In our opinion, Inception is a near perfect film. If you didn’t catch it on the big screen over the Summer, make sure you pick it up on Blu-ray this Christmas. With an excellent cast led by Leonardo DiCaprio, the story follows Dom Cobb, an ‘extractor’ whose job it is to steal secrets from people by entering their minds while they dream. If you’re of the same opinion, enter the Santa Dash on Saturday December 11. The annual fundraiser for children’s hospice Chestnut Tree House is set to wow guests once again on Saturday December 4 at the Hilton Brighton Metropole Hotel.Thanks to patron Raymond Briggs, the charity harnesses the magic of The Snowman at a glamorous ball. Fundraising is essential to ensure the vital support offered by the hospice continues. The charity needs £2million every year to stay open, yet receives minimal government funding.

Brighton is attracting more visitors than ever according to a report by Tourism South East. Last year both visitor numbers and spending per head increased, in spite of the difficult economic circumstances.

Day-trippers increased by almost ten percent, while staying visitors increased by around four percent. Tourism is estimated to be worth just under a billion pounds every year to the City. Some 13,600 local jobs are reliant on a buoyant tourism industry.
Dylan’s main course of salmon and broccoli pasta bake impressed the judges with its “use of oily fish, full of healthy Omega 3.”It will now be served in about 60 schools across the City.

An all-night festival to mark the end of British Summer Time and the clocks going back has been hailed a huge success. With attendance up from 25,000 to 40,000, the local Arts Commission festival featured about 60 outdoor events at some 30 venues which were packed out by 8pm.
The Brighten Up Brighton and Hove campaign has seen dozens of cyclists handed fines for travelling without lights. The joint initiative between Sussex Police and the City Council aims to educate cyclists about the need to be seen during the Winter darkness.
Council Leader Mary Mears (below) says of the mixed arts festival: “The weather was very kind and the increased number of works created specially for the event is certainly helping make it unique and draw bigger crowds.”
Figures recently revealed that 145 cyclists had been injured in the City so far this year – up from 117 last year.

The team at Brighton’s cake emporium Choccywoccydoodah are celebrating after UKTV commissioned a documentary series to follow the team as they create their confections. UKTV’s Jane Rogerson says: “The series gives a great insight into the lives of the staff and customers of Choccywoccydoodah. They’re clearly an intrinsic part of the Brighton social scene and with weddings, anniversaries and birthdays of their own happening throughout the series, it makes for great viewing”. The series is due to air on UKTV in the Spring.

I am now having to contemplate a relocation to Tunbridge Wells thanks to your sloppy proof reading and am not best pleased. I will be taking the matter up in the correspondence page of the Telegraph mark my words! NOTHING DIVIDES THE NATION QUITE THE SAME AS CHERYL COLE. LIKE MARMITE, YOU EITHER LOVE HER OR HATE HER. BUT ONE THING’S FOR SURE, YOU CAN’T IGNORE HER. AS SHE ONCE AGAIN DOMINATES THE MUSIC CHARTS, WE ASK: WHAT LIES BEHIND THE CHERYL COLE PHENOMENON?
She always wanted to be a singer and – having entered numerous beauty competitions and talent shows as a teenager – finally struck gold when she won a place in Girls Aloud, the pop group formed on Popstars: The Rivals, the 2002 reality TV show. The girl group would dominate the UK charts for almost ten years, with a string of 20 consecutive top ten hits, mirroring the success of The Spice Girls in the previous decade. With Cheryl as the natural front girl, it wasn’t long before she was hot property in the eyes of the media. Her 2006 marriage to one of the country’s top footballers, Ashley Cole, only further cemented her fame. Today, Cheryl is an ad man’s dream, with numerous endorsement contracts including L’Oreal, Barbie, Nintendo

and Samsung. With her own solo career and a number one selling single and album, she’s also a judge on Simon Cowell’s The X Factor and is worth more than £10million. But the woman who was voted FHM’s Sexiest Woman in the World still divides opinion. Express your thoughts on the 27-year-old Geordie in a room full of people and, no matter who they are, you’re sure to get some form of impassioned response. It’s even been a topic of furious contention here in the So office. (This is issue 33 of the magazine and we have talked about having her on the cover since issue 22.) There are people who adore her and staunchly defend ‘the nation’s new sweetheart’, saying she’s a hugely talented singer and universally-loved TV personality. Then again there are those who just don’t get it and merely see a career built on savvy PR. Like her or not, everyone has an opinion on Cheryl Cole. “It’s my reality,” she said recently of her life. “But to other people it’s their entertainment.” One person who’s in part responsible for her meteoric rise to fame is Simon Cowell. Since the early days he’s been a strong proponent of her work as a recording artist and TV

o understand what’s turned Cheryl (Tweedy) Cole into one of the biggest names in Britain today, you need to understand her background. Born and raised on a council estate in Newcastle upon Tyne, she came from a working class family. Her parents split up when she was 11 and Cheryl was brought up largely by her mother, Joan, to whom she remains close.

“Simon is one of the most important people in my life,” she told Piers Morgan on her highly publicised ITV interview. “One, he changed my life, but most importantly he gets it. He gets me like nobody else and I’ve never met anybody like that before.” The man himself said: “She’s got a great heart, Cheryl. That’s why people like her.” And, regarding her position as a judge on The X Factor he’s revealed: “I knew she was going to be good because she speaks like normal people speak. People can relate to that. And I think that is the best sign of a judge.” Cowell knows television as good as anyone and understands that it’s this ‘normality’ that’s seen her rise to the peak of stardom. Sure, she’s a talented performer. Yes, behind her is an incredible PR machine, but take away her likeability and personality, and there would be no Cheryl Cole. She’s the new “People’s Princess” because she’s one of them. She’s the nation’s sweetheart because, whether you like it or not, she personifies the nation. The high regard in which she’s held – maybe ‘adored’ is a better word – has never been more evident than earlier this year when her troubled relationship with Ashley Cole came to an end.
Since 2008 rumors and allegations regarding his apparent infidelity with a number of women had been circulated in the media, culminating in the pair splitting in February 2010. Cheryl filed for divorce in May and the British public and press alike voiced their unequivocal support for the singer. They identified with her and what she was going through. “When your heart’s breaking, your heart’s breaking,” she said recently. “It makes no difference what either of you do.” As the nation rallied behind her, speculating whether Cheryl would find happiness with either one of two men she is linked with (rapper Will.i.am of Black Eyed Peas fame and Derek Hough, the professional dancer), she was struck down with a mystery illness. In July, while holidaying in Tanzania with Derek Hough, Cheryl contracted a deadly strain of the infectious disease Malaria. On her return to the UK she collapsed after a Vogue photo shoot. In a move that some speculate may have saved his friend’s life, Hough urged her to seek medical advice. “He’s an amazing, amazing person,” she told Piers Morgan. “I can never repay him for that… it’s my life.” Her condition became so bad that at her lowest point she was informed by doctors that she might not pull through. “I was just so weak and sick I was actually thinking: if it’s going to happen, please hurry up.” Her face was so swollen that her mother could barely see her DECEMBER 2010

eyes, she had no kidney functions and her organs were beginning to shut down. The nation held its breath for the most talked about woman in the country. “You wouldn’t believe the support I’ve had from the public,” she said later. “And it makes me strong.” Slowly, she began to recover and today declares she feels 95 per cent healthy. With a chart topping album, a No.1 selling single and her reclaimed place on The X Factor panel alongside Simon Cowell, Danni Minogue and Louis Walsh she’s looking forward to starting 2011 afresh. And so, to answer our initial question: What lies behind the Cheryl Cole phenomenon? She’s a talented, attractive young woman who is (and this is most important) a down-to-earth, honest ‘girl next door’ who carries herself with dignity. A nice person!

6KDSH XS IRU hristmas time is similar to Summer for most women when it comes to worrying about their figure. Except the fear of having to get into a bikini is replaced by panic at the thought of that little black dress moment. With busy social calendars, though, everyone assumes they don’t have enough time to make exercise worthwhile during the festive season. But sshhh, I’ll let you in on a secret... just a quarter of an hour a day can help get you in shape and feeling fantastic this Christmas. So, how can working out in short bursts really make a difference? There are many reasons not least because if you know you’ve only got to exercise for a short time period, most people put more effort in. Contrast that to sitting on a gym bike for an hour and how much of that time is spent reading a newspaper? But there are scientific reasons too. Although exercise scientists are unsure exactly why, high intensity training appears to stimulate muscles in the same way as long training sessions. And any challenge to the muscles and how they move and react, forces them to adapt which creates that all important change in tone and shape.
Ever wondered why you can do the same type of exercise day in and day out and never feel or look any different? In addition to this, studies show that your body continues to burn calories for up to an hour after interval work compared to long endurance workouts. Double the results in half the time, what’s not to like? All this science aside, I witness the difference it makes to the figures of the women who train at FitBitch and FitMuthas every day which is proof enough to me to see how effective high intensity training can be if you do it regularly. So in practise, what does this involve and can anyone do it regardless of their fitness level? A typical fifteen minute blast at our camps could include anything, from kettle bells mixed with body weight exercises to sprinting between lampposts along Brighton seafront. It is hard and it has to be to be in order to be effective but as long as you warm up properly, anyone can do this kind of work regardless of fitness level. I always tell women in our camps that it isn’t about how fast you are DECEMBER 2010

compared to the next person, but whether you are working at nine out of ten of YOUR effort. If you are, it works. And although this may seem hard to believe, this type of exercise leaves you with a huge endorphin high. Promise! “I’m a mum of three and hadn’t exercised in years before FitBitch,’ says Mimi Banks, 39. “At first when I was told I had to sprint between lampposts, or up stairs I thought I wouldn’t be able to do it. “But time and again I discovered I could and although I’d get to the point where I thought I’d reached my limit it would pass and my body recovered. Streamline Sprints: Starting at the Peace Statue, sprint from one lamppost to another at 9 out of 10 effort then slowly jog each alternate lamppost. Continue until the end of the beach huts in Hove. If you find it tough to start, walk each alternate lamppost. Stairway to Heaven: Choose a long flight of stairs, the ones near Madeira drive are good. Sprint single steps right to the top. Walk down slowly using this as recovery. The second time sprint two steps at a time. Repeat ten times in total. Pebble Blast : Go to the beach where you can get access to a wall or bench. The seafront near Portslade is a good area. In ten minutes do the following as many times as possible: one sprint up the beach to promenade, 5 push ups, 10 step ups on wall. Walk down to the sea in recovery. Count now many rounds you do and try to improve each day you do it.

The Classique 1907 is a technical masterpiece, with a yellowgold case featuring two secret covers â&#x20AC;&#x201C; one hiding the face and the other the movement assembly. A collectorâ&#x20AC;&#x2122;s piece, this watch features a tourbillon, which is a mechanism invented in 1795 by the founder of Breguet itself - Abraham Louis Breguet. These mechanisms were originally created to improve accuracy, and are still included as a novelty in expensive modern watches to this day.

This watch is one of a limited series of 30 and draws from almost 275 years of research and tradition, and a deep respect for â&#x20AC;&#x2DC;haute horologieâ&#x20AC;&#x2122;. Its casing is platinum, its skin crocodile, and there are 740 component parts which make this one of the most complicated timepieces in the world.

The Magistralis features a 2,000 year-old lunar meteorite for the moon-phase display of the movement (including minute repeater, perpetual calendar and single-pusher chronograph functions). Of all meteorites, lunar is the rarest of all and more expensive than gold and platinum put together. Louis Moinet also introduces the ďŹ rst musical instrument for watches thanks to the watch stand itself which serves to amplify the sound of the repeater mechanism.
+XEORW %ODFN &DYLDU %DQJ Â&#x2026; Italian watchmaker Carlo Crocco founded the Swiss watch brand Hublot in the 1980s, and today the brandâ&#x20AC;&#x2122;s sparse, clean designs are instantly recognisable. A strong naval theme runs through the designs, in fact the word â&#x20AC;&#x2DC;hublotâ&#x20AC;&#x2122; is French for porthole. The Hublot watches were also the ďŹ rst to be ďŹ tted with rubber straps instead of traditional metals or leather which was an innovation at the time. This avante garde decision in the 1980s is now a staple among other Swiss Brands. With the arrival of Jean-Claude Biver of Blancpain to the halls of Hublot, and the introduction of the fusion-based Big Bang line, the brandâ&#x20AC;&#x2122;s stature has been ampliďŹ ed.

3DWHN 3KLOLSSH 6N\ 0RRQ 7RXUELOORQ Â&#x2026; The objective with this double-faced wristwatch was to accommodate the most fascinating complications in the small case of a wristwatch; a perpetual calendar, a minute repeater, a tourbillon, the display of sidereal time and a depiction of the nocturnal sky with the motion of the stars, the orbit of the moon, and the moon phases. This was a challenge because a chart of the heavenly canopy requires a certain amount of space in order to demonstrate the movements of the stars in a clearly legible manner. The solution was borrowed from the astronomical pocket watches made by the company; a moving sky chart on the reverse side of the timepiece. Due to their high complexity only a few of these watches are produced every year. The Sky Moon in white gold (pictured) is part of the current collection.

Perhaps unsurprisingly there are only seven examples of these in the world. Vacheron Constantin itself is the worldâ&#x20AC;&#x2122;s oldest watch manufacturer and has enjoyed uninterrupted activity since its founding in 1755.

The platinum World Time indicates 41 cities, regions and countries and was sold for around ÂŁ4million in 2002 â&#x20AC;&#x201C; a new world record for wristwatches. Ever since universal time was adopted at the Internatonal Meridian Conference in Washington, D.C in 1884, watchmakers have tried to outdo each other with clever ways for displaying multiple time zones. In 1930, Patek Philippe presented its acclaimed World Time wristwatch with two rotating discs that made it possible to simultaneously display the time in all 24 zones. Today, these timepieces fetch astronomical prices at auctions. There is also a current collection of this watch (pictured), but be prepared to join a queue for it!
This watch is the result of a friendly competition between the banker Henry Graves and the automobile manufacturer James Ward Packard in the 1920s. The Henry Graves pocket watch is also also known as Supercomplication. Both men commissioned Patek Philippe to produce their watches, and the idea was to own the watch with the greatest number of complications possible. This culminated in a timepiece that took three years to design and ďŹ ve years to produce. When completed in 1933, the watch had a different horological function for each hour of the day and included a chart of the nighttime sky over Gravesâ&#x20AC;&#x2122; home in New York. When Graves died in 1953 his watch was sold to the Time Museum in Rockford, Illinois. After the museum closed, it was auctioned at Sothebyâ&#x20AC;&#x2122;s in New York in 1999. The watch had a presale estimate of ÂŁ2-ÂŁ3million. It was actually sold for almost ÂŁ7million, a record-breaking bid, to an anonymous bidder. In celebration of this philosophy, Jose VazquezMendez, Vice President at American Express recently launched a UK wide competition to discover American Express colleagues who do just that. After the unenviable task of judging hundreds of inspiring entries, five worthy winners were selected and each was awarded a personalised ‘Realise the Potential’ bursary, individually designed to help them further persue their own Potentialist hobbies and passions. Nicholas Quirke American Express Coaching Facilitator/ Shakespeare Director Nicholas realised his potential by fulfilling his dream of setting up his own theatre company, ‘The Festival Shakespeare Company’. The company’s goals are to enrich the lives of others by bringing Shakespeare’s plays to the masses with open air performances accessible to all. Nicholas finds that his role as a director for the company relates directly to his coaching role at American Express. The skills Nicholas has as a director: of helping people to understand and develop roles also helps to instil confidence and belief in employees and for them to get the best out of themselves at work. As performer and director his productions are staged during the Brighton Festival and longer-term he is working with Equity to promote Shakespeare locally for the 2012 Olympic Shakespeare celebrations.

Forbes Coleman American Express Credit Analyst/Music Producer In his spare time Forbes, a Credit Analyst at American Express works as a music producer. Being involved in music offers Forbes a creative outlet and allows him to continue to pursue his own personal passion for music although it’s not his full-time career. Music brings something extra to Forbes’ life, helping him to achieve fulfilment by enabling talented musicians to have their work recorded in a costeffective way. Through lottery funding Forbes runs a not-for-profit recording studio for individuals who couldn’t otherwise afford recording time. His ‘Realise the Potential’ bursary has enabled him to but more equipment for the studio including sound proofing! He believes that everybody has some form of talent and that it is just a case of finding it. According to Forbes, once you’ve found it everyone can go on to make the most of their talents bringing an extra dimension to their lives.
Gemma Shardlow Business Analyst, American Express/ Urban Shepherd Gemma Shardlow enriches her life by volunteering for the Brighton and Hove Council ‘Urban Shepherd’ programme. The scheme began when the Council introduced sheep grazing in the open spaces and downland areas of the city. The Council has 72 trained volunteer Urban Shepherds such as Gemma who help to keep an eye on the sheep. Gemma tends to flocks of sheep around Brighton before work and each weekend. As an urban shepherd she checks the sheep for lameness or illness as well as securing electrical fences to protect the animals from predators. Gemma finds being with the sheep a relaxing way to start the day that allows her time for reflection and contemplation. “I think it is really important to do things outside of work as it isn’t the be all and end all. People can’t always be as focused on just being money orientated, there is an opportunity for people to reassess and decide what they really want to do.”

Andrew Fumagalli American Express Manager/ Emergency Blood Runner By day Andrew is a project manager for American Express and by night he realises his potential as an emergency blood runner by giving back to those who have helped others. For several years Andrew witnessed his father undergo treatments and transfusions to fight cancer. As a result of seeing the fabulous work that goes into helping people who need blood products Andrew became an emergency blood runner and now gives his time and fuel one Thursday a month to the Emergency Rider Service, biking around Southern England to deliver emergency blood products. Being a blood runner is Andrew’s direct way of saying thank you for the help his father received.
Deborah Pasley American Express Relationship Manager/Archer Four years ago Deborah Pasley a relationship manager for American Express took the decision to take part in a beginner’s archery course. Little did Deborah realise the impact that decision would make on her life and the extent to which her involvement with the sport would grow. Deborah’s motivation for taking the course was initially to have some fun, learn something new and also fulfil some personal life goals that she hadn’t had the opportunity to do yet. Four years on from completing a beginners course Deborah is now ranked in the UK’s top 20 and is the Yorkshire Ladies Champion. Who would you like to cook your own Christmas dinner? I would like it if my gran and Tommy Cooper came round to do the cooking. He can cook and she can tell the jokes! What would you ask him to cook? I would ask him to give Heston Blumenthal’s Tudor banquet a go. That means starting with a mini ‘pint’ of butterbeer, which has a very Christmassy taste, and Tudor blancmange. He uses meats, history and science to create amazing dishes. And your top tips for making Christmas dinner memorable? A good tip is to have it more or less ready the day before so you can have more quality time with the kids then maybe squeeze a quick one down the local before having a great feast and watching bad telly. For those wanting a change from turkey what do you suggest? Roast goose all the way. All that beautiful fat dripping for use on the potatoes. Five words that sum up your feelings about Christmas? I think if I were to ask anyone to cook a Christmas dinner for me, which would be rare, it would be a family coo ked one where everyone get s involved and helps out. A good way to start the meal would be a nice chicken liver and fois gras parfait and some freshly baked bread with some wine. I’d probably avoid the turkey for the main course and choose another poultry. A favourite of mine that’s been done before is a Roast Pheasant with an ora nge and chestnut stuffing and all the trimming’s of course. I think for dessert I wou ld ask for a crème caramel, alw ays a winner when done properly, and I have nev er been a big fan of Christm as pudding anyway. Not to mention the vile plastic trays of bastardised nigiri topped with tinned tuna and red pepper, smoked mackerel and farmed salmon and (oh, God, please, NO!) dyed surimi crabsticks. Yes, there are a few top end places, mostly in London, where a month’s salary will procure an authentic experience (aimed mostly at Japanese businessmen on expense accounts), but real, normal restaurants serving honest Japanese food at prices ordinary people can afford are few and far between. The essence of Japanese cuisine is quality, simplicity and technique. The Oki-Nami restaurant had a long and successful incarnation in Hove, and with a bit of extra financial backing from some chappie in the music business (yes, I do know he’s really a legend) , owner and Chef Mike Dodd moved the restaurant to central Brighton to bring his cuisine to a broader church of customers. I had the pleasure of a chat with Mike before dining, and was impressed at his fierce passion for his work (“If you aren’t desperate to eat a dish, then don’t send it out”), and his wisdom in avoiding compromising the dishes he serves while doing everything possible to make his oeuvre accessible to all-comers. Splendidly guided by Azita, who is as welcoming as Mike is inspiring, I am introduced to a new pleasure. We’ve all heard of sake and plum wine, but I hadn’t tried Japanese shochu before – only Korean soju – so the glass of “Beni Otome” on the rocks was a revelation.
Absolutely fresh fish. Well made rice. Pickled ginger and soy and sinus-blasting wasabi. Nothing else. Displayed elegantly on salt glazed earthenware. Did I mention the fish? The sweetwater prawn is glistening and shining; salmon roe has an essence of the sea that beats any oyster; salmon is lush and melting; tobiko flying-fish roe has a marvellous crunchy texture; mackerel with spring onion and horseradish an amazing combination; eel with a restrained saucing delightful; and the undoubted winner – sea urchin roe, which manages to combine flavours of foie gras, rich butter toffee, and strong veal jus, and is one of the most entrancingly delicious and savoury things ever to be served anywhere. The rice is pretty good, too – nutty and free of the over sweet, vinegar dosed taint found in industrial sushi. Japanese décor is mostly elegant and understated, and the restaurant is no exception. Mostly wood and white, it is a proper space for concentrating on the food. One rather nice touch is the discreetly placed mobiles of origami cranes (birds rather than building site equipment) made from the wrappers that the chopsticks come in. W

o, Japanese food. It’s all raw fish and noodles, right? Sushi and ramen, and then weird stuff that even Heston and Fergus wouldn’t touch with a foot long chopstick. And in Britain, the sushi and ramen have been made safe and homogenised and commoditised, which means there are chains selling noodle soups by the millions and conveyor belt sushi pieces by the billions.

Sesame based, with a smoky overtone, it manages to refresh and seduce the palate – an intense and complex drink. It also goes rather well with a few Otsumame, the small plates that the menu explains as Japanese Tapas – Age Tofu are crisp coated cubes of fried tofu with a soy and ginger sauce – texturally perfect and very tasty (Mike’s knowledge of tofu in its myriad varieties is vast and fascinating). We also sample two kinds of gyoza (steamed and fried dumplings); one being pork and cabbage, the other salmon and mushroom, which have a delicacy and mouthfeel that is a world away from the potstickers usually associated with oriental dumplings – the chilli oil and sesame paste dip enhances rather than disguises. With a selection of sushi, I drink a bottle of tarusake – a cedar aged rice wine, served cold, and reminiscent of the best manzanilla with floral aromas also found in Alsace Pinot Gris – a totally unfair Eurocentric description, because it is wholly itself, as Japanese as the fish it accompanies. And the sushi itself? Banish all thoughts of black plastic trays and conveyor belts of domed dishes. This is the real thing. DECEMBER 2010

Each diner is encouraged to attempt a folding, with full instructions printed on the sheet. My effort was so bad I scrunched it, and the two I tried at home resemble a roadkill duck and a fat penguin – these gaijin hands are too clumsy. Tempura next – so often a thickly battered selection of leftovers in lesser establishments, but here an ethereal coating on the best ingredients. Frying is an underestimated art – the right oil, temperature(s) and timings are essential, and the right batter mix equally important. The Oki-Nami soft shell crab is as good as any I’ve tasted, just coated in batter and it stayed crisp until the plate was cleared. Partnered with prawns and exotic Pangassus fish, and embellished with seaweed strips, this is a gourmet dish. Vegetable tempura is equally fine – onion, sweet potato and capsicum – all of which have a sweetness that is brought out by the frying. The dipping sauce merits further exposition – rather than just bung some soy sauce in a bowl, there are two separate stocks, mushroom and kelp seaweed, which are mixed and then seasoned with ginger and best quality soy – as much effort as creating a dish in itself, and with a depth of flavour that I remember with pleasure weeks later. There is not so much as a spot of oil on the plate once the tempura is gone. To the meat of the matter next. Firstly, Gyu Tataki – sirloin steak seared, sliced and served on shredded daikon radish with a citrus dressing and wasabi. The beef is very rare, very tender and very tasty – coated in a particularly hot variety of “seven spice” (or shichimi) , and perfectly wrapped around the cooling radish strands. I adore the dressing of light, zingy citrus (probably yuzu as well as lime and soy), but skip the wasabi as I don’t want to make an exhibition of myself. The place is too calm to have a giant red-faced Englishman steaming in the corner and the spicing is hot enough.
Next, Mike insists that I try some Wafu Tuna and Teriyaki chicken. The tuna is a house speciality, and regular customers are apparently addicted to the sauce, made from a cooked down yuzu base. I can understand why – this is a different kind of dish. The tuna is chargrilled (just a bit) in big cubes so the flavour of the cooked surface balances with the rarest succulent interior with that inimitable silken tuna texture, and is bathed in a delicate, subtle sauce which has all the citrus flavours with the acidity simmered away. This could convert those fearful of raw and rare with its gentle sweetness. Now, I wouldn’t order teriyaki chicken, that sugary gloopy mess of tasteless meat, but it turns out that I’ve been misled by previous encounters. Real teriyaki has just a glaze of sauce that is caramelised and only hints at sugar, and does not mask the excellent chicken thigh meat with crispy skin and superb flesh that has a proper meaty chew to it. I’m converted – once again, Oki-Nami do it right. Finally and traditionally, a bowl of plain rice topped off with toasted black sesame and pickled vegetables, and a fetching iron pot of barley tea, which has another kind of smokiness to the Shochu I started with and bookends the meal beautifully. I sit in the window of the restaurant and quietly watch the world go by. Oki-Nami impresses greatly. This isn’t just a commercial operation – it is a celebration of food and authenticity delivered with absolute conviction and passion; the best ingredients brought to fulfilment with skill and respect. Developed by its performance engineering subsidiary, Quattro GmbH, Audi’s RS models are highly specialised versions of its mainstream production cars. In this case, the RS 5 is based on the A5 coupe, while the RS badge can be traced back to the RS 2 Avant. This was the car that was successfully developed in partnership with Porsche and sold in the mid-1990s but, for a while after that, the ultimate performance Audis failed to hit the same heights. That changed with the RS4 of 2006, a genuine BMW M3 challenger, and then again with the mind-boggling power of the 2008 RS6. Can the RS 5 take things to the next level? Audi has been turning more and more to turbocharged powerplants in its faster cars, but the RS 5 sticks with good old cubic capacity. Mounted at the front of its quattro allwheel-drive chassis is a 4.2-litre V8 incorporating technology from the V10 FSI unit in the R8 supercar. The peak power

Against the clock, the RS 5 will blast to 62mph in 4.6 seconds and would comfortably exceed 155mph were the artificial limiter ever to doze off on the job. S-tronic dual clutch gearbox technology is rapidly becoming as commonplace as the Quattro all-wheel-drive set up across Audi’s various model lines, and the fact that it’s fitted to the RS 5 underlines the faith the manufacturer has in it. This particular unit is a seven-speed transmission specially strengthened to cope in the company of the RS 5’s formidable engine. With two clutches working on different sets of gears, the technology is able to pre-engage the gear it thinks will be selected next. This makes for lightning fast shifting via the wheel-mounted paddles or by nudging the gear lever. There are Automatic, Comfort and Dynamic modes to choose from and a launch control setting which will get you close to optimum acceleration off the line. The standard Audi A5 is a beautiful and understated car but whether you could pay either compliment to the RS 5 is open to debate. Understated, it isn’t. Aggressive air intakes and a matt aluminium splitter mark out the front end, the

obody would claim that the RS 5 could have anything approaching the same impact as the original Quattro, but there’s definite symmetry here. We’re dealing with a two-door Audi coupe with breathtaking performance, bags of attitude and, of course, four-wheel-drive.

wheelarches bulge imposingly and at the rear are two of the largest exhausts you’ll have ever seen mounted either side of a big diffuser. There’s a spoiler in the tailgate that extends at 75mph, tucking itself away again when you drop below 50mph, so even if you aren’t breaking the speed limit, the police will know if you have been. The cabin is based around the black leather and exposed carbon fibre theme we’ve seen before on RS models. In addition to features found on other A5s, there’s an oil temperature gauge and a timer for track use. Electrically adjustable super sports seats with pronounced side sections and integrated head restraints are standard, as of course are comforts such as a 180-watt CD sound system, deluxe three-zone climate control, the Audi Parking System Plus with front and rear sensors, tyre pressure monitoring and an RS multi-function steering wheel with aluminium-look gearshift paddles. To say the RS 5 chassis is merely advanced would be to do it a disservice. The car features the latest quattro all-wheeldrive technology with a crown-gear centre differential and Audi’s sport differential between the rear wheels. Under normal conditions, power is distributed 40:60 between the front and rear wheels but the crown-gear differential can automatically send as much as 70percent forward or 80percentrearward as the situation dictates. The sport differential then distributes power between the two rear wheels to further enhance stability and traction. The Dynamic Ride Control interlinks each of the car’s shock absorbers with its counterpart on the opposite corner of the vehicle via a central valve and is calibrated to provide extra damping force when required. The driver can select Comfort, Dynamic and Sport modes according to the firmness of the damping required. The car rides 20mm lower than a standard A5 on its 19” alloy wheels. When Audi launched the Quattro in 1980, it had just two

model lines. Today, it’s well into double figures and expanding with ‘Quattro’ all-wheel-drive technology present in every range. It’s also viewed as a serious rival to the prestige car market kingpins BMW and Mercedes-Benz with the burning ambition to surpass them. Cars like the RS 5 are crucial to this, not because they’re going to generate huge sales or profits but because they generate interest. By being seen to take the BMW M3 and the Mercedes C63 AMG down a peg or two, the RS 5 can enhance the profile of the A5 coupe and A4 saloon models which actually bring home the bacon. The work Audi did on the exhaust system and the aerodynamics of the RS 5 to enhance its performance have also helped to improve its fuel economy. In addition, the car’s entire drive train has been designed to minimise friction losses and a brake energy recovery system is installed. An RS 5 still isn’t going to be cheap to run but the official combined economy of 26mpg could have been worse. That Audi means business with its RS 5 is beyond dispute. The car comes laden with advanced technology to help the driver get the most from its blistering performance and sporting a pricetag substantially higher than rivals from BMW and Mercedes. Arriving 30 years after the original Audi Quattro, the RS 5 would do well to be remembered half as fondly but if the intention was to shake things up in the performance coupe world, its success looks guaranteed. Packing the latest quattro all-wheel-drive system, the S-tronic dual-clutch gearbox, Dynamic Ride Control suspension and all manner of other high-tech features, the RS 5 is a car with its sights set high. 62

he Swedish boat maker Strand Craft, renowned for its groundbreaking design, is launching its latest extravagant motor yacht the 122 Express and is throwing in a specially hand-crafted supercar to complete the playboy image. What’s more the car will have its very own ‘garage’ aboard the £17million craft.

resembling the genetic form and fashion of the mothership. Slightly retro with a swoopy silhouette much like momma, it will be handcrafted in Italy. A hydraulic garage door raises upwards and deploys a retractable passarelle to become a dockside driveway. The passarelle will be hinged, allowing up to 2-meters of travel for low tides. A closer look at the 122â&#x20AC;&#x2122;s supercar reveals a rear mounted, 880hp twin-turbo V12 engine with an estimated 233mph top speed. Built from carbon fibre and weighing in at just 2600 lbs., it has a projected 0-60 mph time of 3.2 seconds. The boat itself has an all-glass cockpit with three digital displays for systems monitoring, plus a thermal vision camera for night ops. The stats call for radar and sat domes to deploy from the roof, but this is one of those â&#x20AC;&#x2DC;believe it when you see itâ&#x20AC;&#x2122; things. Overall, the bridge deck is a very clean, minimalistic approach to Med life. There are three large sofas to seat 15 players, while aft is a large four-body sun bed. The resplendent salon is entered via individual sweeping staircases to port and starboard and gives you a feel of entering the Waldorf Astoria in the 1920s. Aft of the stairway is a galley with a cozy bar, while to starboard thereâ&#x20AC;&#x2122;s a club dining area. The entire salon can be transformed to a luxury disco with a sophisticated surround sound system from Bang & Olufsen. Towards the front are four double staterooms cabins, each with stunning sea views from elliptical bullet-proof windows that stretch halfway across the hull. At the forepeak are two crew cabins. Greek marble is used throughout the boat with Hexacon lightweight panelling to offset the increased weight of high-end fixtures. But if you want to get your hands on the supercar and its floating garage youâ&#x20AC;&#x2122;d better hurry. Strand Craft are only producing six of them and they tell us they already have strong interest from five potential buyers. In generic terms the business of day trading refers to the activity of buying and selling ďŹ nancial instruments within the same trading day before the market closes for the day. This is certainly the focus within our company, Alternative Asset Arcades (â&#x20AC;&#x153;A2Aâ&#x20AC;?) business. Originally, the most important stocks were traded on the worldâ&#x20AC;&#x2122;s major stock exchanges. Brokers would transact business through the ďŹ&#x201A;oor of the relevant exchange via a specialist. These specialists would each make markets in only a handful of stocks. The specialist would match the purchaser with another brokerâ&#x20AC;&#x2122;s seller, write up physical tickets that, once processed, would effectively transfer the stock. They would then relay the information back to both brokers who would be paid a ďŹ xed commission of circa 1%. However, a change in ďŹ xed commissions within the USA gave rise to a more competitive environment and discounting of commission rates was soon with us. This was one of the ďŹ rst steps to make day trading potentially proďŹ table. Today some of the more commonly day traded ďŹ nancial instruments are stocks, stock options, currencies and a host of futures contracts such as equity index futures, interest rate futures and commodity futures. Here at A2A we

specialise in equity market indeces; mainly in the USA (S&P) and Germany (DAX). We are, though, building a team of traders in different underlying ďŹ nancial instruments to diversify and provide greater scope. Day trading has become more popular since the advent of electronic trading and post the days of the old â&#x20AC;&#x2DC;ďŹ&#x201A;oorâ&#x20AC;&#x2122; of the LIFFE (London International Financial Futures Exchange) and â&#x20AC;&#x2DC;open outcryâ&#x20AC;&#x2122; trading. It used to be an activity exclusive to large ďŹ nancial corporates, professional investors and speculators. Indeed, until the past decade most Day Traders were bank or investment ďŹ rm employees working as â&#x20AC;&#x2DC;specialistsâ&#x20AC;&#x2122; in the equity investment and fund management business although now it has become increasingly popular among at-home traders. The problem with this is that people are beginning to realise that trading from their back room at home is not good for their sanity or indeed their ďŹ nancial health! How does it differ from other forms of trading? There are many styles within day trading including Scalping, Trend Following, Range Trading, Price Action, ArtiďŹ cial Intelligence, Swing Trading and many other different techniques used to achieve proďŹ ts. Day Traders look to use whatever skills they have plus, where possible, any other tools of the trade that works for them. These might include:

technical patterns, volume spread analysis, price momentum etc but all share a common thread in that they are all designed to look for potential trading setups (ie any ďŹ nancial instruments that, in the judgment of the Day Trader, is in a tension state, ready to accelerate in price in either direction, that when traded well has a potential for a substantial proďŹ t). Here at A2A we tend to focus on short term trend following as that is our bias. However, we are developing a greater range of styles as more Day Traders join us. The number of trades that Day Traders can take per day is almost unlimited, as are the proďŹ ts and losses! This is a totally different style of investment compared to the more traditional â&#x20AC;&#x2DC;buy and holdâ&#x20AC;&#x2122; strategy that the vast majority of professional fund managers employ. But then the risks taken vary considerably. Short term price movements can vary sharply within minutes and losses as well as proďŹ ts can accumulate fast if people are not professional. Some Day Traders focus on very short-term trading within their trading day in which a trade may last just a few minutes. Such trades can be long or short of the underlying ďŹ nancial instrument thus proving opportunity to make proďŹ t from falling prices as much as rising prices. Sometimes only tiny movements in prices are taken or booked as proďŹ t and then the trader is looking for the next opportunity.
movement of this index can be divided into ticks where each tick is a 1/4 of a full point movement in the index. Traders can choose the number of lots that they wish to buy or sell. Each lot provides exposure to the index. Position sizing is incredibly important and it doesnâ&#x20AC;&#x2122;t take long to build signiďŹ cant exposure. This is a major consideration in our trading activities and a core focus of our training given to aspiring new Day Traders. What are the attractions of day trading? Due to the nature of ďŹ nancial leverage and potential rapid moves in the underlying investments, day trading can be either extremely proďŹ table or extremely unproďŹ table and high-risk proďŹ le traders can generate either huge percentage returns or huge percentage losses. Indeed, because of the high proďŹ ts (and losses) that day trading makes possible, these traders are sometimes portrayed as â&#x20AC;&#x153;gamblersâ&#x20AC;? by other investors; whereas the reality is that Day Trading is a profession in itself. Some individuals, however, make a consistent living from day trading and the world is full of people who believe they can become professional Day Traders. It is our ambition to train people to be able to trade proďŹ tably and consistently and build a long term career as a professional Day Trader. We are fortunate enough to have built long term relationships with some of our traders who have turned in signiďŹ cant proďŹ ts over the past few years. It must be said though, the art of becoming a good Day Trader is careful risk control and prudent money management. This is what we look to teach our traders.

The common use of buying on margin (using borrowed funds) ampliďŹ es gains and losses, such that substantial losses or gains can occur in a very short period of time which is why the importance of careful position sizing and risk controls is ever present in our training methodology. If traders do not pay enough attention to the basics they will be vulnerable to losses. There are no guarantees in this business. So what do you trade at A2A? Our preferred instrument is Futures. In our business, a futures contract is a contract between two parties to buy or sell a speciďŹ ed asset (eg S&P Index or Dax Index) in a ďŹ xed quantity and at a speciďŹ ed future date at a price agreed today (the futures price). The contracts are traded on a futures exchange. Futures contracts are not tangible assets and nor are they direct securities like stocks or government bonds. In effect they are still securities, however, they are a type of
derivative contract. The party agreeing to buy the underlying asset in the future goes long and the party agreeing to sell the asset in the future goes short. The price is determined by the instantaneous equilibrium between the forces of supply and demand among competing buy and sell orders on the exchange at the time of the purchase or sale of the contract. We look to trade both long and short contracts and therefore make proďŹ ts from a falling market as much as we do from a rising market. Futures are an ideal instrument to capture proďŹ t in this way; itâ&#x20AC;&#x2122;s what we call capturing alpha! What do you need to become a Day Trader? Intellectually, a good strategy is needed to be successful but I need to repeat the obvious; good discipline, good risk controls, good money management and a thorough control of your emotions at all times. There is an old saying: â&#x20AC;&#x153;Any old fool knows when to buy but it is a wise old fool who knows when to sellâ&#x20AC;?. We look to train and encourage our traders to become â&#x20AC;&#x2DC;wise old foolsâ&#x20AC;&#x2122;. The basic tools of day trading include trading capital (to use as margin), trading software providing live time market information, a fast computer and good monitor, a fast internet connection and equally as important, a good live trading room environment in which to work. There are many Day Traders out there who are sitting at home staring at their screens all day long and lacking in inspiration and conďŹ dence to pull the trigger. We are operationally geared to provide all the tools of the trade as well as full time mentoring to help our traders ďŹ nd and stay in their groove.

What are the downsides? â&#x20AC;&#x153;Where the carcass is there shall be eagles gathered together.â&#x20AC;? There is no question that day trading can be very risky, especially if traders lack discipline or have inadequate risk controls, or they execute trades poorly. The worldâ&#x20AC;&#x2122;s ďŹ nancial markets can be unforgiving and dark clouds will soon gather round the trader who makes poor decisions rather like the eagles over the carcass. There are no short cuts, traders need to be trained carefully and they must understand the need for self discipline and control of perfectly natural human emotions that are always present when it comes to money! Greed and fear are powerful emotions and we look to teach traders how to overcome and remain rational at all times.

How about emotional traits? Emotion is a huge component of a good Day Traderâ&#x20AC;&#x2122;s make up. I have already mentioned many important attributes that a trader needs but there is a great deal more that we look to teach. Every individual is different and will have a different reaction to news and events that move markets, plus they will have their own unique tolerances towards risk and objectives for proďŹ t from each trade. We believe that everyone needs to understand the discipline of trading alongside the patience and persistence that is required to trade proďŹ tably. Day Traders must be willing to accept losses as well as take proďŹ ts. Knowing when to cut is as important a lesson as any trader will learn. Our traders also need to understand the need to be able to specialise in what they do so as to remain focused and committed to the trades. In essence we seek to help traders identify their emotional traits and then train them and help them to manage their emotions. What are the essential qualities of a successful Day Trader? We believe that to get to a level of expertise in the market, you need to understand the key qualities of a successful Day Trader. Despite the fact that day trading is the most speculative of aggrieve trading activities, the Day Trader trading futures who understands the demands of his trade is in fact the sharpshooter of speculation. With the proper preparation, the Day Trader can take aim and bag his prize and in so doing make a comfortable living. Indeed many make a signiďŹ cantly comfortable living and enjoy often untold wealth. The demands of day trading, however, are primarily psychological and character-driven, requiring strength of character and individual qualities including self-discipline, persistence, toughness, commitment and an ability and willingness to focus energy on a limited arena of activity. It is not the difďŹ culty of Day Trading which limits the ďŹ eld but the ability and willingness of Day Traders to live by the personal requirements of the business.

THE LANES GALLERY IS A RELATIVE NEWCOMER TO THE BRIGHTON SCENE BUT ONE THAT IS RAPIDLY BUILDING AN IMPRESSIVE PORTFOLIO FROM ARTISTS ACROSS THE UK. TO FIND OUT MORE WE CAUGHT UP WITH OWNER NATHAN DAVIES How long has the gallery actually been around? The Lanes Gallery originally opened in Meeting House Lane three years ago as Cry of the Gulls in conjunction with my parents who also have a gallery in Cornwall. In June this year I bought the gallery from them and re-named it The Lanes Gallery. It’s a process of evolution now, retaining the best of the old gallery and adding new work to make it even better. What’s the ethos of the gallery? It’s a friendly, welcoming gallery. We offer a bright calm space where it is possible to find high quality work at affordable prices. Our staff are knowledgeable and helpful. Our artists are selected for their originality, technical expertise, and the quality of their work. We show fine art, hand-made jewellery, amazing ceramics, stunning sculpture and textiles. It’s a great place to buy unusual gifts; you will always find something different in our gallery. What’s on the cards for the future? We will continue to source fantastic new work by our existing artists, always looking out for new makers to add to our collection and will hold regular gallery based exhibitions with our artists. We will be developing our website (thelanesgallery.co.uk)
in the New Year to include an online shop so that people can explore and buy our artists’ work online. We will also participate in more shows and art fairs throughout the UK next year. I also hope to find time to do more of my own painting, so I guess the future will be very busy. And your link with Brighton? I was born in Gloucestershire, which is very different to Brighton. I met my wife, who is from Brighton, whilst at university and we have lived here for the past ten years apart from a brief spell in Cornwall where I was able to spend more time developing my own painting. We settled back in the area a few years ago now, our daughter attends a local primary school and we love living and working here. There is so much to do in and around Brighton, it’s a very stimulating area. As an artist and gallery owner I love it. â&#x20AC;&#x2DC;â&#x20AC;&#x2122;Itâ&#x20AC;&#x2122;ll all be over by Christmas...â&#x20AC;&#x2122;â&#x20AC;&#x2122; The words of hope repeated by many in September 1939 when it was announced we would indeed once more be going to war. Instead of lasting just a few months, World War Two was to go on for years.
So, 1940 was a real wartime Christmas â&#x20AC;&#x201C; hope of an easy war had faded, men were wounded or dying and London was ďŹ ghting the constant bombardment of the Blitz. Britain was under siege. However, a break in bombing over the Christmas period provided a short but much needed period of respite and a boost to morale for the coming year.
Times were hard, rationing had been in place for over a year (although, a week before Christmas the tea and sugar ration was raised as a festive gesture of good will!) and practical gifts were in vogue. From gas masks to garden tools, any present with a practical element was appreciated. The most popular gift for Christmas 1940? Soap. Away from the brief festivities, league football was considered a morale booster for a population under aerial bombardment and the threat of invasion and therefore the usual seasonal football matches did take place during these war years. However, many players were in the services and transport problems also meant that long-distance ďŹ xtures posed a problem. Brighton, though, was not discouraged. Albionâ&#x20AC;&#x2122;s Directors issued an appeal for youngsters to take the places of players called up for military service. The appeal seemed successful and the boys were called to do the menâ&#x20AC;&#x2122;s jobs as was typical of the time. Fixtures were set and matches were played â&#x20AC;&#x201C; despite frequent interruptions from air raids.

Many league matches during 1940, like one agreed with Arsenal, were cancelled at the last minute due to ďŹ nancial problems and the threats from the sky. Even those that were successfully started were not always ďŹ nished! At the height of the Battle of Britain, Albion played Southampton and were on the pitch a mere three minutes before the match was abandoned. The peace of the Christmas period allowed for an away match against Norwich on Christmas Day, an event set to spark excitement. Unfortunately, it was a match doomed to be remarkable for all the wrong reasons... Arrangements were made for the ďŹ ve players based locally to travel to Norwich on Christmas Eve and meet the remaining seven (coming from other areas) in time for kick off on Christmas Day. But when the ďŹ ve arrived, the others were nowhere to be found. Despite their depleted team, the dedicated ďŹ ve did not give up hope. Before the game, stewards walked the grounds appealing for players and advertising the available positions. On home turf it would have been a different story, but with a ground full of Norwich supporters, Albion drew a very short straw. The stewards eventually managed to recruit six further players, some guesting from neighbouring Bolton and others amateur supporters.
It was the scene of Albionâ&#x20AC;&#x2122;s heaviest league defeat with a ďŹ nal score of 18-0; an utterly extraordinary match. A case, perhaps, of half the team quite literally playing for the other side. 62
