The Suffolk Food Hall launches the county’s first permanent escape room experience

I

f you haven’t heard about escape room experiences before, they combine a physical adventure game with a storyline that requires the players to use their problem solving abilities to crack codes and puzzles in order to ‘escape’ the room within a set time limit. An evolution of popular scare attractions such as the London Dungeon and similar in set up to the Crystal Maze Television show, the escape room experience has become a new entertainment activity for days out, stag or hen ‘dos, team building exercises or parties. Launching Suffolk’s first permanent escape room at the Suffolk Food Hall in Ipswich, the Puzzle Room has been created in old farm buildings on the site underneath the Orwell Bridge. The adventure will encapsulate the heritage and farming background of the site and surrounding area by posing the question, can you escape the Gamekeeper? Suitable for ages 9 to 90, the story is set in the mid-19th century and draws on the chronicles of the Rev. F Barham Zincke, Chaplin to Queen Victoria and author of Wherstead: Some Materials for its History. As you enter the room you learn that you’ve

been poaching rabbits from the estate of the ruthless Sir Reginald Rackham and have been caught and detained by his gamekeeper. He has locked your group in the estate workers’ bothy while the police are being summoned from Ipswich. It will take them an hour to arrive, so you must use that time to make good your escape! Be sure to remember the punishments for poaching in the 19th century ranged from a heavy fine, to months of hard labour or even transportation to the colonies. Devised with Steve Blake from The Puzzle Room, the challenge will use authentic props and is set to be fun for all the family. Able to book for a group size between two people and eight, there is also the option of large corporate or private events. Giving you 60 minutes to complete the challenge, staff are on hand throughout the game, and no climbing or clambering through the buildings will take place. Steve Blake, or The Puzzle Grand Master as he is known, set up the East Anglian Puzzle Room in April 2015 after being hooked on playing escape games on the internet. After having a dream where he was involved in a game in real life, he wondered if he could create one to work as a business. After some research he found that this idea already existed in Japan and travelled to visit existing escape rooms in the UK and Germany. In the last 18 months

he has travelled across East Anglia hosting hundreds of pop-up Puzzle Rooms. ‘It is a pleasure and a privilege to work with Suffolk Food Hall in its idyllic and iconic location to create Suffolk’s first permanent escape room,’ said Steve.

Residents and visitors alike can look forward to engaging in this immersive fun experience.’ We can’t wait to take the EAUX office for a team building experience and see if we can escape the Gamekeeper! A

fine art painter from rural Suffolk, Ania Hobson works mainly in oils to create modern portraits, tranquil landscapes and unique wildlife pieces using traditional techniques. Her works draw the eye and seem to pop off the canvas with their emotion and depth. After graduating from UCS in 2011, Ania went on to exhibit around the county before studying at the Princes Drawing School in London. Raising a crowdfunding campaign to help her study in Italy at the Florence Academy of Art in 2014, she then exhibited with the Society of Women Artists the following year. With her paintings now hanging in Italy, Holland, Germany, Canada and the USA, we caught up with Ania to name her as our first featured artist.

WHAT PROJECTS ARE YOU WORKING ON AT THE MOMENT? I’m working towards an exhibition and doing commissions at the moment. I’m doing eight life-size paintings which I want to show in London, I actually set up a Kickstarter to fund the project and get all the materials. It’s taken about a year so far to get to this point, I haven’t booked the final exhibition yet. I think I’m going to get nearer the end and then find a gallery, but I haven’t really decided where I want to do it yet. London’s such a big place, and finding the right spot is important.

WHY DO YOU LIKE TO WORK WITH OILS? I just like the textures of oils, I used to work in acrylics, but I found them chalky and dry, and quite flat, but with oils, they have that kind of shine and the colours are so rich. I like to add a bit of impasto in with my paint, to gain that thickness to it. Oils take quite awhile to dry, so if I need to change anything it’s quite easy.

WHEN YOU PAINT PORTRAITS, DO YOU WORK FROM LIFE OR PHOTOGRAPHS?

be so critical as they already know my style. I like to make sure that people who commission me know what my style is like before they enquire, so that’s why I think I pick people close to me because they know my style and are comfortable with that.

HOW DID YOU GET STARTED PAINTING? I was brought up with my mum and dad always giving me pens and pencils, so it’s always been something I wanted to do and had always been my goal. I’ve always really enjoyed art, especially portraiture, I did start off doing animals first, but then I found figurative pieces were more appealing to me.

WHAT INSPIRES YOU WITH YOUR PAINTING? I think just going to exhibitions in London and seeing some of my favourite artists, I think that can really hit you and makes you want to be successful. I’m a massive fan of Lucian Freud and his artwork and I remember going to his exhibition in London and just being blown away by his style; it’s overwhelming.

WHO ARE YOUR OTHER FAVOURITE ARTISTS? I love Alice Neel, her portraiture was not perfect and I think that’s what I like, because they are kind of bit distorted and they look, not cartoonish, but not quite realistic. Francis Bacon, Gustav Klimt; whether it’s the colours they use or how they use the paint, I’ll take inspiration from them.

YOU’VE BEEN RECOGNISED IN SOME PRESTIGIOUS COMPETITIONS, HOW DID YOU GET INVOLVED WITH THEM? Most are an online application. I entered the BP Portrait Awards with a painting of my brother, and I was shortlisted for that. For me that was a big thing because it is one of the main competitions; I was really pleased, I couldn’t’ believe it. I actually had one of my

paintings get through to the Royal Society of Portrait Painters Annual exhibition this year, so I was really pleased with that. It took me about four years to get into that competition, so when I rang up I had to double check and that I was definitely in! You always have to remind yourself that you can’t get disappointed if you don’t get through.

DO YOU HAVE FAVOURITE GALLERIES IN SUFFOLK TO EXHIBIT? Yes, I used to exhibit in the Aldeburgh Gallery quite a lot, and I did do one of my first exhibitions there of Suffolk wildlife. It’s a great spot as it’s on the high street so people just stop and come in. We’re hoping to start doing exhibitions here in Rendham soon, so it will be really nice to put work in here rather than travelling with all the paintings. www.aniahobson.com

It’s so much easier to paint from life. Your eye sees so much more and it also teaches you to be a bit more free and have movement in the painting.

WHAT MAKES A GREAT FACE TO PAINT? It’s not necessarily the face, but how I paint the face and the perspective that I go from. I don’t like the basic front on, but instead I like to paint from above or at a different angle; I think that’s what makes the face interesting. A lot of my portraits are of family, friends, boyfriends, I think I find it easier to paint a family member because they are not going to

Care UK helps answer the difficult questions WHAT TYPE OF CARE? This depends on your loved one’s specific needs. If they need personal care (washing, dressing, eating), but not nursing care, residential care may be the most suitable option. Homes offering nursing care have a qualified team on duty 24 hours a day. If your loved one is living with dementia, look for a home where the care team has specialist dementia training and experience. Individual care plans are important, and if possible, speak to residents or their relatives.

WHERE DO YOU START? It depends who pays for the care. If it’s the local authority, they will have a list of homes in your area. If you are funding it privately, visit the Care Quality Commission’s website (cqc.org.uk). Make a shortlist, then arrange to visit each home.

Fashion Show 2016 We report from the FROW of Suffolk Fashion Show 2016

F

ashionistas from across our county gathered together at Inspire Suffolk in Ipswich on Thursday 6th October to celebrate the regions top retailers, boutiques and designers as they showcased their autumn collections on the Suffolk Fashion Show runway. Produced and Directed by our very own Fashion Editor, Pam Davis from Fashion Candy Style, the EAUX team were once again media partners and excitedly waited in the crowd to report on the event. Starting the evening with a glass of bubbly and an explore around the Fashion Hall that featured numerous pop up shops, including stalls from Caterina Wills Jewellery and Cake & Catwalk. After a spot of shopping it was time to take a seat for the main show and enjoy the delicious tapas selection from Prestige Bars & Catering in the marquee style Red Hall with the professional runway set up ahead of us. Props for the catwalk this year featured a purple chair, umbrella stand, decorative tables and accessories from Maud’s Attic to give the extra wow factor for the occasion. When the lights dimmed, the room hushed as Pam introduced the show and the first models strutted onto the catwalk wearing beautiful autumn garments from Coes in Ipswich.

Presenting men and womenswear in casual styles, smart work wear, colourful coats and party dresses, the range was coordinated and well put together. Next out on the runway were the girls modelling for Apples and Pears Clothing, a plus-size brand that sells feel-good clothing for sizes 16-32. The models had a vintage vibe with retro hairstyles and pretty polka-dot dresses.

The final part of the first half showcased frames from one of the sponsors, East of England Co-op Opticians. The many different styles of glasses were modelled by the male and female models; it was really refreshing to see all types of fashion on the runway – from high-end, to plus-size, to spectacles and menswear.

NIKI P London stunned the crowd with her collection of luxury wearable art. Her handcrafted silks fashioned into tops, kimonos, leggings and the last stand-out piece – a wrap around dress of purple silk with orange, green and yellow floral design. Laura Jane Boutique got us feeling in the cosy, wintery mood with knitted scarves, oversized jumpers, suede jackets and ponchos. A very wearable collection, perfect for weekend attire. Maud’s Attic followed with a range of funky handbags, gloves and scarves. A fun routine featuring umbrellas, I’m sure the collection gave many an idea or two for Christmas presents this year. The boys were up next in outfits from Urban Vintage. Modern and on trend, there was a blend of casual and smart clothing with padded outerwear paired with ripped jeans and rolled woollen trousers with shirt and jacket.

During the intermission the room was a buzz with chatter with the audience discussing what they had just seen, as well as nibbling on some more delights from the catering team.

Kicking off the second half with striking coats from Aura Clothing in Ipswich, the evening continued with unique, handmade womenswear from Estelle Ruth, a local designer from Stowmarket. The turquoise dress with a deep-V neckline with 3D fabric flowers was a real showstopper piece.

After a night full of fabulous local fashion and fundraising for an amazing cause, CLIC Sargent, the Suffolk Fashion Show was a huge success with £1000 being raised to donate to the charity.

British designer and artist, Rachel de Roeper, revealed her new range of living art in the form of vibrant patterned scarves, soft, silky tops and flowing dresses that really moved on the runway. Apples and Pears Clothing brought out its second collection, a mix of floral prints, maxi dresses and cardigans for the cooler weather. Urban Vintage also presented another assortment of menswear with smart casual as the theme. Jeans with shirts and woollen waistcoats, bold coloured outerwear and backpacks were modelled with finesse.

The amount raised on the evening could pay for a family to stay for a month in a CLIC Sargent Home from Home. fter working in fashion and PR in London for 25 years, Sam Denny-Hodson and her family decided to move to Suffolk for a new way of life. Realising her wardrobe of

After two years hand knitting samples from home and looking for a factory, a contact that Sam had worked with in her PR days gave her a tip off for a factory in Mongolia. ‘There are only four places that cashmere comes from and that’s Iraq, Iran, Afghanistan and Mongolia,’ explained Sam, ‘So not your dream holiday destinations, but it’s amazing to go and see all of the goats. When you comb a goat, the hairs start really small, then the middle has the long, lush hairs, so I decided to only use the long fibres as the cashmere would only get more delicious with washing and would have longevity. I learnt quite quickly that dry cleaning is the worst thing you can do for cashmere as the chemicals snag the fibres. With really good cashmere you should machine-wash it because hand washing kneads it in all different directions. Cashmere is like tea and wine, you get what you pay for and if you don’t want a hangover in the morning, pay a bit more!’

Designing her garments by thinking about what she’d like to wear and her lifestyle in the countryside, she opted for classic cuts and styles in both neutral tones and bright colours. ‘The tagline for Homespun is ‘real clothes for real people’ and I wanted people to know this is everyday clothing. That’s what I also wanted to do with the shop. We stock good quality, gorgeous clothes that you can wear everyday, as well as work wear that is simple, but because it’s simple they really pop with the cashmere.’ A year ago, the opportunity arose to open a shop in a location that Sam walked past everyday on the way to drop off her children at The Abbey in Woodbridge. Jumping at the chance to open on Market Hill, the builders were switched from her home renovation to makeover the shop. ‘Everything we’ve needed to source we’ve found locally; it’s all grown quite organically. The two girls who work here were customers, and 99% of our customers are friends or have become friends. We’ve become a bit of a dropin centre, which I love. A lot of ex-Londoners who are finding their way, either their children are at school or are babies and they’re feeling a bit isolated; it’s just nice that they feel they can come in and have a chat.’

This is a great question and one we are frequently asked by our clients at Niroshini who are all keen to find natural products which supplement, or even replace, traditional ‘drugstore’ skincare products. It’s important when deciding what products to use, to work out what skin type you have. The main ones are: combination, dry and oily.

You mention that your type is combination – combination skin – means exactly that; not always dry, not always oily and often both at the same time on different areas of the face. To benefit oily or spot-prone areas, try to find a light, delicate cleanser, which includes either Witch Hazel or Tea Tree, and use both morning and night. Both are antibacterial and antiinflammatory which will help keep the oily area clear and help to dry out existing spots. After cleansing, use an alcohol-free toner that is specifically to help hydrate the skin.

ere at EAUX we work incredibly hard to put together the beautiful magazine you see before you, so when I was invited to bring my team to Image Salon in Ipswich to indulge in a Pamper Party, it was a great chance for us all to relax and bond whilst indulging in some much-needed TLC. Image Salon has been a part of the health and beauty scene in Ipswich since 1999 when beauty expert and entrepreneur, Sue Adams set up her salon. Moving to its current premises at number 16 Old Foundry Road in 2012, the business has been continuing to grow. The current location has been beautifully decorated with white walls, accents of apple green and purple and modern décor touches. The whole ambience is one of relaxation and harmony, and Sue’s ethos of making sure every client feels like a VIP brings customers back time after time. Taking a seat in the waiting area, the girls were chattering excitedly as they sipped watermelon flavoured water and looked through the large array of nail colours they could choose from later on. With two treatments each to pick for our pamper party, the options included a back massage, express manicure, express pedicure, Indian head massage, foot and leg massage with paraffin wax or hand and arm massage with paraffin wax.

Greeted by Sue, she showed us to the large pamper room at the back of the building that led out to a patio garden and rooftop terrace above, ideal for taking advantage of what was a gloriously sunny day. The salon offers two Pamper Party Packages, Relax and Glow that treats each guest to two twenty minute treatments and Deluxe Relax and Glow that offers two thirty minute treatments. With a glass of bubbly provided on arrival, the group can also bring along any other food and drink they desire, or order in from nearby restaurant, Alaturka. Created for hen parties, birthday parties, Christmas work ‘dos and pre-prom parties, the treatment combinations can be tailor made to your requirements and up to 15 people can be invited if you’d like to take over the whole salon for an evening. All of us girls had decided upon a nail treatment and massage combo, so as our Designer Jo settled down to enjoy her back massage, our new Editorial Assistant Emily was first up for her express manicure. Whilst the girls were being pampered downstairs, Laura and I headed up to the sun loungers to catch some rays as we sipped our glasses of fizz… we wished every afternoon could be like this! With Jo looking completely Zen after her massage, it was my turn to hop onto the table to try an Indian head massage. My skilled masseuse began by working some oil into my scalp, neck and shoulders and expertly kneaded out the knots in my shoulders. Face down into the massage table, I was

listening to the other girls natter as Laura was experiencing her express pedicure so she could make the most of the last of the sandal weather for this year. Enjoying the gentle feeling of hands running through my hair, I was lulled into a tranquil state. Not wanting the treatment to end, I was awoken with another glass of deliciously flavoured water. Relaxing with the girls whilst we changed over again and Emily received her back massage whilst Jo had her pedicure, it was so nice to chat outside the walls of the office and get to know everyone better. Having been at the magazine for only a couple of months, it was important to me to build that team morale, and the pamper party was ideal for this – especially in an office of predominately females! Swapping for the final time and it was Laura’s turn for the Indian head massage, whilst I had my express manicure. Opting for a vibrant orange, my nails were moisturised and shaped before the painting began. The finished result was perfect, a nice rounded shape with pumpkin colour – all ready for the autumn! After a most relaxing afternoon, we headed back to our desks, all of us commenting that the treatments had left us feeling light and as though we were drifting back to the office, calm and serene. W

hether you’ve had a stressful week or not, there’s nothing more satisfying than throwing a punch and hearing the smack your boxing glove makes as it hits against your partner’s pad. The feeling of power, of strength and that you can take on anything that’s thrown at you. Boxing has always given me those feelings and whilst I’ve never really taken on anything more advanced than the basic fitness approach to boxing, it is still something I thoroughly enjoy. I met with Sara Thomas, trainer at Grange Fitness & Performance Centre, who had agreed to put me through my paces; she would take me through a boxing style warm up, some core work, teach me how to punch with the correct technique and finally allow me into the ring for a few 2 minute rounds. Boxing is by far one of the most demanding cardio workouts I’ve tried. Whilst running on

a treadmill will get you working up a sweat, to me it doesn’t compare to the endurance you need for boxing. Not only are you required to constantly keep moving and be light on your feet, but to simultaneously put power into each and every one of your punches. Both your cardiovascular and muscular endurance will be pushed to their limits, and believe me, by the end of your workout you’ll know it. Sara’s warm up alone did this. If two minutes of skipping wasn’t hard enough, Sara threw in jumping jacks, high knees and sprinting on the spot straight afterwards, to really raise my heart rate. When it came to moving on to the core work, I thought this might be my chance to lay back and take it easy for 10 minutes or so. But boy was I wrong. Already feeling pretty warm, my abs (or lack of… as of yet) definitely felt each crunch and every leg raise.

Sara had me practicing each punch whilst mastering my footwork and ensuring I always had my guard up and ready. After a few minutes, I was in my element. Throwing on my gloves, that satisfying thud against the pads was music to my ears. A couple of exhausting two minute rounds later and I definitely felt like it has been a workout well done. In my opinion, a 1-2-1 session is definitely the best way to give boxing a go. You’ll be guaranteed to get the personalised coaching needed to really improve your punches, with your trainer being able to work you hard and push you further than you’d be pushed in a larger group workout. t’s that time of year again when even more beards and moustaches will start to appear on the faces of gentlemen across the UK. I believe Movember is responsible for all the fashionable facial hair that has spread in recent years. Whilst the hipster with his beard and a man bun would like to make this claim, I think the wonderful Movember charity movement has allowed men across the country to dress their face up like their father’s or grandfather’s before them. Following on from Movember, many decide to continue and embrace facial hair completely with Decembeard, a lesserknown charity that is doing fantastic work raising awareness for bowel cancer. The knock on effect of all this is where we have ended up today; beards and facial hair on men of all ages and across lots of different fashion genres. Thinking of growing a beard? Here’s my list of dos and don’ts for growing facial hair.

MOUSTACHE • Grow out your beard first. The hair on top of your lip can look a little thin at first. Your moustache may take longer to thicken up and a thin wiry ‘tache is not a good look. • Once you’ve decided in a style, invest in a good quality trimmer. Trim off what you don’t want and shape up what you do. Your moustache needs to look intentional, not like a lazy shave. • If it’s not thick enough after a couple of months, give up, chances are it’s not going get any thicker. Going for a cleaner look maybe your best option.

Your beard is a haven for dirt and bacteria so when you wash your hair, wash your beard. • It’s important to moisturise your skin under your beard as the hair growth draws moisture away from your face. • A good quality beard oil will keep your beard and skin in good condition. If you choose to keep your beard’s shape with a razor, then a shave oil is the best option over soap or foam, the main reason for this is that you can see what you’re doing and you can keep your beard in check easier. Christmas Dinner Tips EAUX’s here to help you have a stress-free Christmas with our cooking tips

1. PLAN Your time spent planning will help the rest of your day feel much less stressed. First of all, make a list of all the ingredients you will need, then work out a prep list of all the jobs to do and work out your timings so you know when each thing needs to go in and out of the oven. Make sure you have bought a roasting tin big enough to fit your turkey before Christmas morning!

2. PREP Try to prepare as much as you can beforehand, for example the Christmas pudding can be done weeks in advance, as can the gravy and cranberry sauces which can be frozen until Christmas day.

3. CHOOSE YOUR TURKEY A Norfolk bronze is always a good choice or a black turkey that has a great flavour due to it being a traditional wild bird. Remember the legs take longer to cook than the breast meat;

push stuffing between the skin and the breast meat to even out the cooking time.

4. DON’T OVERLOAD Don’t try to do too many dishes. People overindulge during the holidays anyway, so don’t feel that you have to do lots of different items. A turkey with all the trimmings and a vegetarian option will be more than enough!

5. DELEGATE Don’t be afraid to ask for help! Get the kids involved stirring the Christmas pudding mix, or chopping veg if they are older.

6. BE FLEXIBLE Don’t give yourself a defined sit down time for dinner. Have canapés or a cold starter on hand if you think things will take longer and just remember it’s about spending time with your family, not slaving away in the kitchen!

7. CHEAT Not everything has to be handmade – buying supermarket sauces, stuffing and dessert will make life so much easier. You can even buy chopped veggies in the shops now for those with limited time.

8. PERFECT POTATOES Everyone’s favourite debate, how to do the perfect roast potatoes? These can be peeled the night before and then par-boiled for 10minutes on the day. Preheat a tray with oil or fat (goose fat is a great choice) and add in the potatoes with salt and pepper to season. Roast until golden brown.

9. FLAMING THE PUD Heat the spirit of your choice in a long ladle over the hob until very hot. Light the spirit then, carefully, pour over the pudding.

10. ENJOY! Sit down and relax, enjoy the day with your loved ones after all your hard work.

Queen B This issue Georgia Watson was invited to The Queen in Brandeston to indulge in a scrumptious six-course tasting menu

T

aking over The Queen at Brandeston in July 2015, Alexander Aitchison and his family had the vision to produce good quality food while maintaining a classic country pub atmosphere. Now running a popular sixcourse tasting menu on the second Thursday of every month, we were delighted when Chef Edward Martin invited us to join them for the evening. Serving up the very best local seasonal produce, when we arrived on a beautiful September evening it was plain to see that at The Queen local means local, as one of the chefs was out in the kitchen garden picking herbs and flowers for the dishes that evening. Sitting down in the relaxing restaurant area, the décor was a mix of rustic elements with modern trendy touches. Starting the evening off with a pumpkin velouté with goats cheese tortellini, burnt sage butter and beans, the velouté was similar to a thick soup in consistency with a fragrant flavour that was just delicious. The tang of the goat’s cheese worked well with the sweeter nature of the pumpkin and the crunch of the beans added a lovely extra texture to the dish. Served with a Pinot Grigio from the Marlborough region in New Zealand, the wine was a richer version of its Italian counterpart with a zingy acidity that complimented the burnt sage butter. This was a dish that I could imagine eating after a leisurely Sunday stroll, sitting by the fire and served with a hearty chunk of homemade bread. Dish number two was a beautifully presented pan-fried salmon, accompanied with baby gem lettuce, celery, apple and beetroot. The

salmon was cooked to perfection. Flaky and succulent with crisp skin, I wish I could cook my salmon like this at home! I was surprised to see a red wine served with the salmon, but the pepperiness of the Chilean Syrah worked perfectly with the pepperiness of the celery and nasturtium leaf. This was a dish I would definitely order as a main course and one I will try to replicate at home. The next course of saddle of venison with cabbage, baby parsnip, potato, mulberry and mulberry jus arrived on an elegant circular black plate. The saddle of venison was succulent and tender, melting in the mouth as you enjoyed each bite. This was my guest’s favourite dish. I invited my dad to join me for the tasting menu evening as he’s an avid foodie who also loves his wine – this was just the kind of night he adores, trying out lots of different food combinations with unique wines. Under the saddle of venison lay a real treat. A little portion of slow-cooked venison, that was almost caramelised in flavour, was a delicious surprise. The floral tones of the mulberry worked well with the perfumed Pinot Noir from Languedoc and complimented the richness of the meat. Onto the fourth dish of the evening, lightly battered cod with bacon, shallots, parsley puree and girolle mushrooms. With a mix of flavours that felt part British, part Asian; the saltiness of the bacon was balanced with the freshness from the parsley puree and light, fragrant mushrooms. The Spanish Tempranillo wine complimented the rich ramen flavours of the sauce and worked well with the fish; an unusual but excellent match. Next on the menu was Baron Bigod Brie, served in a pretzel that was similar in texture and taste to brioche bread and accompanied by Jerusalem artichoke, poached pear puree and Sicilian Aglianico wine. Beautifully

decorated with flowers from the garden, this was a grown-up take on cheese on toast. The brie from Bungay had a real depth of flavour that was heightened by the sweetness of the puree and artichoke, and softened by the wine. The final dish was a dessert of raspberry sorbet, honeycomb and oat granola. Placed on a slice of sweet, soft sponge, the raspberry sorbet was just marvellous; the taste of real fruit apparent from the first mouthful. I’d never tried real honeycomb before that evening, but it was so fresh with a satisfying crunch and rare to see presented in this way. It was so difficult to choose a favourite from the evening, but either the pumpkin velouté with its warming vibe or the dessert with its caramel tones and bursts of fresh mint were the highlights of a thoroughly amazing evening. All of the recipes had been created with real thought and skill, ensuring that all the flavours on the plate were in harmony with one another, rather than highlighting one particular ingredient. This balance showcased the individual elements so that you could appreciate each one. The wine pairings revealed the talent the staff have for successfully delivering something different. By not choosing the usual suspects and instead introducing their diners to something they would not usually pick, we discovered new ideas of what flavours worked together and found some new favourite tipples. Great House, Great Food EAUX delights in authentic French cuisine at The Great House, in Lavenham

riving through twisty country roads on a beautiful autumn day, the village of Lavenham was bustling as we parked in the market square that is surrounded by quaint looking houses and shops. The Great House, a large white fronted building at the edge of the square, was built in the 14th and 15th centuries by a prominent weaving family, and has a long history in the idyllic medieval village of Lavenham. Once home to a famous photographer, an author and even the British Army during WWII, it was bought by Régis and Martine Crépy in 1985 and transformed into the French restaurant and boutique hotel you see today. I decided to opt from the delicious sounding and reasonably priced lunch menu, of which two courses were £19.50 and three £24.95. Choosing the Fish Mille Feuille to start, my guest tried out the A La Carte menu and picked the Yellowfin Tuna. Arriving on stylish black plates the dishes were artfully presented.

My terrine of skate and courgette was delicate and flaked away to melt in the mouth, the lightness of the skate making for a perfect starter choice. A confit of tomato and beurre blanc sauce accompanied the terrine, the rich buttery sauce deepening the flavour of the terrine. My guest’s Yellowfin Tuna consisted of one side grilled sashimi graded tuna loin, of which she said made for a lovely breadth of textures and flavours with a seared aspect and then rarer pieces of fish underneath. Served with cucumber and black sesame quenelle, white sesame cream and soya and mustard dressing, the contrast of the tender tuna with the hints of sesame harmonised beautifully. For my main course I continued with the seafood theme and decided upon the Atlantic Cod. Steamed and falling into flakes, the fish was thicker and meatier than most cod fillets I’d had before. This meant the fish took on the white basil beurre blanc sauce fully to enhance the succulent meat. Served with a mixed herb crust on top of the cod and a cabbage fondue, these aspects rounded off the freshness to the dish making it an ideal light lunch option.

The Scottish Beef Fillet appealed to my guest for her main course and she remarked that the beef had been cooked to exactly her liking. Served with capers polenta, baby purple artichoke, beef and Argan oil sauce and tomato espuma, she commented how all the elements worked together to highlight the deliciousness of the beef. I was full to the brim after my two-course lunch, but my companion couldn’t help but be tempted by the sound of the Chocolate Entremet. The rich pudding of chocolate, peanut cream and mascarpone mousse looked and tasted indulgent. Served with a chocolate and caramel ice cream, my guest was in chocolate heaven. Served a finishing touch of two miniature cakes and two marshmallows on a stylish slate board, we both left The Great House feeling extremely indulged after tasting a slice of authentic French cuisine in the charm of an English country house. 150g smoked salmon 200g soft cheese Handful of chopped dill Squeeze of lemon juice 1 tbsp crème fraîche Salt & pepper to taste Crackers or toasted baguette to serve

Blitz up the smoked salmon, soft cheese and crème fraîche in a food processer until into a smooth mousse. Add the lemon juice and salt & pepper to suit your taste buds. Spoon the mousse into individual jars, or onto each plate, and serve with a sprinkle of chopped dill. Place crackers or slices of toasted baguette on the side.

Turkey with giblets removed Bay leaves Stuffing (your choice of flavour) 85g butter Salt & pepper to season 10 rashes of streaky bacon 175ml of red wine 1 onion, quartered

Preheat the oven to 190˚C, gas mark 5. Stuff the turkey with the onion and bay leaves. Take your chosen stuffing and pack half into the neck end. You can also push some of the stuffing between the skin and the breast meat to help the whole turkey to be cooked at the same time. Tie the turkey legs together and place in a roasting tin with a base covered in foil. Cover the skin with butter and season with salt and pepper. Place the rashes of bacon over the turkey breast and then pour over the wine. Bring the foil up around the turkey to make a parcel. Put in the oven. The cooking time will depend on the size of the turkey – roughly 90 minutes, plus 20 minutes per kilo. 90 minutes before the end of cooking, open the foil and take off the bacon. Drain the fat, and baste the turkey with its juices several times. Leaving the foil open, place the turkey back into the oven. The turkey will be done when you stick a skewer into the thickest part of the bird and the juices run clear.

CLASSIC CHRISTMAS PUD • 150ml of spirits (brandy or whisky work best) • 900g of dried fruit of your choice – raisins, cherries, dates, sultanas and cranberries are traditional • Grated zest of 1 orange • Juice of 1 orange • 4 eggs, beaten • 110g self-raising flour • 85g chopped nuts of your choice • 1 tsp cinnamon • 225g dark brown sugar • 225g butter • 110g breadcrumbs

Put the dried fruit into a bowl with the orange zest and juice. Pour in your spirit of choice and mix well. Cover the bowl and set aside in a cool place overnight. The next day, grease two 2-pint pudding basins and place a disc of greaseproof paper at the base of each. Cream together the butter and sugar in a bowl and whisk in the eggs, a little at a time. Add this mixture to the soaked fruit and combine thoroughly. Blend in the flour and breadcrumbs before adding in the nuts and cinnamon.

Spoon the mixture into the pudding basins and cover with greaseproof paper and then foil. Tie the basins up with string. Steam the puddings for four hours. Eat the puddings straight away or cool them to store (they can be kept for up to 3 months, so the puddings can be made well in advance). Re-steam the puddings for two hours before needed, set alight and then serve with cream, or custard.

Mike Pickup explores the Douro River, a region known for its Port, for a trip full of vineyards visits and wine-tasting

T

he Portuguese city of Porto on the river Douro is the home of Port Wine. Names such as Croft, Fonseca, Sandeman, Dowe’s, Graham’s, Warre’s and Cockburn adorn the river banks which are lined with

numerous Quintas (farms) and their vineyards. What better way to explore the region than on a luxury river cruise from Porto, where the Douro flows into the Atlantic, to Barca d’Alva at Portugal’s border with Spain. Port starts life as red wine, but during fermentation, neutral grape spirit, 77% alcohol by volume, is added. This stops the fermentation, leaving some residual sugar

that gives port its sweet taste. Ruby port is stored in large steel tanks which do not allow oxidisation, thus preserving its rich colour. Tawny ports are aged in wooden barrels and the slow oxidisation changes their colour to golden brown. Tawny ports are often described as 10, 20 or 30 years old. This does not indicate the age of the Port, but an average age of the wines that make up the blend.

Our journey had started at Gatwick with convenient valet parking and we were soon on our two-hour flight to Porto, the capital of northern Portugal. A short transfer brought us to Villa Nova de Gaia on the opposite river bank to Porto, where we boarded AmaVida, home for the week. Our cabin was elegant with lots of storage space, and a marble bathroom with top-class fittings and l’Occitane spa quality toiletries. Bath robes and slippers were also provided and there was a small balcony where we enjoyed cool nightcaps before retiring to our large and comfortable bed. The next morning, before leaving Porto, we were taken on a city tour which included the local railway station, decorated with over 24,000 azulejos –Portuguese blue ceramic tiles. We also toured Graham’s and learned about the production of port, followed by a tasting of some of their vintages; and all this before lunch. That evening we visited one of the many local vineyards and had dinner at Casa de Vila Verde. By the way, the word verde, meaning green, does not describe the colour of Vinho Verde but that it is young wine. The following morning we moored at Regua to visit the Douro museum before heading out to Lamego and the 18th century Sanctuary of Our Lady of Remedies. Pilgrims climbed more than 600 steps to reach the sanctuary but fortunately our coach did the journey for us. On the way down we stopped for a tasting of Espumante, Portuguese sparkling wine. Then we had a spectacular drive to hilltop Quinta do Seixo where owners, Sandeman, treated us to

a tour of their production facility and a tasting of a selection of ports. The next day we reached the turning point of our trip and AmaVida docked in Vega de Terron, just a few yards over the border into Spain. The Spanish Renaissance city of Salamanca is around fifty miles from here and its University, founded in 1218 attracts many international students. Declared a UNESCO World Heritage Site in 1996, it shared the title of 2002 European Capital of Culture with Bruges.

shaped bottles of Mateus Rosé so many of us remember; some still remain, converted into table lamps. The morning of our final full day and AmaVida headed back to our mooring at Villa Nova de Gaia. After lunch on board, we drove to Guimaraes, a city dating back to the 10th century.

The city is famous for having two cathedrals joined to each other, one built in the 12th century and the other in the 16th century, as well as its town square or Plaza Mayor, considered by many to be the most elegant in Spain.

We also visited the lovely Casa de Sezim where we were greeted by the current owner, the house having been in his family since 1376. Its interior includes stunning and extremely rare 19th century hand-printed wallpaper whose colours are as bright today as they ever were and the vineyards produce top quality Vinho Verde which we were happy to sample.

After another good night’s sleep we headed back downstream and stopped at Pinhao where we drove to Croft’s Quinta da Roeda for lunch and a tasting of pink port, created by Croft to attract a younger market. Lunch was followed by a visit to the Palace of Mateus whose famous facade adorned those odd-

he tagline for the new Porsche Panamera, is ‘courage changes everything.’ A bold statement for a bold car that reveals a new generation of Porsche models that will pave the way for the future of the company. The student centre sits on a stone base with rectangular windows of various sizes overlooking the lake beyond, making for a beautiful view when studying. The sailing canopy attached to the entrance welcomes visitors and mirrors the theme of the water nearby.

The new buildings have become a popular hub with the students due to the careful consideration of both the exterior and interior architecture. The brief was to compliment the existing architecture of the campus, whilst taking into account the lakeside location, and this has been successfully achieved.

Taylor has implemented limestone cladding in both polished and natural states, with horizontal layering emulating the buildings that are already part of the campus. The neutral palette of materials, colours and textures used inside the buildings have created an environment that is attractive, yet tranquil enough to provide a space for learning and contemplative study.

The library extension is sympathetic to the original structure and uses expressive external in-situ concrete for a modern feel. Taylor has looked at where the light would naturally fall onto both buildings and has used simple

Is Ipswich Fulfilling its Potential as a Property

ust over a year ago to the day, Ipswich was hailed as a property hotspot to watch over the next decade, with experts predicting that house prices could soar in the area. A survey was conducted by HouseSimple, that mapped out 10 areas in the UK where untapped potential and lower house prices could possibly spark a boom in demand, with Ipswich appearing among the most promising areas. Last year’s story reported that demand was outstripping supply in terms of available properties, but is Suffolk’s county town living up to expectation?

ONE YEAR ON A year on and the prophecies do appear to be coming true, with eMoov’s National Hotspot Index listing Ipswich in its Top 10 hottest property spots for the first time, at position 4. Rising house prices in London have caused something of a ripple effect, leading to rising

house prices in Ipswich and surrounding areas. This has led to properties in IP postcodes becoming a valuable commodity for homebuyers, either looking to live in or let out a property in Ipswich. The low crime rate and popular destinations – such as Southwold, Woodbridge and the Ipswich Waterfront – have certainly contributed to the recent growth in the housing market. The next decade looks very positive for Ipswich and the surrounding area. Development is continuing apace, in order to match the high demand for properties, and with house prices rising, the town looks set to continue its climb.

THE EAST OF ENGLAND – THE UK’S HAPPIEST REGION While the Ipswich property market is booming, the East of England as a whole has enjoyed a boost of late, with Rightmove’s annual ‘Happy at Home’ survey recognising the region as the UK’s happiest place to live. The survey was completed by 24,000 people and remarkably, 5 of the towns recognised in the Top 10 are situated in the East of England, with Woodbridge rounding out the Top 10 and Bury St Edmunds close behind. By no means definitive, the survey does highlight the

growing popularity of the region as a place to live.

IMPACT ON THE RENTAL MARKET The region’s rental market also experienced a record best performance in August, which is a month when the market traditionally sees a slowdown. While the usual trend was observed across much of the United Kingdom, East Anglia was noted as the best performing region, with growth in new listings at 1.1% and properties let at 6.1%. These results paint a clear picture of the overall air of positivity that surrounds the property market in Ipswich, Suffolk and East Anglia as a whole. Winter Entertaining Bryan Turner discusses the most important features of a kitchen for festive entertaining

Bryan explains, ‘When designing a kitchen for entertaining, most people don’t realise just how many elements of the room can be altered to make it the perfect match for them.’ Bryan developed a keen eye for detail during his early career in antique furniture restoration.

without ducking out of the line of sight of their guests and this makes it easier to maintain conversation.’ Range cookers on the other hand, work well in both contemporary and traditional style kitchens. Bryan explains, ‘They have a big enough capacity to let you cook a full roast dinner with all the trimmings easily, no matter how many people you are hoping to fit around the dinner table!’ As well as filling the kitchen with comforting aromas, Bryan says that ‘Agas really come into their own at this time of year. They produce a tremendous amount of heat and as the temperatures fall outside, simply keeping your kitchen warm is a really easy way to make your kitchen feel inviting to guests.’

Investing in under floor heating is another way to create this cosy atmosphere and can be a really worth-while if the kitchen is being built from scratch. ‘It is a great way to warm up your feet after being outside in winter rain or snow and customers with dogs can really benefit from strategically planned under floor heating.’ Bryan recommends that his customers choose an area in the kitchen where they would like the dogs to be most of the time, preferably away from the range cooker where they tend to congregate when it gets cold.

‘If you incorporate more heating elements under a particular part of the floor, it will encourage the dogs to go there rather than somewhere more in the way. Meeting with Peter at the site near Coddenham, he explained that after successful property development projects together, Peter and Dominic had seen the farm and wanted to do something special with it. ‘Another developer may have turned these barns into houses, sold the land in plots and cleared off, however we didn’t want to just do that. We wanted something special for this site, and so this idea developed,’ said Peter, ‘Basically, we came up with the plan for a country club, which is a very standard

American idea, that people have a place to go to when they come down from the city. It acts as a base for them, with accommodation added.’ Having worked closely with the Prince of Wales in the past, Dominic has incorporated the Prince’s ethos of sustainability and making the land work for the modern era, whilst still keeping the traditions of the country. ‘What we’ve got in Suffolk is a circle that we want to square. The circle is that we want

Londoners to come to Suffolk because they spend money and contribute to our economy, but we don’t want them buying up the land and pricing out the starter homes, as it’s particularly one or two bedroom cottages that they are buying,’ explained Peter. ‘In Aldeburgh 45% of properties are second homes and up and down the coast we are seeing dead communities. Second home usage on average worldwide is 10 days a year, and I can understand that you’re busy in London or you’ve got commitments or family events, and then your house becomes a bind for you because you’ve got to clean the guttering, cut the grass and do all the maintenance. ‘So with all these thoughts in our head, we decided we would turn this place into a purpose built country bolt hole for 500 people, which works for them and is an addition to the community. It gets people out here spending their money in the local economy, creates jobs, but it also works for them because it takes all of the hassle out of full time second home ownership. Everything is managed, the outlay is far lower than buying a full time home, and the level of facilities and amenities is akin to a five star hotel. Few second homes have a designer club house, restaurant, gym, bar and full spa facilities on site. Y

our business is a longterm investment of both your time and financial resources, and effective succession planning can help you make the most of both of these. Naturally, many tough decisions will need to be made when developing and implementing your exit strategy. However, whether you are planning for succession; management buy in/out; or sale to a third party, developing a succession plan should help to ensure the smooth transition of you from your business, perhaps from one generation to the next. However, you should be realistic, rather than sentimental when considering succession. Do the children want to take over your business? Do they have the skills to do so? If there is more than one, can they work together, and who will be MD? Even if you feel that they can work together, it is vital that you put in place the legal

mechanisms to clarify respective duties and rights – particularly a good shareholders agreement. The consequences of family members falling out are so serious that this is especially important. If the children are not able, willing, or sufficiently compatible to take over from you, then you might want to consider selling the business to the existing management team. Warranties and indemnities on such a sale will be much reduced and simplified because the buyer already knows the business inside out. If you would like to withdraw from the business gradually, there may need to be provision for entrenched rights of directorship during that transitional period. In these circumstances, a consultancy agreement may be particularly useful. Business issues must also be co-ordinated with your will. Thought should be given to family members whether or not you intend for them to be involved or have an interest in the business. Failing to do so could result in assets/shares and control of the business not

passing to those you would like them to. In any event, preliminary advice on tax issues is vital. We cannot emphasise enough that this is a complicated area of law, and that planning ahead is absolutely essential. Without it, the worst case scenario is that your business keels over and dies simply because no proper strategy has been put in place when a crisis – such as long term illness or death, occurs.
