Honey & Ginger Mojito I find that the key to making good cocktails is to have some basic ingredients and equipment items in your store cupboard just like you do with your everyday cooking...
As well as the obvious such as a cocktail shaker, a muddler and a bar spoon you will also need something sweet, something sour and something strong... a good quality sugar syrup is essential... this doesn’t have to be a fancy shop-bought product, it could be maple syrup, honey or simply 2 parts sugar dissolved into 1 part water. Lemons or limes for the sour and of course a nice dash of something alcoholic works well in most cocktails... oh and a good supply of ice! Here’s my riff on the classic Mojito using two of my favourite ingredients; honey and ginger! PER GLASS:
You will need a tall glass or jam jar, something

to bash the mint and ginger with such as a
Half a lime cut into wedges 2 teaspoons honey 100ml ginger beer 1 sprig mint (a few leaves) 1/2 thumb-sized piece of fresh ginger – peeled Plenty of crushed ice
muddler or pestle and a long spoon for twizzling. Place the mint, 3 wedges of lime, honey and ginger in the bottom of the glass and bash with your muddler until the lime is crushed and the ginger is bruised. Add the rum and bash it all together again then add the ice and top with ginger beer... use the long spoon to twizzle the ingredients together. Serve with a fresh wedge of lime and a garnish of mint.

How to be Happy – September Here in Britain, the 1st of September is officially classed as the beginning of autumn by weather reporters. That’s it, pack away the summer clothes, the summer is over. The children go back to school, various classes start, the shops are filling with grey and brown clothes, and the blackberries are rapidly ripening. For many it feels more like the beginning of a year than January 1st does. As we face this mini start in the year, I have a question... Are you enough? Enough for what? you ask. Enough to be a good person, enough to be a wonderful parent, a great friend, an excellent employer, or loving son or daughter. Are you enough, or do you feel you are inadequate? I was listening to a story the other evening about a famous and very wealthy actor living in Los Angeles (I guess there are a lot of those!). He had flashy cars in the drive, a beautiful mansion and had been married 4 times. However, he hated his house and neighbours, his wives had been a disappointment to him and he saw his BAFTA as a curse. It transpired that as a child in a poor family, his mother worked long hours and he every night, had to cook his Dad his dinner. His father never shared the food, or thanked him, in fact he treated him worse than the dog. Children are programmed to idolize their parents, that’s normal. So of course he blamed himself for his fathers behaviour, believing he was “not enough”.
He grew up feeling this deep inside. As an adult he was still trying to prove himself worthy to everyone, by surrounding himself with people or possessions that would never satisfy him. The film company he worked for eventually thrust a life coach upon him who learnt his story and saw the problem. Once he understood, and learnt to accept that he was enough, he started to live a more normal life and experience true happiness. We all go through times of feeling inadequate and we need to remind ourselves that actually, we are enough. To be happy, we need to know that. Here’s something to try for a month. Write on your bathroom mirror “I am enough”. Put it as a reminder on your ‘phone, stick it on the fridge or car dashboard, “I am enough”, and see how it affects you. If you have teenagers, they especially need this. They’ll protest of course, but you could challenge them to try it for a month. We are all amazing, unique human beings. We are powerful and capable of so much. We are certainly enough, we just forget sometimes. If you need a little reminder, give yourself a hug and say “I am enough”. I’d love to hear how that feels.

If you weren’t a teacher what would you be? I have no idea really. It is hard to say what I would be. There are lots of things that I would have liked to be, whether I would have had the skills or not is debatable! I would have loved to have worked in a museum or made props and models for films. It sounds like a cliché, but teaching is in my blood. Both my parents were, and quite a few family members still are. What was your favourite subject at school? Maths was my favourite and my main subject at university. I also have a real passion for science which I have been able to develop in post graduate study and research. Name your favourite book and film, and why? The original Brighton Rock. I wasn’t too keen on the new one. I love the book and the original does it justice. The Hiding Place by Corrie Ten Boom – each time I lend it out, I end up replacing it as I never get it back. It is inspirational and I wouldn’t wish to do it an injustice by trying to explain why. What is the one main thing that makes you proud to be head of your school? The children. They amaze us all. Working with them is a huge responsibility but extremely rewarding. With the new school year starting in September, what are you and your team particularly looking forward to? We are looking forwards to working together as a new team to do the very best we can for the children. The staff is excited at the prospect of working with new colleagues and new reception children. Both are great stories with interesting characters. What is the one main thing that makes you proud to be head of your school? The amazing people, adults and students, that I work with every day. It is a real privilege to be a head teacher. With the new school year starting in September, what are you and your team particularly looking forward to? Getting to know a great new bunch of students in Year 7 and in the sixth form.

If you weren’t a teacher what would you be? ‘That’s a tricky question. Life is full of opportunities. My passions are theology and philosophy and working in academics at university does appeal to me. On the other hand, I love writing and am currently working on film scripts too.’
If you weren’t a teacher what would you be? I think being a Headteacher is one of the best jobs you can have, but when I was younger I wanted to be a doctor, or a foreign news correspondent. My careers advisor at school recommended forestry or the military – great jobs but I’ve always suspected they had the wrong student in mind.
What was your favourite subject at school? ‘There were several. English, History and Politics were central to me. I did A-levels in all three and loved the courses very much. I suspect I would have studied anthropology at school, had it existed.’ Name your favourite book and film, and why? ‘ I love so many good books but, if pushed, Wuthering Heights stands high on my list. Its intensity, its vivid setting and the characters in it still fascinate me today; I read it when I was thirteen. There are many good films to see but certainly one of the top on the list would be Schindler’s List. It’s a tough piece to watch, but I find the story of Oscar Schindler’s moral courage utterly inspirational.’ What is the one main thing that makes you proud to be head of your school? ‘The pupils, every day. A school is about the girls and boys and seeing them grow and develop together as people. When I see a year 3 pupil who shows me a maths fraction they’ve successfully completed, or a Year 10 receives an essay prize – when I see a pupil stand up and sing on stage, whether they are pitch perfect or not, and glow with a sense of achievement – that’s when I feel proud to be a head and to be given the opportunity to work with them.’ With the new school year starting in September, what are you and your team particularly looking forward to? ‘We are looking forward to seeing more and more people come through our door to see what we do here. We are capturing people’s interest. June was very busy with prospective parents and I would encourage people to come and see what we have to offer. It’s a little bit different to the state sector and the public schools. We are Shoreham College.’
What was your favourite subject at school? I really liked Maths and Science, but most of all I love understanding the power of language and communication and disappearing into a great book, so English was my favourite and is the subject I now teach. Name your favourite book and film, and why? The film is easy, I love all the Bourne Identity films; I like tense, grip-the-edge-of-your-seat, action thrillers, and can watch the Jason Bourne films again and again. The book is harder, as I always have several on the go at one time. Bruce Chatwin’s ‘The Songlines’ has always been a favourite, but this year I reread the great American novelist John Williams’ ‘Stoner’ and cannot get it out of my head; so sad but hauntingly brilliant characterisation. What is the one main thing that makes you proud to be head of your school? I am incredibly proud of our school and our unique ‘Steyning Family’; we have dedicated staff and really supportive parents, and a great day and boarding provision. If I had to choose one thing it would be our students – they are superb: positive, engaging and determined to be ‘the best they can be’. They inspire me every day. With the new school year starting in September, what are you and your team particularly looking forward to? It is always great welcoming in our new students into year 7, 9 and 12, and our new students into Boarding, and seeing current students step up to our expectations of their new year group. This year is exciting as we really embed learning characteristics at the core of our school for our ‘journey to excellence’; we believe our students can achieve anything they want if they believe in themselves, get great teaching and support, and practice purposefully; key to this is supporting their development of the grit, growth mindset, curiosity and zest needed to ‘be the best they can be’.
