A

s Westernized as we Filipinos seem to be, there are some things that are still well beyond our reach, at least for now, thanks to geographical and meteorological realities. Like the changing of the seasons, when summer eases into autumn and the leaves turn a riot of deep russet, golden yellow, burnt orange and scarlet red. Coconut trees, unfortunately, only shed coconuts and the occasional flower, and palms turn brown only when they wither and die. But this time of year does bring with it a welcome nip in the air, not to mention roast turkey feasts to celebrate that other all-American holiday, Thanksgiving. In the spirit of the season, we’ve dressed up our lower lobby entrance with leaves and branches that evoke the colors of the season. Upstairs, we’ve created a holiday menu with a selection of roasts and all the sides and trimmings for all your festive entertaining, be it in your own home or in the Club itself. Just give us two days’ advance notice, and we’ll prepare everything for you. Thanksgiving may be a food coma-inducing holiday, but for us at Manila House, it’s an opportunity to express our sincere gratitude to all our Members who have stood by us throughout the seasons of scurrilous whispers, menu evolutions, management and staff changes, and the various challenges we continue to strive to overcome. Get to Know: Julian Bautista Whether it's an intimate gathering or a grand party, Julian runs the show from behind the scenes with professionalism and composure What do you like most about working in banquets? Banquets broadened my experience and learnings—not just at work but also in life. It taught me patience, which I never had. It also taught me to be more understanding. Daily unique operations = new learnings. What’s the biggest event you’ve ever handled? It wasn’t the biggest event, but rather it was the biggest opportunity that came while working under Banquets. I was chosen to serve the President of the Philippines, President Rodrigo Duterte for a private event. It was a once in a lifetime experience that I was proud to accomplish.

How do you handle critical situations during banquets? I always see to it that I’m always calm no matter what the scenario. I believe that every problem can be worked out, and it will be easier to solve when you’re calm and focused. What do you do for fun? Volleyball is my first love. I play it during weekends or whenever time permits.

I describe myself as Straightforward, Majestic, Adaptable Where do you see yourself 10 years from now? I see myself having my own business particularly in the hospitality field. I also want to give back by helping the younger generations who seek opportunities in the same industry.

You’ve made the Philippines your home. What do you love about living in Manila? The Philippines feels like my birthplace, which is Berkeley, California—more so than Hong Kong ever did despite 17 years living there. Warmth (in more ways than one), a sense of humor, and a hunger to always do better. Or for merienda. That and diningding. Kid you not. I’m a gulay-fiend, Ilocano at heart. Ever start your day with coffee in your rice? As an urban planner, would you say Manila’s traffic problems can be solved? You know, an investor friend came here a couple years ago and only saw opportunity in the traffic. It’s a happy problem of explosive demographics. As a regional planner trying to solve the chronic challenges of urbanization, of course I see a light at the end of the (metro) tunnel. What are some of the game-changing projects your firm (AECOM) has spearheaded in the Philippines? There are the big visible ones spearheading a fresh, modern, optimistic role of the nation on the global stage: the design of the new Senate, masterplanning New Clark City and all the BCDA portfolio toward future-ready economies and protection of natural resources.

But also quiet, significant ones: local designer of the Metro Manila Subway; cleanup of the Pandacan oil depot; optimizing industrial operations around the country. And most importantly, the hotels and signature restaurants we help deliver—that’s the hardest work of all. Really! (wink) How do you think cities like Manila and others in emerging nations around the wold will evolve in the future? Capital follows people, and populous nations that leverage and celebrate their internal diversity will have the strongest evolutionary DNA. Because of (not in spite of) the challenges we face: our perspectives, ideas, and solutions will be the resilient, nimble, and authentic ones that will lead the rest of the planet. So long as we hold onto our values. And our Lolas’ kare-kare recipes. You have a young daughter. What are your favorite things to do with her? Traveling for outdoor sports. Best confidence builders ever, great bonding time, and eye-opener to new cuisines. And how can we not, with the thousands of coasts to surf, mountains to ski, parks to skate (ok we need more there). And dad jokes that are food related. As you can tell. Although she says they’re so bad that she calls them Lolo jokes. 6

Pure Abstraction He has been called “The Last Bohemian,” and indeed, Virgilio “Pandy” Aviado’s long and prodigious career has included interludes in Paris and Spain, as well as successful exhibitions all over the world. A compleat artist, the prolific Aviado has consistently delighted and surprised and drawn praise from patrons and critics alike with his versatility and creativity. He turns to abstraction in this exhibit, aptly called En Abstracto

There is a Filipino painter, Virgilio Aviado, whose trajectory I have been following since the late 1960s, when I first saw his works at a group exhibit, at the Luz Gallery, of then up-and-coming painters like Tiny Nuyda and Ben Cabrera, now Bencab, the National Artist. I purchased an untitled drawing of an imaginary creature by Virgilio Aviado. I was attracted to that intriguing piece because I could not find its starting point, so fluid and continuous were the lines of that fantasy being, its elongated limbs were seamlessly wrapped around a bulky body. It also had a naughty yet enigmatic smile. Today, I am convinced it was Virgilio Aviado’s secret self-portrait. Aviado is a multifaceted and multi-awarded artist who has mastered an incredibly wide range of styles, materials, techniques, moods, themes and forms. He is also a chemist, was a university dean, a teacher, traveler, bon vivant, lithographer and printmaker."

Meet the Winemaker: The Master of Malbec

The first grapes were planted by his forefathers in 1830, in the Cahors region. Jean-Luc Baldès continues the family tradition of creating excellent wines at their vineyard, Clos Triguedina, refining in particular the Malbec grape, which originated in France

C

los Triguedina has been the seat of the Baldès family since 1830. The place has a long history rich in the lives of men and women. Pilgrims on the Santiago di Compostella route would often stop there to eat (me trigo de dina in the Occitan language of southwest France means “I am looking forward to dinner”). The Baldès family have, for their part, built up Clos Triguedina by passing on their knowledge, determination, and passion from father to son. Their pioneering spirit has led them to be one of the founding families of the Cahors wine region. Jean-Luc Baldès often says that the magic of Clos Triguedina lies in the richness of its soil. He is inspired by Burgundy and constantly seeks to bring out the various characteristics of the grapes in each plot, covering each terrace. His strength of character and perseverance have led him to understand how to exploit his best plots of vines to make quality wines. He has known how to develop his varied range of wines at the highest level without losing the very essence of this traditional winery, passed down to him after so many generations. His talent and creativity has produced a wide selection of wines, each one of which is as audacious as the next one, with many of the reds based on the Malbec grape. 11

ABOUT JEAN-LUC BALDÈS Known as the “Master of Malbec,” Jean-Luc Baldès continues the work begun by his great-grandfather, Étienne Baldès, who planted his first plots of Cahors vines at Close Triguedina in 1830. The winemaking tradition was passed on from father to son, and Jean-Luc continues the work of his father, Jean Baldès, who enlarged the surface area of the estate to twice its size and developed the production of fine wines. Together with his wife Sabine and daughter Juliette, Jean-Luc has elevated the wines to the highest level in the region. He has now spent 30 years producing wine on this property, to which he remains passionately attached.

Small Bites, Big Flavors

The Art of Canapés, Cocktails, and Commendable Edibles according to Chef Lorrie V. Reynoso

t’s 5:00PM in Manila House and Chef Lorrie, a classically-trained chef with Le Cordon Bleu-NY pedigree, is busy mixing mayonnaise into a bowl of egg yolks. She’s making a party staple: Caviar Topped Deviled Eggs. However, for her version, Chef Lorrie uses Japanese mayonnaise rather than the regular one for that umami edge. Assisting the New York-trained culinary instructor was a small band of kitchen aides. On the other side of the room were the students, a mix of eager housewives, cooking hobbyists, and kitchen cooks sent by their employers, listening tentatively while jotting down the techniques and substitutions Lorrie would throw in between procedures. The most exciting part, of course, in any cooking demo, is the tasting of finished pieces. The deviled eggs were gone in seconds.

The international chef, who taught at the Institute of Culinary Education in New York, shared some of her favorite recipes, adapting them for the home cook. Chef Lorrie and her team prepared eight starters in total: Spicy Crab Meat with Tobiko on Cucumber Cups; Shanghai Style Tinapa Lumpia; Fresh Tuna Tartare on Wonton Crisp; Smoked Salmon with Mustard Dill Sauce and Capers; Melon Soup with Prosciutto Crumble; Rosemary & Garlic Baked Camembert, Dried Fruits; Baguette and Honey, Caviar Topped Deviled Eggs; and Curried Chicken Canapé with Toasted Cashew. And like any perfect host, Manila House also served G&Ts courtesy of Arc Gin to enjoy with Lorrie’s collection of canapés. 12

It is defined to be a rich firmly structured wine with fruit, oak, and tannins in harmony.
