eptember is upon us, and while you won’t hear Christmas Carols being blasted through our sound system just yet, in true Filipino fashion, we celebrate the start of the festive season, quite fittingly, with food. The marriage of food and alcohol has proven to be a big hit with our Members, and we continue to introduce you to new tastes, flavors, and regions. This month, we welcome the French-Chilean winemaker, Jean-Charles “Charlie” Villard, who happens to be as passionate about surfing as he is about the wines produced at his family’s premium boutique winery in Chile, Villard Fine Wines. Although Villard is a relatively young winery, having been founded 30 years ago, Charlie’s wines have been impressing international critics and connoisseurs. The American wine critic James Suckling has in fact given at least three of his wines grades above 90 in a 100-point scale, which means they are outstanding. On September 9, we’ll get to find out exactly why Villard should be on any wine lover’s radar, and how food brings out the flavour of the wines even more. International culinary instructor and chef Lorrie Reynoso returns to Manila House this month for another one of her popular cooking demos. She shows us how easy it is to whip up canapés in the kitchen that go well with cocktails. The Cordon Bleu-trained chef is no stranger to lavish banquets and full-on gastronomic experiences, but when at home, she believes that you can’t go wrong with an approach that favors simplicity, flavor, and great presentation. And our Sunday Market debuts this September, featuring fresh produce, in addition to home accessories, botanicals, essential oils, and many more. In fact, why not make a day of it at the Club on Sundays? I started as a Captain Waiter in October 2016, prior to the Club's formal opening. After seven months, I was offered the position of Restaurant Supervisor. I rejected the offer to give way to others who I thought were more deserving. When they opened the position for Anahaw Restaurant Supervisor some time later, I grabbed the opportunity. What do you love most about Anahaw? I love the structure of Anahaw! It’s really unique—from the iconic Anahaw fans to the wallpapers and especially the operational equipment. I also love the dishes we offer at Anahaw. Our menu offers traditional authentic Filipino food but served in a high-class, fine dining atmosphere. How do you handle critical situations at work? I always listen to our Members first to keep them calm, and then I ask my staff about it, too, for investigation. I try my best to remember the preferences of the Members to ensure enjoyable situations during their visits. What's your life like outside work? I always ensure that I spend quality time with my friends and most especially my family.

Maymay Liechtenstein For Maymay Liechtenstein, ballet is beauty, elegance, emotions, and dreams embodied in a timeless and classical art form. And as president of Ballet Philippines, which celebrates its 50th anniversary this year, she’s got big plans for this prestigious dance company How did ballet become such a part of your life? Do you recall any milestone experiences in which ballet played a prominent role? As a young child, my mother would read to me junior classics and almost always the illustrations were magical. I liked ballet, but a book, Pavlova, a White Swan, was a turning point at age seven. Since then, ballet became a big love of my life. The haunting music, the ethereal gracefulness, the misty lighting, those frail yet steely ankles never fail to fascinate me. Momentous moments of my life happened at the ballet. My first date with my husband was watching The Nutcracker by Ballet Philippines at the CCP. 5
My children spent their childhood watching ballets at the CCP. An appreciation of the arts by way of ballet proved easier to meet and make friends. And joining the Board of Ballet Philippines 15 years ago was inevitable. As the new president of Ballet Philippines, what are your immediate and long-term goals for the company? My immediate goal is to transform it into a financially robust company and pay homage to its 50th year of being a cultural bastion for dance in the country. My long-term goal is to transform its relevance into the digital world and strengthen its core values onwards to its century of existence.

How is Ballet Philippines celebrating this special anniversary? To celebrate our 50th season, we have invited from the Mariinsky Ballet (Kirov Ballet) principal dancer, Andrey Ermakov as Prince Siegfried, and first soloist Elena Evseeva as Odette/Odile for Swan Lake. They performed on the opening weekend. Our company dancers led by Denise Parungao and Victor Nuguid will dance on September 1, 7, and 8. Is there any international ballerina you’d love to have at Ballet Philippines? The first time I saw Prima Ballerina Svetlana Zakharova dance, I cried from the sheer joy of watching beauty, grace, and passion on stage. I try to catch her performances as much as I can. You have to watch her at least once in your lifetime! There are legendary dancers I am so attached even to this day: Tamara Rojo, Carlos Acosta, Polunin. l would love to watch them over and over again. My dream is to have Svetlana Zakharova dance with Ballet Philippines dancers at the CCP! And of course Andrey and Elena with our company dancers. What are your favorite ballets to watch? Swan Lake is my first love and I go around the world to catch it being performed by the best companies and prima ballerinas. Giselle is my second love. I just watched it during my last trip to Russia at the Mariinsky Theater and I floated for a night out of exquisite joy! Jewel is my third favorite because of its elegant colors as its theme.

La Bayadère and Romeo and Juliet complete my top five. Midsummer Nights Dream is the best Shakespeare story for ballet as it's full of magical characters. When you take off your president’s hat, how do you like to relax and unwind? I try to catch the Ballet seasons of London, Russia, and NY whenever my Ballet Philippines schedule allows because it keeps me happy and complete. I am an Aman junkie so that keeps me sane and relaxed. I have a lot of my business meetings at Manila House because of its very relaxing ambiance and the food is good! I would love to wake up and just read a wonderful book in bed the whole day without a tinge of guilt, someday. 6

he Metrobank Foundation established its prestigious art competition in 1984, which promotes Philippine art by recognizing the talents of emerging Filipino artists. Known then as the Metrobank National Painting Competition, the competition was envisioned as an instrument that would create positive engagement with the youth amidst the economic and political chaos that the Philippines was in at that time. Rebranded as the Metrobank Art & Design Excellence Competition, MADE-Now brings together current and previous competition winners—many of them established artists today—in a special fundraising exhibition.

Shakespeare on Pointe
National Artist for Dance Alice Reyes, together with dancers from Ballet Philippines, shows how a much-loved comedy by William Shakespeare takes on a new life as a ballet
A
ballet about the transforming power of love, George Balanchine’s A Midsummer Night’s Dream is based on William Shakespeare’s comedy about the romantic adventures and misadventures, quarrels and reunitings, of two pairs of mortal lovers and the king and queen of the fairies. The ballet, through its themes of reality versus illusion, and change versus constancy, displays love in all its guises. In the first act there are dances of unrequited love and love that is reconciled. There is a pas de deux for the Fairy Queen Titania Alice Reyes and Bottom, who has been turned into an Ass—a perfect illustration in dance of the old proverb, “love is blind.” In the second act, which opens with Mendelssohn’s familiar Wedding March, there is a pas de deux representing ideal, untroubled love. Felix Mendelssohn (1809-1847) was a German composer of the Romantic Era. Like Mozart, he was a child prodigy who excelled in every aspect of music: he was one of the finest pianists of his time, as well as an excellent conductor and wellknown educator. Mendelssohn was only 17 when he wrote the overture to A Midsummer Night’s Dream, which musically introduces all of the ballet’s characters and themes.
ABOUT ALICE REYES National Artist for Dance Alice Reyes is the visionary founder of Ballet Philippines who propelled the company into a national arts institution we can all be proud of. In the Philippines, she established regular season concerts, professionalized dance as a career and played a major role in the phenomenal development of dance in the country. Through her efforts, dance has become a highly respected and distinguished profession in the country. In June 20, 2014, Alice Reyes was declared National Artist for Dance by President Benigno S. Aquino III. Alice Reyes is currently the Artistic Director of Ballet Philippines. She began working with the company again during the 49th season, leading the production towards the 50th onwards.

he Casablanca Valley, only 70 km west of Santiago and less than 25 km from the Pacific Ocean, is one of the prime areas for cool-climate grapes in Chile. The cold Humboldt Current runs off the coast, so the sea produces a cooling effect, with morning fog and low temperatures that are transmitted in the wines with bright acidity and fresh fruit. This is where Thierry Villard established Chile’s first family premium boutique wine company, Villard Fine Wines, in 1989, consistently recognized as one of the best producers in the Casablanca Valley. Killer Martini Serves 1
80ml Martin Millers gin 30ml vermouth 2 dashes orange bitter 1. Pre-chill your martini glass. Pour all ingredients in a mixing glass. 2. Fill with ice, then stir 40 times (dilution from the ice is part of the recipe, you need a specific amount of water for a consistent taste). 3. Strain the content in the chilled martini glass, then garnish with a lemon zest twist or olives.

The Farm at San Benito shares one of their flavorful vegan recipes, which was presented at an exclusive health talk at Manila House Fresh Salad Roll with Almond Butter Sauce Makes 2-3 servings
Almond Butter Sauce 1 cup almond butter 2 cloves garlic 2 Tbsps muscovado sugar 2 Tbsps tamari soy sauce 1 tsp cayenne pepper 1 tsp salt 1/2 cup water 1 Tbsp apple cider vinegar
1. In a bowl marinate the lettuce leaves with the soy sauce and toasted sesame oil. Season to taste with salt and black pepper. 2. On a large tray with water, soften the rice paper roll. Set the softened rice paper roll on another tray to start the assembly of the salad roll. 3. Lay the marinated lettuce over the paper roll then add in some sliced carrots, jicama, and cabbage. Gently fold the lower part of the paper roll then the sides to keep the ingredients from flowing out. Finish rolling the salad roll. Continue until all the ingredients are used. When done, serve the Salad Rolls with Almond Butter Sauce.
Place all the ingredients in a blender and pulse until smooth. Set aside. Salad Roll 8-10 pieces small lettuce leaves 2 Tbsps tamari soy sauce 1 Tbsp toasted sesame oil Salt and black pepper, to season 2-3 pieces rice paper roll 1/2 medium-sized carrot, julienne 1/2 small jicama, julienne 1/4 head green cabbage, shredded
