JOSE FERNANDO PERLAS Sous Chef

Chef Jose Fernando Perlas is a relatively new addition to the kitchen team, and already he has energized the kitchen and proven his worth.

What attracted you to work for Manila House? I have a friend who works here, and he just raves about how well he is treated and how the company feels like a family. I like working somewhere where I can be close with my co-workers. I also see an opportunity for me to grow and learn a lot of skills, where we would all benefit personally, professionally and financially. What is your favorite cuisine, and which dish from that cuisine do you like the most? My favorite is Filipino cuisine, and my favorite dish would be sinigang. In the last two years, sinigang was even voted the best vegetable soup in the world by Taste Atlas. Filipino cuisine today has been shaped by the history and society of many unique and affluent cultures. Who do you consider as your mentor and why? All my superiors back then and now, they always correct me when I do something wrong. I liked being corrected because I'm learning from that mistake. They made me who I am. If you could go on a culinary trip, where would it be? France. And if given a chance I’d eat at one of Alain Ducasse's restaurants. What tips can you give to those who want to start a career in the food industry? Patience… a lot of patience! And always think of the positive side of everything. Be humble, accept mistakes, and always remember that attitude beats skills. Skills can be taught but attitude starts within the core. Lastly, be happy and enjoy what you are doing.

UNVEIL THE SECRET OF EL NIDO: Experience Luxury in Simplicity at Lihim Resorts

MH | B E N E F I T S & P R I V I L E G E S

In the Philippine lingua franca, Lihim directly translates to secret. A secluded lagoon on Bacuit Bay reveals an expansive gradient of turquoise waters. Its surface sparkles like gems under rays of the sun. Some parts of the day, it is a looking glass that bares the storied underwater life of Palawan. The luxury of experiences is something that unfolds itself at Lihim. In this well-kept secret, tucked in the depths of paradise’s last frontier, senses go on a journey where myth, magic, and mystery come to life. The curator, mastermind, director, and grand host behind all these: nature. The exclusive experience in-property and on-location menu curated by Lihim Resorts promises to astonish. Built in the tradition of Philippine huts, accommodations echo the warmth and brand of hospitality distinct to the country and reflect a design sensibility deeply anchored on local culture and everyday life. All sixteen villas on the property offer unparalleled views of El Nido’s storied vistas. A LOOK AT LUNA LOUNGE

Combining the laid-back luxury of Morocco, tropical glamour and colonial-style elegance, Luna Lounge by IQOS is a beautifully sophisticated yet intimate space, available for private events.

When there are no bookings for private events, Members who wish to vape may enjoy the space. In compliance with City of Taguig vaping regulations, there will be NO F&B service provided by Manila House staff inside Luna Lounge WHILE VAPING. Members, however, may order from Avenue Bar and bring their food and drinks into the space. Luna Lounge by IQOS was created in response to the clamor from Members for a space within the Club to vape, and so Manila House applied for, and was granted, a permit by the City of Taguig. We are grateful for the partnership that we have with IQOS, who have agreed to provide coaches who will be present at special invitational events, to help Members shift away from smoking to a safer vaping experience. All private events reservations must be made in advance. Please call us on +63 917 816 3685 or email reservations@manilahouseinc. 7

Eulogy for Cris Albert by Anton San Diego

Good evening. To the family of Cris, - Butch, Carlo, Bela, Wanda and Ana, Carlo and Monique, my sincerest condolences. Like some of you, I don’t understand all this. I don’t know how a woman with such zest for life could be gone so soon. I have been hearing stories, speculations, and gossip about how she passed away. But today, as we celebrate her life, those things don’t matter. What matters most to those who loved her and knew her well is the treasure trove of memories, the time spent together— recalling her infectious laughter, her childlikeness and childishness, her kindness, and how she loved and how we loved her back.

My last conversation with Cris was via text, as she was preparing to go to Singapore. She asked me to introduce her to friends there and recommend what to do and where to go. She even said she wanted to meet my visiting US friends, and we planned to have dinner a week ago today. This year, we had many plans to accompany her to Paris when Bela goes to school, sponsor the padel tennis across her office, and acquire another brand to add to her portfolio. And that’s now all gone. We all knew how Cris loved to take her glass of champagne or two or more. I would always tell her to stop and go home. I always acted like a big brother around her. And I thought she saw me as one till at a dinner with Charina and Tim a few days ago I found out she called me “ grandpapa”. If she were here, she would get a scolding from me, but still, she would manage to get away with it. Like all of us, Cris had flaws, but she was perfectly imperfect to me. I loved her for that. I will miss all your beautiful imperfections: Your smile, frankness, singing, attitude toward life, losing your diamond ring in the middle of a party, and most importantly, your love.

I have so many memories of Cris, like how she came into my life like a crashing cymbal. You see, I have an aversion to loud, colourful, over-excitable women. But Cris was so honest, kind, and loving that like a moth to a flame, I was drawn to this loud, colourful, and overexcitable woman. She was proud and loved her family, company, and the people she worked with. She enjoyed learning, her business forum, travelling and fashion. She loved the beach and karaoke and would tell the person singing if they were a soprano or an alto and, yes, if they were off-key. She was such a critic, even when she tended to sing slower than the actual music. She was generous to the hilt. When she invited Tessa, Tim and me on trips, she would make sure that our rooms were filled with flowers and champagne, a touch that was always appreciated and wouldn’t go unnoticed. I remember a funny story when we were in Milan and were already leaving that day but still had time for lunch. She said she found a fantastic restaurant outside the city, and it's by a Michelin chef. I remember it was a long ride, and we got lost several times. We were all hungry and impatient. When we finally found the place, we ordered their recommendations. When the food arrived, I mentioned that it tasted like something I had back home. The waiter said, “Where you from?” And we answered in unison, “Manila”. He said, “ Oh, we have a David Oldani restaurant in Manila too !” I saw Cris's face drop…and we couldn’t stop laughing. 13

Tonight, we celebrate your life and all that you are. I know that you are in a better place. We lift your family and friends to God and pray for comfort and strength. To those who loved you and whom you loved, you left an indelible mark that will forever be in our hearts. You brightened up my life; You made me smile and laugh. I felt your love, and I loved you back. Your memory will never fade away. I want to end tonight with the immortal words of Beyonce, which I am sure, Cris, you would have gotten a kick out of. “Everywhere I'm looking now I'm surrounded by your embrace Baby, I can see your halo You know you're my saving grace You're everything I need and more. It's written all over your face. CRIS, I can feel your halo. Pray it won't fade away." Love you, Cris!

answers the Manila House Questionnaire

"Success to me is also seeing how the lives of my team are transformed as they acquire new skills, tackle meaningful work and deliver solutions that result in positive outcomes." However I doubt any of us were prepared for the kinds of changes the pandemic brought upon the world! A key life lesson I have taken away is clarity of focus. To really focus on those people, passions and activities that are meaningful to oneself, in whatever way those are. And to make certain to clear the mind from all the unnecessary flotsam that today’s world presents. The past two years have taught us hard lessons about family, community and country - or countries. In my own sense, I’ve renewed my commitment to really doubling down on clarity and focus and it has made me a more effective and hopefully, more empathetic and compassionate leader.

Tell us what you do I founded an international management, technology and strategic communications consultancy based in Singapore and with operations in the Philippines and Malaysia (more countries are coming). We work for blue-chip global and local corporates, select government entities and rising startups. A key focus for us is enabling and empowering our clients to discover their inherent but unlocked value. We then create and curate the right opportunities for that value to be explained through powerful narratives and other activities that advances a client’s financial, business, technology or public policy goals. Our company is called SAMVADA, which is an ancient Sanskrit word meaning “beautiful dialogue”. It represents what we aim to achieve in all our client relationships and to deliver for all their targeted stakeholders. It also represents our unique internal culture as well. How do you define success? By enabling, empowering and seeing others succeed. This comes from experiencing our clients succeed in overcoming challenges or achieving success as a result of our hard work. Success to me is also seeing how the lives of my team are transformed as they acquire new skills, tackle meaningful work and deliver solutions that result in positive outcomes. In turn, they earn good livelihoods and can positively transform the lives of those they love and care about. I also take comfort all our alumni have all gone onto even bigger roles, which I would like to think has some degree of source in the rigorous training and experiences we provide. What life lessons did you derive from the pandemic? More than a decade ago I became a Buddhist so the concept that change is forever constant has long been with me.

What's the last movie/series you watched? I don’t have a lot of spare time at the moment but the last books I have read are an engaging series of the Inspector Montalbano murder mystery novels from the Italian writer Andrea Camilleri. Set in Sicily, I enjoy the acerbic humor and the interweaving tales of food and murder. The last good series I did make time to binge was HBO’s Succession. While I didn’t come from a family business, I certainly felt I lived many of the scenarios in my past in-house corporate lives. What book is in your bookshelf but you've never read? Probably a management self-help book purchased long before the pandemic. I’m a sponge for knowledge so almost everything in my library has been thumbed through once, even if I haven’t returned to it. If I really like something, I’ll reread or rewatch it over the years, always learning new insights. What song can't you get out of your head? I’m trying to stay culturally relevant and “with it” especially among the millennials on my team, so I’m pretty sure the last song that lived in my head was something by Sia or Dua Lipa. What would you like to see in the “next normal”? That we never forget these times, the losses so many have endured, the sacrifices so many have given, in hopes that we work towards never repeating them again. What’s your favorite thing about Manila House? Manila House is a wonderful venue where friends new and old - though perhaps disparate in background and experience - share a vibrant inquisitiveness about life and our world. And just about everyone has a deep compassion for our troubled country and is actively working in multiple ways to help it progress. If you had to be quarantined (again) which country would you choose to be in? As deeply frustrating and challenging as it was to be quarantined in the Philippines during nearly the whole pandemic, I felt profoundly privileged to be in a place where I could directly help and did my best to do so, particularly for our nation’s capital, Manila. There is no place like home, after all.

SINGAPORE SWING

Having been resident in Singapore for more than five years now, Member David Nugent shares the many reasons why he loves living in the world’s only city-state Singapore’s fantastic quality of life, ease of doing business, global connectivity and networking are well known. But they didn’t come to be just by accident. Singapore’s success is a direct result of a forward-thinking government that looks ahead and works ahead. And a global mix of connected locals and engaged foreigners from around the world work hard to keep the Singapore at the top of many global city lists.

Here are five of my favorite places to consider visiting on your next trip to Singapore: Singapore Botanic Garden https://www.nparks.gov.sg/sbg The only tropical garden listed by UNESCO as a World Heritage Site, Singapore Botanic Garden is the only one of its kind in Asia and just one of three such heritage gardens in the entire world. Founded in 1859, covering an expanse of 82 hectares, Singapore Botanic Garden includes the world’s most extensive orchid garden, long walks through old growth trees and lawns in the English manner, beautiful fountains and ponds, places to picnic, yoga, or just sit with one’s dog. A fantastic, old-school antidote to the 21st century technicolor Gardens by the Bay. Singapore’s Hawker Centres https://www.visitsingapore.com/editorials/the-streetfood-of-singapore/ Long ago, Singapore migrated the haphazard (think dodgy quality, questionable hygenics, etc.) street food culture found across the rest of Southeast Asia’s cities 15

and congregated vendors into clean, modern and safe “Hawker Centres”. Fancy a Michelin-starred whole braised duck for just SG$20? Traditional early morning “kopi” with poached eggs and toast with coconut jam for SG$3? Or any variety of traditional Asian or Western foods? There are lots of online guides to Singapore’s many Hawker Centres and most residents have their own personal favorites too. Be sure to ask around!

M H | T R AV E L

Singapore Sports Hub https://www.sportshub.com.sg/ Singapore is a sportsperson’s dream. Great jogging and running trails, parks everywhere, places to swim, train and race. Singapore Sports Hub includes Singapore’s National Stadium, Tennis and Aquatics centres. You can do laps in a regulation Olympic pool, improve your backhand, take any one of innumerable training classes, or watch visiting teams and exhibition games from around the world. An adjacent mall has stores to stock up on gear you need or to fuel up after a game.

Singapore National Museum https://www.nhb.gov.sg/nationalmuseum/ Housed in Singapore’s stately former Supreme Court Buildings, the National Museum houses an international collection of the best art from Southeast Asia – the Philippines’ Juan Luna and Amorsolo are well represented – plus a revolving schedule of international blockbuster exhibitions. If New York’s Met, Paris’ Louvre or London’s National Gallery are always on your lists, make sure to get a fix of Asian art at Singapore’s National Museum. And don’t miss “Flutes,” a wonderful fine-dining restaurant in the Museum’s heritage building.

Singapore City Gallery https://www.ura.gov.sg/Corporate/Singapore-City-Gallery No better place to understand how Singapore came to be than dropping by Singapore City Gallery, run by Singapore’s Urban Redevelopment Authority. Gallery exhibits explain how first-world, global city Singapore came to be in just a few generations, the vision behind it and what the future holds for the island’s future. Next door is a fantastic coffee shop selling books on urbanization and cities and barely a five-minute walk away, the Maxwell Hawker Centre, where China Street Fritters and Mama and Popo’s Delights are two of my favorite Nyonya cusine fixes. 16

MOM-ME-TIME

Our Members share their favorite and most memorable moments with their moms

"My favorite memory with my mom was going to Japan in 2018 to meet with the Ambassador of Lithuania , as my mother is the Consul of Lithuania in the Philippines. We went to Tokyo and Kyoto and it was a trip filled with great shopping and food!"

~ Natalie Netta Pena

"My most memorable moment with my mom… it’s actually one of my earliest memories. When I was maybe two years old, my mom snuck me into a play with her. With her coat over my shoulders, I sat on her lap, snuggled close to her the entire time. We still love seeing plays together, although now I do have to take my own seat. But hopefully some day soon, we can take my daughter, Mariana, to see a play and recreate that moment."~ Isabel Lagdameo

"My most memorable moment with my mother is when I wanted to treat her out to eat somewhere special. Leave it to my Mama to ask for street food! I was arguing that it would be too uncomfortable because of the heat and there wouldn't be a place to sit down. We ended up compromising by going to a really old restaurant she loves for halo-halo and palabok. That moment speaks so much of my Mama. She is simple and humble despite spending her life helping others. She is"Mama" not just to us her five kids, but to dozens of families, hundreds of animals and plants."

~ Sarah Madayag - Silag

"My most memorable moment with my mom was when she first saw me after I finally put on my dress on the day of my wedding. She said seeing me won’t make her cry, but she did. " ~ Redjine Boller Cruz

"Every breakfast, when we were much younger, mom would remind us we could be anything we wanted to be. There was nothing that was beyond our reach. Cinderella, Snow White or Red Riding Hood weren’t our role models. We were taught from a very young age that girls need not be saved, that they can be heroes, protagonists of their own stories."

~ Anna Mae Lamentillo

"My most memorable moment with my mom was when she took me to the Philippines for the first time when I was 12 yrs old. I grew up in the States all of my life, but my mom (being Filipina) was excited to take me to her home country. She took me shopping around Metro Manila, ATVing up Mayon Volcano, beach massages in Boracay, hiking Taal, and swimming with the whale sharks in Donsol. It was such an amazing experience; I fell in love with this country. As soon as I graduated college in the States, I moved to the Philippines to work for an American bank. Ten years I've been here, with three kids of my own, whom I can now take around to explore and experience this beautiful country." ~ Isabelle Patricia Olbes

"My most memorable time with my mom was when we got to spend quality time together in Europe despite our very busy lives. I’m blessed and grateful for being able to share these rare uninterrupted moments with my mom." ~ Steven Dexter Chan 18

GOING LOCAL

A distinguished panel authors, academics and analysts led an engrossing discussion centred around the launch of an important new book, Patronage Democracy in the Philippines, Clans, Clients and Competitions in Local Elections, edited by Dr Julio Teehankee and Cleo Anne Calimbahin, and published by the Ateneo de Manila University Press. With the elections just around the corner, much attention has been focused on the presidential race that we overlook that there are local officials on the ballot, too.

“An anarchy of families” is what the American historian Alfred W. McCoy called our political system, and indeed, the most cursory of surveys reveals that our electoral landscape is dominated by several families who have their bastions in their various provinces and cities. How does this impact a still-maturing democracy like the Philippines?
