorgan casi 50 años en las bambalinas de la repostería más clásica de la isla. En ese copia y pega mejorado de los sicilianos, la cocina es un recorrido por las diferentes etapas de su propia historia.

Obligado a buscarse la vida a los nueve años tras el fallecimiento de su padre, medio siglo después, Ignacio Manganaro se ha convertido en uno de los maestros reposteros de Taormina, la ciudad que un día se convirtió en el lugar secreto de la élite cultural europea y americana con Truman Capote, Salvador Dalí o Tennessee Williams a la cabeza. En la trastienda de su negocio familiar, Manganaro elabora a diario cientos de cannoli, el postre más clásico de la isla que recoge la herencia que dejaron los árabes durante el siglo que habitaron Sicilia.

“Nos dieron el mazapán y nosotros lo hemos reelaborado”. En forma de canelón dulce, los cannoli no son más que una deliciosa y potente caña de pasta frita rellena de ricotta, ese queso blando que también se cuela en otra de las creaciones diarias de Manganaro: los brioches. Multifaceted Triana is different for every observer, a kaleidoscope that shifts according to where and when you look. Empleado de la limpieza municipal nacido en la Cava de los Civiles, que es como se llamaba antes Pagés del Corro. Trianero viejo, dice que va a Sevilla cuando cruza el Guadalquivir. Y eso sólo de vez en cuando, para visitar a su Cristo del Gran Poder, su única debilidad al otro lado del río. Nunca ha salido de su tierra salvo cuando emigró a Barcelona hace 40 años. Lo primero, escribir una carta a su mujer. Lo segundo, darse cuenta de que lo habían engañado: “Me dijeron que iba a cobrar 12.000 pesetas al mes pero luego sólo eran 8.000”. Llegó de vuelta a su Triana antes que su carta.

This employee of the municipal cleaning service was born on the old Cava de los Civiles, as Pagés del Corro was once known. Y la peña de El Turruñuelo, que es un barrio dentro de Triana.

Born and bred in Triana, Isidoro, an editor, left for Amsterdam and later lived in Copenhagen. Now he is back, and can see that things have changed. Sometimes for the worse: “Before there was more going on outdoors, there were summer cinemas that have gone now…” In other ways, things are better: “There are some great venues now, like El Cachorro, places you can see avant-garde theatre.” Some are very contemporary, like Matrix: “You go in, and it’s like you’re not in Triana.” He recommends the flamenco debates at El Ancla on Saturday mornings, as well as the flamenco group in El Turruñuelo, a part of Triana.

oy es el día del eclipse parcial de Sol y a primera hora de la mañana la luna tapará el sol en dos tercios de su superficie. Hasta 2015 no se podrá ver en Europa un fenómeno similar y aunque no causa el mismo efecto que un eclipse total, provoca un ambiente extraño. El día amanece gris y lluvioso y apenas es posible distinguir si la ausencia de luz es por el fenómeno astronómico o porque en breve comenzará a llover.

“Hoy no es un buen día para la vid ni para los trabajos del campo”, comenta Dionisio, propietario de las bodegas Dionisos, en Valdepeñas (Castilla-La Mancha). Y su convencimiento va más allá del de un agricultor cualquiera. Porque Dionisio tiene a su cargo a la bodega de las estrellas. ¿Cómo diceeee?

La bodega de las estrellas es el concepto en el que Dionisio cree y actúa como enólogo y viticultor a la hora de obtener sus vinos. Para él un vino de autor es aquel en el que firman su autoría la luna, la tierra y las estrellas. Puede parecer extraño, pero su vitivinicultura forma parte de una disciplina que no es solo agrícola, sino un completo modo de vida.

El precursor de este tipo de agricultura es el filósofo austriaco Rudolf Steiner, creador de una corriente filosófica llamada antroposofía y, a raíz de ella, de la biodinámica, allá por los comienzos del siglo pasado.

Aunque parezca una revolución agrícola reciente, es anterior y algo más compleja que lo que hoy conocemos como agricultura ecológica o biológica.

Tiene muchos detractores que consideran sus prácticas (abonar únicamente con compuestos naturales y preparados biodinámicos, es decir,

obtenidos del mismo campo, de plantas y animales, o realizar labores agrícolas siguiendo los ritmos lunares) cercanas a la vieja alquimia, pero lo cierto es que en la viticultura tiene defensores que la consideran la única vía para obtener vinos que hablen de la tierra a la que pertenecen, en este caso, Castilla-La Mancha. Para Dionisio esta filosofía de trabajo “es la defensa real de una auténtica Denominación de Origen, evitar que las plantas crezcan en una sopa de abonos artificiales en aras de la comercialización”.

Today is the day when there’s a partial eclipse of the sun; first thing in the morning the moon will cover twothirds of the sun’s surface. A similar phenomenon won’t be seen again in Europe until 2015 and, though it doesn’t have the same effect as a total eclipse, it does create a strange atmosphere. The day dawns grey and wet and it’s barely possible to tell if the lack of light is due to the astronomical phenomenon or because it will soon start to rain.

“Today’s not a good day for the vine or for working in the countryside,” says Dionisio, owner of the Dionisos winery in Valdepeñas (Castilla-La Mancha).

His conviction goes beyond that of your average farmer. That’s because Dionisio is in charge of ‘the winery of the stars’.

What??

The winery of the stars is the concept that Dionisio, as a wine grower and expert, believes in and works to in order

to obtain his wines. For him, a designer wine is one that bears the signature of the moon, earth and stars. It may seem strange, but his wine making forms part of a discipline that is not limited to agriculture, but is a complete way of life.

The precursor to this type of agriculture was the Austrian philosopher, Rudolf Steiner, creator of a philosophical movement known as Anthroposophy and subsequently, biodynamic agriculture, at the start of the last century.

Although it may seem like a recent revolution in agriculture, it pre-dates what we today know as ecological or organic farming, and is somewhat more complex.

The movement has many opponents, who consider its practices akin to ancient alchemy (fertilise using only natural compounds or biodynamic preparations – i.e. obtained from the land itself or from plants or animals – or carry out agricultural tasks according to lunar cycles). It is true, however, that the movement also has supporters among winemakers who consider it the only route to obtain wines that really speak of the land they come

Yet his concept of a winery goes even further. When you go into the tasting rooms you find a board on the wall where you can see a circle of bright colours full of constellations and the names of the star signs, along with two pointers. What’s something like that doing in a winery? And what exactly is it?

The great circle of colours is a cosmic clock, invented by Xavier Florin, a French biodynamic farmer who aims to make this discipline a little more accessible and easier for his colleagues to understand. Dionisio uses it as his principle guide to carry out agricultur-

Hay quien prefiere pasear a la luz de la luna o del sol entre viñedos sin pensar en la influencia de los astros sobre su estado de ánimo o el de las uvas, o disfrutar de un vino de calidad frente al campo mientras la viña está en todo su esplendor durante la primavera y el verano. Como reza el dicho, ancha es Castilla.

Sin salir de Valdepeñas, una región vinícola que normalmente se asocia con vinos sin complejidad, las mismas estrellas iluminan la Finca Marisánchez, un lugar vinícola donde se detuvieron a descansar viajeros y comerciantes en el siglo XVII y donde yantar cobra su sentido más quijotesco.

Sé moderado con tu sueño; que el que no madruga con el sol, no goza del día. Y encaminémonos hacia esos gigantes que se alzan ante nosotros y que no son sino molinos transformados en amenaza por los ojos del Quijote. Estamos en Campo de Criptana, rodeados de las aspas de Sardinero, Infante y Burleta que giran al viento y viñas que dan su fruto para deleitar paladares.

Allí bodegas Castiblanque ha querido rescatar el espíritu del Quijote en plena ruta del hidalgo caballero. Sin descuidar esas estrellas que guían el paseo del caminante, la parada y fonda en Criptana sirve para aprender cuándo se realiza cada labor del campo y catar vinos apropiados en cada estación del año, acompañados, siempre, de exquisitos platos manchegos, migas, pisto, duelos y quebrantos o gachas: ¡Venturoso aquel a quien el cielo dio un pedazo de pan, sin que le quede obligación de agradecérselo a otro que al mismo cielo!

Siguiendo con las frases quijotescas, ahí va otra que sirve de guía en el camino manchego: la libertad es uno de los más preciosos dones que a los hombres dieron los cielos; con ella no pueden igualarse los tesoros que encierran la tierra y el mar: por la libertad, así como por la honra, se puede y debe aventurar la vida. Libertad se respira en el viñedo de Pago del Vicario, muy cerca de Ciudad Real, divisando desde la piscina los Montes de Toledo o descansando en su hotel con vistas al campo. Y se bebe esa libertad en los vinos que crea allí Susana López Mendiondo, una moderna caballera andante que se atreve con blancos de tempranillo (que es una uva tinta) o revolucionarios rosados de petit verdot (el suyo fue el primero que se elaboró en España). There are those who prefer to wander the vineyards by the light of the moon – or the sun – without thinking about the influence of the stars on their mood or that of the grapes; or to enjoy a quality wine looking out onto the spring or summer landscape while the vine is at the height of its splendour. As the Spanish saying goes, “Castile’s big enough for anything!”

Without leaving Valdepeñas, a winegrowing region that tends to be associated with uncomplicated wines, the same stars shine down on Finca Marisánchez, a wine tavern where travellers and traders would stop to rest in the 17th Century and where having lunch is straight out of Don Quixote.

“Be moderate in thy sleep, for he who does not rise early does not get the benefit of the day.” We set out towards those giants rising up before us, which are nothing more than windmills, transformed into a threat through the eyes of Don Quixote.

We are in Campo de Criptana, surrounded by the windmills of Sardinero, Infante and Burleta, their sails turning in the wind, and by vineyards whose fruits are a delight to the palate. Located right on the route of the knight errant, the Castilblanque winery aims to recover the spirit of Don Quixote. Without forgetting the stars that guide the wanderer on his way, the inn at Criptana is a great spot to learn about when different farming tasks are carried out and to taste the appropriate wines for each season of the year. They are always accompanied by exquisite dishes from La Mancha, such as migas (fried breadcrumbs with garlic, peppers and meats), pisto, duelos y quebrantos (scrambled eggs with pork and chorizo) or gachas. “Happy is he to whom heaven has given a piece of bread for which he is not bound to give thanks to any but heaven itself.”

You can breathe freedom in the vineyards of Pago del Vicario, very close to Ciudad Real, as you look across from the pool and just make out the Toledo Mountains or relax in the hotel with its views onto open countryside. And you can drink this freedom in the wines created there by Susana López Mendiondo, a modernday knight errant whose daring production includes whites from tempranillo (it’s a red grape) and revolutionary rosés from petit verdot (hers was the first to be made in Spain). Wandering among the clouds of La Mancha is possible, my dear Sancho.

In order to carry out trials on humans, Dr. Doslow used the residents of the towns close to Area 51 in Nevada as unsuspecting guinea pigs. Dr Doslow’s Amazing Inventions is a bit of fun from Pep Torres and the Stereonoise creative team. Pero quizás, después de unas cuantas carreras, usted se encuentre a salvo del primer ataque. Será el momento de pensar, entre jadeos, escondido en un retrete, la pregunta obvia: ¿adónde ir?

Pues ya que el mundo de lo posible es ilimitado, Daniel Baró, un catalán que vive cerca de Barcelona, lleva unos meses construyendo un refugio anti-zombi. De acuerdo: una crisis de los muertos vivientes no es algo que ocurra todos los días, pero existe otro tipo de crisis a la que Baró hace frente con su obra: “La mejor forma de superar la crisis económica es mover dinero. Así que, puestos a invertir, he seguido el ejemplo de todas las administraciones del estado: he emprendido una obra de dudosa utilidad.”

2010 fue el año de la nube. Dicho así, parece que estemos hablando del horóscopo chino o de una efeméride pero, en realidad, lo único que tienen estos conceptos en común es que tal vez afecten a nuestro futuro.

Llevamos años en la nube sin apenas darnos cuenta. Estamos en ella, por ejemplo, cada vez que utilizamos Gmail, Flickr, Facebook o Spotify. Aplicaciones web a las que nos conectamos momentáneamente y que guardan información (documentos, fotos, música…) en la nube de Internet. A este reciente modelo de trabajo se le denomina cloud computing y sus principales ventajas son el ahorro de costes y la accesibilidad a la información desde cualquier lugar conectado a la red. Es por eso que este tipo de aplicaciones está sustituyendo paulatinamente a los programas instalados en nuestros ordenadores que almacenan los datos en memorias locales.

Rachel Botsman, author of the book What’s Mine is Yours: The Rise of Collaborative Consumption, claims that ‘co-working, couchsurfing, time bank’ and other words related to sharing resources will soon be commonly-used concepts. If we support extending the meaning of ‘cloudliving,’ perhaps the storm clouds on the economic horizon will start to clear and we won’t have to worry so much about tightening our belts.

Amanecía un día de noviembre de 2009. Los habitantes de la región británica de Lancashire no sabían que aquel no iba a ser un día como otro cualquiera. Un nuevo pueblo, con sus habitantes, había aparecido al sur de Ormskirk. El pueblo en cuestión se llamaba Argleton y estaba en el área que rodea la autopista M58 y que corresponde al código postal L39. Ni los más viejos del lugar habían oído hablar jamás de Argleton y nadie recordaba ninguna catástrofe natural, crisis o fenómeno alguno que hubiese destruido o dejado en el olvido aquella localidad que, a partir de ese día, sería conocida como el Pueblo Fantasma de Argleton.

Lo mismo ocurrió unos cuantos miles de kilómetros al sur, en mayo de 2010, en un cruce de caminos de la Rioja. Este nuevo pueblo español se llama Eixt y apareció por arte de magia. Según cuenta Javier Martín, párroco de Alfaro, la localidad más cercana, Dawn broke one day in November 2009. Not even the oldest of the region’s residents had ever heard of Argleton and no one could remember any natural catastrophe, crisis or phenomenon that could have destroyed the place or caused it to be forgotten. From that day, it would be known as the Ghost Town of Argleton.

In May 2010, the same thing happened a few thousand kilometres south, at a crossroads in La Rioja. The new Spanish village is named Eixt and appeared by magic. According to Javier Martín, the parish priest from Alfaro, the nearest village, “a lot of people come here asking about the place and I explain how to get there, but there’s nothing at all but vineyards.”

A simple Internet search brings forth surprising results: a list of jobs, places and people in Argleton and around 60 websites of properties for sale in Eixt.

The thing is that one fine day both places appeared on Google Maps complete with all the necessary details: name, coordinates, number of residents, houses… There they are, yet these places do not exist.

Until very recently, literature, cinema and legend created places such as Macondo, the fictional village invented

Hace unos días andaba por la calle León y sentí un rico olor a comida de horno. Venía de un típico local de pizzas (pequeño, recogido, horno al fondo...).

Lo acababan de abrir. Se llama Pizzateca y tienen una amplia variedad de sabores que rara vez encuentras en España. Patata, por ejemplo. O, también, salchicha fresca. Hasta ahí todo perfecto. Pero la sorpresa llegó al pasar por caja. 2,5€ si me llevaba un trozo de pizza y 4€ si, con la porción, me llevaba además un libro que podía elegir entre varias novelas, ensayos, poesía... Comer y leer. Buenísimo.

¿Tienda pop o sex-shop? O las dos cosas.

O ninguna de las dos. No es fácil saberlo hasta que llevas un buen rato dentro del local. El caso es que entré en Passagedudesir y descubrí que todo tenía un toque exquisito. Y divertido. Y mientras intentaba despejar mi duda, y saber si era pop o sex-shop, encontré algo que ya lo hacía por mí. Vi un tarjetón que presenta el lugar como “el primer espacio dedicado al desarrollo duradero de las parejas”.

A few days ago, I was walking around calle Leon when the delicious smell of oven baked food came my way. It was coming from a typical pizzeria (small, secluded, with an oven in the back…) that had just opened called Pizzateca.

It has a wide range of toppings that are uncommon in Spain. For example, potato or fresh sausage. So far so good. But the biggest surprise came when I went to the till to pay: 2,5€ for one slice of pizza, or 4€ if I wanted it to come with a book from their selection of novels, essays, poetry. Eating and reading, the perfect combination.

Y en vez de encontrar una triste carta de sandwiches, vi un libro, elegante, bien diseñado, en el que ofrecían varios platos para llevar a la habitacion y, al lado, explicaba las recetas (ingredientes y modo de cocción).

Una grata sorpresa que hizo mi cena mucho menos sórdida de lo habitual.

Soy fan de John Lennon. Vale. Empecemos por ahí. Pero, cuando visité Praga, no fui al muro de Lennon por mi pasión por su música. Me habían dicho que tenía que ir a ese lugar, en la zona de Kampa, porque el muro ha sido durante años el espacio donde miles de personas escriben sus mensajes a favor de la paz, la libertad y el amor. Lo hacían incluso en la época comunista (¡eso sí que tiene mérito!) aunque las autoridades pensaran que era solo un homenaje al músico. No esperes una belleza. No lo es.

Pero párate a leer sus escritos. ¡Molan!

No estoy seguro de si es posible que una carrillada de ternera sea capaz de cantar una canción de Jerry Lee Lewis pero, si fuese posible, pasaría en La Estraza, un bar de Sevilla en el que no brota flamenco ‘apaleao’ de los altavoces y que sirve sus raciones sobre vinilos rayados. Es una peculiar taberna con dos niveles de altura en el que se dan cita los próceres del rock sevillano. No en vano, creo que uno de los miembros de Los Sentíos es propietario del garito. Ensaladas, tapas deliciosas y ambientazo en plena calle Feria, esquina con Peris Mencheta.

I have eaten late meals by myself in hotel rooms several times. Business trips are like that. It tends to be my least favourite part of such trips, except for one occasion. I went to Rome and stayed in the Hotel Exedra. I arrived late and was starving. Instead of finding a sad sandwich menu, I saw an elegant, well-designed book, which offered all sorts of dishes for room service. The book detailed the recipes describing the dishes’ ingredients and how they were prepared. This was a pleasant surprise that made my dinner much less sordid than usual.

Right, so I’m a John Lennon fan. Let’s start there. But when I went to Prague, I didn’t go to the Lennon Wall because of my passion for his music. I had been told to go to there (it’s located in the Kampa neighbourhood) because for years, the wall had been a place where thousands of people wrote messages of peace, freedom and love. They even did this during the communist era (now that takes courage!) although officials thought it was simply a homage to the musician. Don’t expect beauty.

You won’t find it there. But stop and read the messages. They’re cool!

I’m not sure if it’s possible for a calf’s cheek stew to sing a Jerry Lee Lewis song, but if it was possible, it would happen in La Estraza, a bar in Seville where you won’t hear flamenco fusion coming from the speakers and where food is served on scratched vinyls.

It’s a peculiar place with two floors often filled with icons of Sevillian rock.

In fact, I think that one of the members of the band Los Sentios owns the bar. Salads, delicious tapas and a great atmosphere on the corner of Ferria street and Peris Mencheta.

Disfrutar de un atardecer en la playa de Maspalomas no tiene precio. Pasear a media tarde por la orilla, pisar la arena mojada, respirar la brisa y sentir cómo las olas van mojándote los pies mientras el sol se pone a lo lejos, es una experiencia insuperable. A pesar de la cantidad de turistas que disfrutan tanto de esta playa, como de su vecina, Playa del Inglés, cuando se acerca el ocaso y se despejan las dunas, la naturaleza vuelve a apoderarse de la playa, brindándonos momentos perfectos para sentirnos vivos y deleitarnos solos o en buena compañía.

Cerca de dos grandes contenedores de arte contemporáneo como el Guggenheim y el Museo de Bellas Artes de Bilbao está la Sala Rekalde. Mientras que los grandes museos obligan a planificar más la visita, a la Sala Rekalde no fallo en cada uno de mis viajes a Bilbao. De entrada gratuita y de un tamaño casi ideal, la sala expone ahora una muestra de fotografía social firmada por Fazal Sheikh. Sin embargo, la cita puntual no es lo fundamental, siempre que se tengan ganas de una dosis sabrosa y breve de arte contemporáneo se debe pasar por esta sala situada, como indica su nombre, en la Alameda Rekalde.

No soy un apasionado de las iglesias, ni como lugar de culto ni como espacio ornamentístico. Sin embargo, hace unos días viví una experiencia alucinante en una iglesia de Lisboa. Se llama Sao Domingos y es una iglesia diferente. Sufrió un incendio en 1954 que acabó con toda su decoración. Por alguna extraña razón, nunca fue reconstruida por completo, por lo que en su interior se pueden ver unas descoloridas paredes de mármol y unas irreconocibles estatuas derretidas que dan a la iglesia un aspecto tétrico y sobrecogedor que no deja indiferente.

You cannot put a price on a sunset in Maspalomas beach. Taking a stroll on the shore in the afternoon, stepping on the moist sand, taking in the breeze and feeling how the waves wet your feet as the sun sets on the horizon, is an unbeatable experience. Regardless of the amount of tourists that visit this beach, as well as its neighbour Englishman’s Beach, when the twilight creeps up and the dunes disperse, nature takes over the beach once again, giving us perfect moments making us feel alive whether alone or in good company.

Near two great conduits of contemporary art like the Guggenheim and the Museum of Fine Arts of Bilbao lies Sala Rekalde. While visiting one of the big museums requires advanced planning, I never fail to pop down to Sala Rekalde when I go to Bilbao. The entrance is free and the place is an ideal size. The hall is currently holding an exhibition of social photography by Fazal Sheikh. However it’s not about just going there, it’s about fulfilling a need for a brief and tasty dose of contemporary art. As its name suggests, the hall is located on Alameda Rekalde.

I am not passionate about churches, neither as places of worship or for their ornamental value. Nevertheless, a few days ago, I had an amazing experience at a church in Lisbon. It’s called Sao Domingos and offers something a little different. A fire in 1954 left it without its decoration. For some strange reason it was never completely rebuilt leaving the interior full of faded marble walls and unrecognisable melted statues.

All this gives the church a gloomy feel that leaves no one indifferent.
