Serves 6people

Ingredients:

650 grams of beef mince, 1 chopped onion, 1 egg, 1 cup of milk, 1 cup of breadcrumbs.

Ingredients for sauce:

About 100 grams of tomato ketchup,

2 tablespoons prepared mustard, (I prefer English mustard),

2 tablespoons brown sugar.

Directions:

First preheat oven to 175°C

Mix the mince with the chopped onion and add the milk, breadcrumbs and egg to bind. Season with salt and pepper to taste. Place meat mixture into a lightly greased loaf tin then tip onto a baking tray (I cover tray in tin foil as is easier to remove meatloaf and saves on washing up).

Mix ketchup with mustard and sugar and pour over the top of loaf. Cook in oven on middle shelf for an hour.

Our‘windowoftolerance’refersto aplaceofoptimalcalm,whereall iswellandourbodiesandbrains arerelaxedbut alertandwecan boththinkand feel.

Our‘windowoftolerance’isa zone,wideenoughthatwecan managesomeups and downs without goingoutsideofit.These ‘ups and downs’aremanaged by ourautonomicnervous system.Thisisthepartofour nervoussystemwhichcontrols involuntaryactions,suchasheart, digestion, andto alargeextent ourbreathing.Therearetwo branchesoftheautonomicnervous system: thesympatheticandthe parasympathetic.

Normally thesetwosystems worktobalanceeachother.The sympathetic nervoussystemgears usupreadyfor action,whilethe parasympatheticslowsusdown readytorest.Withinourwindow oftolerance,moderate activation ofthesympathetic nervoussystem (theaccelerator)willincrease ourarousalto helpuscompletea demandingtask,suchasphysical exercise,orsomethingrequiring

focus andconcentration.By contrast,theparasympathetic(the brake)willdecreaseourarousal, helpinguswinddown andrelax, reducingourarousalsothatwe can forexamplefallasleep.

Everybodyhasahabitual‘width’ oftheirwindowoftolerance –how much orhowlittlestimulation theycantoleratebeforetheyhead outsidetheir‘optimal arousal zone’.Peoplewith awide‘window’ candealwith alot morechallenges beforebecoming overwhelmed, whereaspeoplewith anarrow windowcanfindnormalday-to-day activitiesquitedestabilisingand overwhelming.

Whenweare hyperaroused(too much activationofthenervous system),thesympatheticnervous systemisexcessivelyactivated, resultinginthe‘fightorflight’ response.Ourheartsbeat rapidly, our musclesgetreadyfor action (readytofightorrun away),we feelpanickyandourthoughts race. We finditdifficulttoprocess informationeffectively,withan increasedsenseofthreat.

LOCALHISTORY

SirDonald Bailey(1901-85)

Ithinkit wouldbefun to be eponymous,thatis givingone’s nametosomething.I likethethought of‘Roberts Style’(I’mneverscruffy),‘Roberts Wit’(everhumorous)oreven‘Roberts Tolerance’ (verypatient). Ihaven’t managed to putanything eponymousoutthereyetbut my latestlocal bod certainlydid:Sir Donald Bailey,chartered engineerandinventoroftheBaileyBridge.

He wasn’t local, of course,ashewasbornin Rotherham, Yorkshireand wasanalumniofthe UniversityofSheffield,but ourpartofthe world playeda bigpartinhisstoryandtheachievement ofsomenotorietywhichhe wouldn’t have particularly welcomed.Hewas averyordinary, humbleman,somuchsothatthestaff inhislocal bankin Southbourne(he retiredtoBournemouth) hadnoideathattheir regularcustomer wasnot onlyfamousbutalso knighted. Howdifferent fromthe worldoftoday’s‘celebrity’wherewe mustsplattereverysinglething we doonsocial mediaincaseourill-meritedfamedoesn’t last untilmidnight. I’mnot acelebritybythe way (famous forjustbeingfamous).

Baileybecamefamousbecauseheactually achievedsomethingthatreallymattered, designingthe Meccano-stylebridgeused by the Alliesduring WW2thatcouldbridge riverswhere theenemyhadblown existingbridges.Itwasa bridgethatcouldbe constructedquicklywhich wasoftheessenceasitoften had to be done underfire.

AWar Office civilservant whenhehadhis Eureka moment, Baileymayhavebreached apatent foranearlierbridge,the Callender-Hamilton (1935),patented by aNew Zealandcivilengineer, however, whetherthatwasdone knowinglyor not,the crucialdeterminantwasthatBailey’s bridge wasmuchquicker to assemblewhich wouldhave been appreciatedbyany Royal Engineertaskedwith rollingoneoutifsomeone wastakingpot-shotsfromtheoppositebank.

Bailey wasbased at theExperimentalBridging Establishmentattached to thebarracksin Christchurchandlived at 1Twynham Avenue (1946-64). There’slotsofclues regardingthe modestman’s achievementaroundthe townif youlook:AsectionofBaileyBridgeandplaque onBarrack Road(acrossthe roadfromthe‘Bailey Bridge’pub/restaurant);anothersectiononan outside wall at the RedHouse Museum; aplaque insidethe Priorychurch; aprototypepedestrian BaileyBridgeon Stanpit Marsh. ‘Monty’reckoned it wasa crucialinventionthathelpedshorten the war. As it wasthemostdestructivewarin humanhistory, lastingsix yearsand costinga conservativeestimate of60millionlives,we shouldbe grateful to Baileyifhisbridgeservedto abbreviate it.

AwardedanOBEin1943and knightedin

1946,Bailey would retire acrossthe water to Southbourne,one ofhishomesbeing14 Viking Close.Hediedin Bournemouthon5th May1985, aged83. Alifewelllivedand ajob welldone.

Today,thesunwasstreamingthrough thewindowandDad’sfacewas glowing –ithadbeen agreatday.The oldmanwasfastasleep.

Well,wecan reportthatwewereindeed openeveryday of2021(certainlyup to the date ofthisarticlebeingwritten)andthat, to ourcredit,wehavehad nocasesof COVID beingpassedamongstour Watchkeepers. Sanitisingthe Station,andensuringthatall Watchkeepers regularlysanitisetheirhands, hasnowbecomesecondnatureatthestart, thefinishandduringallour Watcheswith oneofthebenefitsbeingthatweare now able to resume fourman Watches,asand when volunteer availabilityallows.

DFSstands for“Declared FacilityStatus” andisthebenchmarkqualification toa challengingnationalstandardwhichmust be attained forabody -inthiscase,our Station -tobeofficially recognised by Her Majesty’sCoastguardasanintegralmember ofthe Maritime Searchand Rescue(SAR)

emergencyservices.DFSassessmentusually takesplacewithintwoyearsof aStation’s opening,butourplannedassessmentfor March2020 wasfrustratinglypostponed due to lockdown. TwoNCI Assessors arrivedonWednesday1st Septemberand scrutinisedourfiles;pored overprocedures, logbooks,trainingmanuals;keenly observedWatchkeepersonduty; grilled themanagementteamanddrank copious amountsof tea! Theordealwas over by Thursdayafternoonwiththe following remarksfromthe Assessors:

“ToreachDFSinthe periodofayearofthe pandemicrestrictionsis exemplary”

“Veryimpressed” -“documentation is very good”andourprocedures are “spectacularlythorough”

Thisdoesn’t mean werestonourlaurels: we have someminorissues we areaddressing, and we mustmaintainthestandard!

Theliftingof COVID restrictionsmeans thatwehavealsobeenable to resumeour recruitmentprocess,invitingsomeofthose whohave beenonour waitinglistsincewell beforethefirstlockdown to joinusasan observerona Watchbefore(ifbothsidesare happy)beginningthetrainingprogramme.

Incidentshave,onceagain,beenmanyand varied(although fewerthanintheprevious coupleof years)with25being recorded up to theendof October.Thosethatwehave recordedinclude vesselswithenginefailure, ortakingon water, orsmokingengines, wingand kite surfersindifficulty, concernfor swimmersandvulnerablemembersofpublic and adog overthecliff.The professionaland thoroughmannerinwhichtheseincidents were handledis testamenttotheongoing training received by everyWatchkeeper. Liveexerciseswith MudefordRNLIprove invaluableinensuringthatwemeetand maintainthe requiredstandards.

Nearly1,000 radiocheck requests were receivedonVHFCh65and over45,000 vesselslogged.

Startpreparingthedoughforthebase.Mixthe oilwiththemilk,flour,vanilla,sugarandthe salt,untilitforms asmoothandsoftdough.

Coverwith aclothandletit restforabouthalf anhour.Whenitistime,lightlyflour asheet ofbakingpaperandwithanotheroneplaced aboveit, rolloutthedoughuntilitisthinly rolledout,approximately3mmthick. Removethetoppaperandturnthedoughinto theflantin.Evenouttheedgesandcutoffany leftoverpieceswith aknife.Preheattheoven to180degrees.

Forthefilling,cracktheeggsin abowl,add thesugar,thelemonrindandbeatwith awhisk untilitisdoubledinvolume.Addtheground almondsandstiringently.Pouroverthe doughbaseandevenoutthesurface,bakefor approximately30minutes.

Whenthecakeiscooled, removeitfrom themouldandplacetheCrossofSantiago templateinthecentre,sprinklewithicing sugarliftthetemplateoffsothatthedeisgnis marked. Voila!Enjoyit.

Asunny,blusterydayontheseafront betweenBartonandHighcliffe.

We wereallallowedoutforonewalk aday backthen,andmylittledogScrappyand Iwerehavingournormalwalkscrambling downtoourruggedbeach.Aswewent,we noticed asmallgreententpitchedamongst the rocks.Suddenlyitunzippedand alean youngmaninhis30’salmostjumpedout.

“MorningSweetheart!”hecheerfullysaid.

Hewastheremostmorningsafterthatand asthedayspassed, Ifoundoutthatthisman was ahomelessex-soldierwhohadlosthis jobinthepandemic.Horrifiedatthethought ofbeingshutin ahomehe’ddecidedto campamongstthe rocksbythesea,buthis presencewasunpopularwith afewpeople andhewasmovedon.

Overthesummer Ithoughtabouthis situation.He’dservedhiscountry,yet nowheseemedtobe“lost”andalmosta nuisance. Wasthereanything Icould do tohelp?

I’manartistand Ipaintillustrative,colourful paintingsmainlyofthelocalarea,so IcontactedSSAFA,thearmedforces charityandaskedif Icouldvoluntarilypaint somethingthatcouldbeturnedintogiftware fortheironlineshop. We settledontheidea of ajigsawimage,andafter afewmonths, “VictoryRoll”,animaginary1940’sharbour scenebecame a1000-piecejigsawpuzzle.

Thenlateonegrey,winterafternoonas Iwas ontheusualdogwalk, Imettheex-soldier again.Hewasjustwalkingbytheseathis timeashe’dfoundsomewheretoliveand washopingtostartworkingagain.But Iwas abletotellhimhowhehadinspiredmeto createthefund-raisingjigsawpuzzlewhichI thinkmeantasmuchtohimasitdidtome.

Irememberwatching kingfisherszigzagacrossnearbyrivers; theirglossyblue-backsandvibrant orangefrontsboltedpast –Iwasleft amazedandinspired!Thesoundsand sightsofbirdsflittingfromtreetotree comfortedme.Fromthenon,every weekend Iwasupandawake,pleading withmymumanddadtotakemeto exploremoreofthenaturalworld.

When Iamimmersedamongnature,I canforgetanythingthatstressesme.

Ilovethevarietyofplaces Icanvisit: frommarshlandstotheseashore; fromtheNewForest,tothePurbecks. Butoneofmymostfavouriteplaces isStanpitNatureReserve,especially earlyinthemorning.Thediversity thatlieswithinthemarshyplainsof Stanpitastoundsme; Icanoftenfind thecommonspeciessuchasthelittle egret(whichoncewereararesighting intheharbour),or resident redshanks. YetIalsogettoseeraritiessuchas thesummer-visitingospreysfishingfor mullet,aswellastheglossyibisthat comesallthewayfromSpain.

About ayearago IdiscoveredthatI could recordmysightingsoncamera, andnowamusuallyfoundwith alens inhand!

Ilovetosharemyinterestinbirdswith others,andwiththesupportofmy headteacher,wasallowedtosetupa birdwatchingclubatmyschool. Ialso learnalotfrombeingpartoftheCHOG community,talkingtoothermembers whenoutwatchingbirds.
