Salt & Pepper Shrimp Recipe from Good Food magazine, February 2013

Quick and easy, salt and pepper prawns, they make a perfect starter or light lunch.

Method: 1. First, make the dipping sauce. Crush the garlic,

2 tbsp. cornflour Vegetable oil, for deep frying 24 large king prawns, peeled and deveined, with tails Pea shoots or baby salad leaves, to serve

For the spice mix

1 tbsp. Sichuan peppercorns 4 black peppercorns 2 tbsp. sea salt flakes Large pinch of chilli flakes

For the dipping sauce

1 garlic clove, crushed 1 tbsp. chopped coriander leaves 1 small red chilli, finely chopped 2 tbsp. caster sugar Juice 3 limes 1 tbsp. fish sauce

coriander and chilli using a pestle and mortar. (If you don’t have one, just finely chop.) Pound in the sugar until dissolved, then add the lime juice and fish sauce. It should taste sweet, salty and spicy. 2. To make the spice mix, toast the Sichuan

and black peppercorns in a frying pan over a medium heat for 1 min or until fragrant. Finely grind in a spice mill or using a pestle and mortar, then add the salt and chilli flakes and mix together. Transfer to a bowl. 3. Combine the spice mix with the cornflour.

Heat 7.5cm of oil in a large wok or deep heavy-based saucepan. You can test the temperature by frying a small piece of bread – it should sizzle instantly and take 20 secs to turn golden. Toss the prawns with the spice mix, shake off the excess and deep-fry, in batches, for 1-2 mins or until crisp at the edges and starting to curl. 4. Remove with a slotted spoon, drain on a

baking tray lined with kitchen paper and keep warm while you cook the remaining prawns. Scatter over the pea shoots or salad leaves, if you like, and serve with the dipping sauce.

CAN YOU MAKE A WINNING SCONE? Ponteland Scone Festival, International Scone Day 29th May - June 1st To some people they’re a cake, to others they’re a pastry, they’re believed to have originated in Scotland, but to many they’re as English as the Queen and of course it’s undeniable that scones are the corner stone of traditional afternoon tea. Post Box, a new café in Ponteland, Northumberland is choosing to celebrate everything we love in scones with a Scone Festival later this month. There will be scones of all kinds; savoury, sweet and everything in between, including gluten free scones, traditional cream teas and contemporary twists on cream teas, baking lessons and even a scones and wine evening. Owners Alex and Hayden explained their reasons for holding a dedicated festival to the scone: ‘Before we opened Post Box we knew that scones were a very important part of our offering that we had to get right, and we’ve been really pleased that we receive so many compliments about the scones we make here on the premises fresh every day. We’ve also had many customers tell us that they have the ‘best scone recipe’ they could give us, so we decided the only fair thing to do was hold a scone competition to find 06

Northumberland’s ultimate scone. We’ve designed a festival around the scone and International Scone Day (30th May), where customers will be able to try a variety of different scones and get involved in some scone activities - we’re definitely going to be stocking up on a lot of jam and cream!’ The festival starts on Friday 29th, with International Scone Day on Saturday 30th May, finishing on Monday 1st of June.

Unless you have been hiding under a rock, you will have noticed all the hype surrounding the relaunch of the Malmaison Brasserie - Chez Mal.

The launch party saw host of celebrities like Sting and other pseudo celebs turn out to toast the revamped restaurant. With live music and cocktail stations manned and ready to satiate your thirst, the highlight was of course the huge selection of food that showcased the skills of the kitchen team. The attention to detail for the launch was just outstanding. An abundance of fresh seafood was presented along with an acre of charcuterie, various cheeses and of course all the tasty accompaniments you would expect. A hot roast station was added to the mix, a great indicator of what is to come when you visit for Sunday Lunch. The main, notable changes in the property were the bar and restaurant trading places. 08

No more afternoon cocktails with a view of the quayside. The bar space has been moved to the back of the floor and expanded to accommodate more seating and bodies. A very chic area. The Chez Mal Brasserie now sits front and centre. Large picture windows overlooking the Millennium Bridge afford the restaurant a sense of light and an airy feeling which wasn’t met in it’s old position. I can see people clamouring for a luxe booth or the coveted tables for 2 in front of the windows. The jewel in the Chez Mal crown is their Sunday Brunch. 4 courses for £19.95 which include a buffet from the Market tables. THE HERB GARDEN PIZZA HEAVEN The Herb Garden is one of Newcastle’s hidden gems, specialising in fresh stone baked pizzas and Italian salads and shares. We had heard great reviews, so wanted to see for ourselves.

My choice was a good choice! Smothered in Chocolate, Hazelnuts, Banana, Honey and a large dollop of Vanilla Ice Cream. Just what you need as a pick me up on a cold Sunday morning.

The decor is industrial meets chic. Set in the renovated railway arches, the highly polished floors, rough wood tables, the amazing lantern filled ceiling lights and herbs growing in little pods, give the place a cool, quirky look.

It was out of this world, really didn’t feel like I was eating a dessert, just a new type of breakfast. The portion size was huge too, I couldn’t finish it all but my Chris was there to help.

My partner and I were intrigued by the Breakfast Pizzas. There were 4 breakfast pizzas to choose from, giving a new twist on an old technique. At first we didn’t know what to expect, breakfast and pizza don’t normally go together! However looking through the list of choices we knew these were going to be amazing! With the choice of, Breakfast in Bed, Fannie Farmer, Twisted English and The Shakshuka, I went for Breakfast in Bed, and my partner Chris went all out and had the Twisted English. The breakfast pizzas cater for every taste with two savouries and two sweets to choose from, which was ideal as we got to sample both. 10

It about more than just the food, it’s about the whole dining experience

The Twisted English didn’t disappoint either, covered in Sausage, Onion, Parsley, Mushrooms, Tomato, Egg, Ricotta and a lot of Rocket. The egg was lovely and runny just the way my partner likes it as you could dip the pizza base into the left over egg. The staff were welcoming and friendly, very attentive and extremely helpful. Overall, this is definitely a place we will go back to and highly recommend! A visit to The Herb Garden is about more than just the food, it’s about the whole dining experience. PEDALLING SQUARES Cycle Café with a Heritage pedals into second year- invites Tour of Britain teams to drop in. Pedalling Squares Cycle Café, despite the tongue-in-cheek name, spins into its second year having come a long way in 12 months; drawing on the history and heritage of the restored building, and the stories and images of cycling heroes of the past. Once a Brassworks, Pedalling Squares sits unassumingly in Quality Row, in the former industrial area of Swalwell, Gateshead, Tyne and Wear, in the shadow of giant retail park the Metrocentre. This one building, at least, has risen from the ashes of heavy industry. The old Coke and Iron works, whose sites, now greened over with time, offer riverside cycling opportunities close by. Photographer Eric Murphy, with a successful studio in the building, had long held dreams of opening a cycle café. He made it a reality in March 2014 when the ground floor of the old brass works became available, which he converted from its previous use as a classic car garage. It might be said the timing was apt, with the carbon bike replacing the sports car as the grown-up boy’s toy of choice. 16

But this is no bandwagon simply jumped aboard to capitalise on cycling’s increase in popularity. These are authentic fans of the sport with a true community spirit. Pedalling Squares began as a family-owned retro jersey business. The café shares that passion for the glory days of cycling. This photography and design background lends itself to creating an ambience and décor which is comfortably retro: stylish but not stuffy. Customers’ bikes hang on the walls alongside images of Merckx and Pantani. Recycled pallet furniture hints at the building’s former manufacturing heritage. Owner Eric Murphy says, “I was inspired by my dad’s old photographs of the sport, and I’ve been following and photographing cycling events for years. In converting the Brassworks we’ve rescued and retained the character of a unique building, and created something we’re proud of.” The family inspiration lives on down the generations. Eric’s son Adrian and daughter Alisia work there too. Eric continues, “It’s not one tribe of cyclists catered for; We see kids on balance bikes and their families on a run up railway path The Derwent Walk; we greet muddy mountain bikers from Chopwell Woods, as well as the road cyclists


enjoying Northumberland’s quiet lanes or the hills of the Durham Dales.” Neither is it just a bike café, serving coffee and flapjack to keep the cyclists happy. Pedalling Squares is one of the top 5 best restaurants in Newcastle, according to TripAdvisor. Patrons (whether cyclists or not) rate the food, service and great coffee as five-stars for quality. The café also supports local suppliers; their bread is baked and coffee roasted less than a mile away, and ale comes from Tyne Bank Brewery just 3 miles away in Newcastle. Regular live music nights, film screenings and evening events extend the reach and bring in the whole community, not just those on two wheels. The disparate community which makes such loyal patrons has given birth to an eclectic cycling club- The Pedalling Squares Peloton, with an anything goes, rock and roll attitude which is making a splash on the local cycling scene. Completing the picture is Bike Shop Vieri Velo which shares the building, bringing stylish Italian custom builds- Cinelli and Campagnolo- to the party. In September Pedalling Squares extends an open invitation to teams from the Tour of Britain to come and sample the best espresso and warmest welcome around, as stage four rolls out just a Strava segment along the valley in Prudhoe. Eric Murphy again, “Professional riders, it would be great to see you. Come and sample true local hospitality. We have the needs of cyclists at our heart. We’ve created a space for you to relax and feel at home. No bike gets left outside, let alone any rider. Mini Pimms Pavlovas This is a great, easy to make summer treat. Perfect for BBQs or parties!

Method: .

1. Preheat oven to 140 C, line 2 flat baking trays

Serves 8

with baking parchment.

For the meringues

2. Place the egg whites into a glass/metal bowl

For the cream

3. Add 1 tablespoon of the sugar and continue to

and whisk until they are white and fluffy and can stand in stiff peaks. whisk until the mixture comes back to stiff peaks. Repeat this with the rest of the sugar, adding it 1 tablespoon at a time until you have used all the sugar and the meringue is thick and glossy. 4. Next fit a piping bag with a plain nozzle and

spoon some of the meringue into the bag. With the bag pointing downwards and starting at the centre, pipe a small circle onto the baking parchment and then pipe a rim around the edge of the circle to make a small ‘nest’. 5. Place the meringues in the oven and bake for 1

hour until they are pale golden in colour are crisp and lift easily for the baking parchment. Open the oven door slightly and leave them to cool. 6. When they are cool, pour the cream into a large

bowl and whisk until it stands in soft peaks, then carefully fold in the Pimms and strawberries until evenly mixed. Spoon this into each meringue. Finish with some fresh strawberry pieces! 18

When Priya Mishra opened Angeethi less than two years ago in Low Fell, one thing was clear. She didn't want the restaurant to go down the fusion cuisine route. Instead, traditional family dishes are served with skill and style by the highly experienced kitchen team with a nod to Indian street food. Priya's passion and enthusiasm for the food she presents is boundless and at the forefront is a strong desire to quash the belief that you can only eat curry after 5 pints of lager. This is the driving force behind the partnership with HB Clark wines and the Sommelier and Spice tasting evening. Talking about the evening, she said: “I’ve always found the wonderful pairing of wine and Indian food to be a match made in heaven and our new expertly selected wine menu allows our flavoursome traditional Indian dishes to be complemented by the perfect accompanying wine." Gulab Jamun - A traditional Indian

dessert - paired with Principe de Viana Late Harvest Chardonnay. The overall favourite seemed to be the Babich Black Label Sauvignon Blanc which we all agreed we would never have paired without expert guidance from Priya and David. The Siegel Riesling came a close second. We were all very impressed with the experience, and if you are keen to learn more about the new wine menu at Agneethi, we recommend you book in soon and sample them for yourself, you won't be disappointed!

RAVAL LAUNCHES INDIAN SUMMER FOOD FESTIVAL An award-winning restaurant is giving customers the opportunity to experience Indian food as they have never tasted it before.

Mr Malik added: “This is one of a number of events and promotions we’re planning over the coming months to celebrate our Indian Summer Food Festival.

The new concept in dining combines the irresistible flavours of traditional Indian cooking with the convenience of tapas-sized portions.

Gateshead-based Raval’s Tandoori Night will take place on Monday 1st June, as the launchpad for its Indian Summer Food Festival, when a brand new Indian Tapas bar and grill menu will be launched.

Raval, located just off the Tyne Bridge in Gateshead, was named North East Restaurant of the Year at the prestigious British Curry Awards and has won critical acclaim from numerous high-profile chefs.

Manager Avi Malik said: “We’re taking the tapas concept and applying it to Indian food cooked in a tandoor. It’s our way of giving a modern twist to an age old tradition. “Here at Raval we like to think of ourselves as food pioneers…so we thought, why not combine two great cultures to create something entirely new?” Raval’s tandoori tapas dishes will be served in the relaxed environment of the restaurant’s bar area between 5:30pm and 7:30pm, with prices starting from £4.95.
