This month, we were lucky enough to enjoy a treatment at The Acupuncture Clinic, Western Road in Shoreham, with Fiona Murdoch Acupuncture, also called Tung’s Magic Points, is a style of acupuncture that was developed from old family systems that existed prior to the Chinese Culture Revolution.

Graduating as an Acupuncturist in November 2011 Fiona has been in private practice since then. With a BSc (hons) Acupuncture and a BSc Nursing, Fiona is insured, registered with environmental health, and a member of the the British Acupuncture Council. Acupuncture is a complementary medical practice that entails stimulating certain points on the body, most often with a needle penetrating the skin, to alleviate pain or to help treat various health conditions by putting tiny sterile needles into specific points on your body, with the aim of helping you feel better. Treating pain ranging from Period pain, insomnia, sciatica, back pain, anxiety and pregnancy migraines, arthritis, there is pretty much a treatment for any ailment, even the discomfort of hay fever. Fiona uses a combination of Traditional Chinese Medicine and Tung form of

The Chinese call the energy flowing through every cell “Qi”. In acupuncture, there are specific channels that flow on the surface of the body, and link deeper to internal organs. When Qi flows smoothly throughout the body there are no signs and symptoms of disease. Everyone has some form of Qi flow impairment, so we all need some help from time to time. Chinese medicine theory is profound in its understanding of this vital life force, the energy which makes your body work in specific ways. The modalities used to alter or change the functioning of Qi in the body are Acupuncture, Herbal Medicine, Massage, and most importantly diet and lifestyle. After filling in all the appropriate paperwork and talking in detail to Fiona about minor aches and pains I was experiencing, she got to work, the insertion of the needles does not hurt, even for the most squeamish of you out there, you have nothing to fear! Fiona is very calm, professional and knowledgeable, I felt completely relaxed and in good hands. The treatment itself lasts approximately half an hour and I have to say I felt amazing afterwards. I can highly recommend Fiona for treatment, please contact her to arrange a consultation at her beautifully still and calm clinic in Shoreham, she has a range of beautiful, natural products and candles for sale in her waiting room, I defy you to leave without at least one purchase!! Strawberry Curd Cheesecake

RECIPE • 2125

This is less of an actual cheesecake and more of a cheats baked cream cake if there was ever such a thing… but to me it actually tastes more like the traditional Jewish baked cheesecakes I ate as a kid than the horrible cloying so-called cheesecakes that you get in supermarkets and even at some restaurants. It manages to be thick and light at the same time and has just the right amount if sweet to sour ratio. I’ve used a homemade strawberry curd but you really could make this with any curd from lemon to rhubarb. This strawberry curd recipe is the easiest and most hassle-free curd recipe I’ve ever made… try it!just slightly denser.

Ingredients For the strawberry curd • 250g strawberries, hulled and roughly chopped • 185g caster sugar • 125g butter • 1 teaspoon grated orange zest • 1 tablespoon orange juice • 4 large, free range egg yolks For the base • 7 plain digestive biscuits – crushed • 50g butter – melted • 25g demerara sugar For the filling • 7 plain digestive biscuits – crushed • 50g butter – melted

Start with the strawberry curd by placing the strawberries in a saucepan with the sugar, butter, orange zest and orange juice. Stir over low heat until the butter has melted and the sugar dissolved. Simmer gently for 5 minutes, then remove from the heat, once cooled a little, whizz up with a stick blender until smooth. Lightly beat the egg yolks in a large bowl then, stirring constantly, slowly add the strawberry mixture in a thin stream. The mixture will thicken as you add it, then return to a low heat and cook for 2 minutes, stirring constantly. Do not allow the mixture to boil or the curd will separate. Pour into hot sterilized jars and seal while hot. Curd will keep in the refrigerator for up to 2 months. Once opened curd will keep, refrigerated, for 5 days. Preheat the oven to 180˚C and line the base of a 20cm round springform tin with baking parchment. In a bowl mix the crushed biscuits with the melted butter and sugar. Stir until all the biscuit is coated and then tip them into the tin and press into the base. Make the filling by whisking the eggs and sugar together until blended then pour in the cream, sift in the flour and whisk again until blended. Next stir in the lemon juice, zest and curd and whisk again until combined and smooth.

Pour the whole lot into the tin on top of the biscuit base and bake in the preheated oven for about 35-40 minutes, until the filling has set and is pale golden brown on top – remove from oven and set aside till coolfor the topping stir the curd into the yoghurt and spoon it onto the top of the cooled cheesecake, then layer the strawberries on top in a fashion that pleases you.
