Welcome to August

W

hen the sun shines in Sussex, there’s really no need to go elsewhere for a holiday. A trip to Devil’s Dyke for a spot of orbing, reminded me just how beautiful the South Downs are (page 18). That’s why news of the Sussex Wildlife Trust’s new Family Walking Weekends is so welcome (page 6). Another summer institution in Sussex, is glorious Goodwood, which this summer will play host to a brand new festival event, Vintage at Goodwood. I caught up with curator and fashion legend, Wayne Hemmingway, to find out what he’s got planned (page 15). As we’re approaching August, most of us are already well into a ‘BBQ summer’, so we asked BBQ experts, Roberts Butchers, to share some top BBQ tips with us. The result is our step-by-step chicken recipe on page 23. And finally, we’re delighted that our first birthday is quickly approaching and we’d like to celebrate with you. To mark the occasion, we’ll be organising a Village Living birthday lunch at the Sylvan oak in Findon, which we hope will be the first of series of lunch club events. See page 7 for further details.

his autumn Sussex Wildlife Trust (SWT) has teamed up with the youth Hostel Association (yHA) to offer family adventure weekends away exploring the South Downs and the breathtaking countryside of Sussex. Stay at Truleigh Hill near Shoreham-by-Sea on the South Downs Way in West Sussex or Alfriston in East Sussex and enjoy walking, exploring and hands-on bushcraft activities for all the family. The first family weekend at Truleigh Hill youth Hostel is on Saturday 25 and Sunday 26 September. Begin your adventure with a walk down the scarp slope into Tottington Woods to find out about the wonderful flora and fauna of the South Downs. Following an overnight stay at the youth Hostel, enjoy bushcraft activities at the Trust’s nearby Woods Mill nature reserve, Henfield. Ashington Festival goes from strength to strength

arnival processions, fl oats, bands, arena events and a fi rework spectacular are just a few of the highlights that organisers have planned for this year’s Ashington Festival. The festival, which takes place on Saturday 21st August, promises to be bigger than ever, and kicks off with an exciting Carnival procession at 1.30pm. There are plenty of ways for local residents to take part, from Flower Shows to Fun Dog Shows and popular band, ‘Creative Covers’, keeping the festival spirit going in the evening. Harris Fun Fair, sideshows and a children’s farm will keep younger members of the family entertained, whilst adults browse the classic car & hot rod exhibition or bag a bargain at the car boot sale. A

ndrew Coakley might be tucked away in his tardis of a workshop in Steyning’s Cobblestone Walk, but his reputation precedes him. At least three different people have mentioned the great service they’ve had from Andrew in the last week alone, so I can’t help wondering where he’s been hiding. It turns out that Andrew has been running his mobile bike repair and service business for more than two years and has only now got round to setting up a workshop. It’s certainly small, but it’s perfectly formed and carries all the spare parts and accessories that a keen cyclist could want. A steady stream of people drop by during the time I’m there and it’s clear that the word has already spread in the short time Andrew has been open. It’s not surprising. He’s a really nice bloke and clearly knows a thing or two about bikes. Not only does he repair them, he also builds them to order from scratch with individual components. “The same bike can’t suit everyone. Some people have longer arms, or shorter legs or back pain. you can custom build a bike perfectly to suit the individual.” With prices for a custom build starting at £300, it sounds like a bargain. Andrew tells me he’d much rather build his own bikes than work with the big brands. It turns out that he used to have a much bigger shop in Brighton’s Kemptown but chose to move to Upper Beeding four years ago for a quieter life and a chance to be nearer some of the best mountain biking trails in the county. I ask him for his top tips. “For families, you can’t beat the Downslink, which runs from Friston all the way to Guildford, if you’re feeling up to it. And for something a bit more adventurous, the South Downs Way gives you so many options. Just pick a path off the main trail and go for it!”

ith the summer music festival scene stronger than ever, it would take a brave man to create the kind of event that’s never been done before and on a scale so grand it would make your eyes water, but then designer and fashion legend, Wayne Hemmingway and his wife Gerardine have never been afraid of a challenge. Co-founders of iconic fashion label, Red or Dead and long-time West Sussex residents, Wayne and Gerardine have joined forces with Lord March and the Goodwood Estate to launch a brand new festival exploring music, fashion, art and culture over the past six decades. According to Wayne, a festival which embraces all of popular culture is long overdue. “Vintage at Goodwood will bring something fresh and unique to a summer festival circuit that in many ways has become stale, homogenised and one dimensional. In the same vein as the Festival of Britain fifty years ago, it will both celebrate and explore the musical, design and cultural lineages of the country, charting their inspiration and offering a glimpse into their future direction. Musically, Vintage at Goodwood will feature an inspirational line up of world renowned DJs and bands from each decade as well as contemporary artists whose work owes a debt to these forerunners, reflecting the musical trends that have had such a huge impact on the UK. Away from the main stage, music lovers will be spoilt for choice with five on-site clubs celebrating the best of every decade from 40s tea-dancing to 70s roller disco. Amongst other renowned brands and shops from the past and present there will be salons that will style hair in vintage fashions fit for your club of choice. Also on the High St, vintage lovers can spend hours in The Vintage Marketplace, the largest and finest gathering of the world’s vintage clothes sellers ever assembled, with hundreds of stalls already booked in.

Rolling on the Downs

A

sport like Orbing could only have been invented in New Zealand, where the brave and the foolish line up to try all sorts of adrenaline-fueled sports. But this is one activity that lends itself to the natural rolling downland of Sussex. Just below Devil’s Dyke, there is a perfectly-formed natural basin, which has been home to the Orb360 crew for the last 4 years. The adventure sports centre is the largest in the UK and, at half a mile long, the Orb run itself is the longest in the country. Although the company rents the area they use from a private farm, the land itself is managed by the National Trust, a relationship that Managing Director, Paul Butler, really values. “Orbing, mountain biking and boarding leave no trace on the downland at all. We work closely with the National Trust to care for the site and we take our Orb Shack and all of our equipment away every single night.” The Orb Shack is actually a shady pavilion, kitted out with deckchairs, cold drinks and Ibiza-style music which encourages Orbers and their family and friends to linger, picnic, relax and enjoy the stunning views and, of course, the gentle-seeming rolling of the Orbs. Originally a centre dedicated just to Orbing, the operation has grown to encompass mountain biking and

mountain boarding and the company has plans to add other mountain and even water-based adventure sports. “Brighton is the natural location for an operation like this,” says Paul. “We do get a few hen and stag parties, but equally, we see a lot of local families who come up here to try something new and spend the afternoon enjoying the activities together.” Watching the Orbs roll down the slope is deceptive. They bounce elegantly down the hill, are slowed gradually by the natural basin, until they come to a gentle standstill. It almost looks relaxing, but I’m not convinced. I’ve heard a few screams as the Orbs start rolling. And strangely, some of the Orbers climb out at the end wet through from head to toe. It turns out that there are two kinds of Orbing. The traditional kind involves being strapped into a harness which holds you in place as the Orb rolls, along with considerable G-force. The second kind of Orb is the Aqua Orb, where you and your companion float unharnessed in 50 litres of water, effectively riding down the hill in a mansize washing machine. It’s a very hot day, so the Aqua option is tempting, but I feel duty-bound to try the traditional Orb experience. The Orbs themselves, which cost £10,000 a piece, resemble nothing more than giant beach balls. They are

It’s not gentle or relaxing. It’s disorientating, stomach-churning and yet undeniably exhilarating. The bounces, which look so gentle to the untrained eye, are quite dramatic and

as we start to slow at the end of the half mile run, I’m just starting to get my bearings and relax into the odd rolling sensation. We scramble out at the end and the hillside is spinning. A quick trip in a Landrover takes us back to the top of the run where the next Orbers are waiting to scramble in.

riends had enthused about the food at Nia Steyning. So having checked out the website, which is attractive, informative and easy to use, we jumped at a chance to visit. Nia is located in an attractive old building with a cosy, inviting dining area with scrumptious cakes often on display in the window. The board out front advertises an outside seating area, and what a delight it was to walk through the dining room (attractively furnished with chairs and tables appropriate to the age of the building (C17th)), past the busy kitchen into a stunning courtyard, enclosed on 3 sides by old flint walls. Wisteria and a vine climb over the pergola and round an assortment of rustic garden furniture; terracotta pots and urns spill over with greenery. on the tables fresh cream roses and white linen napkins welcomed us, an oasis of tranquillity in the heat of early evening. Shown immediately to our table, we wasted no time in ordering some chilled wine before the difficult task of choosing from the tempting menu. There were 6 starters and 6 main courses listed, and these are changed regularly, to reflect seasonal produce and availability. There are always ‘specials’, and a nice balance of meat, fish and vegetarian dishes. Particularly impressive to me was the fact that most dishes included seasonal vegetables/ salads. I would say the cuisine at Nia is English with a strong European influence; indeed the food to me seems

to be a delicious synthesis of the best of our regional produce with a European emphasis on interesting combinations of flavours and textures. After much deliberation I chose the mushroom and olive tapenade bruschetta and my companion opted for the soup of the day, bean and tarragon. While we waited to be served, we were offered a board of warm ciabatta with a little pot of oil and balsamic – we liked that a lot and feel it is a pity that in England bread is not offered freely as a matter of course, as is usually the custom in Europe! The soup was good, pureed mixed beans, strongly flavoured, and with a distinctive ‘bite’. My bruschetta looked like an artist’s palette with dark mushrooms and wilted green rocket, and it tasted divine, the succulent vegetables contrasting with the crunch of the bread. I could not resist the crispy belly of pork with a salad of black pudding and chorizo, one of the specials. our other main was the lamb shank which came with lightly cooked dark cabbage leaves and mange-touts. Both were superlative, visually and gastronomically, the lamb meltingly tender, the pork crisp and spicy. Portions were good, indeed the lamb shank was very generous! I would have liked some

carbs with the pork which is quite rich, maybe some tiny new potatoes? Barry, the manager was on hand to answer any questions and our server, Rhian, was a delight. She was knowledgeable about the menu, attentive and smiley, we felt looked after but not hassled or hurried in any way. In the interests of this review we felt obliged to try out the desserts, it was an effort, but we (wo)manfully chose the honeycomb syllabub and the berry brulee. My companion enjoyed the syllabub and my brulee was delectable... the colour and sharpness of the berries a nice contrast with the creamy, crunchy topping and it was served with a thin wafer of the most delicious shortbread I have ever eaten. Before our coffee we were offered a small glass of the most AMAZING dessert wine... not something I would normally drink but this was fabulous, a fortified South African chenin blanc. I urge anyone to taste it, it is quite something and, I am sure, pretty unusual! Eating at Nia is truly a lovely experience I cannot fault the choice of dishes or their preparation. The service is good, but not intrusive and we could relax and chat between courses. Wonderfully there was no ‘musak’!!!

Nia gives their customers the sort of eating experience I would like to give my special house guests. Thank you, Nia! I moved to steyning with my partner 3 years ago, having retired from the university of Surrey. Coming from Guildford, I wanted to live near the sea and have a daughter and grandchildren in hove so this seemed like the right spot! I can honestly say I have never been happier in my life. I love the village, our garden, our allotment and all the local activities. We love eating out but generally only do so on special occasions as we have so much of our own produce and I am a pretty good cook!

Drink Local _ Cider Rules

I

t was at BeerMatt’s festival that I got a taste for cider again. What with my new interest in real ales and the tempting array of sparkling Sussex wines on offer, well, we’d kind of been overlooking cider. But a sip of Appledram’s Medium Dry and I was hooked. Luckily for me, Middle Farm, nestling at the foot of Firle Beacon, houses the nation’s largest cider collection, many of them local and a few of them made at Middle Farm itself. The National Collection of Cider & Perry is very much a celebration of Britain’s best-loved fruits. Visitors can taste, compare and buy from a range of over 100 different draught brews, a further 200 bottled ciders & perries and an unparalleled collection of meads, fruit wines, fruit liqueurs & fruit spirits, as well as local ales and wines from Sussex vineyards. The staff happily provide tasting glasses and customers are encouraged to sample directly from the casks themselves. The collection is the passion of owner, Rod Marsh, and his wife, Helen who have built up their impressive range over a number of years. Such is their dedication to the humble apple that fresh apple juice is pressed daily from locally grown Sussex apples

outside the Cider Shop, and an applepressing service is offered throughout the late summer and autumn. Phil Coates, one the collection’s knowledgeable caretakers, picks out a few choice ciders for me to appreciate. Firstly, he tells me that the vast majority of ciders are still, particularly those in casks and we start with one of Middle Farm’s own brews – Pookhill Cider Nouveau (6% alcohol by volume) and the 2009 Southdowns Beer Festival Champion. It’s a medium dry cider, smooth and fragrant with subtle caramel overtones. We move onto Winnal’s Longdon from oakwood Farm, another local producer, but this time it’s an organic perry, cider’s pear equivalent. At 4.5% alcohol by volume, it’s light, dry and refreshingly tangy and I’m sure a few pints of this would slip down well on a hot day. Indeed, Phil tells me that many of the still ciders and perries can be served over ice.

To finish, it’s back to another Middle Farm brew and this time a cider/perry blend called Little Red Rooster (8.4% alcohol by volume), this year’s Sussex Beerex Champion. Made with a champagne yeast, Little Red Rooster requires specialist winemaking equipment so is actually made to Middle Farm’s recipe at nearby Biddenden Vineyard. The notes of apple and pear are perfectly balanced and Phil tells me it’s because the two juices are carefully blended before fermentation takes place. Rather predictably, I leave with a bottle or two and a note in my diary to return with a sackful of apples from the garden come october. No time off for good behaviour

or most people, August is a time for holidays or for simply enjoying your garden. After all, you’ve worked so hard to get it looking nice, why not take a little time off? of course there’s nothing wrong with enjoying the fruits of your labour, but August is also a time to take stock and to plan. We’ve just come back from Hampton Court Flower Show, where we were lucky enough to win a Silver Gilt for our rare ginkos, and we’re already thinking about next year. In our greenhouse, we’ve started propagating all of those species which can’t be grown from seed or cuttings, like our Japanese maples and our lovely ginkos. The technique is called summer budding, which involves taking a healthy bud and grafting it onto a root stock or young strong plant grown from seed. If the cut in the stem is made skillfully, then a brand new plant will grow which has the vigour and the vitality of the stock with all the characteristics of the bud. I suppose you could call it ‘cloning’ but that sounds

too futuristic word for what is, in fact, a very ancient practice. Is now the time to ďŹ x your rate? or more, if this is you, then it would be worth reviewing your deal.

K interest rates were kept on hold in June for the 15th month in a row. The Bank of England also decided that it would not inject further money into the economy. The centre for Economics and Business research have predicted that rates will remain at 0.5% until the end of 2012. The base rate has not changed, but lenders have gradually been decreasing their fixed rate deals. The average rate on a two year fixed mortgage is now 4.52%, this is the lowest it has been since September 2003. (Source:Moneyfacts). Fixed rate mortgage rates have been falling since September last year as lenders try and tempt people away from the low standard variable rates. 4.52% may seem high to you, but if you have plenty of equity in your property the rate could be much lower. Remember, lenders are looking for people who have 25% equity

Which lender are you with? People are in a number of situations with their mortgages, much is dependent on which lender you are with. They have all taken different stances with the rate cuts, leaving things quite confusing. Some have passed on the full cuts to their standard variable rate. For example, Halifax are now at 3.5%. If you are paying this rate then you will be feeling very comfortable for the moment. other lenders are charging much more, some up to 5.75% or more, not so attractive. If you are with a lender who charges more, you could find that you can obtain a fixed rate at a lower rate than you are currently paying, meaning that you can secure a low payment for a period of time. As fixed rates are so competitive, now would be a great time to fix your mortgage rate. What about tracker rates? There are many happy people around right now, ones who took a tracker rate before the rates started going down. A tracker rate is charged at a set percentage above, or below bank base

rate. The margins on offer a few years ago were much lower, for example you might have secured a rate which is 0.5% above bank base, and you would currently be paying 1%. If you take a tracker rate now, they are charged at a higher percentage above the base rate, but some are still highly competitive. So, if you believe that rates will remain low, you could find yourself a great deal. I always recommend comparing the fixed and tracker rates available to you personally. your choice of rates will be dependent on your own situation, but you will have a much higher choice if you have a large deposit or high equity in your property. only when you compare the deals do things become clear. The power of the mind

s a youngster, I practised various martial arts and was often amazed by how physical power could be increased using what is now termed ‘mind techniques’. It was this that led me to a fascination with the subject. At the same time, there was a story, in the press, about how a woman lifted the end of her car, to free her son, who was trapped beneath it. Afterwards, they calculated the weight that she had lifted and it was far in excess of her normal capabilities. Try this simple exercise. Stand with your legs about shoulder width apart. Hold your right arm out, with your index finger pointing outwards. Twisting only from the hip, rotate clockwise as far as you comfortably can go. Identify the point on the wall, where you have reached. Now close your eyes and imagine (but do not move) doing the same exercise, this time going much further on than the previous point. Repeat this, in your

Then open your eyes and do it for real, again rotating as far as you comfortably can. you should be surprised at the result obtained from this mind technique, which is used by many top sportsmen, tailored obviously to their own specific discipline. Hypnosis can be employed to make such experiences even more vivid and real and can result in the mind being tricked into believing that the objective is achievable, so when the actual event occurs improved performance results. At the same time, the mind can be fooled into reducing or eliminating pain, so that the performance can be enhanced even further. It continues to astound me what can be achieved using hypnosis and the power of the mind. I have helped individuals to improve performance using this and other mind techniques.
