Honey Glazed Root Root Vegetables with Saffron One of the pleasures of a winter garden as well as the array of seasonal vegetables on offer at the local farm shops are the root vegetables. Mounds of rosy beetroot peeps out amongst slender pale green leeks and knobbly swedes, whilst purple topped turnips vie for position with freshly dug carrots. Sacks of onions and boxes of shallots offer up visions of steaming soups with cheesy croutons and freshly cut spouts, still on their stalks, are piled high on an old wooden wheelbarrow... Christmas may be over, but I am still drawn to buying a stalk or two, as they keep for weeks outside and you have a constant supply of fresh nutty sprouts on tap, which is one of my favourite vegetables The root recipe I would like to share with you today however, is a special one to brighten up your winter Sunday lunch or mid-week family supper, it’s one of my family’s favourite recipes and has just a hint of sunshine in it, in the form of saffron and honey – Honey-Glazed Roasted Roots with Saffron – a plate of these on the family dinner table adds colour, earthy sweetness and a hint of festivity long after the celebrations of Christmas and the New Year. These roasted root vegetables are undoubtedly very special, and they are so easy to roast as they require NO par-boiling beforehand. A simple glaze is made by adding saffron to melted honey, before sprinkling cumin and celery seeds over the top – slam them in the oven, and pour yourself a glass of wine!

Ingredients (Serves 6-8)
Method
6 large carrots, peeled and cut into 1-inch
1. Take a large roasting tray, one that will take the vegetables in one layer, and add the olive oil to it, then heat the oil in the oven for about 5 minutes until very hot.
chunks 6 large parsnips, peeled and cut into 2-inch lengths 6 -12 pink shallots, peeled and halved if very large 1 -2 tablespoon olive oil 1 -2 tablespoon honey, to taste heated through until runny 3 g powdered saffron or 6 -12 saffron threads, softened in a little warm water 2 teaspoons cumin seeds 2 teaspoons celery seeds chopped lovage (to garnish) or parsley (to garnish) sea salt black pepper
2. Take the tray out and add the prepared vegetables immediately, tossing them around to get a good coating of oil, put them back in the oven and roast them for 30 minutes. 3. Meanwhile, heat up the honey in a small saucepan or in the microwave and add the softened saffron threads or saffron powder – mix well. 4. After 30 minutes, take the vegetables out and add the honey and saffron, pouring over the vegetables and turning them around to make sure that all have an even coating of the mixture. 5. Sprinkle the cumin seeds, celery seeds, sea salt and black pepper to taste over the top and give them a quick mix again, before putting them back into the oven for a further 20 to 30 minutes, or until the vegetables are soft, glazed and tinged brown at the edges. 6. Serve them in an attractive serving bowl and sprinkle with chopped lovage or parsley.

The Hub Café Upper Beeding Reviewed by Katie Downes
T
he Hub on Church Street Upper Beeding, is a very jolly place to be! I joined one of the café founders Vicki Butchers for a latte, a seasonal gingerbread latte no less for a chat about the café and what its all about! Opening for the first time a year ago in January, it has proved a great success. Opening daily it is a community café run by volunteers, with all profit going back into the community. Once cost has been covered for the café, monies are donated to benefit the community. Last year for example £700 was raised for the local primary school in the summer, to help their outdoor building project and at the last school fete the Hub held an outdoor Hub Café with all profits being sent back to the school! Even though the café is run by volunteers at the Baptist Church in their building which they call The Hub, you do not have to be from any particular religious persuasion to visit, truly everyone, is welcome, from the tiny tots to the seniors, all are very very welcome. Come on your own or come to meet friends there will always be someone you can chat to. The café itself has a very friendly non cliquey, relaxed vibe, kind of like your favourite local where you wouldn’t feel strange sitting alone. The café holds many extra activities, such as in the half terms and holidays with workshops for the preschoolers, with marble runs and craft workshops. If you wish to come to an event or workshop with religious meaning, for example the gingerbread nativities to learn about the true meaning of Christmas, then that’s great, and if you don’t think that’s for you, then that is fine too, no one is religiously obligated in any way, it really is just
a lovely place to come and relax in friendly surroundings. The menu is just right for a café, with different flavoured lattes, teas and even the now requisite baby chinos on offer and the most delicious looking homemade cakes, brownies and yummy mince pies all at pretty much half the price of high street purveyors it really is great value for money! There are family and senior community support workers around for you to chat to, who will help you with any problems you may be having finding out what’s going on locally for you. Youth nights are held once a week enabling the youngsters to get to grips with barista’ – ing, and they have the opportunity to volunteer and help out on a Saturday which is great experience. Unfortunately in this modern world we live in loneliness is still a big problem and places such as the hub are great at bringing everyone together… quite honestly there should be one in every town and village. What a fantastic idea! The Opening hours are Monday to Friday from 9am to 12 noon and Saturdays from 10am to 12, but keep your eyes open for any of the extra times and dates that you think might suit you. or me, the beginning of the New Year is always the time to look at my health and fitness. Once again I will have over indulged during the festive period and need the extra inspiration and determination that January 1st seems to offer to righten that. With my first half marathon entered in February, I feel it is even more important to really get to grips with this as soon as I can. And this New Year I’m pleased to say, I won’t be tackling it alone. A conversation with my lovely Body Step instructor Diane Eggitt opened the door for me to her KISS fatloss formula which she launches in January at her F-Factor Fitness Bootcamps. My two New Year resolutions can be tackled in one go – result! KISS stands for Keeping it Super Simple. There is so much information around on diet, exercise and mental health, it can get overwhelming. But with this all offered by Diane in one package, the hard part is already done. We caught up after a bootcamp training session so Diane could explain more about each dimension and how we can all …
Nutrition: Diane bans the word ‘diet’. Good nutrition, she explained, is about
making the most out of each meal by packing it full of nutrients that will make you feel great and fuel your body in the best possible way. By giving your body the “right” stuff you can help prevent carb cravings and that afternoon lull that leaves you reaching for the next chocolate bar (how did she know about my 3pm habit?!). So much of what we do can be effected by our nutrition. Fitness, energy levels, sleep, stress, digestive problems, hormonal problems and of course weight loss. By being smart and eating right, the weight loss will just be a by-product of what you are doing. There is so much strange and conflicting information available and a lot of people think they already eat a healthy diet. Most of the so called “diet” foods in the supermarkets are far from healthy and will leave you feeling unsatisfied and ultimately tired. That just isn’t fair! They will not give you the energy you need. If you fuel your body right, you should feel great. Fuel it wrong and it’s like putting diesel in a petrol engine! How many times have you been on a so called “diet” and felt great!? Diane can help you by encouraging you to eat the right foods, and there will not be a low fat, diet, lite option in sight. With nutrition, fully covered, Diane moved on to tell me about the mind-set element. She started by using the words “we take each day at a time and set small realistic goals”. As an individual, we need to know “why”. Why do you want to get to your specific goal, be it weight loss or fitness or both? With a strong enough Why, you can tolerate any How. What goal(s) have you set for yourself in 2014? Weight loss? On this subject Diane explained that just saying “I want to lose weight” is not specific enough. You need to state how much and by when. Why do you want to lose weight, how will it make you feel when you get to your goal? How will you look, what clothes will you be wearing, and what will your friends and family be saying? Quite simply – if you don’t name your goal, you won’t get your goal. Same applies to fitness goals, just saying “I want to be fitter” is not enough. Fitter to be able to run a 10k race, fitter to be able to do full press ups, fitter to be able to play with your children, to play football or go out on a bike ride.?” It made sense and made me consider my newly found enjoyment of running and why I wanted to enter a half marathon, and more importantly, how I was going to achieve finishing it! We then spoke about the training element. Diane said that for maximum results in minimum time, short sharp bursts of intense exercise are the way to go. At her bootcamp (not as scary as its sounds I promise), movement based body weight resistance training is done. By using your own bodyweight to carry

out different exercises, you create something called metabolic disturbance. This in turn creates the afterburn. It’s not about how many calories you burn during the workout – it’s about how long you continue to burn them for afterwards. Three lots of 45 minute workouts a week is all you need to do. Further down the line you may want to do extra but that is up to you. And please note – you don’t need to be doing something every day. Over a 4 week period the workouts are structured so you get the most out of them. It’s about quality not quantity. No equipment needed, just you, some energy, a can do attitude and you will be on your way to your goal! If you are not don’t want to enter a gym environment then Giles is able to provide the tools required to beat the bulge with the option to train in a relaxing one on one environment or even share the session with a friend (which can be fun). ur dog Lexi has her nails trimmed as a necessity. At the one stop pets’ emporium Just Paws, at her last appointment I got chatting to Emily who runs the salon and found out about all the other treatments on offer. Pet pampering is a big business at the moment and various degrees of pooch styling have been seen on television recently! (Apparently on a certain Essex show). But you really must be careful to ensure you go to premises where staff are qualified and have the animals interest at heart. It is all very well having a fabulous look for your pet but please make sure that the right products are being used by people who know what they are doing. Just Paws is just the place! – I thought that Lexi may like an extra pamper (she doesn’t like a nail clip) so took her along for a session. She enjoyed her blueberry facial and had a wonderful bath and hair wash in the firm but gentle hands of the lovely Carole, she then had her nails painted in sparkly gold and some Christmassy earrings stuck on! Emily sprayed her a seasonal tattoo using a cherry template. These tattoos can last a good few weeks and look fabulous! All products used are animal safe and administered properly by professionals. Bearing in mind that Lexi, is a lurcher cross and by nature slightly nervous she thoroughly enjoyed her experience and we will be back for more! I’m not sure that she will have another temporary tattoo but she will definitely be back for a facial and wash! Emily has been working full time at Just Paws since 2007 and has built up a good reputation with her clientèle. After completing her training in 2005, she left college having obtained her City and Guilds Advanced Certificate in Dog Grooming (7750). Always looking for ways to improveher grooming skills, Emily attends seminars all around the country. She also regularly competes at national grooming competitions with many placements including being a finalist for young groomer of the year 2010. As well as this, her grooms have been seen in the national papers! Emily’s own dogs – bo bo (German spitz), Todd (Miniature Poodle), Lottie (Standard Poodle) and Boris (Lab Poodle cross) – are all regular faces at the salon, often showing off their new grooming styles. Emily is highly qualified and passionate about her job, she holds the following qualifications – City and Guilds Level 2, Dog Grooming Assistant and City and Guilds Level 3 Diploma in Professional Dog Grooming. She was the first person to qualify as a Master certified in professional creative grooming and pet first aid and Emily was also 2012 Creative Stylist of the Year! Tracy has the City and Guilds Level 2 Dog Grooming Assistant and City and a Guilds Level 3 Diploma in professional dog Grooming whilst Monique and Carol have their City and Guilds Level 2 Dog Grooming Assistant and they are working on their Llevel 3 diploma in Professional Dog Grooming. Just Paws are involved in helping out with the dogs Rehoming charity – the newest member of staff Tracy has been giving up her free time for years to help out at the Allsorts dog rescue. Allsorts is primarily setup to find homes for unwanted, unloved and abandoned dogs in Sussex. Many dogs are strays that have been picked up by various local councils and passed onto us for re-homing. In some cases we take dogs that are 24 hours or less away from being destroyed.We do not normally acknowledge this when advertising a dog as we do not want anyone to re-home a dog simply because they believe they are saving its life. They also re-home dogs for people that contact directly with a problem.This is usually a relationship breakdown, a death in the family or serious illness. Occasionally it will be something trite. BUT, we always put the dogs interest first. Local Charities benefit from
Storrington Village Day Following a very successful Village Day event in June, cheque donations totalling £2,400 have been presented to a number of local charities in Storrington. This was an opportunity to say thank you to these organisations that do so much in the Storrington community and to use surplus funds from the community Village Day to provide them with some practical help. The following donations were made: SPLASH – Village Day provides funding for the ‘Generate’ Youth Club that meets in the Methodist Church hall. This further donation will help towards Leadership Training projects at the club. 2464 Squadron Storrington Air Training Corps – The ATC is a very active Corps in Storrington and does a fantastic job at Village Day helping with car parking. The donation will be used for training purposes. The Hooper & Downer Educational Foundation – The donation will be used by the Foundation to help support the educational needs of local children and young people from needy backgrounds. Storrington in Bloom – This year Storrington was awarded a Silver Gilt medal in the South East in Bloom competition. The donation will help the organisers extend their community involvement next year by encouraging young people to create floral wheelbarrows to be displayed around the village. On behalf of the Storrington Village Day committee, its Chairman, Rotarian Norman Boyland, thanked the recipient
organisations and their leaders, many of whom are volunteers, for the work they do with young people from the community. “It is great to see money raised at this very popular community event going straight back into supporting our young people in Storrington.” Norman also thanked the events’ organiser – Rotary Club of Storrington & Pulborough District and Chanctonbury Lions Club – and principal sponsors: Fowlers Estate Agents, Waitrose, Caffyns and Yeomans whose help in various ways enables the committee to invest up-front in bands and other attractions. The committee wants to see as many groups and organisations as possible becoming involved and exhibiting at next year’s event which will be held on Saturday 21st June. NATIONAL TRUST FIRE AND SCULPTURE COMES TO NYMANS 11 January – 19 February, with Evening of Fire on 19 February Internationally acclaimed French artist Denis Tricot gently transforms landscapes and buildings across the world with his beautiful, undulating wooden sculptures. Discover his creation at Nymans this winter – elegant waves and arches of poplar wood that weave their way across lawns and into the romantic ruins of the house. To mark the anniversary of the fire that destroyed Nymans – the Messel’s family home – the sculpture will be dramatically set ablaze in darkness on 19 February, accompanied by the haunting and beautiful Hungarian gypsy music of cellist and singer Vania Dombrovszky, in a live concert. Inspired by the architecture that surrounds them, Tricot’s sculptures forge pathways of flowing curves, gently turning familiar sites into temporary art galleries: ‘sculpting the air’ as Denis Tricot himself calls it. This latest creation is Tricot’s interpretation of the story of Nymans. Changing Unwanted Habits with Hypnotherapy
F
irstly, here’s wishing all readers a happy New Year! The New Year is the point in time that many of us make a resolution that something in our life is going to be changed. Drink less, give up smoking, lose weight is a selection of the good intentions with which many people start the New Year When it comes to it, most individuals start off reasonably well, but then gradually drift back to the old habits. This is because the mindset that kept the habit(s) in play has not been altered. Something in our subconscious mind works against our very good intentions. The common factor in unwanted habits is that there is conflict between the individual’s conscious and subconscious thoughts. The subconscious mind controls about 90% of our activities and where there is conflict with the conscious mind, it usually wins out. To effect change, it is necessary to deal with the subconscious thoughts that allow the unwanted behaviours to continue and this is where Hypnotherapy is highly effective
Many habits often develop from childhood, but sometimes begin in adulthood. Habits are normally formed with regular repetition of a pattern, or behaviour, which over time becomes automatic and are effortlessly carried out by the subconscious mind with little effort from the conscious mind. Over time the person may be barely aware of its presence and it becomes an automatic response. With hypnotherapy, the first target of treatment is to identify what has happened and/or is still going on that maintains the problem. Most of the problems exist at subconscious level; whether it is smoking, OCD or any other unwanted habit. Having identified the nature of the problem, the skill of the hypnotherapist is in creating a treatment plan which addresses all of the issues concerned. Treatment will generally include some of the following:• Identifying and rectifying the origins of the habit(s). • Raising awareness by changing the habit from an ‘unconscious’ to a
‘conscious’ behaviour, since habits are an unconscious response, i.e. ‘I’m watching TV and before I’m even aware I’ve starting biting my nails’. • Helping the client to Find more effective ways to relax or unwind, possibly including self-hypnosis • Breaking the ‘loop’ of the habit by desensitising any triggers i.e. boredom, TV, stress, unhappiness, lack of confidence etc • Lowering levels of anxiety and other secondary effects, such as feelings of guilt, shame etc • Increasing feelings of confidence and helping the client to visualize life without the habit. • For youngsters, replacing a stubborn habit with another less damaging one .e.g. changing thumb sucking to finger pinching. A ‘Celebration of Life’ Ceremony
T
alking about death and funerals is not easy for people; it is something that society as a whole, in this country, does not feel overly comfortable with. It is an exceptionally emotive subject, but I feel that death is a very important part of life. We should celebrate the life of the person who has died in a specifically designed Celebration of Life service, rather than being mournful at their funeral service. You may not know that you do have a choice when it comes to actually arranging the funeral service. There is no legal requirement for a funeral to be conducted by a religious minister. You may feel uncomfortable with a religious ceremony, especially when the person who has died had no specific religion. A dignified Celebration of Life ceremony is the very last gift you can give to a person. It should be a time to celebrate that person’s life and a time to say ‘goodbye’ to them with dignity, love and respect. Each ceremony is unique, as unique as the person who has died and of course, as the life they have lived. It is created as a highly personal ceremony focussing solely on them. It should also fulfil the needs of the people closest to
them and the expectations of everyone attending the ceremony. There is no set format for creating these ceremonies. It can be created by you and/or your family, with me. Together, we will talk about the life of the deceased and discuss how you would like the ceremony to be. You may wish to have special music or songs played during the ceremony and perhaps include readings or poetry. Some people might also wish to add a prayer, psalm or sing a hymn, by way of including those members of the family who might feel that the ceremony is not ‘quite right’ without them. I will be able to advise and guide you through this process; interpreting your wishes and making practical suggestions regarding content, structure and timing of the ceremony. At a time when your emotions are extremely raw there is so much to think about and do in preparation for someone’s funeral. I am available to help you with these preparations or with the legal requirements surrounding a death should you need assistance After meeting with you, I will be able to write the tribute or, indeed, you may wish to do some part of it yourself. It is
also possible that other members of the family or close friends may wish to be involved in the tribute. Every family is different and not everyone will want the same style of ceremony. You may find that the deceased has already expressed certain wishes which family members are very keen to honour. Alternatively, the deceased’s family might wish to have a Celebration of Life ceremony in a larger venue which can be followed by a private family committal at the crematorium or a private burial at a cemetery. I can undertake a Celebration of Life ceremony almost anywhere, with the exception of a church or other religious building as I am not ordained. I realise that you may not be familiar with the concept of a Celebration of Life ceremony, but please be assured that I will liaise, throughout the whole process, with both yourself and your chosen Funeral Director.
