Rhubarb & Blackberry Country Cake
350g flour A pinch of salt 1/2 teaspoon bicarb 50g caster sugar 75g butter 1 egg, preferably free range & organic 165ml milk, buttermilk or sour milk – 400g rhubarb, finely sliced 150g blackberries Egg wash (beaten egg & milk) 175-225g granulated sugar (150g if you like your rhubarb tart) Caster sugar for sprinkling

1 x 25.5cm (10 inch) enamel or Pyrex plate (I actually used a flat pie plate). Preheat the oven to 180C. Sieve the flour, salt, bicarb and caster sugar into a bowl and then rub in the butter until you have breadcrumbs. Whisk the egg and mix with the buttermilk or soured cream then make a well in the centre of the dry ingredients and pour in most of the liquid and mix to soft dough, add the remainder of the liquid if necessary. Sprinkle a little flour on your work surface, turn out the dough and pat gently into a round. Divide into two pieces and set one aside. Roll out one piece of dough and place it onto the pie plate but don’t trim it. Scatter the finely chopped rhubarb all over the base, egg-wash the edges and sprinkle the rhubarb with the granulated sugar. Roll out the other piece of dough until it is exactly the size to cover the plate, lift it on and press gently to seal the edges. I don’t bother to trim because I love all that golden crust but feel free to neaten it up as you like... make a hole in the centre for the steam to escape, egg-wash and sprinkle with a very small amount of sugar. Bake for 35 to 45 minutes or until the rhubarb is soft and the crust is golden. Leave it to sit for 15-20 minutes so that the juice can soak into the crust.

wners Jess and Gary, moved down to the idyllic town of Steyning from South London a few years ago, bringing with them their wealth of experience in retail, providing you with the opportunity to shop locally for fabulous fashion and exquisite pieces for your home, within budget and within reach! We caught up with Jess and got a bit of background info on who the inspiration is behind the scenes! “Spotted says what we do basically, we spot products that offer great design and functionality. We put a lot of time and effort into finding interesting products and we personally travel across Europe visiting fairs and designers in our quest to find new and imaginative items. Our aim is to create an ever changing collection of beautiful things that do everyday things well. I predominantly do the buying for the fashion side aided by my 9 year old daughter Sacha who’s an aspiring fashion designer. In the holidays Sacha will join me on my London buying trips
and it’s great to share this new venture with her. Sacha has wanted to be a fashion designer for over two years now and has a vast portfolio of designs which she hopes to have produced one day. The inspiration behind Spotted came from a desire to teach our young daughter that it is ok to be unique and different. Peer pressure can be a huge burden when growing up and we wanted her to appreciate design and not just opt for

ntroducing Tracy Milton the owner and principle therapist at Soothing Touch with over 12 years of experience, my business is established and run in the West Sussex area. My training started with standard Swedish body massage and then following completion of this I started my business (2012). One of my most popular treatments is the Hot stone massage therapy, which melts away tension, eases muscle stiffness and increases circulation and metabolism. Each hot stone massage treatment promotes deeper muscle relaxation through the placement of smooth, water-heated stones at key points on the body. This will also include a customised massage using the hot stones to work on problematic areas of the body which offers enhanced benefits. The premise behind hot stone massage therapy is that the direct heat of the stones relaxes muscles, allowing the therapist access to their deeper muscle layers. Combining hot stone protocols with a full body massage provides a very healing and effective experience. The hot stones also expand blood vessels, which encourages blood flow throughout the body. The hot
stones have a sedative effect that can relieve chronic pain, reduce stress and promote deep relaxation.
