WEEKEND COOKBOOK
SPRING 2015
Letter from the Editor To me, Spring is the happiest season, especially in upstate NY. The temperature just barely hovers above 40 degrees and all of a sudden the sidewalks are jammed with people, joggers abound, dog walkers are out in force, people are throwing frisbees in the park and teenagers start wearing shorts and flip flops. We are all so desperate for a little sun and being outdoors without being encased in Gore-tex that we lose our minds over the first flower poking through the leftover snow and practically fall over from excitement when the sidewalk patios open. It’s a great time. It’s hopeful. Everyone is hoping and looking forward to the more comfortable weather, the longer days with more sunshine and more daylight hours where you can grill outside and feel grass under your feet. It’s a rebirth, ducklings and bunnies and eggs and Easter and Mother’s Day. This Spring will also mark the first Mamatoga Meet Up, and I am really looking forward to it. So many of you responded to the survey (didn’t take it yet? Click here) and I want to put together the best first meeting for everyone.
she comforted me, and I will always remember her kindness. That’s what I want from the Mamatoga Meet Ups, to make those connections that we all need so much. If you want to be part of a Meet Up or want to host one as a local business, drop me a line at jenny@mamatoga.com and I will give you the info. Wishing everyone a Happy Mothers Day, I hope you enjoy this issue, and I can’t wait to meet all of you.
xoxo - Jenny
This past year I have leaned on other mothers more than I ever have before. I have leaned on my friends, strangers in the hospital when my mom was having her breast cancer surgeries, strangers in the waiting rooms at the hospital while I waited with tears in my eyes, I have even leaned on my own mom, who gave me strength even when she was at her most scared. It made me realize how important it is to have each other, to support each other. It made me realize how vital it is to lift each other up, to be part of a community. This spring I am hopeful that the first Mamatoga Meet Up will result in a few new friendships, a few new connections, and some genuine support. By taking this online community into the “real world” I want to celebrate the positive impact we can have on each other. I was inspired by a fellow mom I met in Saratoga Hospital this past fall when my mom was going through her cancer surgeries. She saw me waiting by myself in the hallway and recognized me from the blog, and we chatted, me barely keeping tears back as she told me about her own mother’s experience with breast cancer. She was a total stranger, but she took the time out of her day to stop and talk to me, to tell me it would be okay. She gave me some practical tips, names of books to look up that helped her and her mom, and most of all she smiled at me, 2 | MAMATOGA Spring 2015

BUTORS Julie Cox
You can often spot Julie around town doing one or more of the following things: Â chasing one of her three boys, Jackson (12), Declan (4), and Beckett (1), educating teenagers about Shakespeare/aliens/grammar, driving her sweet minivan between various sports and activities, and chugging coffee in the midst of all the organized chaos. Â But most likely you will find her wandering the aisles of the grocery store where she spends the bulk of her time stockpiling food for the aforementioned three boys who are, for the most part, very very hungry.

diy decoupage Think beyond the dye with eggs this season using the simple technique of decoupage, putting paper cutouts in different patterns and designs and using a bit of Mod Podge to adhere to eggs.
To find designs, look everywhere. I found these flowers in the scrapbooking section at the craft store, but we are also going to use the children’s drawings, cutouts from wrapping paper and even traced silhouettes.
Use specialty detail scissors (find them at the craft store as well) to snip out the designs, use a paintbrush dipped in a bit of the Mod Podge to adhere the design to the hard boiled egg and get creative. Use a few craft punches on brightly colored paper for some noncutting alternatives for kids to try out.

Adventures in Co-Parenting “Comparisons” by Katie Nemer and Julie Cox
S
ince co-parenting is a very complicated life situation, we’ve decided to start off your spring with a list of coparenting comparisons to help put it all in perspective. Hopefully this list of analogies will ring true with our fellow co-parents as we attempt to clarify the good, the bad, and the yucky aspects of co-parenting. And for those of you who have always wondered what it’s like to co-parent, hopefully this will help clear things up. From time to time, co-parenting bears an uncanny resemblance to all of the following: Morning sun. It doesn’t always come up exactly when you’re ready for it, but if you open the blinds, it may unexpectedly brighten your day. Cooking dinner for a family chock full of picky eaters. There are lots of people to please, but only so many ways to cook a piece of chicken. Living in a small town. The lack of privacy is far from ideal, but once you get used to it, you start to appreciate the comfort of always knowing the people around you.

Backing into your brand new garage door with your brand new car. All you can do is simply apologize when you cause an inconvenience, and move on with your day. Loud and messy college roommates who are the complete and total opposite of you. Despite the mess and volume, they can open your eyes to a whole new, very special friendship. The moment when you realize how weird it is to share a bank account with someone. What’s mine is yours and all that good stuff…but it’s strange to think that someone can always see what you’re up to. Insomnia. It has such a bad reputation, yet when managed effectively, it can successfully increase one’s productivity level. Having to check in with your parents when you’re a teenager. You get the reasoning behind it, but you just want the freedom to make your own decisions for once. Being related to someone who drives you nuts. Sometimes you simply have to be nice.
Winter in upstate NY. You keeping thinking it’s going to end someday, and even though it’s sometimes pretty, you tend to get tired of it after a while. A triple shot latte in the late, late afternoon. The timing may be really bad, or, it may be really good. It all depends on your plans for later. Enjoying your favorite snack and being asked to share it. It sucks, but sometimes you have to share. Coming up with an exciting new idea at work only to watch it get shot down. Let it go and head straight to happy hour. Shopping. It’s a huge pain in the you-know-what around the holidays. We are Stepmom ( Julie) and Mom (Katie) to the incredible 13 year old Jackson. As our fellow co-parents can relate, sometimes we totally bump heads. So naturally, we’ve decided to write a column together. Check us out www.adventuresincoparenting.com. M www.Mamatoga.com

special books
for special circumstances
by Jennifer Armstrong 18 | MAMATOGA Spring 2015
Sometimes you need a book that captures a somewhat different experience than the traditional one. Here are three great examples available at Northshire Bookstore in Saratoga Springs:
For when a new baby is coming from far away, Born From the Heart, by Berta Serrano, is a beautiful picture book that captures the excitement of parents who are making or expanding their family through adoption.
For when a baby is coming after a long fertility struggle, Wish, by Matthew Cordell, perfectly captures the joy of becoming Parents-At-Last.
And for when a baby is in such a rush to be born that she arrives before the shower, The Very Tiny Baby, by Sylvie Kantorovitz, shares the fear and hope that surround the first few months of a preemie’s life. www.Mamatoga.com

Girl Boss
CATHERINE HOVER SARATOGA PAINT AND SIP STUDIO
C 20 | MAMATOGA Spring 2015
atherine Hover is a good friend of mine and a local business owner who started Saratoga Paint and Sip Studio on Henry Street. Mom to Posey and wife to Mark, Catherine has more than earned her Girl Boss stripes since, opening up two more Paint and Sip locations (Latham and the newest one in Burlington, VT). I sat down with Catherine and asked her what motivates her, how she manages the juggle, and what she would do with just a little more time in the day.
What gave you the motivation/inspiration to start Saratoga Paint and Sip? I feel like I’ve always had the motivation from a very young age to do something exciting that would make me feel fulfilled and also give back to the community in some capacity. I was brought up in a pretty (by pretty- I mean REALLY) traditional family- where working and providing was just what you did. I wanted to change that cycle and do what I would enjoy doing and provide for my family at the same time. The whole ‘do what you love’ mantra, sort of thing. I’ve always enjoyed showing people a good time and paint&sip has turn out to be the perfect fit for me. It’s extremely satisfying to empower people to do something out of the ordinary for a change and they are always so astounded by how awesome their paintings come out despite having no experience. It’s hard to explain how wonderful it is..you really have to experience it yourself. The proof is in the painting at the end of the night. Every night that I work, I basically refill the motivation cup (if you will) to keep doing it!!
Was this your first go at starting a business? This was not my first try at starting my own business, but only if you count trying to imitate The Olsen Twins “Brother for Sale” music video when I was 6 years old on the corner of our street. I still definitely have a brother, so my first attempt was a bust. I’ve always had a pretty testy attitude with authority, so I knew early on that working for someone else probably wouldn’t work out for the long run. Anyway- to answer your question- yes, this was my very first, official and legal attempt to start a business and I have the LLC paperwork to prove it! Up until Paint&Sip, I never really made anything official before, maybe out of fear that it wouldn’t work out- I’m not sure..but Paint&Sip was a legit investment both financially and emotionally- I was all in.. and still am!
What were some of the initial challenges you faced, and how did you overcome those challenges? I would say my most initial challenges were other people’s reactions to what I wanted to do. Pretty much everyone thought we were crazy and it would never last. When I’d share what sort of business we were opening, people would look at me like I had 6 heads. Literally- I would tell people
and they would give me THAT look- probably the one you get on a daily when you tell people you have 4 kids! haha! We ARE the crazy ones, right!!?? But now, when I tell people that my husband and I own ‘paint and sip’- they say, “Oh, paint&sip!” It’s so cool to think that I’ve introduced the area to such a fun thing to do.Now- THAT look is just what I need to let me know I’m on the right track.. haha
Did you ever become discouraged by any hurdles you faced? How did you work through that feeling? We’ve definitely had our fair share of hurdles. The more you try to do, the more you have to overcome. The one that stands out most is when we expanded to Latham- during the build out process, someone gave me one look and couldn’t believe I was the owner. I get it- I look young, but really- what’s wrong with a young person having a go at a start up? But yeah- the biggest hurdle is doubt especially my own doubtsyou just have to power through it though..what other option is there? www.Mamatoga.com

After you had Posey what were some of the new challenges you faced as a working mom? Juggling it all has definitely been a challenge and the MOM GUILT. Luckily, I am able to bring her with me to a lot of places, but it’s tough to leave her home when I’m working. It’s a struggle to balance in my head where I really want to be. I love to be with her all the time, but I think it’s important to still have a life outside of motherhood- it’s important to continue life as usual pre-Posey- even though it’ll never be the same. It’s important to have relationships with other humans besides Po- obviously, she’s a priority in my life but she’s not the reason for my existence. I can’t claim to do it ALL myself, Mark is here helping me with everything. It changes everything to have a partner in life, business and parenthood! Kudos to all the single parents out there- I’m not sure how they do it!
Do you have any tips on how to juggle running a business and being a mom? See above - I think most important, is to not fear asking for help! A support system is really important when there’s a
bunch of things in the air that you’re juggling. We recently turned to care.com to hire a go-to caregiver. We aren’t originally from here, so there’s no grandmother to bank on watching Posey. It’s helpful to have someone to hang your hat on and more importantly, have a few caregivers on the bench and ready to take the plate when necessary. Surround yourself with people you trust and can confide in- a small circle of people who perhaps, have experience in the momgame. Life is complicated and being a small business owner is the road less traveled for a reason- it’s tough to do it ALL especially when the buck stops with you. You need to have a support system or you’re asking for a rocky road- and not the kind that taste good-late night!
What advice would you give to young women who might be considering starting a business? I would say do your homework and be prepared for what you’re undertaking. Starting your own business is a lot of work and the kind of work you can’t pass on to someone else. People always come into the studio and tell me that I have the coolest job and it must be so much fun and it is! But they don’t see the back end of it. Picture lots of staying up late entrenched in Microsoft Excel and QuickBooks - simultaneously. It’s my college-self ’s worst nightmare! Being a small business owner is a 24/7 -365 days/ year- there’s no break- AT ALL! You are always on-call.. it’s actually so much like being a parent. Paint&Sip was my first baby...poor Posey might suffer from second child syndrome if I’m not careful~!!
What were some of the helpful aspects of Saratoga Springs that gave you encouragement when you first started out? I definitely joined the Chamber and it was a great help to gain momentum and get the word out. Honestly though, the small town, community culture of Saratoga was a grand-slam in helping to spread the word. The community was really accepting of 22 | MAMATOGA Spring 2015
our little studio/bar and it didn’t really take long for people to hear of us. Saratoga Springs is such a gem in Upstate with a tight knit community and pretty much everyone here is up for trying something new. Coming from Southeast Louisiana- I’d like to think I have a special appreciation for Saratoga Springs- there’s a lot of small business owners and everyone supports everyone- it’s rare to find that inspiration and encouragement from what others might consider competition.
If you had an extra hour in the day, how would you spend it? SLEEP! Just kidding- I think if I had an extra hour, I would spend it keeping a journal. I feel bad that I’ve let that slip, especially now that Posey is here (errr, has been for 9 months now- wow!!). I feel like to should document everything better. You know, like the date she started to crawl or when the first tooth popped. I think I should make a point to get back into that...
our family while doing what i really enjoy. Life is to short to do something you aren’t ecstatic to do everyday!
Tell me some of your must have products for being a busy working mom? EYN phone case I got from Northshire Bookstore It carries small things like my license, cash, etc and protects my phone from falls and drops when Posey eases it out of my hands.
Have you ever felt that you were/are treated differently by being a female business owner? I honestly don’t think I’ve ever experienced that and if I did, maybe I just expected it so I just let it roll off my back. If anything I have used my being a female to my advantage to get our friendly beer delivery guy to do some heavy lifting so I wouldn’t have to..haha! Seriously though, I am a woman and there is definitely a different expectation, I’m sure..but I’ve really never let any of that deter me from doing anything I wanted to do. I’ve also never been one to bring it up. I don’t think it’s necessary- rather, prove your a capable human like everyone else- not just a capable woman...doesn’t it go without saying? I guess I feel that way because I’ve never experienced any girl-hate from anyone directly.
What advice do you hope your daughter takes from you/what do you hope your daughter will learn by your own successes as a business woman? If she’s anything like me, taking advice from her mother won’t be easy, but I do hope she will learn to ask for advice when she needs it most. I also hope she’ll learn to be openminded and fearless to do what it is that she knows will make her happy. It is so fulfilling to be able to provide for
Vera Bradley backpack It carries small things like my license, cash, etc and protects my phone from falls and drops when Posey eases it out of my hands.
Posey product: Sophie Toy I mean, everyone with an infant should have the sophie toy. It’s been a life saver. I had no idea how much joy could come out what looks to me like a pet chew toy- but Posey is obsessed, so I am too! M

BABY RISE YOGA AND MOVEMENT ARTS CENTER Photos by Megan Mumford
Camacha Wolfer, soon to be first time mama and co-owner of Rise Yoga and Movement Arts Center with her husband Justin, sat down with us to chat about how yoga has impacted her pregnancy and the benefits of practicing yoga with your own baby. I just love her Baby and Me yoga class, it gives Talley and I the time to slow down and spend some quality time together and it is one of my favorite hours of the week.
How has yoga helped you throughout your pregnancy? Honestly, I can’t imagine going through this pregnancy without practicing yoga; it has helped me in more ways than I could have possibly imagined. As soon as I found out that that we were having a baby, my whole practice changed. It was no longer about me, but about the baby. I felt a connection deep with in myself that transcends words. Every single breath I took, I sent down to the
28 | MAMATOGA Spring 2015
baby, focusing on making my body the most peaceful and tranquil environment possible for the babe to live in. My practice slowed down, became more mindful and focused on strengthening my foundation; I honed in on the areas in my body that were weak. I learned so much about my body and how to move to rebalance myself as these miraculous changes started to take place in my body. As I began to grow, I noticed the extra tension my body was holding to support my weight; noticeably my shoulders and my hips. Though slow and steady practice every day, I stretched the parts that need to be stretched and gained strength in the places that needed support. I cannot tell you how amazing it feels to sit in some of the poses, and I cannot imagine how different my body would feel now if I didn’t do them every day. I have no doubt that giving birth will be the most challenging thing I’ll ever do and, through yoga, breathing mindfully every day and feeling so connected to our baby, I truly believe that there is no better way to physically and mentally prepare for this epic journey than the practice of yoga.
Tallis & Posey
Were there any specific issues you had during pregnancy that you feel yoga has helped specifically? As I approached the eight month mark, I started to get some pain in my hips. They started to seize up if I walked over a long distance and especially hurt at night time and first thing in the morning. I thought the best thing to do was to rest, so I took about four days off from my yoga practice. Surprisingly, the pain seemed to actually get worse rather than better. I took my husbands class after the fourth day and it was the most mindful, careful thing I had every done. Every single breath, move, step was focused on healing my hips. After class was the first time I had walked free from pain in days. I now have learned that I need to support my pelvis when walking and softly engage my pelvic floor muscles to help take some of the pressure www.Mamatoga.com Camacha

really take time to connect to the breath, as the babies sense their parents becoming more and more calm and relaxed as their breath deepens, the babies become more relaxed too. One of the ladies who attends told me that when her son had a fever and was crying through the night, Posey she used the breathing techniques we learned in class and they not only helped to calm him down, off the joints. I have slowed down in other aspects of my but made her feel more calm, centered and relaxed life, I’m not teaching as much, I’m not walking as much, not too. Inevitably during class there is more noise, more carrying grocery bags, that sort of thing. But for me now, distraction than during a regular yoga class...and that it is even more important than ever to practice yoga every great! That’s why the class is here, so Mom’s and Dad’s single day because it brings so much relief to my hips. What are the benefits you have seen of the Baby and Me yoga?
I actually changed the name of the ‘Mommy and Me’ to ‘Baby and Me’ as we have had a few Dad’s that come to the class too, which is awesome. Justin, my husband, will be one of them soon! The benefits of spending time together on the yoga mat are massive. Firstly, we 30 | MAMATOGA Spring 2015
Tell me a little about the Baby and Me yoga class, what can parents expect from attending the class? It’s fun for the babies to watch their parents move into all these weird and wonderful positions and they usually lie on the mats for the first half of class, nice and relaxed
Daphne and entertained by the movements going on around them. During the second half of the class we move with the babes close to our bodies, again spreading the sense of calm and well being straight to them. We have had such a great group that have been coming over the past few months and not only have the babes become friends, the Mom’s and Dad’s have too. I have to say, one of the reasons I started the class was to meet new moms as I have only been living in the area for 5 years and wanted to meet some other parents! Yoga is a great activity that not only gives you time with your baby away from the hustle and bustle of daily life but is a great opportunity to meet, chat to, and connect to other new moms and dads as well.
Tell me about the overall benefits you have seen from yoga practice, and why people should try to incorporate it into their every day lives‌ In short, yoga changed my life and I am so grateful that I found the practice at the point in my life that I did. I used

to suffer from anxiety and could never quite shake the feeling of tightness from my chest. Through the techniques learned through yoga, linking and synchronizing slow steady movements with deep even breathing, I now live a life free from anxiety and tension. I have learned to go slow, to focus on one thing at a time, I’m more mindful and present in my relationships and am all round a much happier and more healthy human being. Looking back, I am so grateful that I sorted out these imbalances in my body before becoming pregnant. I feel that it is so important to go about my day as stress and tension free as possible and having another life inside of me has only accentuated how important that is. I wake up every day now, excited to do my practice, I’m in awe at how much more healthy agile my body has become and how clear and uncluttered I feel in my mind. Yoga teaches us to sit with and face our feelings, work with our strengths and balance out our weaknesses. It teaches us to connect to our innate human nature and to get back to being kind to ourselves. Yoga changed my life, and I am passionate about making it my life’s work to share the benefits that I have experienced with as many people that will let me! M

Mamatoga WEEKEND
COOK BOOK 38 | MAMATOGA Spring 2015
Daniel Berman
fussylittleblog.com
The secret to great food is starting with great ingredients and not screwing them up. Even the simplest of dishes can be elevated to tremendous heights when made with quality products and proper technique. Even better, these simple pleasures can be passed on to your kids when they are young. But doing so can have its downsides. As it turns out, I’ve ruined my son for all other scrambled eggs. There are lots of people who will tell you lots of different ways to make perfect scrambled eggs. But some people like them loose and custardy, while others like them firm and hard cooked, so perfect is subjective. Some cooks insist that milk is the secret, I’ve heard warnings against salting eggs lest it make them tough, and there are even those who still insist the best way to prepare this breakfast classic is in a microwave. My boy likes them formed into large curds, that are tender and just set. I love to make these for him, because he’s such a skinny kid that I can load up the scrambled eggs with a healthy dose of organic butter, and feel like I’m promoting his overall well being. It’s also something that we do together. He goes into the refrigerator and pulls out the ingredients. I go into the cabinets for our tools and put the cast iron skillet on the stove. He cracks two eggs into a mixing cup, and picks out any shell fragments. I demonstrate what two large pinches of salt look like, and season the eggs. We discuss if the eggs will get a few turns of white pepper or black pepper. (Note: white pepper has better visual appeal, black pepper has better flavor). He begins to beat the eggs with a fork. I finish beating the eggs, and show him how they now form long protein strands. He measures out two tablespoons of butter and puts it in the cast iron skillet. I crank up the burner to medium high heat. Together we watch the butter melt, and watch the water bubble away until the foam subsides. Then I pour the eggs into the pan. From here, breakfast will be ready in a matter of seconds. We’ll watch the edges, of the eggs to see where they set first. Then with a fork, I’ll lift the edge and tilt the pan so the uncooked eggs can slide underneath. This action gets repeated over and over, making sure to keep the eggs moving in the pan, but also making sure not to break up the curds too much. Then I remind him that the eggs will continue to cook on the plate. He tells me to give them another few seconds. When he thinks they are ready, I turn them out onto a plate. Because the pan is well seasoned, it wipes clean with a paper towel The entire process takes fewer than ten minutes. I can do it on my own in less than half that time. But together we’re not just making food, we’re making memories. Hopefully, I’m also teaching him a valuable skill that will last for the rest of his life. Everyone should know how to make kickass scrambled eggs.

W
hen it comes to weekends, it’s all about lazy breakfasts at my house. But being a divorced parent means I don’t get to spend most weekends with my kids. The solution instead is breakfast for dinner one night a week. Enter Waffle Wednesday, a mainstay for my family. Usually we err toward the classic waffle presentation that includes New York State syrup (usually from my family’s farm in Central New York) and butter, but sometimes we change things up with sautéed apples, or even as the outside “bread” of a breakfast sandwich. Waffles, it turns out, are quite adaptable, and making a batch during the week tends to leave me with a few leftovers that go into the freezer. A quick pop into the toaster (straight from the freezer) means a waffle is ready anytime. Or try this: Cube up leftover waffles and toast in a pan with a little oil and minced garlic. Cook over medium heat until the waffle cubes are toasted and the garlic is fragrant. Bam – croutons for salad. Or dry toast the cubes in the oven and you have the basis for a brown betty or fruit crumble recipe. Omit the sugar from this waffle recipe and try adding mashed up sweet potato, cheddar cheese, or savory spices, then use the waffles to serve as a platform for sandwiches or trenchers (an open face sandwich where bread is used to soak-up the juice from roasted meats). The great thing about waffles, besides how flexible they are, is how easy they are to make. My kids have been making them with me for years. One kid gets to whisk the batter, the other watches for the waffle iron light to turn green and pulls the waffle out with a fork. I’ve tried creating many waffle recipes, but none are as adaptable or bulletproof as the version from the Better Homes and Gardens cookbook. For any day of the week, if you find yourself waffling about what to make for dinner, the solution is likely waffles.
waffles
(From Better Homes and Gardens New Cookbook) Makes 12-16 waffles 1 3/4 cup all-purpose flour 2 tablespoons sugar 1 tablespoon baking powder 1/4 teaspoon salt
2 eggs 1 3/4 cup milk 1/2 cup cooking oil or melted butter 1 teaspoon vanilla
In a medium bowl, stir together the flour, sugar, baking powder, and salt. Make a well in the center of the flour mixture. In another bowl, beat the eggs slightly; stir in the milk, oil, and the vanilla. Add the egg mixture all at once to the flour mixture. Stir until just moistened (the batter should be slightly lumpy). Pour 1 to 1 1/4 cups batter onto the grids of a preheated, lightly greased waffle iron. Close the lid quickly and do not open until done. When done lift the waffles off the iron with a fork. Repeat the procedure with the remaining batter.

chicken mozzarella pasta
T
his pasta dish is the perfect weekend recipe. The longer it simmers, the better the sauce gets. I used to love making big, elaborate meals on the weekend, but now I prefer more time with the family and less time at the stove. I usually will prep my weekend meals during naptime in the afternoon and have everything ready to go for when we’re ready to come eat. When its dinnertime, finish the sauce by adding the cheese and you’re ready to pour it over some hot pasta.
1 lb. Penne Or Rigatoni (I used Cavatappi) 2 tbsp. olive oil, plus more for drizzling 1 lb. boneless, skinless chicken breasts Salt and pepper 1 whole large onion, finely diced 2 cloves garlic, minced 1 jar good quality marinara sauce 1/2 tsp. crushed red pepper flakes 1/2 cup water 2 tbsp. minced fresh parsley 1 tsp. dried oregano 8 oz. fresh mozzarella, cut into medium cubes 1/4 cup parmesan shavings 12 whole basil leaves (chiffonade)
Cook pasta according to package directions. Heat olive oil over medium-high heat. Add chicken pieces in a single layer and sprinkle with salt and pepper. Allow to cook without stirring for 2 minutes, or until golden. Stir chicken around to brown on all sides. Remove to a plate. In the same skillet over medium-high heat, add the onions and garlic and stir immediately to start cooking. Cook for 2 to 3 minutes, stirring occasionally, until the onions are deep golden. Reduce the heat to low and pour in the marinara sauce, red pepper flakes, and the water. Stir until the onions and garlic are mixed in, then add the chicken back into the pan. Add the parsley and oregano, stir to combine, then allow to simmer, stirring occasionally, for about 7-8 minutes. Make sure the sauce is bubbly and very hot, then gently stir in the mozzarella. Let it sit, undisturbed, for 2 to 3 minutes, until you can see that the mozzarella is very soft. Drain the pasta and pour it onto a platter. Drizzle with a little olive oil. Immediately sprinkle on 1/4 cup Parmesan shavings (or grated Parmesan.) Pour on the sauce, sprinkle with extra Parmesan and the chiffonade of basil, and serve immediately!

LITTLE TIPS
James: Never pass up a request to read a book.
Andrea: The days are long, but the years are short... Bridgette: Never say no to cuddles, even if it’s so they can get out of bed! Toni: Never pass up hand me downs...don’t be afraid to ask for help....and above all stick to a routine as much as possible. No matter the age, kids need a routine to monitor their bodies and help them grow both physically and mentally. It’s okay to have special days and long nights every now and then, but in general it should be the same every day/night. I tell every new mom this whenever I’m asked for advice. Jennifer: The more you have the better you get! I’m a mom of four and I often think back to my first baby and how far I’ve come! I’ve grown so much and I am more confident in my parenting decisions and just as a person in general.
Your job then is not one of making choices for them but of helping them face and deal with the consequences - good or bad - of the choices THEY make. Be there for them, not to DO for them. Robin: Schedule their sleep & be vigilant about it they need a ton of rest & you need alone time. It’s so hard making good parenting decisions when my instinct is to avoid tears , arguments , etc. But being their friend is not going to do them any good- sigh!
Bridgette: Write all the things down in a notebook you can share with them later in life. Things they say, things you think about them, their favorite songs and books. Already, even at 3 and 5, my kids love hearing about stories when they were babies. Sometimes I read back through what I’ve written and realize I’d completely forgotten that Celia said “piggy bank ride” or Parker called Buzz from Toy Story Buzz “Right Here.” This sage advice came from a mother of 5.
Pepe: Keep baby wipes in every room and every car! We’re potty trained but still use them for everything, faces, hands, spills, toys, and a quick wipedown of just about anything!
Kim: Don’t judge....yourself or other moms. It will make your life so much happier. As long as you’re trying your best that’s good enough and you never know what another mom is going through so don’t judge her either...
Mary: As a parent of teenagers, you have taught them right and wrong and they heard you and know.
Abby: That the saying “sleep when your baby sleeps” is not practical. It just doesn’t work.

style files leah parillo
Describe your every day style, what are your go to items? In my mind, my every day style would be urban chic-ish, with a touch of boho (think skinny jeans, boots, with a boho top and a cute hipster jacket). This style occurs about 8% of the time; the other 92% is me in Capri workout pants (ok, I’ll call them what they are: yoga pants), hat, workout top and a sporty jacket, and then completely covered by my enormous North Face “vertical sleeping bag” coat and my favorite LLBean signature knee-high duck boots, which by 9am are replaced with running sneakers. Of course, summer style is much cuter, but I just can’t get past winter right now.
What is your go to outfit for a night out? I have a small obsession with vintage Betsey Johnson peplum dresses. I actually have a collection. So, depending on where we go on date night, I like to pay homage to the 80s (modernized), rock the peplum dress, big belt, studded clutch, heels and a cute cropped jacket. I am absolutely in love with the peplum; whoever invented it was a fashion genius!

What are some of your favorite brands for yourself (clothing wise), what are some of your favorite brands/shops for kids stuff ? My favorite “must have” leggings are Lysse brand (found at Spoken Boutique). The Lycra to cotton balance is absolutely perfect. I also really love Seven jeans (although I don’t love jeans!), and Equestrian brand pants. If I ever suddenly become a rock star, my closet will consist of Alexander McQueen, Balmain and Vivienne Westwood (how I love thee high fashion). But for now, I am admittedly a Maxxinista where I often find amazing clothing treasures (and other stuff I really don’t need). Kid clothing-wise, I hit a shopping wall when my children recently grew out of toddler sizing. I feel like the whole clothing landscape changed from cute puppy t-shirts and Peter Pan collars, and shifted to crazy skating skeleton dinosaurs, obnoxious sayings and a whole lot of glitter. So, I try to stay with the tried and true kid styles (Gap, Old Navy, Polo), and - kind of like with my own eclectic style - I sprinkle in interesting things I find on Zulily or Chasing Fireflies or, even, on eBay!
What are your top beauty products for you? Favorite kids bath/health and wellness products? My current favorite skincare line is Dr. Hauschka; I have very dry skin and the Rose Day Cream, combined with the Hydrating facial is dynamic! Four Seasons carries the entire line. I am also a makeup hound and love to try new things so I recently signed up for BirchBox which has been such a treat every month. Oh, and I really like mineral fusion hydrating mist (found at Healthy Living). The stuff is like an oasis in a can. When my children were babies, I used Mustela products. The scent is what clean should smell like.
Here are a few of my local indulgences: Healthy Living Market and Cafe - I could spend half a day there. It’s so peaceful, and well organized and everything is so, well, pretty. Longfellows - Although it isn’t downtown, it’s just such a cozy place to have dinner, and the food is consistently good. It’s our go-to date restaurant. Ravenous - I love this place for breakfast/brunch; the pommes frites with dipping sauce! It has been my go-to friend meet-up destination since I moved back to Spa in 2008. The Hampton Inn - best staycation downtown! Spoken Boutique - I love this store because the clothing is well thought out, and you can go in there and buy a cohesive, gorgeous outfit that flows together. And, speaking from
Ultrasound packages starting at $69.00! Schedule your appointment today!

experience, that outfit becomes a staple in your “I want to be a put together mom today” wardrobe.
What are some of your favorite Saratoga local events? I look forward to the downtown Halloween Fall Festival every year, Victorian street walk (even though it’s frigid!), and taking the kids to see the horses early in the morning at the track.
If you were stranded on a desert island and could only bring one beauty item, what would it be? If I were stranded on an island and I could only bring one beauty item, I would probably bring a mirror so I could signal for help! (How horribly practical)

Has your style changed at all since having kids? Oh my gosh, yes. It changed mostly because I switched from working in an office to working from home. Admittedly, I’ve had phone conferences in my pjs (please, please God don’t let my clients read this...). But, my personal style, regardless of the actual garments of clothing I’m wearing, has stayed M the same, and that makes me happy.

Near US 9 and NY 50, Saratoga Springs www.facebook.com/SaratogaSpaStatePark A four seasons park, the Saratoga Spa State Park has walking and hiking trails, picnic pavilions, two pool complexes, a public golf course, biking trails, snowshoe and cross-country ski trails, ice skating, tennis courts and more. Located within the State Park is the Saratoga Performing Arts Center (SPAC), the Spa Little Theater, the Roosevelt Baths, the Saratoga Automobile Museum, the Hall of Springs, and the Gideon Putnam Resort. In the summer months there is a vehicle fee to enter parts of the park, but much of the park remains free to enter year round. The Saratoga Spa State Park also does a bunch of really great kid and family friendly programs all year round. Follow them on facebook here where they share a monthly calendar and highlights of upcoming programs. The pools in the State Park are Peerless Pool (more kid friendly) and the Victoria Pool (no shallow area but still kid friendly), both have a charge to enter.
