Truly Madly Cakey

ollowing on from the Macmillan charity coffee mornings that I’m sure many of you took part in this Autumn, Truly Madly Cakey, a local business set up by Kayleigh peters and Charlotte Lane in July 2012, are taking it one step further! since starting their company they have been really busy fulfilling orders from Virgin Holidays to Children birthday cake, saturday markets and absolutely everything in between. Being stay at home mums keeps them both very well grounded and gives them the drive and passion to succeed in everything they do. In August they decided to run an event to raise money for Macmillan, A cause that has affected both of their families, the girls felt that they both wanted to give something back and have decided that each year that Truly Madly Cakey trades they will help raise money for one charity a year. This year Truly Madly Cakey are hosting a Christmas shopping event to raise money for Macmillan on 17th November from 10am-3pm at pulborough Village Hall, free entry for all – with up to 20+ stall holders selling a variety of Christmas crafts such as soaps, Cupcakes, Christmas puddings, Cards, Vintage Home ware and Dog treats and many many more. We will also be running a raffle with some amazing prizes to be won. Please do go along and join the girls help raise as much money as possible for Macmillan. Council Tax Discount

esidents reminded to check entitlement to Council Tax discount REsIDENTs in the Horsham District who claim a single person discount on Council Tax are being asked to let Horsham District Council know if their circumstances change. At present, around 16,489 people in the Horsham District claim a single person discount which gives them 25 per cent off their Council Tax bill. The Council will soon begin an audit of claims to ensure the discount is only going to those residents who are entitled to it.The discount offers financial support to those people who live alone and genuinely need it.The audit is due to start in the next few weeks and will last for approximately five months. If residents’ circumstances have changed, or anyone would like to check that they are receiving the correct benefit, discount or exemption, please contact Horsham District Council on 01403 215555, email revenue@centralsussex.gov.uk or visit the website http://revsandbens.centralsussex.gov.uk

afari supper, A fantastic event was held in October, organised by steyning Friends of Chestnut Tree House children’s hospice Three steyning restaurants – Chez Joel, The sussex produce Company and White’s Bar and Kitchen took part in a novel and new idea for charity, and, for just £30 a ticket, you were able sample one delicious course at each of these restaurants helping raise vital funds for your local children’s hospice. A fun inclusive 3 course meal, with drinks, allowing you to enjoy the ambiance and cuisine of three of steyning’s favourite restaurants, in one meal! The 80 diners participating had a great time. Tickets were all sold by the end of August, and the 1st safari supper in steyning was a great success with requests being made to make it an Annual Event! With a fantastic Total monies raised last night for CTH = £920.11 it certainly was worth it, with brilliant fun being had by all. Keep your eyes peeled for the next event hosted for the charity Chestnut Tree House; it’s bound to be a good one!

Pretty in Pink(s) of Henfield After washing my hair with L’oreal products once again, this time from the Mythic oil range which is new on the market and completely amazing, my hair felt like silk for days!
O
n a sunny, wintry Saturday morning I ventured off to see the girls behind the sign Pinks – in Henfield. Donna Knight and Alison Pink have very recently, taken over as the proud owners of the salon. Donna, having managed NKhair as it was previously known for 6 years, and Alison who has been working locally in Steyning and Upper Beeding joined Donna just six weeks ago, having trained and worked together in the past. The girls had worked together over the years and made the decision to come to together and join forces, it certainly is one to be reckoned with! Donna has over 16 years of experience starting off as a trainee stylist and now with teacher training skills, runs the show with Ali, who has over 18 years’ worth of experience in the industry, 12 of which managing a salon in Henfield. Whilst there, I noticed that there was a warm, everyone welcome feeling and atmosphere to the salon, with young boys coming in for a Saturday haircut with their dads, to older
ladies having their usual, one customerl suffering from the night before was well anticipating her complimentary head massage with her hair wash!… And me, with my disastrous home-made attempt at a fringe (… I .am.not.a.hairdresser, repeat to self!) To cover up my botch job I had been sporting my daughter’s hair clips and hoping no one would notice, so far so good but the moment of truth had arrived and I had to show a professional what I had done! I could tell Emily was not particularly impressed and have now been made to promise never to attempt such a hairdressing task again…. So, Emily was set to get my barnet sorted, using the L’oreal Inoa ammonia free colour product she covered my hair and all the grey bits and the ahem, again, homemade attempts at hair colouring, saving a snippet so we can review what colour to go with next time, gradually lightening my hair and stripping back some of the years of self-colouring. We had a lovely chat, Emily is fabulous. She has been working at NK – now Pinks for the last few years and really likes it, she says it is actually a joy coming to work and clearly enjoys her job – a lot. After washing my hair with L’oreal products once again, this time from the Mythic oil range which is new on the market and completely amazing, my hair felt like silk for days! We set to the cut, and the fringe. With advice from the lovely Donna, I decided to keep the fringe and actually go shorter with it so it could be styled. Emily cut some layers in to lighten my hair but keep the length. I was given lots of styling advice on how to manage the fringe in a rush, and told that I could come back for a complementary fringe trim between cuts! Another treatment offered here is the Kerastraight – the ultimate Brazilian blow dry – perfect for those of you like me, prone to a touch of frizz that just don’t have time to get the straighteners out every day. a regular customer, and I recommend that if you haven’t been in already, that you do. It’s a really friendly, uplifting, relaxing, hub of positive energy and very skilled hair technicians. Both Donna and Ali, like to keep it fun and motivating for the staff, encouraging them and supporting them through training courses to keep them up to date with the latest techniques in colour and cut, and took the staff on an outing to Salon international , just to keep them all in the loop! Donna and Ali are really excited about the future of Pinks, its certainly looking good, and they would love to thank both old and new customers for all their ongoing support to the business! If you catch it in time there is a beautiful and bespoke hand spun spider’s web display in the window with handmade silver spun cobwebs by the brilliant Jen at Bay Trading! If you don’t manage to see the Halloween display, there will is another beautiful and unique one planned for Christmas… watch that space! Also worth having a look in store at the great Christmas gifts they have in stock! I am definitely putting L’oreal Mythic Oil range on mine!

This month’s make over is with the very lovely Pam Perceval-Maxwell, Games Maker (volunteer) at the Excel Centre... We just had to have one last Olympic sparkle before the year was out. Pam thoroughly enjoyed her time as a Games Maker and has been enjoying speaking about her experience in school assemblies. Pam, a Steyning resident, is retired and is a governor at Steyning C of E Primary School; she is also a publicity officer for the Steyning and District Branch of the Royal British Legion.

As pam’s skin was a little dehydrated, we used a liquid foundation by Carole Franck in ‘Ivory’. We applied a dusting of ‘gold’ Loose powder to set the foundation and ‘peony pink’ blusher on the cheek bones to define them. Highlighting pam’s brows first with a ‘Dusty Clove’ colour, we then used a ‘Mulled Wine’ colour to complement the ‘Very Berry’ lip liner and lip-gloss to create a warm and gentle look. We finished with ‘Kohl grey’ eyeliner and ‘Velvet Black’ mascara to accentuate her beautiful eyes.

Toad in the Hole
Ingredients Serves 2-3 people • 6 good quality pork sausages • 1 tbsp vegetable or sunflower oil • 3oz plain flour • 1 large egg • 125ml milk • Salt and pepper • 1 tsp dried herbs, eg sage or thyme
To Prepare 1. Begin by making the batter, sieve the flour into a bowl or jug, break the egg in and add the salt and pepper and your choice of dried herbs. 2. Next add the milk and whisk until you have a smooth batter. Cover and allow to rest for at least 30 minutes. 3. Arrange the sausages in a roasting tin and place in a moderate oven (160 c ) for 10 minutes. 4. Turn the oven up to 200 c and add a tablespoon of oil to the roasting tin if the sausages haven’t released much fat. Return to the oven to heat up this oil. 5. pour in the batter mixture and cook at the higher temperature for 30 minutes until risen, crusty and golden. serve with onion gravy and plenty of veg!

mmmm… Chocolate… Who can resist that temping morsel of delicious sweetness which melts in the mouth, leaving such a wonderful, lingering taste sensation? As a somewhat sweettoothed individual, imagine my delight when I was invited to take part in a Chocolate Making workshop curtsey of MyChocolate. I hadn’t heard of MyChocolate prior to this invitation and was eager to learn more about them. I discovered that the brains behind the Company was Hannah Saxton. Hannah is somewhat of a chocoholic but also a young entrepreneur. She took a gamble in the early 2000’s, leaving university early to start her own company. With the help of her saved student loan, she set up MyChocolate and ran chocolate making sessions from her small flat in London. Her spare time was spent reading books about business and chocolate, increasing her expertise in each subject as she went. To help fulfil her dream, Hannah worked as a waitress every evening to make ends meet. With an identified gap in the market, and her chocolate making sessions growing in popularity, in just eight years Hannah has not only been able to establish her own kitchens in the heart of London, but also create workshops further afield in Manchester and Brighton. Her firm works in partnership with the well-known and respected chocolate makers Green and Blacks. A match made in heaven! MyChocolate will also come to you should you wish to have a chocolate

making event at your office or home – the fully portable fun holds no limits! Having found out about the Company, it was time to try out the goods. My two hour treat was booked from 11am to 1pm on a Saturday at The Thistle Hotel in Brighton. The sessions for individuals currently run just at weekends, but for private parties and corporate events, times and days can be tailored to your requirements. Bounding up the stairs to the appropriate room (and burning some of those anticipated calories), I was warmly welcomed by Diana who was to be our chocolatier for the morning, together with her two assistants. There was a full house that morning with 16 of us eagerly anticipating our home made chocolate treats. The session kicked off with us introducing ourselves and letting the group know what our favourite chocolate was. There was a wide variety of well-known bars and makes mentioned but we soon came to the conclusion that pretty much any chocolate was acceptable! The mix of people there was interesting. Nearly everyone had received the experience as a gift – wedding, mother’s day, birthday and christmas. There was one lady from Folkestone, others from Burgess Hill, London, Hove and Brighton. It was a mix of age groups and sexes. We ‘broke the chocolate’ which would be melted and used to make our chocolate treats. But first a test whether we could identify poor quality chocolate from good. We each had two pieces to try and it was soon apparent
which was which. The lesser quality had a real grainy bitter taste and a few faces were pulled. The high quality was more creamy, less bitter and smoother. The smell of the pieces was different too – one more satisfying than the other. Then onto our first hands on experience with the gorgeous stuff – making a giant chocolate button. Diana showed us what to do and then, to add a bit of a competitive edge to

proceedings, she invited us to choose a topic – our buttons were to be decorated around this theme. After a little debate, we settled on James Bond. I am not the most artistic person on the planet and my attempt at creating Daniel Craig’s swimming trunks failed miserably. Someone kindly said ‘Oh you’ve done an ‘M’ – how clever.’ And that was as good as I got. The winner was to be chosen by Diana’s assistants but it was obvious to all that it would be the highly impressive martini shaped button with a marshmallow olive and white chocolate straw. I was tempted to tell you all I had made it. Shame on me! Diana let us have a little rest from chocolate making at this point and informatively talked to us about the history of chocolate, how it reached the UK, the different types available and which company made the first
chocolate bar in England for mass consumption. It wasn’t a lecture – she had us guessing the answers and in return, the person answering correctly got a little prize. With our history of chocolate knowledge vastly improved, it was time for more making. This time, chocolate truffles. Diana showed us how to make the inside of the truffle (called ganache), how to dip the ganache for a perfect covering, and then to decorate it. Working in pairs, we measured, mixed and piped out the ganache onto greaseproof paper. Once it had hardened slightly, we were able to dip and decorate. It was really satisfying making these from scratch. I felt inwardly impressed with my little truffles and couldn’t wait to try them. But before I could, the all-important button awards. And yes, the martini glass was the unanimous victor.
Diana then went on to show us a cocoa pod – much larger than I imagined, and how it was full of the cocoa beans. She explained where they grew and how they were harvested. We all tried a few flakes of the raw cocoa nibs – as good as an espresso any day! An interesting tip – look at the ingredients on your chocolate bar. It may say 70% cocoa, but you need to see what the other 30% is made up of. Give vegetable oil a huge berth. Our last exercise was to flavour chocolate. It was to be orange and we made one big bar to share. With the morning drawing to a close, we merrily packed our goods in pretty bags and boxes to take away and enjoy with friends and family. We all agreed how much we enjoyed ourselves and what a fantastic gift to have received.

Sylvan Oak Findon
I
was delighted to get the opportunity to review the sylvan Oak as I have been there several times this year and love the variety and range of dishes on offer, particularly as a non-meat eater. However to ensure I did just justice to the whole menu I took along a very willing carnivore friend, Madeline, to help test the full range of options on offer! The sylvan Oak opened in 2005 and nestles in the heart of Findon village. From the outside it looks quite small but inside it expands tardis like, opening up with two main seating areas – one bustling area close to the kitchen and bar with a quieter, more intimate area at the front. A beamed ceiling at the rear of the restaurant gives it a light and airy feel, the tables are attractively presented and the seating is very comfortable. Whilst we were there it seemed that the restaurant attracted a whole of host of people across all age groups from local residents who were welcomed like long lost friends to couples and small parties. The sylvan Oak website, www.sylvanoak.co.uk describes the cuisine as being a marriage between French cuisine and European, Middle Eastern and Asian influences reflecting the personal style of sinan Kalan, the
chef/owner. As a result you get the opportunity to try new tastes, textures and combinations that are quite unusual in this part of sussex. The restaurant also uses produce that has come from sustainable sources and so offers menus that are in favour of seasonal availability with 85% of the produce coming from within a 50 mile radius of Findon. This means that the menu can change from visit to visit and a previous favourite may disappear for a while but on the plus side provides a good excuse for going back and trying something new! The evening menu offers two courses for £20 or three courses for £26, with some supplements particularly for main course items. A comprehensive wine list provides a range of familiar options. As we snacked on complementary bread, dips and olives we took some time to deliberate on the difficult choices on offer from seared scallops and cauliflower puree with green apple and curry foam to crispy oriental style duck salad to arbroath smoked haddock and potato layer cake. In the end I settled for an old favourite of mine of roasted goats cheese and beetroot with green apple puree, rocket and walnut salad whilst Madeline selected Cornish white crab meat with avocado, red pepper coulis and Japanese Cress. Both starters were beautifully presented and the portion sizes were just right. The flavours and textures in my salad were well balanced with the tartness of the green apple puree offsetting the sweetness of the beetroot and complementing the taste of the goats cheese. The temperature and texture of the crab were both spot on, the red pepper coulis adding a hint of spice. Main course options included Chicken, pork, Lamb and Beef along
with sea Trout and sea Bass – all with a contemporary twist and underpinned by European, Middle Eastern or Asian nuances. An enticing vegetarian option of green pea and asparagus risotto with truffle dressed pea shoot salad was also available. I opted for the sea Trout with Vegetables, Orange and Tarragon Butter sauce which had a £3 surcharge. presentation again was excellent and the trout cooked to perfection. The sauce was flavoursome without

being overpowering and a good selection of vegetables completed the dish. Madeline selected the herb crust of southdown Lamb with Tomato Farci, saffron potato and Black Olive Jus which had a £9 surcharge. Having been asked how she would like the lamb it arrived perfectly cooked, still quite pink. The potatoes had just a hint of saffron without being overpowering, with the jus making a perfect partnership with the lamb. The Tomato Farci was a work of art in itself and a tasty accompaniment to the lamb. Dessert selection presented us with our final challenge of the evening – with Mousse, Crème Brulee, Cheesecake and Hot Chocolate Fondant on offer along with 2 fresh fruit options. I selected the Orange Kahlua Crème
Brulee – a welcome twist on the traditional Crème Brulee whilst Madeline went for the Mango Cheesecake and Mango sorbet. In the interests of research I did test a small sample of this too – and was rewarded with an intense fruity taste sensation which exploded on my taste buds – a great end to a very good dining experience and one I hope to repeat again in the not too distant future. I
n the early days of my Cognitive Hypnotherapy training, I asked my Tutor, Trevor, if the concept of using regression therapy into past lives gave Hypnotherapy a bad name; something a bit whacky, fluffy etc? He told me about a client of his who had been suffering from anxiety. The first line of attack for this and many other conditions is usually to try and identify the original source of the problem by asking the client along the lines of ‘what is the first event connected to your anxiety (in this case), such that by going back to it, you can let the anxiety go completely and for good.’ In most cases, you would expect the client to go back to an event during his/her life. In this case the client regressed back to the middle ages, where with the effective use of hypnotherapy techniques, Trevor was able to solve the issues she believed she had at that time. In doing this, he also helped the client remove the anxiety in the present. His comment about this is that it doesn’t matter what the therapist believes, we work in the world of the client, so having helped the client remove the anxiety, ‘job done!’
A friend of the family, who was 28 at the time, had a phobia of anything that wriggles, from worms to snakes. By asking a similar question to the one above, he regressed to the age of 6, where his mother had frightened him and chased him around the garden while holding a worm. Once this was identified, it was an easy job to deal with the phobia and within minutes, the phobia was broken. A week later, he was in his parent’s garden and they came across 2 snakes. He was able to deal with that situation calmly and has not had a problem since. One of my early clients, in his 30s, regressed to the age of six and actually spoke with the voice of a six-year old; quite an amusing change from his posh work voice In my early days when I was training, I was also still working for safeway. I had colleagues who believed that they had been alive in a previous life and wanted to be taken back to see what else could be discovered. One colleague believed that she had been alive in the 30s and gave a lot of detail about events, location, relatives etc. However, none of the information
could be confirmed as having been real, but it was to her and I respected that. Many individuals have a fear of regression therapy, perhaps because of the association with past lives. I have an open mind about past lives and follow Trevor’s philosophy about it. Regression therapy continues to be a quick and highly effective tool for helping to deal with a range of psychological problems. precautions are taken to ensure that the client does not re-experience unpleasant events with the same intensity as when they occurred. Hypnotherapy can help turn peoples’ lives around, with or without the use of regression therapy.
