Which makes the new year a great time to get back to regular programming, which includes eating right and exercising, taking time to relax and pamper yourself and spending meaningful time with family and friends, while setting goals and projects that inspire, challenge and fulfill you. You might want to start with a session of Lagree, a new fitness regime that has been called “Pilates on steroids,” a form of exquisite torture that takes place on a contraption called the Megaformer. No one session is the same, and it is as demanding as it is rewarding, getting those dopamine levels up even as muscles you never knew you had shake like crazy, because it’s an insane core workout with unexpected cardio benefits. Get to Know: Donna Ferrer Our new Senior Banquet Sales Manager comes from a hotel background and gets an introduction to the private members club concept courtesy of Manila House Where were you working before you joined Manila House? I was Sales Manager at Marquis Events handling Corporate and Social Events for a short period of time. And prior to that, I worked with Novotel Manila, Crowne Plaza and Holiday Inn Galleria and The Manila Hotel as Sales Manager for both Travel and Corporate. What do you enjoy most about being in Banquets, as well as in Sales and Marketing? The satisfaction that I feel whenever I see my clients enjoying their event and very happy with the service the team and I extended to them. The first time I was hired as a Sales Associate, I was really hesitant to accept the job considering I like to be with operations. But after six months, I started to like the position because I had fun talking to people and deal with different kinds of personality.

Were you familiar with the concept of private membership clubs before you joined Manila House? Not really. Seeing that I came from different hotels, it was really my first time to be with a private membership club and I take this as a challenge and an opportunity to learn for me. And I am excited about the concept of it. How do you unwind when you’re not working? I usually go to my parents’ house and bond with them or sometimes I go to the beach hanging out with my friends. I also like to spend my alone time watching movies, reading books or just sleeping the whole day. Any dream hotel or resort anywhere in the world you’d like to work in one day? It was really my dream to be a part of Shangri-la properties but I am not sure if I am ready for it as of this moment.

A classicist at heart, the great Colombian artist Fernando Botero’s work is easily recognizable for its graceful, corpulent figures, and, in the case of his sculptures, massive scale. His son and namesake, Fernando Botero Zea, introduces his father’s work to a Philippine audience.

About Fernando Botero Zea

enowned for his distinctive style and exploration with color and exaggerated volume, Fernando Botero singlehandedly redefined beauty with his sensual forms and pioneering notion of aesthetics.

The eldest son of Fernando Botero, Colombia’s greatest living artist, Fernando Botero Zea studied at the Sorbonne in Paris, and the Universidad de Los Andes in Colombia. He obtained an MBA from Harvard University, as well as a Master's in Public Administration from Harvard’s Kennedy School of Government. Since 2008, he has collaborated in diverse projects to bring Master Botero’s work to China and the rest of Asia.

There is a naif quality to his work that coexists comfortably with sensuality, which is deeply rooted in his evocations of the reality of life in Latin America. His influence is global; it may come as a surprise that he has been an inspiration for Asian artists in China such as Liu Xiaodong and Sui Jianguo.

Griffin Golamco The world is changing at such a rapid pace, driven by big data. Founding Member Griffin Golamco, Google’s man in the Philippines, doesn’t think we should be daunted by data at all.

Algorithms and AI are the big buzzwords in tech now. How would you explain these to the tech-illiterate among us? Algorithms are the formulas, or rules, which systems must follow in order to solve various problems. In the case of Google Search, the problem to be solved is how to surface the most relevant search results at the top of the Google search page. In the past, our engineers would determine the best algorithms to accomplish this, and would then update the Google search algorithms on a regular basis. Artificial Intelligence (or AI) is the development of computer systems to do what used to require human intelligence to accomplish. In the case above, rather than a human (our engineers) having to decide how to update the search algorithm, we have started teaching the Google systems what “good” looks like when it comes to relevant search results. The systems can then determine for themselves (and on an ongoing, real time basis) how to adjust the algorithms to provide the best results. How do you like to unwind? In order to unwind on a day-to-day basis, I like to exercise. I sit at a desk for most of my day, so getting into the gym allows me to get my blood flowing while simultaneously allowing

my mind to focus on things other than work. I find that an hour in the gym does wonders for my energy levels while lowering my stress at the same time.

When possible, my family and I also love to travel. We love visiting new places, trying new foods and learning about new cultures. Being in Southeast Asia is perfect from this standpoint since there are so many interesting nearby places to visit.

We have been members of other clubs, but I cannot say any of them were quite like Manila House. Most of the clubs we have belonged to revolved around the facilities that guests were able to use – swimming pools, tennis courts, etc. – and the social and business networking aspects of the clubs were secondary. I think Manila House is unique – at least in our experience – and we have very much enjoyed being members so far.

What’s it like being back in the Philippines? I’ve actually never lived in the Philippines before, so I am not sure I am “back” as much as living here for the first time. I have visited many times in the past, first because I have a lot of family in the Philippines, and then because I would come here regularly for work. However, living here is obviously very different from visiting. When visiting, it was all about catching up with family and trying new things – getting into new adventures. Settling into living here has meant establishing a routine – getting the children settled into school, figuring out our favorite restaurants and places to hang out, and getting into a regular schedule for work. In that regard, settling into living here has been great. Having a wonderful community of friends and family has made settling into

Steve Jobs was said to have discouraged his kids from using devices such as the iPad. What is your device policy with your children? They are so ingrained into how we operate in the modern world that I believe the focus needs to shift to educating children on how to use devices appropriately rather than discouraging kids from using them at all. As noted above, my kids go to BSM where owning a device is mandatory for almost all of the children, and the devices play an integral role in how the kids learn. I believe this is a wonderful use of devices and we encourage it

wholeheartedly. We do limit noneducational use of devices, and as much as possible, try to have family time and vacations with little to no device usage. However, I think that falls into the general goal of raising well-rounded children rather than a specific discouragement of devices in particular.

There’s more than a hint of Warhol in Felix Bacolor’s colorful swine images, but there’s also an exuberance in his work that sets it apart from the cynicism of the Pop Art titan Felix Bacolor studied Studio Arts (Painting) at University of the Philippines in Diliman, Quezon City. Among numerous solo and group exhibitions in the Philippines, his work has also been exhibited in Osage Gallery; Hong Kong, Equator Art Projects; Singapore, and Valentine Willie Fine Art; Malaysia.

The contemporary visual artist Felix Bacolor takes us on a technicolor trance with his digitally enhanced toy pig images. They formed part of an exhibition at Galleria Duemila in 2015, "Studies for a Monument,” color-saturated drawings for an imagined monumental pig sculpture intended to be part folly and part social and political satire. The nod to Pop Art is unmistakable, but the layers of discourse are also unavoidable.

The exhibition runs throughout January 2018.

Viva Italia! A graduate of Le Cordon Bleu in Paris, Lorrie Reynoso gave a much-awaited cooking demo to a packed class at Manila House last October. She shared her recipes for quick and tasty Italian dishes that could be easily prepared at home.

L

orrie’s passion for food and lifelong career was carved out for her at an early age, having come from a large family well-renowned in the Philippine culinary scene. She is currently a Chef Instructor at the Institute of Culinary Education (ICE), Professional Career and Recreational Division. Prior to ICE, she also taught Culinary Arts at the Art Institute of New York for 21 years. Lorrie’s wide gastronomic diversity has been enhanced with extensive travelling, and with Professional Courses at The Italian Institute of Advanced Culinary and Pastry Arts, Calabria, International School for Food and Wine, Bologna, Culinary Institute of America, Asian Cuisine at the Art Institutes in Sacramento and Denver, and at the Royal Thai School of Culinary Arts in Thailand.

METHOD 1. Preheat oven to 425 F. Slice baguette bread 1/2 inch thick on the bias. Brush bread lightly with olive oil. Sprinkle a little salt and pepper. Toast 6-8 minutes, turning once, until crisp and golden. Allow to cool. Get a big piece of peeled, raw garlic and rub the top side of toasted bread. Set aside. 2. For the topping, mix everything together and season to taste. Allow at least an hour or longer for flavors to blend. 3. Right before serving, top each toast with a spoonful of tomato/basil mixture. Serve immediately.

METHOD 1. Heat a sautĂŠ pan and add the butter. Add sliced mushroom and garlic and sautĂŠ for a few minutes. Add the white wine or Marsala to pan. Allow

METHOD 1. In a pot, simmer the coconut milk, cream and sugar, stirring well until sugar melts and mixture is hot. 2. Combine the water & gelatin in a small bowl until it "blooms." 3. Add the "bloomed" gelatin mixture to the hot mixture. stir well, making sure all gelatin has melted. 4. Pour mixture into individual molds and chill until set. 5. Prepare some sweet diced fruits (like mangoes, peaches). 6. Unmold the panna cotta and top with diced fruits. Serve immediately.

INGREDIENTS 1/2 loaf baguette bread 350 g (1/3 kilo) ripe tomatoes 2 tsp minced garlic 1 tbsp extra-virgin olive oil 1 tsp balsamic vinegar 8 fresh basil leaves, thinly sliced salt and freshly ground pepper to taste extra-virgin olive oil for brushing bread 1 whole garlic for rubbing salt and pepper to taste

INGREDIENTS 600-750 g of mushrooms, preferably assorted (white button, oyster, portobello, shiitake)- sliced 1 tbsp finely chopped garlic 1/2 stick butter 1/3 cup white wine or Marsala wine 1 cup cream salt and pepper to taste 2-4 tbsp truffle oil 1 package penne pasta (500 g)

to reduce by simmering 3 minutes. Add the cream. Simmer for about 5 minutes, seasoning to taste. Turn off the heat, add the truffle oil to taste. 2. Boil lots of salted water and cook penne until al dente. Reserve about 1 cup pasta water before straining. Add hot penne to the sauce. Toss.
