For winter 2011, Garrard presents the Star & Garter collection inspired by the broad and rich military heritage of this British jewellery house.

adges and decorations that the brand has made over the centuries form a colourful ensemble of shapes and motifs on which to draw upon. This rich source of craftsmanship has inspired a unique and modern-day Garrard jewellery collection: Star & Garter. Terrific Turkey Tips A golden-brown ld b succulent l turkey k is i traditionally di i ll the h centrepiece of a Christmas meal but what should you do to ensure it doesn’t come out like a dog’s dinner?

F

rom basting to standing time and even making sure you stuff the right end (yes, really), follow our guide to the perfect bird and you can’t go far wrong.

1. Choose the best you can afford

The road to the perfect turkey starts with a single step: buying a good one with the best flavour. Most turkeys available in supermarkets are intensively farmed or even battery-reared, negatively affecting the quality of the meat. For the best, most succulent bird, go free-range. Free-range birds are reared slowly in better conditions, leading to a more flavourful festive feast.

2. Buy the right size

There’s no need to buy a bird big so big that you’re stuck with cold cuts and turkey curry for the whole of January, but making sure you allow enough for everyone goes a long way towards a harmonious Christmas dinner. As a rough guide, allow 500g/1.2lbs of raw meat per person, plus a bit extra in case of unexpected guests.

3. Don’t skimp on defrosting

If you don’t want to be serving Christmas dinner on Boxing Day,

avoid the rookie mistake made by many novice festive chefs: not allowing enough time for the turkey to defrost. A frozen bird must be completely thawed before cooking. A big bird can take a couple of days to thaw, so make sure you don’t leave it until last thing on Christmas Eve. For the best results, remove the packaging and place the turkey in a tray at the bottom of the fridge to catch any liquids. In a 4 degrees celsius fridge, allow 10-12 hours per kg (but check the temperature of your fridge first). Defrosting at room temperature (20 degrees celsius) will take about 2 hours per kg, but remember to put the bird back in the fridge once defrosted until ready to cook. Food safety first: always put the bird in the bottom of the fridge, to avoid contamination by gravity thanks to any stray juices.

4. Safely stuffing

There’s some debate as to whether it’s safe to stuff the main cavity of a bird before cooking; some say there’s a risk of bacteria growth before the internal temperature reaches safe levels, while others wouldn’t dream of cooking an un-stuffed bird. As an alternative, stuffing between the skin and the breast meat can give

a lovely flavour and stop the meat from drying out, while stuffing the main cavity with an onion can enhance the flavour of both the bird and the gravy. Finally, don’t stuff too tight - leave enough room to allow for expansion during cooking.

5. Perfect cooking

Place the turkey in a roasting tin and rub with butter, then cover loosely with foil; this will help the bird to brown without drying out the meat. Covering the thighs with streaky bacon can stop the tops from burning. Allow about 20 minutes per 500g/1.2lbs, but don’t forget to include the weight of the stuffing in your calculations (weigh it beforehand and add to the weight of the bird). Half way through cooking, remove the foil and, using a baster or a large serving spoon, baste the turkey with the juices in the bottom of the pan, then do this every 20 minutes until cooked. To test if it’s cooked through, insert a skewer into the thickest part of the leg. When the juices run clear, you’re done. If in any doubt, return to the oven for another 30 minutes. Don’t forget to let the turkey rest at the end; this will make it easier to carve. Cover and leave for 30 minutes at room temperature.

Short hair has so many benefits for women. Not only are short styles wonderfully low maintenance, they are an excellent way to frame your face and make the most of your best features. The problem is that many women are frightened by any hairstyle that lops off hair above the shoulder. They worry that short hair won’t be feminine enough or won’t suit their face shape. The truth is that you can wear your hair short if you choose the right style and it can be super sexy and girlie. Long or oval faces If your face is long or oval, stylists recommend an angular bob that’s closely cropped to the nape of the neck and traces the jaw line in the front, which helps 28

Square faces If your face is square, you can soften the shape with a short and choppy pixie cut. The pixie is perfect for making the most of your eyes and cheekbones, which draws attention away from an overly square jaw line. To style, blow dry hair and use a quality styling cream or wax to

sculpt and tease each section. Short styles to avoid are angular chin-length bobs, which will accentuate the jaw line. Round or heart-shaped faces If your face is round or heart shaped, you can skim away volume by adding framing long layers and a side-swept fringe. A fringe also helps to highlight the eye area rather than the cheeks, where round faces are at their fullest. To style, try flicking the ends out rather than blowing them under, which can slim the face by changing the direction of the hair. Apply a maximum-hold mousse to damp hair and use fingers and a blow dryer to achieve a younger edgier style. Short styles to avoid are sleek Betty Boo bobs that tuck under the chin, which will add further volume to the cheeks and round out the face.

ompany directors and entrepreneurs fortunate enough to be handed the keys to a luxury car as part of their remuneration should be aware that the company car tax rules changed in April 2011 - with the risk of a potential rise in benefit in kind taxation,“ explains Ralph Morton, editor of www. BusinessCarManager.co.uk, the business motoring website. „From April, the price cap was removed for expensive cars. Previously, there was an £80,000 limit on car list prices for benefit in kind company car tax. So if you drive, say, a £125,000 Aston Martin DB9 its list price for company car tax purposes was just £80,000. From April 2011, that changed. The effect is a dramatic rise in benefit in kind value. For that same Aston Martin DB9, the benefit in kind value rose from £28,000 to £43,416 – or a 36% increase. „In particular, where business owners and company directors need to watch is if they run a high

value secondhand used business car. For example, a 2005 Porsche 911 Turbo S 3.6 996 might have a used retail price of £41,950 according to Glass’s Guide, but its price for company car tax purposes

will be £99,300 – its cost new in 2005. „However, it should be noted, these changes do not affect you if you are self-employed or run your car through a partnership.“

Carol Concert is a must and will be held on Tuesday 6 December at the stunning Wellington Barracks. The concert, one of Macmillan’s most prestigious annual events, boasts a variety of musical performances, celebrity readings and congregational carols followed by a reception. Tickets are £35 to £110 per person. Carols by Candlelight in St Paul’s Church, Knightsbridge, is another enormously popular event, taking place on Thursday 15 December. Celebrating its 21st anniversary, the concert will be hosted by Alastair Bruce and features well

known carols for all to join in with, plus celebrity readings. After this magical concert, guests can enjoy a drop of King’s Ginger Liqueur and delicious mini mince pies, safe in the knowledge they’re helping to raise money for Macmillan Cancer Support.
