Whilst my wedding day was well over seven years ago now, I still can’t get enough of them. I am excited about a family wedding in July back in the UK. To me, there is nothing better than a traditional English Summer wedding - weather permitting of course, but even if the weather plays up, it will always be a story to tell the grandchildren and... it’s good luck to have rain on your wedding day apparently! Whilst you can’t control the weather, just about everything else about a wedding day Beatrice can be meticulously planned and prepped down to the last detail, so with only one shot at it Boardman, and just about everything and anything you could dream of being possible, it is easy to feel a Editor bit overwhelmed and lost when it comes to knowing where to start. CULTURE Tarek Al-Ghoussein is an artist close to the UAE’s heart, and a figure who has played a significant role in raising the region’s cultural profile on an international stage. by Samantha Armstrong All photos: Tarek Al-Ghoussein and the Third Line Gallery

orn in Kuwait in 1962, Tarek is originally of Palestinian descent. Currently Professor of Photography at NYU Abu Dhabi, he has lived and worked in the UAE for fifteen years. Finding a place to call home is a concept often explored in Tarek’s work, influenced largely by the complex relationship between Kuwait and Palestine. He often examines the position of the individual within a specific locale, amidst a country, of a wider region and ultimately in the world at large. Having started his career as a photojournalist, Tarek felt the medium was not giving him a close enough connection with the inner struggles and emotional depths of his subjects. After a five-year hiatus, he returned to photography from a new angle and revealed a series of politically charged self-portraits. The stark imagery explored the symbolism of the chequered Palestinian Kufiya scarf and its affect on those both inside and outside the realms of a country, which was home to many of his family. Tarek’s faceless figure can be seen against backdrops such as a shooting range, beach, airport and shipyard and his presence causes alarm before inviting the viewer to question their own motives for feeling afraid. “I was just so fed up with the media representation of Palestinians and Arabs as terrorists,” he says. Yet he acknowledges the Arab world has its own complex relationship with the scarf and its innate symbolism, having been questioned by the police in Jordan for taking an image whilst wearing the Kufiya.

After a long period of shying away from acknowledging the actual locations in his images, Tarek began work on the K Files where he deliberately situated himself in recognisable Kuwaiti environments - in effect returning home to his place of birth. When asked about this departure from his usual style, Tarek explains: “For this series, I photographed and interacted with specific locations both recognizable and significant to the development of Kuwait. The locations that were selected include: Qasr Al-Salam, The National Assembly, the Abdullah Al-Salem School, Um Al-Gaz Island, Dar Al-Rai Al-Aam, Al-Nasr Sports Club, and the Kuwait Stock Market. The images seek to “track” historical developments in Kuwait and at the same time the photographs highlight the relation of the protagonist to the

immense scale of the locations, the presence of the artist as the subject raises questions related to how spaces of significance are transformed through the presence of even a single individual.” The K Files were chosen to be exhibited at Kuwait’s first ever pavilion for the 55th Venice Biennale in 2013 where the images were accompanied by a wider context entitled National Works: photographs and other documents that relate to the journey of Tarek’s immediate family. Throughout February until March 7th 2014, K Files is being exhibited at The Third Line in Dubai. As well as the main exhibition of eleven images, the gallery’s Project Space will house a never before seen installation of personal paraphernalia that tell the story of his family life. His father’s role

Culture as the Kuwaiti dignitary to the United Nations, and later as an ambassador to the United States, led towards the discovery that many moments of his family’s life are now public property. For Tarek, K Files is a work in progress, not limited by a beginning or end and evolving all the time. As the artist discovers more about his family’s journey, his work reflects an ever-transient past, present and future. Tarek’s works are part of permanent collections at the Solomon R. Guggenheim Museum in New York, Victoria and Albert Museum in London, Royal Museum of Photography in Copenhagen, Darat Al-Fanun in Amman, and the Sharjah Biennial Collection in Sharjah. airmont Hotels & Resorts, a luxury brand in the FRHI Hotels & Resorts portfolio, in partnership with Dubaibased Cuadro Gallery welcome conceptual artist Faig Ahmed to take part in the art@ fairmont residency programme at Fairmont The Palm from now until May 5th, 2014. As the second artist at the residency, Faig hails from Baku, Azerbaijan and specializes in weaving carpets based on the artistic qualities and aesthetics associated with traditional Azerbaijani rugs. His method sees him mentally disassemble the carpets’

conventional structure of recurring patterns and rearrange them into unique contemporary sculptural forms, recreating and displacing the standard geometrical fragments. During the three-month residency, Faig will also participate at Art Dubai, the annual fair where galleries and artists from around the world exhibit to a local, regional and international audience, from March 19th – 22nd, 2014.

t’s the most important day of your life, so of course the dress has to make an impact. No-one understands this better than Ezra Santos, Dubai’s go-to designer for ladies looking for an exclusive, one-of-a-kind wedding dress or gown. He’s known as one of the most influential figures in the Middle East’s fashion industry, can charge up to AED150,000 for one of his sculptural creations and has dressed international celebrities such as actresses Haifa Wehba, Michelle Rodriguez and even pop star Britney Spears. Santos was born in Manila, the Philippines and grew up inspired by fashion greats Lacroix, Galliano and Dior. After studying at Central St Martins in London and working abroad, Santos came to Dubai and launched his Ezra atelier in 2004. Starting out with only six employees (he now has 65), Santos became a much sought after designer amongst local and international names. Now, after 20 years in the industry and thanks to his debut show at New York Fashion Week in September 2010, he is one of the few UAE-based designers to have received international acclaim. He talks to KM about his work, passions and why he loves weddings. 1. What influences and inspires your designs? When I do a collection it has to have a storyline. Just like a movie, it has to be dramatic and full of life. Most of my inspiration comes from travel whether that be to New York, Europe, Asia and of course, Paris as it’s the only place to see the latest in Haute Couture. 2. How did you get started in wedding dress design? Was it an active decision or did you just fall into it? I have always specialised in wedding dresses since I started working in the Middle East and this has been my passion for more than a decade. The best thing about my job is that I work in an industry where I make dreams come true. Weddings are very big occasions here, especially for the local community as it’s one of the few times that they can show themselves and their style to others. I love seeing the bride when she is happy and beautiful in her dress. www.khaleejmadame.com

3. Who are your biggest clients? I make 10-15 wedding dresses per month and I would say that 90 percent of my clientele are local Arab women, mainly from royal families. I really love designing for the Middle Eastern lady because they appreciate my work and they are so passionate about Haute Couture and one-off pieces. The rest of my clients include public figures and celebrities. I have had the pleasure of working with Britney Spears when she launched her perfume line and then again for an episode of the X Factor. 4. What trends are there currently in the bridal industry and does this differ between nationalities?

Over the past few years the wedding dress scene has changed. The trend is now less elaborate and avant-garde and more subtle, delicate and simple cut. I would say that the most influential design to date has been Kate Middleton’s wedding dress. 9. Who would you love to see in one of your designs? Angelina Jolie. Although I’ve never met her, it’s been my dream to design a dress for her. 10. Can you describe your favourite wedding dress that you’ve designed and why? There are a lot. For me, every wedding dress that we make here is very special. Finding the right location ultimately depends on several factors; the size of the wedding, format, time of year and theme are all elements that can dictate which venue to opt for.” Many brides have been dreaming of their wedding dress since childhood, but tastes change and the fairy-tale princess look does not always translate to the here and now. For a lot of women the dress is always one of the hardest decisions to make. “The dress will depend largely on the format of the wedding. Also, because of the exchange rate at the time, it actually worked out better financially when we compared how much a UK wedding would have cost - even including flights for our family,” says Sarah. The couple, whose ceremony was conducted in

Jebel Ali church, chose The Ritz Carlton for the reception venue. Shalmali and her husband got married at The One & Only Royal Mirage with 250 guests and used a wedding planner to help with the coordination. “At the time I was based in London and needed someone in Dubai to make sure everything was being taken care of. seen a wedding on TV with a wild garden theme and this was our inspiration. We chose a unique colour, burnt orange, and an outdoor venue to create an elegant garden paradise, with chandeliers, flowers and lots of candles, it was stunning!” For Sarah and Kevin it took six months to arrange the wedding and, as Sarah jokes, Kevin believes it was his hands-on involvement that made the day go like clockwork. In fact, the groom had hired a harpist for the cocktail reception, a surprise that made the event truly memorable for his wife. But even the best laid plans can go awry when weddings are involved and when Kevin and Sarah’s DJ was late, the couple had to think on their feet keeping the guests blissfully unaware of any problems. “Our friend did a last minute acoustic set and nobody batted an eyelid about the DJ apart from us and the ushers!” For Shalmali the only hitch came when they forgot to gather the whole family for group pictures. “ It was on my timeline but just got lost during the course of the evening and it is something I wish we hadn’t forgotten.” With so many possibilities on offer, both couples admit that sticking to the budget was a challenge. “It is very easy to get swayed; with weddings the sky really is the limit and I think you need to take a step back at some point,” says Shalmali. Even in the most lavish of settings, Shalmali believes it is those small, intimate moments that you will cherish forever. “For me, the best part was walking down the aisle with my father, there are so many sentiments running through your head for those few minutes. Saying our ‘I Dos’, I couldn’t stop smiling! It is also very important to use two different shine and matte textures. Matte textures will provide more definition and shape the features whereas the shine textures bring more glow and add dimension to the facial features. The bride will also want to do a couple of trial makeup sessions and take pictures of it before her wedding day to make sure that the makeup suits her and to know how it looks on camera.

hen it came to planning my own wedding, I knew just how important it would be to me to look and feel my very best for that one euphoric day of celebration with all our close family and friends. Here, Mel shares the secret behind the success of this fat-burning and toning workout and guides you on how you too can enjoy its benefits whilst staying healthy and safe in the run up to your ‘Big Day.’ What is ‘Super Circuits’ and how does it work? Mel: Super Circuits is a method of physical conditioning in which one moves from one exercise to another, usually in a series of different stations or pieces of equipment. Assuming that the individual doesn’t have any physical limitations, the activity will involve the cardiovascular and the musculoskeletal system, in order to achieve optimum fitness in an individual. Improving the blood circulation, and the muscular endurance and muscular strength, as well as the stamina and total fitness. What would be a recommended Super Circuits Workout that our readers could try? Mel: If I was to design the program, an example of a Super Circuits training program will look like this... as I have mentioned above, assuming the person doesn’t have physical limits, here it goes! • 10-15 minutes warm up on any cardio machine • 15-20 reps of body weight Squats • 15-20 reps of Dumbbell chest press or bar bench press • 15-20 reps of lat pull down or seated rowing * 3 minutes brisk walk or run on the treadmill • 15-20 reps deadlift • 30 seconds plank March - April 2014

y wedding may only be a month away, but no one seems to have told my skin, which is in desperate need of a bit of TLC. A face and body treatment sounded the perfect tonic. VANILLA BODY WRAP

My two-and-a-half-hours of pampering begins with the Vanilla Body Wrap. After being led into a darkened, candle-lit room, my British therapist Kerry, greets me, full of reassurances that the vanilla

wrap will do me wonders. Once de-robed and lying on the treatment table, I’m shown a grainy looking mixture - mashed up rice and cornstarch mixed with vitamins, minerals and vanilla extract. Apparently the grainy texture is excellent for exfoliating the skin, as well as toning and softening. I’m slathered in the mixture and my body is gently scoured removing all dead skin cells before a blissful hot mid-treatment shower. Afterwards my skin looks lovely; all soft and flushed with increased circulation, plus I smell divine. Next up is the actual wrap. Lying down again, I’m covered from head-to-toe in a

smooth and expensive smelling vanilla cream. I’m then wrapped up in a thin plastic film and left to lie for half and an hour. The sensation is a pleasant one – the occasional strong whiff of vanilla combined with the heat of the cream makes you breathe deeply. As the minutes tick by you can feel your muscles relaxing and it’s hard not to take the opportunity to have a little snooze. When the time is up, another hot shower ensures that all the cream is removed and the treatment is then finished off with a layer of vanilla balm that is liberally applied to the skin. As a final

touch, vanilla powder is sprinkled over the top to leave pores matte and slightly velvety.

PEARL FACIAL

I spend the last hour indulging in the antiageing Pearl facial. The products used in this treatment are bursting not only with actual pearl extracts, but also substances involved in the regeneration and stimulation of the skin. The facial begins with an expert cleanse before my skin is gently exfoliated. A nourishing balm containing extract of pearl is massaged thorougly into my

parched complexion before a white pearl mask is applied. Lastly, a collagen serum is painted on and a digit pressure point massage ensures that the active ingredients in the products are pushed deep into the cells. Both face and body treatments worked as advertised, and my skin has a genuine glow that belies the stressful month I’ve had. And the effects – especially from the facial - lasted for an impressive few weeks afterwards: my complexion was unbelievably clear, baby soft, and my open pores were nowhere to be seen. When you think about the French fare on offer in the UAE, it’s hard to underestimate the influence of Traiteur, the award-winning French restaurant at Park Hyatt Dubai.

K

nown for its mouth-watering dishes and legendary brunch, the restaurant is celebrating its latest appointment in the form of Chef Daniel Hoefler, Traiteur’s new Chef de Cuisine. Hailing from Berlin, Germany, Hoefler’s expertise of transforming the freshest ingredients into French haute cuisine is firmly grounded in years of experience. He talks to KM about his life and passions. 1. When did you decide you wanted to be a chef? My father was an aspiring cook and food enthusiast who showed me from an early age that cooking is fun and creative. When I was 16 years old, I started cooking. When I turned 18, one of my friends suggested I complete a one-month culinary internship at a small hotel in Germany. After the completion of this internship I knew I wanted to pursue a career as a chef. 2. Do you think being a great chef is a natural talent, or is it something anyone can learn? I believe that a great chef needs to have natural talent, but also

Bonnes Tables has to be passionate about cooking and eager to learn. Without one or the other you cannot become a great chef.

3. What new ingredient or ingredients are inspiring you right now? It is all about the season. Seasonal ingredients that I am currently working with and that inspire me include pumpkin, Brussels sprouts and chestnuts. 4. Food can be especially evocative in conjuring memories. Which cuisine/dish brings back the most memories for you? I used to cook Coq au Vin with my father. When we prepared this dish, we always had a great time and it became a firm family favourite. My passion for French cuisine started with this meal. 5. Traiteur has a long history of serving up good food. To what do you attribute its success? The team at Traiteur is very dedicated, passionate and consistent. We recognise the importance of sourcing and using the freshest quality ingredients in our dishes. 6. What are some of your favourite dishes on the menu and why? One of my favourites is the Pan-fried Foie Gras with Braised Beef Tortellini. The foie gras is very rich and the combination of these different ingredients creates flavours that complement each other perfectly. 7. What inspires you and your cooking? When creating new menus, I look at the seasonal ingredients and think of what I have eaten and enjoyed before. I also get new ideas from different cookbooks. From a professional perspective, I have learnt a lot from my previous Chef de Cuisines and now that I am in that role, I try to adopt the skills I admired and respected from my predecessors. 8. If you could cook for and dine with anyone (dead or alive), who would that be and why? Christopher Walken, because he seems to have a lot of different personality traits and faces and that would definitely make him an interesting dinner guest. 9. What’s the modern kitchen gadget you couldn’t live without? An icing spatula as I use it a lot for plating. 10. Why do you think French cuisine is associated with romance? irstly, I should make mention that when visiting BiCE - and indeed, any restaurant at Jumeirah at Etihad Towers - the experience starts when you pull up to the front entrance. There is a certain vibrant energy about this latest addition to the Abu Dhabi skyline and it’s infectious. The hotel lobby is abuzz with excitement as Abu Dhabi’s social

The Food Of Love scene descends upon it as a meeting place before the fun of the evening begins. With spirits lifted, we make our way down to the pool level where the soft glow of ambient lighting and welcoming sound of a pianist singing old Italian classics beckon us in. The contemporary interiors are simple, yet elegant with clean lines and subtle glass partitions that create an air of

mystery. Traditional leather seating and impeccably laid white linen tablecloths are set against a backdrop of artistic frescos of Italy. Nestled cosily behind an impressively designed curved glass wall, sits the bar - its lavishly comfortable seating is too tempting to resist, so we opt for an aperitif from the specially designed cocktail menu. As we savour the relaxing moment, the

barman attentively offers us the food and drinks menus so that we can peruse them at our leisure and in comfort by the bar. Once refreshed, we are shown attentively to our al fresco table by the beautiful infinity pool around which the hotel’s restaurants centre spanning several floors and terraces. The chill of the January evening dissipates as the efficient heat of BiCE’s terrace heaters washes over us in a warm glow and within seconds, our drinks order arrives. Soon to follow, are our mouth-watering starters boasting world-class presentation. I opt for Tuna Tartar with Prawn, Celeriac purée and candied Lemon. The tuna is so fresh, it tastes as though it was caught only hours earlier and the grated lemon rind brings out the subtle flavour of the fish beautifully. The vibrant colours of the roasted peppers in my companion’s Poached Lobster Salad served with marinated and grilled Bell Peppers made the dish look like a work of art and the lobster was juicy and tender. For main course, we opt for: “Carnaroli” Risotto with North Atlantic Lobster and Peas and traditional Breaded and pounded Veal Chop “Milanese” style with Arugula and Cherry Tomato salad with a side order of steamed spinach and mashed potato. The risotto is creamy and well textured and despite the generous portion size, a clean plate is returned. The Veal is a generously sized escalope and cooked to perfection without being heavily salted as is so common in many Italian restaurants. Feeling understandably full, we can barely entertain the idea of desserts, but when the simple, yet enticing dessert menu is presented to us, we just can’t resist. The Pannacotta “BiCE” style with Raspberry coulis is quite simply, the best Pannacotta I have tasted - perfectly balanced between the creaminess of the Pannacotta and the fresh vanilla and with an award-worthy texture, it’s the winning dish of the night. The single portion Apple Pie deserves a mention though as the sugary crispiness of the pastry complements the soft fruitiness of the apples which is all topped off with warm chocolate sauce... tempted? www.khaleejmadame.com
