FITTLEWORTH’S SWAN INN TRANSFORMED INTO GOURMET DESTINATION

ocal couple Janice and Alan Griffiths have built a unique holiday home on their dairy farm in Bines Green, near Henfield. The straw house, known as Withyfield Cottage, was developed by green building expert Ben Law who appeared on Channel 4 TV’s Grand Designs. Horsham District Council’s building control team (known as Sussex Building Control) worked closely with the builders to ensure that this unusual construction – which is built from locally sourced trees and insulated with straw bales and sheep’s wool – is safe, sustainable and energy efficient for holidaymakers. Janice commented: “We needed to diversify the business and our vision was to build a unique holiday home in the heart of the Sussex Weald. “The house is timber framed, insulted with straw and sheep’s wool and plastered with lime render mixed with horse hair – not your everyday type of work – so we thought that meeting building regulation standards might be a challenge. With the help of Sussex Building Control, who are very experienced at working with innovative materials and methods of construction, we have achieved our dream.” Cllr Roger Arthur, Cabinet Member for a Safer & Healthier District at Horsham District Council, added: “We are delighted to see such innovative and ecofriendly developments being built in our district that also contribute to the local economy.” For more information about Withyfield Cottage please visit www.withyfieldcottage.co.uk

he historic Swan Inn in Fittleworth has had a £250,000 make over and opened its doors back in March after a ten-week refurbishment programme by the White family, who also created the popular gastrodestination White’s Bar & Kitchen in Steyning. The bar area at The Swan – which was visited by the artist Constable in the 1800s – has been lightened up, with fire places restored and opened to create a cosy and relaxed snug, with quality comfort food to match and a fine range of local ales and wines. On the other side of the pub, a delightful, airy restaurant, with an eclectic mix of vintage furniture and fittings created by award-winning interior design company Design LSM, promises to be a gastronomic success, serving superb steaks, including five different cuts of beef and specials such as roasted pork belly and pan fried sea bass with crushed white beans and chorizo. “We hope to create something as successful as White’s, which – through word of mouth – has been consistently busy and buzzy for the past five years,” said George White, manager of The Swan., who is just 27 years old and won a scholarship for his entrepreneurship at university, before joining the White family’s hospitality business. “We have ensured that the best old features of the building have been restored and of course the famous pictures from artists who followed Constable to this hostelry, paying their way with their paintings, will be on display as part of the pub’s rich heritage.” This is just the start of improvements planned for The Swan, as the gardens will be put to full use this summer, with new furniture and planting, making it a great spot for walkers to stop for lunch, and its 15 bedrooms will be refurbished over the coming months, to make it a desirable destination for visitors to stay and enjoy the delightful attractions in the area. The bar will be open 10am to 11pm and the restaurant 12 to 2.30pm for lunch, 6.30-9.30pm for dinner and on Sunday from 12 to 4pm. For bookings call – 01798 865429.

can’t believe how quickly these summer months are passing by... on the farm we are busy filling the barns with straw for the winter months bedding supplies. We have our hay bales all stacked in the barns and our silage stack is now complete ready for all the winter feeding! When you come to the farm you will notice that all the lambs have gone from the barn. Don’t panic they haven’t gone far, they have just been turned out to enjoy the lush grass in the fields here at the farm. We are lucky enough to have been nominated for the Sussex Food awards this year. We have been nominated for two categories which are Best Sussex Food/Farm Shop and Sussex Butcher of the Year. Please vote for us online at www.sussexfoodawards.biz or come into the shop and pick up a voting form. It would be lovely to win such an award. Our Caravan CL campsite is proving to be very successful this year with an increase in bookings. It’s lovely to see

everybody enjoying their BBQ’s full of our award winning handmade sausages! Do pop into the shop for our full range of bbq meats. We have also just introduced gorgeous local tomatoes from nutbourne nurseries in Pulborough. They are full of flavour just how tomatoes used to be. We have several different varieties for you to try. This year we have also introduced Bee Hives to the farm. Currently we have 10 hives to compliment the original hives in Steyning high street. Of course we stock Steyning Honey which is said to help the symptoms of hayfever. In the shop we have the newly stocked Twinkle Bee range. They are handmade with Bee’s wax, oils and natural produce in Worthing and include soap, handcream, lip balm, body lotions and foot creams. We have testers of all the range for you to try – they really are gorgeous. enjoy the Summer!

Building for the future

B

eeding and Bramber Preschool was established almost 50 years ago and is held at the village hall every day during term time. The preschool is a parent committee run charity which has evolved over the years to be a successful and popular playgroup . Mia Pullen and Chantael Brookshaw, who have been involved with the preschool for almost 9 years, took over as supervisors in 2006. Over the past five years we have worked hard to develop and help the preschool grow into what it is today, providing a fun, friendly and stimulating early years setting to enrich the lives of children and help them meet their full learning potential. Children spend their time happily engaged and focused on activities with a wide range of resources available to them in the various workshop areas. They greatly enjoy playing outside. Whatever the weather they splash in the puddles with the staff, who equally enjoy the experience! Everyone has had great fun planting vegetables and sunflowers this year and we are eagerly waiting to see whose is going to be the tallest. We are positively buzzing after the fantastic Ofsted report we had in March 2011. We are particularly proud of the recognition that we received concerning our outstanding partnership with parents. Staff members take the time to get to know their keyworker children and their families from the minute they start preschool, helping the children to settle in well and sharing any concerns that the parents may have. There is the opportunity to speak to your child’s keyworker on a daily basis, whether it is at the start or at the end of a session. Parents are invited to attend an annual parents’ evening to discuss their child’s learning journal and their progress. Two years ago we achieved a certificate for the quality assurance scheme which is recognition for the quality of care we provide. This is a West Sussex “Investors in Children” accreditation scheme. Pre-schools with this offer the highest quality services for children in their care. We regularly hold fundraising events, the annual pumpkin ball at Halloween and our summer scavenger hunt, which

is a great success. These plus many other events help us to raise vital funds to purchase new toys and equipment for the preschool to help enrich the learning environment for the children. The committee are very supportive at these events and also take ownership of certain fundraising duties. We have an excellent relationship with the local primary school and the children get to meet the staff and other children prior to their transition to big school. At Christmas time we have a nativity which the Reception class are invited to along with their teachers. In return we take the children to watch the dress rehearsal of their Christmas production. With the support of our hard working dedicated team we are determined to continue to improve upon what we already have to ensure we deliver the best start we can for the children. The Fountain Ashurst Reviewed by: Katie Downes

H

aving not been to the Fountain for many years and hearing that it had been taken over by Whites I thought it was about time to check it out… I wasn’t disappointed. We were very warmly greeted by the lovely Liz, who is soon to take over as venue manager. We were very well looked after by Liz and her team, who were attentive and friendly but not remotely intrusive. Dating from the 16th century, the Fountain Inn is a free house grade II listed building, an olde English country pub in traditional style with original wooden beams, flagstone floors, and inglenook fireplaces. There is a Good choice of beers including the ever popular Fullers, and Harveys. There is an attractive garden with a pond – and a skittle alley / function room in a separate building at the front of the pub which is available for hire . The restaurant filled up quite quickly throughout the evening so there was a nice buzzy atmosphere, everyone seemed very pleased with their menu selections ! To start with my dining companion Kirstin chose the Chorizo and cod fishcakes with salad, and I went for the Two Hoots Stuffed Fig Salad, Avocado, Spiced Pecans, with a port vinaigrette. To be honest I wasn’t 100% sure what Two Hoots was, I just liked the name, Liz informed me it was a type of blue cheese, and it really was truly melt in the mouth delicious. Kerstin, was expecting the usual potato based fishcake, and was very pleased to find her starter was more refined and literally packed full of chorizo and cod!

For mains, I chose the Grilled Pork Chop, Caremelised Apple, Fountain’s Homemade Barbeque Sauce, Sautee Potatoe; the portion was very generous, and delicious. The pork chop was grilled to perfection and the barbeque sauce just the right side of sweet. Kirstin couldn’t resist a rare Grilled Ribeye Steak, with Flat Grilled Mushroom, Blue Cheese Stuffed Tomato, Fat Chips and Creamy Peppercorn sauce. The steak was perfectly cooked and the chips were amazing! The vegetables and herbs are home grown in the impressive Fountain’s own kitchen garden, and the also homemade puddings, were absolutely to die for, and although we really were full, we had to sample 3 of the puddings between us (for review purposes only

of course…) we chose the Amaretto Crème Brulee, Shortbread, which was sublime, with the hint of amaretto, the brulee was creamy and irresistible with a perfect crunchy, top! The shortbread was absolutely spot on and a good accompaniement to the crème brulee, which also came with a ramekin of fresh raspberries… yum! The Baked Lemon Tart was a perfect balance of sharp yet sweet with Whipped Cream & Strawberries, and the delicious Chocolate Brownie with Cherry Sauce and Vanilla Mascarpone were all happily and swiftly consumed, accompanied by a perfectly brewed cafetiere of coffee. We both thoroughly enjoyed our meals in a lovely setting, and I know I will definitely return with my family in

t’s official! Polo is not just a sport for the higher echelons of Society. Oh no – it’s something we all can try. This I know for a fact having spent the day with Francis Matthews and his team at FHM Polo Club. Situated just outside Hurstpierpoint, FHM Polo is only 20 minutes from Steyning; tucked away on a secluded farm which houses two grass polo grounds and one fully covered arena. Francis’s business is different to the idea I had held of Polo in that he has opened it up to all walks of life. You do not have to have ridden a horse before, nor be a sportsperson. You go to have fun and learn more about the sport. Francis is a fully qualified HPA (Hurlingham Polo Association) Club Instructor who used to play professionally. Several years ago he saw a gap in the market and set up FHM, quickly outgrowing his original club arena at The Royal Leisure Centre in August 2011 • Village Living

This group were weekend regulars with a mix of beginners and more experienced riders. My lovely pony was called Tostada. I do ride a couple of times a week but things immediately seemed rather different on a polo pony. The saddle does not have knee rolls (extra padding on the front of the saddle where my knees would grip) which felt strange but Francis explained that this was because you rode in a more forward position with your weight in your stirrups and knee rolls would restrict movement. The other major difference was that the ponies all had double reins but you only held these in one hand as, clearly, you needed to hold your stick in the other. To move Toast off, I moved my left hand which had the reins in forward (polo is played with the stick in your right hand – sorry all you left handers out there). To stop I pulled my hands back, not too far or for too long or Toast would think I wanted to go backwards! I was really quite excited and, having listened to a few major rules, the whistle was blown and the match began. My team luckily took control of the ball and we were off. Between us we managed to get it to our goal and I tapped it over the line. Hurray! Back to the centre and we were off again. I’m afraid my competitive gene kicked in and my eyes were only for the ball and rules were somewhat forgotten. Francis was calling to me but I carried on after the ball. Foul! Argh! – a free hit to the other side. They scored despite our best efforts at blocking them. Then we were back hitting the ball towards our goal. When the whistle went we were all happy at a one all draw. Shaking hands with the other team, we left the field with huge smiles. Unfortunately, my time was up and I had to leave. I came away feeling elated and wanting to go again. So, at work on Monday I set to work organising an office outing and we are booked in for September. I can’t wait! You do not have to have pots of money or lots of riding experience. Polo is as easy or hard as you make it and just so enjoyable without being overwhelming. An all round great experience. You need to be no heavier than 15 stones and there are no age limits. You should wear boots or flat soled shoes and

suitable clothing. Francis does have a selection of hard hats that can be used if you are unable to bring one. I would also recommend taking some food and a drink.

Green Salad Gaspaccio You will need: 2 Green Peppers (de-seeded) 2 Sticks of Celery 2 Green Chilli’s (de-seeded) 1 Fennel, heart removed (the hard middle bit) A small bunch of fresh parsley – no more than a handful. 1 Romaine lettuce 150 grams of mayonnaise 1 small tube of Wasabi, a Japanese style horseradish (this will add heat, if this is not available a normal horseradish will suffice) Several ice cubes (these help the mixture becoming too warm during preparation) Salt and Pepper (to taste)

Method: Roughly chop and wash the lettuce, peppers, fennel, parsley and chilli. Drain off the excess water and place half the mixture into a food processor onto maximum, adding half the ice cubes. after the mixture has begun to reduce in size feed in the remaining components and process until the mixture is well refined. Mix at intervals to ensure the entire mixture is being combined. Once blended place a fine mesh and sieve / spoon your ingredients into the sieve. use a handheld blender and pulse the mixture to extract the moisture out. Place the sieve and its contents to one side, do nOT throw it away. add half of the mayonnaise to transform the colour into a more pleasant lighter green, this is down to judgement to obtain the right colour. add a small amount of the Wasabi, a large pinch of salt & pepper and a spoonful of the blitzed mixture for substance. add more or less of each of each component depending on your satisfaction with the taste. The finished article should be light in colour, not too runny and have a sharp aftertaste. ho can resist a plum crumble? Yet there is so much more to this wonderful fruit than being baked under a buttery crust. With their delicate blossom and their short season, they are the epitome of english summer. even the name harks back to an age of old england. ‘avalon’, ‘excalibur’ and ‘Marjorie Seedling’ will be joined by ‘Opal’, ‘victoria’, ‘Greengage’ and the wonderful ‘Brighton Belle’. a highlight of high summer for me is the Greengage. It’s nothing to look at; small, round and green, but when ripe it has the sweetest flesh of any of the plums – honeyed and highly perfumed. Sometimes it’s not always the most

A fragrant month

I

t’s all about scented plants this month, ranging from the fragrant Lavender to the deliciously scented Chocolate vine. Lavender has many wonderful properties, and here at big plant we are big fans… Two varieties you can grow include the Minstead and the Hidcot lavender. The plants flourish best in dry, well-drained, sandy or gravelly soils in full sun, needing little or no fertilizer but good air circulation. If you can, use pea gravel, decomposed granite, or sand instead of organic mulches as organics can trap moisture around the plants’ bases, encouraging root rot. With known anxiolytic effects, and meaningful efficiency alleviating the symptoms of anxiety and related sleep disturbances, Lavender is often dried and sealed in pouches, extensively used as herbal fillers inside sachets to make pillows. Placed among stored items of clothing they can give a fresh fragrance to freshen linens – and are useful to deter moths! The fragrant,

pale purple flowers and flower buds have antiseptic and anti- inflammatory properties and was even used in the first world war as a scented, floor cleaner! High quality honey and lavender syrup can be made and dried lavender buds are used in the making of jams, scones and even marshmallows. It is advised however to avoid ingesting lavender during pregnancy and breastfeeding. Dried lavender flowers have become recently popular for wedding confetti. an attractive and popular scented plant that is incredibly easy to grow and cultivate, with small plants that can be potted or grown in window boxes, there is a plant suitable for everyone! Onto akebia quinata, the Chocolate vine; a beautiful semi-evergreen climber. attractive dark green leaves above blue-green beneath, purple tinged in winter. This plant will grow best in full sun to part shade and in free draining soil, if you keep it well watered until established, and keep out of cold, drying winds – especially if on the coast.

avoid waterlogged soil, but use extra water if very dry! This fast growing, twining semi-evergreenclimber can grow up to 5 metres if left unpruned. The maroon-chocolate flowers look almost artificial, with three thick, waxy ‘petals’ forming an inverted cup shape, whic after a good summer can be followed by large pink fruit clustered along the stems, with an exotic spicy, chocolate-y fragrance with a hint of vanilla, and scented like chocolate this unusual climber fares best in warmer gardens and stand out against a background of light purple, most colourful in full sun. In mild conditions the leaves last all winter but in cold areas expect them to be shed. Just don’t be tempted to eat the fruit! …. Finally from our Herb selection, we have a variety of Rosemary bushes which I must mention, ever popular with a wonderful scent these bushes are very easy to grow, and are absolutely thriving here at the nursery and very easy cook with yum yum!

Is interest only a thing of the past?

n the past few months many lenders have tightened their interest only criteria. This means that if you apply for a mortgage either to buy a property, or remortgage to a different lender you could find that interest only is no longer an option. an interest only mortgage means that you just cover the interest every month, you are not paying off any of the capital lump sum. So, if you borrowed £100,000 now, you would still owe this amount at the end of your mortgage term. The original idea was that alongside the mortgage people would take a savings plan to build up the lump sum they needed. Traditionally this was an endowment. Lenders would check that this was in place and that you were on track to pay off your mortgage. as we all know, many endowments did not perform as intended and there are shortfalls, but that is another story. a few years ago lenders would no longer check if you had an endowment policy, or other means to repay your mortgage. Certain lenders became very flexible, they were happy to lend interest only and do no checks.

Flexibility is often good, but is interest only a long term plan? It seems not. People are now getting later on in their mortgage terms and realising they cannot repay their mortgages. For example, an older couple who suddenly realise they have only a short term left on their mortgage, say a couple of years, then their lender will expect it to be repaid in full. This is a difficult position, especially if the person wants to remain in their home. Many people approach their lenders asking for them to extend the mortgage term. unfortunately this isn’t always possible. at this stage many lenders become unwilling to lend, people face a brick wall. as so many interest only mortgages already exist this was flagged as a potential major problem in years to come. The Financial Services authority has come down heavy on lenders to tighten their policies. So, lenders have done several things. They have limited the percentage borrowing on interest only, (often the maximum you can borrow is 75% on this basis). They may require full details of the plan you have in place to repay the mortgage, whether this be an ISa, a pension

or a lump sum investment. They will certainly check your intentions for repayment of the mortgage. as always, the lenders differ in their criteria, some are more strict than others. Some for example will allow you to sell your property to repay as long as you state this as your intention at outset, and you come within certain parameters. Whatever your circumstances, your adviser will be able to guide you through this very tricky maze. alternatively, as many now do, you could take the easy option and opt for an old fashioned repayment mortgage. Hypnotherapy & Holiday Phobias

he holiday season is upon us and many individuals have a mixture of excitement and fear at the prospect of going away, due to phobias ranging from fear of flying, to fear of insects, spiders or snakes. Holidays can be ruined as a result. Cognitive Hypnotherapists are trained to understand the mechanics of a phobia and its effects and then provide an appropriate treatment, from a wide arsenal available, to help a client to get rid of their phobia(s), quickly and effectively. Some phobias, such as the fear of flying, can be complex, in that they involve one or more of the following elements: fear of heights, dying, not being in control, claustrophobia, agoraphobia. Phobias can develop and generalize. anyone who is frightened of, for example, dogs, may fear going out because of the likelihood of meeting one and develop agoraphobia. I have come across at least one client who had several phobias which generalized into ‘Generalised anxiety Disorder’, which means that she was living in a state of high anxiety, nearly all of the time. after 9-11, people developed phobias about lifts, blue skies, as well as flying.

Hypnotherapy is highly effective in eliminating phobias, because it works in the area where the phobia resides, namely the unconscious mind.
