The Next Quarter
Pandemic fatigue is real. We all feel it. And we can’t wait for it to end. Every day we watch the numbers, hoping the cases go down to a manageable rate, a rate low enough to get the Philippines off the red lists. The United Kingdom announced that travellers from the Philippines will require a mandatory 10day quarantine period in a government hotel at £200 a night. The United States issued a Level 4 alert warning Americans against travel to the Philippines because of the COVID-19 situation - in addition to “crime, terrorism, civil unrest, and kidnapping.” And Hong Kong temporarily halted all flights coming from the Philippines. But things are improving. While we breached the one million mark in terms of COVID-19 cases, the actual number of active cases has dropped significantly, as has the infection rate. The vaccination programme is under way, and many LGUs have been doing a commendable job getting the health workers, seniors and the vulnerable among their constituents vaccinated. We are all beginning to feel that we are starting to claw our way out of the upheaval that the coronavirus has wrought upon our lives, our livelihoods and our relationships. It’s hard to believe that we are now approaching the second quarter of 2021. As we await the government’s advisory regarding the lifting or extension of MECQ, we continue in our mission to offer meaningful experiences to our Members. We are continuously sprucing up our outdoor areas to create safe al fresco dining spaces. We have partnered with more delivery apps to make ordering from our takeaway menu simpler and more convenient. We have made additions to our menu, offering, most notably, refreshing and irresistible Thai classics and specials, courtesy of our new Executive Chef, Piya Suthasiri. Read more about Chef Piya and the exciting new and authentic flavors and spices he is introducing to Manila House on pages 13 and 14.

Purchasing Officers play a critical role in every business, and Nico Garcia is no different. He tells us about the procurement challenges he has been dealing with the past year Where were you working at before Manila House? After I graduated from college, I worked as a steward in a local restaurant. I was given the opportunity to work abroad, but after two years I decided to get a job locally. I became a warehouse man for a catering firm, and also with Vikings Commissary. Then in 2016, Manila House hired me as a Storekeeper first, then after a few years I became the Purchaser. How has the pandemic affected the purchasing department? The pandemic has affected purchasing a lot! Some basic stores were closed, I had to wait in line for hours just to get inside the supermarkets, and I am constantly dealing with the unavailability of some items. You have been handling purchases not just for the kitchen but anything that the Club needs. What was the weirdest, most interesting, or most difficult item that you were asked to find, and why? For me the most interesting was the Filipiniana event, Ang Pagdiriwang, where we had to pick up the dessert in Pampanga. I was worried that the items might get spoiled or damaged during our travel back to Manila. What do you look forward to the most every day?

A Taste of Thailand
Executive Chef Piya Suthasiri comes to Manila House after almost 20 years working in resorts around the world, including Amanpulo, the Maldives, Langkawi, Phuket and Kandaya. He brings with him a passion for creating hearty dishes infused with fresh and subtle flavors that surprise and delight What is it like, being back in the Philippines? Being in the Philippines is a good opportunity to cook fresh quality food as the country can offer a variety of fresh premium resources. What do you want to bring to Manila House? I would like to bring unique flavors and authenticity of Thai food and South-East Asian cuisine as additions to the Manila House menu, where I found quite a selection of good food that was already being served. Why is Thai food always a crowd favorite? Thai food is known for the freshness of its herbs and ingredients; it’s a humble way of cooking. At the same time it delivers healthy dishes to diners where needed, especially during these times when everyone is concerned with health and immunity. We are known as spicy food lovers but this can actually be adapted to any food culture, especially those of South-East Asian countries

MARK HUANG answers the Manila House Questionnaire
“Success for me is happiness.” Tell us what you do.
I used to be an account associate in Eastwest Bank but resigned earlier this year to help out in the family business instead. I now take part in the daily operations of our plywood factories located in Impasugong and Makilala where I handle financials and corporate paperwork. Our company produces both veneer and plywood which we then ship out to our clients. Although challenging at times, I see great prospects for the overall wood industry in the Philippines as it starts to modernize and operate more efficiently. How do you define success?
Success for me is happiness. And what makes me happy is sitting in the beach on a sunny day, sipping out of a coconut, and staring at the endless waves crashing ashore. There’s just something about the beach that makes me feel satisfied. No roads, no buildings, no deadlines – just plain old nature, with which man was created to commune. Overall, I enjoy simplicity and harmony between us and the world. What life lessons did you derive from the pandemic?
The pandemic helped me shift my focus to the important aspects of life. Particularly my family, friends, and our household. My favorite, however, will probably be learning how to play Mahjong. Mahjong to us is more than just the white tiles we clang together when playing. We find it to be a game of guessing, planning, hustling, and as a cultural exchange between the old to the new generation. In fact, I know some people who started playing at the age of five and are still very eager playing it in their 50s every day!
What would you like to see in the “next normal”?
I would like to see faster economic movement in the country. The recent technology boom caused by the pandemic enabled the whole world, including us, to speed up 10 years ahead in terms of digitization. As an Economics graduate, nothing excites me more than seeing increased sellers, consumers, competition, and an overall healthier market in the country. What’s your favorite thing about Manila House?
Most definitely the Poke Bowl! This is usually where my monthly consumables go to. You will always see me and Nika on a date in the Bonifacio Lounge and topping all that food off with Yema Palitaw. The yema dip is just too good! If you had to be quarantined (again) which country would you choose to be in?
I would love to try out Japan. Aside from the superb food, very clean streets, and well-disciplined locals, their perspective on life is simply amazing. I have recently finished reading Wabi Sabi by Beth Kempton and her narrative on this philosophy showcased the deep appreciation of the Japanese for the passage of time. In terms of objects, wabi and sabi celebrate cracks and crevices and all the other marks that time, weather, and loving use leave behind. Learning this, I started asking myself which objects in my household could I see using for five? 10 years? And as I look at the worn-out seats of our old, weathered SUV, I think to myself – “We have used this a lot in the past couple of years,” and feel very satisfied with that feeling.

MOTHER KNOWS BEST
We ask our Members to share the best lessons their mothers taught them
Toni Gregory I came across a book with the title “My Mother, Myself.” This gave me a serious look at what I learned from my Mama Aurelia. I was the eldest daughter in a family of 10 siblings.Growing up, I observed her extraordinary skill in managing time. She planned our daily meals, posted on our fridge door, set aside payments for utilities, our school allowances, supervised the household like a well-oiled machine. I mastered her legacy of time management. During my work and family life, I always maximized available time to be productive. There are so many lessons learned from my Mama but I would need a whole book to fill pages and pages of lifetime lessons my siblings and I pass on to our next generation. 17
Kunal Chadha I think the best thing that my mother taught me was perseverance, to keep going regardless of how difficult the situation might be. She also taught me to be practical and to balance my actions with the head and the heart. I think these lessons are life lessons that help me manage my day to day life in a better way. On a lighter note, she also taught me the saying “a place for everything and everything in its place” and made me live it! I think this was her smart way of ensuring that I kept my room neat and tidy at all times!

Bambi Garcia The best thing my mother taught me was how to be a good mother. To be selfless and to put my children’s needs above mine. To be a guiding light to my kids so that they may grow up to be responsible men. Leading by example, she showed me how to treat others with kindness and humility so that I could teach the same values to my children.
Rhoda Aldanese She taught me that there is no love noble enough to break someone else’s heart. It has always guided me for the most part of my life. And when I fail to follow this rule... it always does not end up well. My spiritual journey further strengthened this teaching. It follows the golden rule of love: God first, the others next and yourself last.
Peter Maquera She taught me the power of kindness, and how it fosters trust and confidence, and not to mention, it’ll make you feel great.

We find ourselves today at a critical juncture in the fight against Covid. The vaccine roll-out has begun; Every day more and more people are being vaccinated, mostly with sinovac, although there some were able to get the first round of Astra Zeneca vaccinations.
At the same time, positive cases of Covid-19 are surging, so are deaths. We hear about hospitals having no more beds, entire households getting Covid, from grandparents to the helpers, people we know getting incubated and not making it. It’s quite frightening time for everyone. Discussing the realities of Covid-19 today, from diagnosis to treatment to vaccines, was the Medical Director of UST Hospital, Dr. Charito Consolacion. She gave a most informative and comprehensive presentation that covered everything you might want to know about the disease that has brought the world to a standstill. The vaccine, she said, was our best hope to control the pandemic and she believed it was safe for everyone to take, except in rare instances, which she detailed. Her advice was simple: take the vaccine as soon as your turn comes up. Dr. Concolacion is an Alumna of UST, having obtained her degrees in nursing and medicine from the university. In 2019, she obtained her masters in hospital administration, graduating magna cum laude. She is also a previous winner of the prestigious Gawad Santo Tomas award in 2018 for research and community service.

For wildlife photos, I always tell people try to get to be on eye level with the animal. It’s just more flattering if your background is not the ground, if your backdrop is the sky. For this photo I actually went on my my tummy photographing this silverback and he actually did the same thing and we had a little kind of moment that went on for 10 minutes.
SALYAR DE UYUNI, BOLIVIA
From January to April this whole thing - the salt flats - floats. When it floods, it becomes like a giant mirror that you see in this photo, it’s very hard to discern the horizon. If you like landscape photography, this is probably one of the best places in the world to do it, go hang out there for three days.
EMPEROR PENGUINS, SOUTH GEORGIA, ANTARCTICA
This is an island called South Georgia. I snapped this view with my iPhone, and you know, when you look at it you see all the penguins, but you know there are no rocks in this photo, that’s a proper beach. All those brown blobs you see there are all southern elephant seals.
SUNSET AND STARS, BOTSWANA
For night photography or astral photography, people ask me, how did you manage to get the sunset with the baobab and the stars? But this orange light in the background was a distant forest fire which was not even visible to the naked eye when I took this photo. I actually had the shutter open for 30 seconds, and the orange just came out and it worked!

We’ve heard the news, we’re seen the videos. One day an Asian man is slashed form cheek to cheek. Then armed man shoots eight people in two massage parlors in Georgia. Six of the victims are Asian. An Asian Woman is literally trampled on the street near Times Square while the doorman or the building on front of her shuts the door. Each time we’re horrified. Each time we wonder, when will it end? How do we stop this hate? Joining us was an incredible panel of prominent Asian Americans, all leaders in their field who lent their voices to today’s discussion.

“I’ve never actually felt discriminated against, I’ve always felt special and that’s kind of propelled me to do the things I’ve been able to do... But as far as the best thing about being Asian American - I mean Filipino… you know specifically it’s like, now we’re cool, we like the coolest people, y’all. You’re the coolest people your friends know.”
“I will do what I can to play my part to have the next generation of artists that I can help encourage to pursue their dreams, help them [and] encourage them and and be the best role model I can be to them. I will say that in general what I love about the Filipino culture and Filipino people is their warmth and their generosity and their their wonderful sense of hospitality. Everyone who comes to their home is like family. I want to speak specifically to being Filipino, Filipino-American whatever we’re going to be called: that is something that that resonates with me and is part of my truth.”
“Representation matters, telling our stories matters, but one of the things that I think has the power to effect real change in the long run is teaching our history as a part of K through 12 education. So I didn’t learn any of this when I was coming up in school here in the United States. I didn’t learn about Asian-American history till I reached college. So we need to know more about the fuller history of all people in the United States, all minority people, all people of color, and understand the struggles for civil rights and social change for us. We all need to be learning this and it shouldn’t just be what is available to people who are fortunate enough to be able to take Asian-American studies when they reach college.”

MIGUEL SANGALANG VINCE RAFAEL “At the same time [AsianAmericans are] were realizing that privilege was very precarious and that they remain vulnerable, and that they had a responsibility. This is the thing that strikes the young people more and more, they have this deep sense of responsibility to engage in social justice issues using their privilege to further protections and justice for everybody else. You know, you think of rappers like Ruby Ibarra, you think of film makers like Isabel Sandoval, you think of a lot of Filipino intellectuals and Asian-American intellectuals that are now growing and are at the cutting edge of many of those fields. So for me, I draw an enormous amount of satisfaction from seeing this development happening both within the University as well as the larger society.
