loCAl BoY hAS lIFe ChANGING oPerATIoN IN The US Emre Souleiman is a 5 year old with Cerebral PalsySpastic Diplegia who flew to America to have a life changing operation which will hopefully enable him to become independent and one day walk. Feray, the boy’s mother was looking at all the options possible to give her son the best possible chance in life. The operation, called Selective Dorsal Rhizotomy provides children with the ability to walk, permanently reduce spasticity and have flat feet, it is not available in the UK and on the NHS. They do approximately between 3-6 a year here which is privately funded by the family yet in America, the renowned Dr Park is doing 3 a day. So many children have benefited and had their lives changed by this, you only have to look on YouTube to see the before and after videos. Feray contacted us a while ago to raise awareness of this operation. It was great to hear from Feray again to inform us that the operation was performed successfully by Dr park at St Louis hospital in Missouri. The boy was tip toeing like a ballerina unable to walk or stand independently and using a Kaye walker and just dragging his feet. Since the operation he is walking properly with an assisted device until his legs build up more strength and the Dr has given a prognosis that the child will walk independently within 6/12 months. This is amazing in itself. This technique is not available in the UK and so 3-4 British families a week are going to America to have this operation done which costs £28k, however with travelling, hotel and physio, the figure is around £40£45k. Another royal waive for Street Parties It’s good news for Hertfordshire residents as your local county council announces road closure fees will be waived once again for the Queen’s Diamond Jubilee bank holiday in June 2012. Having waived fees for royal wedding street parties, Hertfordshire topped national tables with nearly 300 street parties held around the county on the day of the royal wedding this year. Announcing the news about the Jubilee bank holiday in the latest edition Horizons (the council’s community magazine), Leader of Hertfordshire County Council Robert Gordon said: “Our approach to royal wedding street parties cut through red tape so that more people could enjoy the big day. Judging from the photographs and stories we’ve received, a good time was had by all and new friendships were formed that will brighten everyday-life long after the last string of bunting has been taken down. “If you missed out this year, or want to do it all over again, the good news is that the Queen’s Diamond Jubilee in June 2012 will also be marked by a bank holiday. I’m pleased to announce that once again your local county council will waive the fee for road closure applications that day - building our reputation as a county that knows how to celebrate in style.” The additional bank holiday for the Queen’s Diamond Jubilee will fall in the first weekend in June 2012.

The main site, Herts Memories, is the site for people throughout the county to add their memories. A further eight websites cover some of the newer towns and communities in the area. Out of these, the sites for Welwyn Garden City, Broxbourne, Hatfield, Hertford and Ware, Stevenage, Oxhey and Letchworth have been launched. The Site for Dacorum will be starting later this year. Each website has a team of volunteer editors who help to develop the design of the website. Variety and Horse riding introducing Marilyn Tuck – Clinical Hypnotherapist Welcome Tewin readers, after writing for Village Life Hitchin for some years I am pleased a new Village Life has sprung up for you. I live inbetween at Knebworth. The fun in Marilyn Tuck’s work is the variety. People see her for all sorts of things: snoring, teeth grinding, and sleeping; flying, needles, thunder and claustro phobias; finding, mending and improving relationships; and, as she mentioned before, emotional stressy stuff that brings on anxiety, anger, sadness, comfort eating, drinking and smoking. Often entwined these can be unpicked and leave a person really pleasantly changed within a few weeks, or a few months. The trick is motivation, want to do it, ask for help, and then let it happen.

I

love working with sports and creative people too. They so know what they want to improve. Whether it be a better lap time, a more consistent round of golf, a new technique, dealing with self-consciousness during a performance, a higher note sung, focus to finish a book… there is so much fun in helping them achieve. This brings me to horse riding. I admire people with horses, they have the tenacity and figures to prove their daily commitment and responsibility. However, I do have riders come who have lost confidence, are scared, anxious and not riding. They are thinking about having to sell their horse, and yet they really want to ride. Jo was one such person. Her lovely, patient, horse was spooked one day, and took off. She couldn’t stop him. It was really frightening, she very nearly fell off. After that she was fearful about riding him out on her own. That was three months ago. As well as acute anxiety she also felt guilt and anger that she hadn’t controlled him. Someone at the stable had been to see me about her fear of cantering and was really appreciative of the results. She and 6

Jo talked and Jo gave me a call. I always take the time to get the full picture. Jo was all tense. We needed to release some negative tension and started the process with some tapping on her energy lines. EFT (emotional Freedom Technique) works a treat for emotional release. She came back for her second session and reported how much calmer she had been, including a riding lesson that went really well, some unusually calm behaviour at home and at work. She was feeling pretty pleased with herself already. In her second session we dealt with the horse incident and this brought up another anxiety issue from way back. She felt the release and it felt good. She once again

left smiling. I was proud of her, she was ready for this. Hypnotherapy followed a week later and she was able to go riding afterwards on her own and feel more in control. Our next goal is to deal with her fear of riding without stirrups. I have no doubt that her new confidence will ensure she enjoys riding, and over time various other things she hadn’t even anticipated will improve too. This is such positive work! stablished in 1982, Acoline Water Softeners is an independent family run business that sells, maintains and repairs Water Softeners and drinking water filters.The business was setup by the parents of Graham Wilkes. At the age of 14, Graham started helping his parents with the business at weekends and school holidays. The Horns Pub

S

tanding in the centre of the hamlet of Bulls Green, Datchworth, The Horns is arguably the oldest in a cluster of buildings dating back toTudor times. Experts dateThe Horns to 1543. Now pleasantly refurbished, the Horns retains many of its 500-yearold features:Tudor beams, open fireplaces, vaulted ceilings and ancient doors. The ethos of the pub is to offer simple home cooked food with the best ingredients possible made to a very high standard and in a great atmosphere. All main ingredients are sourced locally (meat from Oaklands, fruit and vegetables from Welwyn) and they grow their own tomatoes, strawberries, courgettes and herbs. Landlord Mark Butcher and his wife Corinna took over the pub 12 months ago. Having spent the last 20 years working at prestige food venues in London’s Grosvenor 10

Square, Covent garden and Mayfair, Mark decided he wanted to move to the country and the Horns gave him the perfect opportunity to do this.The Head Chef – David Crozat has worked with Mark for the last 16 years and decided to join Mark, swapping city restaurants for a country pub kitchen. As a traditional English country pub the menu is quintessentially English and there are some fantastic starters including Potted Crab,Whitebait and Jellied Ham Terrine.The main courses include T-Bone Steak, Roasted Cod Loin,Warm Asparagus and Artichoke tart, Slow Roasted Lamb Shoulder Shepherd’s Pie and a selection of home made soups. The dishes are very labour intensive, the Shepherd’s Pie for example takes 30 hours to make; the shoulder of lamb is cooked for 24 hours at a very low heat, shredded, combined with celery, carrots and onions, port and red wine and the result is a delicious pie.You can also enjoy Beef and Guinness,Turkey and Ham and Chicken and Tarragon pies. Desserts include Fruit Crumble and Custard (with rotating fillings of raspberry, rhubarb and orange and gooseberry), Lemon Posset served with Fruit Culi and British Cheeseboard. There is a specials board which changes daily where you will always find a fish option such as Pan fried Sea Bass,

and dishes such as Pork Belly served with wilted spinach and half a baked apple.The Pork is soaked in Brine for a week then roasted, giving a crispy top and tender meat that melts in the mouth. Sunday lunch offers a choice of three meats with potatoes, carrots, braised cabbage, carrot and suede mash, a yorkshire pudding and home-made gravy.The portions are generous and the price is just £11 for adults and £6.45 for children. You will find Adams Best, Sharps Doombar and Charles Wells Bombardier with regular guest beers on rotation and Lagers on tap including Fosters, Becks and Stella. There is a selection of bottled beers including Budweiser, Corona, Bulmers Original and Bulmers Pear Cider and non-alcoholic Becks Blue.There is also a good selection of wines with some available by the glass. As a local pub, Mark is keen to put something back in to the local community and sponsors the local children’s cricket team. He recently did a beer festival and all funds raised went to the Datchworth PTA On the August Bank Holiday, there will be a beer festival starting Friday night and all day Saturday and Sunday where you can sample 18 real ales, 4 ciders and enjoy a Hog Roast and BBQ with live music and face painting for children. There is a good size garden and the pub is available for private functions with food from buffets to seven course meals and everything in between depending on budget. Families and children are very welcome and the pub is dog friendly with water stations and biscuits available. Opening hours are Monday to Friday 12pm - 3pm, 5.30pm to 11pm, Saturday 12pm - 11pm and Sunday 12pm - 7pm. August 2011

The Horns is a great English pub, full of character and old world charm. It offers good home cooked food without the fuss and with many of the mains courses under £10, it is also excellent value. Meeting Mark was a real pleasure, he is very enthusiastic and his passion and vision for the Horns shines through. I would highly recommend popping in for a meal or for a few relaxing drinks. he Maldives is a group of low-lying coral islands, forming an archipelago of 26 major atolls, situated south west of Sri Lanka.A small percentage of the islands are inhabited and 87 are exclusive resorts boasting tropical landscapes hugged by pictureperfect beaches covered in palm trees.The islands are surrounded by coral reefs enclosing shallow lagoons and the clear blue sea is perfect for snorkelling or diving. Saying that we travelled to the Maldives in July during our honeymoon and were very lucky as we only experienced one day of rain in ten days! The Benefits of your Will and Estate Planning

he truth is that you will not benefit directly from drafting a Will, unless you count the peace of mind that they provide.What is important is that your loved ones will benefit. A Will is not about you – it is about how you wish to provide for those around you; your children, family, friends and even causes that are close to your heart – after you are gone. he Hatfield Country Show this 19th-21st August is a great family day out – and this year, Kids Go Free on the first day of the Show. Book tickets in advance and save 25% on the gate price too. ON THE MENU

Confit de Canard This recipe was show to me by Mme Blanchard at Maison Charente in Tusson 16700 France where she produces some of the finest confit and foie gras produce. I’ve adapted this recipe for home by using an oven to confit rather than traditional stove method for safety SERVES THREE

Ingredients 6 cumin seeds 12 coriander seeds 3 juniper berries 50g flaky sea salt 6 duck leg and thigh joints 1 small bunch thyme 1 rosemary branch 1 unpeeled garlic clove, sliced, plus 1 whole garlic bulb, halved About 500g duck fat, or enough to totally submerge the duck legs 2 bay leaves 1 tspblack peppercorns Sel Rose 1 tsp pink peppercorns

Method The day before cooking, put the cumin and coriander seeds in a dry pan and toast until they are slightly coloured and aromatic. Remove to a board and crush them with the blade of a knife. Crush the juniper berries and mix with the spices and the salt. Rub the mixture over the duck, scatter with thyme, rosemary and sliced garlic and chill for 24 hrs, turning two or three times as they marinate. Next day, heat oven to 150C/130C fan/ gas 2. Wipe the duck with kitchen paper and pat dry, but don’t wash off the marinade. (The salt extracts the water from the meat cells, which will be reinflated with fat as the duck cooks gently. If you wash it, you will simply reinflate the cells with water.) Put the duck in a cast-iron casserole and cover with the goose fat or duck fat. Add the bay leaves and peppercorns and cook for about 2½ hrs, or until the meat is almost falling away from the bone. You can store the duck very simply by placing it in a pudding bowl, covering it with the fat and keeping it in the fridge: as long as it stays covered with fat it will last for weeks. To cook, remove the confit duck legs from their fat. Put an ovenproof frying pan on the stove until it is hot. Add the duck legs, skin-side down, and cook for 4 mins. Turn the legs and transfer the pan to the oven for 30 mins, until crisp. Served with creamy mashed potato and seasonal vegetables.

Dog Training Tips

We have a fresh monthly column starting this month written by Canine Behaviour and Training Expert Adem Fehmi. Adem runs his own company providing training and support to dog owners and will be giving us some tips on various techniques over the coming months.

This month we look at heelwork

W

ith a puppy at first slowly introduce the collar and lead (a light weight lead and collar is best).

Start your heelwork training in a quite area – remember no dog is born understanding heel, as an owner you must teach the dog what heel exactly means. Be sure to use an appropriate lead, one which is suitable for your particular dog.

Photography Tips

T

he single most important thing with photography is lighting, it’s easy on a bright sunny day however sunlight moves so you have to keep an eye on where it is in the sky.The worst thing you can do when taking photos of people is to position them with direct sunlight in their faces.You may feel that it’s the best light, but it’s very hard and direct, soon you’ll notice that everyone is squinting especially when the sun is low. As with the example shown here, to get around this simply turn everyone around so the sun is behind them. Instantly you can see the difference, as you’ll get a lovely soft look to the shot, with no squinting. Using this method can bring beautiful results, but there are some things to remember. As the sun is now pointing at the camera, watch out for lens flares, which is light being scattered throughout the lens like a prism.Try to hide the sun behind a subject, building or tree. Also keep in mind that the subject is backlit so the background will be brighter than the subject. As the camera will take its exposure reading based on the brighter background, try to increase the exposure level as under exposure of the subject could occur. Start your training with the dog on the handlers left and use right turns, encouraging your dog into the heel position before praising enthusiastically with food, affection or play. As training develops use small left hand circles again with the dog on the handlers left. Increase the size of the left hand circles as the dog becomes more consistent. As the dog becomes more consistent and comfortable with the heel position use right hand circles, this will give the dog a chance to be on the handlers outside. Eventually the handler can break from the circles and walk in a straight line with the dog at heel.
