A Message from the General Manager

Dear Members, As COVID-19 threatens to become a global pandemic, we remain in a state of alert. The health and safety of everyone in Manila House, from Members and their guests to staff and security, are of paramount importance to us. Following the directives of the Department of Health, we have made hand sanitizers available throughout the Club, at Reception and in the bathrooms, in order to encourage frequent and thorough cleansing of the hands. This is also observed by all the kitchen and service staff who handle your food. They are required to sanitize their hands before, during and after service. Please note that we are also increasing the frequency of our cleaning and disinfecting procedures to ensure optimal hygiene and sanitation. While there is a shortage of masks in the market, our Reception and Concierge personnel, as well as the Housekeeping and Security staff, will use face masks as a further precaution, when available. We fully understand that there are others for whom the wearing of face masks is a necessary protective measure, and as such we will not demand that all staff members wear face masks. As more official and credible information becomes available, we will make the necessary adjustments to further prevent the spread of COVID-19.

Get to Know: Katherina Obligado Kat knows all about first impressions. Hers is one of the first faces you see when you enter the Club Tell us how you started in Manila House A friend asked me to join her in applying. Luckily, I was the one who got the job as Concierge Officer. Three years later, I’m still enjoying my work but now I'm a Membership Relations Supervisor. Why do you think Reception is one of the most integral parts of Manila House? For me the Reception is the face of the Club. It establishes the first and lasting impression for our Members and Guests.

Katherina Obligado Membership Relations Supervisor

How do you keep up whenever the foot traffic escalates in the Club? How do you maintain grace under pressure? Working in Manila House made me learn how to multitask and handle different types of personalities. For me, it is always good to keep calm and focus on what to prioritize first. This includes showing your guests that you’re confident and that you are fully-informed about the happenings inside the Club. What’s the best part of working in Manila House? The best part is getting to interact with VIP members and also the pride of working in an exclusive membership club.

Beach Day Trip or Hotel Staycation? I prefer a staycation where I can be with my son and family. Another is the relationships I've made with the other employees throughout the years who have been part of the team. What do you usually do on your day off? I spend most of my day off hanging out with my son teaching him educational activities. Sometimes, I bring him to malls and parks.

The wine lover with her favorite tipple

Stephanie Zubiri

Dynamic and driven, the Paris-educated cookbook author, media personality, travel, food and wine writer, and mother of two, Stephanie Zubiri embodies the modern, empowered woman What is it like to be a woman in the world of fine wine and food? How did your love affair with gastronomy begin? I believe being a woman in this domain lends a sort sensuality to the world of food and wine. While I can understand the technical aspects of cuisine and oenology, I have a very emotional connection to epicurean pleasures. I believe this sensitive woman’s touch allows me to 5

experience things differently, which in turn is reflected in my writing. My family loves food but I have to truly credit my mother who took me with her around the world. Picture a very nerdy, buck-toothed, four-eyed, nineyear-old me, eating in fancy enotecas in Italy, hoarding mini-bottles of truffle oil in the pocket of my Mickey Mouse bomber jacket. Are your children picky eaters? How do you balance nutrition and

taste in a way that is palatable and fun for young kids? Sebastian will try anything but usually when he’s home and in his comfort zone, that’s when he’ll really eat almost anything. At restaurants it takes a bit of coaxing. Maxi is very picky and pretty much lives on fruit and fish. Maybe that’s why his complexion is so nice! He does love anything crunchy, so when we travel he loves to eat crunchy things -

MH | I N T E R V I E W

Sebastian and Maxi with Stephanie

Stephanie was born with wanderlust in her veins

“An independent and an empowered woman is one that has the capacity to make her own choices and execute them.” chicken karaage for example! I believe children go through phases and for as long as they are constantly exposed to a variety of food, they will eventually try everything. I do use dessert as a bit of a dealmaker for them to eat more veggies or healthier things. How would you define an independent, empowered woman? An independent and empowered woman is one that has the capacity to make her own choices and execute them. Whether that is to choose to be a stay at home mom or to have a career or not to have children at all, even—it doesn’t matter, as long as it was her choice and that she had the strength, courage and support to carry it out. We still live in a sexist society despite the many gains women have made. What are you teaching your sons in terms of relating to and treating women?

It’s very interesting you’ve asked this as for the first time in my life some time ago, Sebastian complained why I wasn’t more like the other moms at school who were there everyday. I replied that mama has to work and that I would always be there on the important occasions and that I came home everyday early enough for us to have daily playtime and put them to bed. He then replied “But only papas should work. Mamas should not work.” I had to sit him down and gently explain that both papas AND mamas have the right to work and in many cases, some families only have their mamas working. I also show him my work and explain a bit more about what I do and why I do it—and he has begun to understand that things don’t magically appear on the table and has begun to value a working mother. I’m also very loose about gender coding and let them help me get dressed, put on my makeup for me and they love using my nail polish. I want them to

appreciate that although men and women are different in essence we should be equal in opportunity and value. What books are you reading right now? I just finished reading Middlesex as part of my book club and I’m about to start The Immortalists. If you had to get away from it all, where would you like to go? I would really like to go on a solo trek in Nepal. Where I can challenge myself, be alone with my thoughts, encounter a new culture and truly soak up nature. On a regular basis— I do escape to my favorite neighborhood salon for a mani-pedi and foot massage!

Hollywood Tales

A Filipino-American actor pens a memoir about his life and career

Dante Basco

W

hile still a teen, he was cast as one of the Lost Boys in Steven Spielberg’s retelling of the classic Peter Pan tale, “Hook.”

He became something of a legend among kids of his generation. And now, according to the Washington Post, “Basco’s character in the 1991 movie ‘Hook’ has become iconic for kids of the 1980s and ’90s who remember the Lost Boys crowing ‘Ruffi-ooooo!’ for their fearless leader. Skrillex’s Grammy Award-winning 2012 dance single ‘Bangarang’ was a shout-out to Rufio’s battle cry. A pop-punk band in the early 2000s named itself Rufio. Basco has even seen tattoos of his teenage face on other people’s bodies.” In his memoir, From Rufio to Zuko, Basco takes us behind the scenes of his earliest projects, sharing personal examinations of his life on the set of "Hook", through his second rise as a cultural icon as Zuko in "Avatar: The Last

Airbender". Throughout his career as a "working class" actor of Filipino heritage, Basco outlines how his family and culture play a crucial role in the foundation of his work and his focus for the future. Now Showing: Parasite

The Korean film sensation Parasite and its talented director Bong Joon-ho swept the recent Academy Awards, winning Oscars for Best Picture and Best Director to name a few. It first premiered in Cannes in May 2019. The esteemed Professor Nick Deocampo, a multi-awarded filmmaker, film historian, and film literacy advocate, literacy advocate, who currently teaches at the U.P. Film Institute College of Mass Communication at U.P. Diliman, will introduce the film and open the floor for discussion after the screening

T

his year's film awards season began with a win for Parasite as Best Foreign Film at the Golden Globes, and the accolades have only snowballed since then. It’s easy to see why. Parasite is a film that blends genres flawlessly, entertaining and horrifying while delivering savage social commentary. Critics have universally lauded Bong Joon-ho’s oeuvre that traces the checkered fortunes of two families, the wealthy Parks and the destitute Kims. Manohla Dargis of the New York Times called it “brilliant and deeply unsettling;” Joe Morgenstern of the Wall Street Journal said it was “a masterpiece of serial surprises;” Peter Bradshaw writing in The Guardian described it as "an enjoyable, elegant, scabrous movie about a mix of servitude and trickery.”

Bong Joon-ho told Vulture, “There are people who are fighting hard to change society. I like those people, and I’m always rooting for them, but making the audience feel something naked and raw is one of the greatest powers of cinema,” he says. “I’m not making a documentary or propaganda here. It’s not about telling you how to change the world or how you should act because something is bad, but rather showing you the terrible, explosive weight of reality. That’s what I believe is the beauty of cinema.” A Q&A with Professor Nick Deocampo follows the screening 9

Hamming It Up Jamón specialists Txanton team up with fine wine purveyor AWC for a unique gustatory experience

“There is no place in Spain where jamón is not the star of the show”

I

Star master jamón cutter Gerson Rodriguez lends his expertise to the evening, introducing varieties of jamón from different regions, enjoyed with fine wines. Through the palate, one discovers the taste of Spain.

f there’s one iconic and traditional Spanish product that has stood out for many, many generations, it's jamón. Yet despite the ubiquity of jamón in Spain, not all jamones are created equal. Jamón is the leg of the pig cured with salt and time—as simple as that. There is no place in Spain where jamón is not the star of the show. It is in celebrations like weddings, birthdays, professional and formal gatherings, as well as meet-ups with friends. Jamón, some Spaniards might even say, is life.

MENU

And life for the Spanish is about pleasure. It can be as simple as the marriage of jamón and wine, as Txanton and AWC demonstrate in a special tasting session. Jamón on its own is already quite an exquisite treat; paired with the right wine, the flavors deepen and the sensation is sensual and sublime.

ABOUT GERSON RODRIGUEZ For a young guy and a meat carver facing a whole leg of delectable bone-in jamón, the question is how he developed such passion for an iconic and traditional product that Spain is so proud about. Though cortadores de jamones or in layman’s terms, jamón carvers, make it look easy, it’s a skill that requires knowledge, dedication, and a whole lot of practice. Maestro cortador Gerson Rodriguez elevates the act of slicing jamón to an art.

Working Women A social entrepreneur and a photographer team up to highlight a fundraising intiative to empower impoverished mothers in Tondo

“Mothers Striving for a Better Future” is a documentary photography exhibition about six hardworking women from a very impoverished part of Manila. These mothers became entrepreneurs with the support of BYSMP Bless The Children Foundation in Tondo and the local bag brand Not A Daydream, They recently opened their doors to Christelle Flisch, street photographer, to share their stories. The result is an impactful documentary, not just because of the heartbreaking circumstances these families live in, but mostly because of the drive these mothers have to give their children more chances in life. The empowerment of women is often more visible in the corporate world but it doesn’t stop there; it is at every level. By supporting the mothers working at Not A Daydream, other women are encouraged to learn new skills, and be able to support and educate their children. By giving these women a voice, Flisch highlights the difficulties they face in their journey towards empowerment.
