Welcome to map magazine’s 135th issue. This week as we go to print, we have just heard the sad news that Wangari Maathai has died. I had the opportunity to interview Wangari for map many years ago and she was a person I admired immensely. Her dedication to the environment (among many issues) and her Green Belt Movement planted more than 30 million trees in Africa and have helped nearly 900,000 women. Wangari was a ‘planet hero’ and her ability to maintain persistence and enthusiasm whilst many faltered was a huge part of her character. She left me with these words: “Unless we change course, the coming generations
will inherit an impoverished environment that will mean a hungrier, less fertile, and more unstable world. More conflicts will erupt. Young people need to become involved in promoting environmental sustainability. We have tried to instil in them the idea that protecting the environment is not just a pleasure but also a duty. Those of us who understand, who feel strongly, must not tire. We must not give up. We must persist. I always say that the burden is on those who know. Those who don’t know are at peace. It’s those of us who know that get disturbed and are forced to take action.” The world needs more people like Wangari! Remember to dream ...

Food is something we celebrate here in the map magazine office. Not only do we all sit and eat lunch together as a group almost everyday, but we’re always swapping recipes, bringing in baked goods and sharing the amazing food experiences that we’ve had. Working in an office where everyone appreciates the joy of fresh, local, simple food is a pleasure. And I think the reason that we all know each other so well is because we share a meal together almost everyday. In our October Eat issue, we celebrate those who bring such wonderful food into our lives, including Jerome Batten and Louis Joseph of Sourced Grocer, and Mark Best of lauded Sydney restaurant, Marque. A traditional Italian ‘trattoria’ is usually designed as a space for people to commune together, eating and drinking in a collaborative environment. Swiss-based design platform POSTFOSSIL has harnessed the collaborative aesthetic of a social melting pot, with an exhibition entitled ‘Trattoria Utopia’, created as part of the Milan Furniture Fair 2011. An interactive space, the exhibition featured a series of trattoria-inspired wares, from crockery to cutlery. A SERENE TEA PARTY WITH NATURE
In nature, serenity is an innate part of the native landscape – a reprieve from the elements, a pause in the cycle of life. Serenity might gently nudge itself into the spotlight in the form of peaceful water lapping at the side of a moored boat. Or tranquillity might arrive when a sliver of sunlight casts a glow across an endless stretch of grass. Whatever its form, a serene sense of calm is welcomed with open arms by the natural environment. In part a carefully fabricated construct, whilst on the other hand a celebration of simplicity, the Black Tea House from A1 architects exudes tranquillity and calm. Based in the Czech Republic, the A1 architects studio and workshop strives to produce architectural projects that focus on the naturalness of design, materials and form. For the Black Tea House, designers Lenka Kremenová
and David Maštálka, alongside carpenter Vojtech Bilišiš, have created a physical representation of serenity, crafted from clay, bamboo and charred wood facing. Situated beside a lake, and surrounded by woodland in North Bohemia in the Czech Republic, the Black Tea House invites the natural world to cross over into architectural design. From the exterior, the structure’s unobtrusive wooden features blend in with reeds gently blowing in the breeze. Once inside, tea drinkers can gather below a striking rope canopy, sitting on the raised verandah lined with beams of larch timber. A dome-shaped feature wall is smoothed over with clay, and features three simple vases crafted from bamboo – perfect for filling with wild flowers picked from the large cultivated garden that surrounds the perimeter of the tea house.

My mother started the business in 1991 as a hobby. We lived on a mountain road at The Gap, and she sold the sauces from the end of our driveway. It has grown organically ever since. Could you break into the industry in other ways? I am sure many people intend to start food businesses by strategising, but for my mother it was simply a hobby to use her cooking skills. What do you hope to achieve within your industry?
My goal is to ensure our business model echoes my mother’s philosophies by staying true to her original recipes, supporting local businesses, and using only fresh ingredients. Are you in the industry for the long term? I took over the business when I was 21 and I am 24 now, but I would say that I have already been in the business for a long time, starting from sitting at the end of the drive at age four. What advice would you give someone looking to emulate your success? I think that in order to succeed in small business you really have to be willing to make sacrifices. Did you always think you would be in this role? I made the decision when my father was in the process of negotiating to sell. I knew that I couldn’t let it go – it’s more than just a business, it’s my mother’s legacy. What was your first paid job? Working in our business! What would you love to do if you weren’t in this role? I think I would be pursuing my passion for acting and music. What inspires you? I am most inspired by challenging myself, and learning from my mistakes. Who is your rolemodel? I just try to be the best that I can be. What are your words of wisdom? My father is forever telling me: ‘Don’t fall at the last hurdle.’

Work hard, take all the advice you can get and then do it your way. Did you always think you would be in this role? Sometimes you just find something that suits your personality. This is an amalgamation of all the things I love. What was your first paid job? Working in a nightclub and then going straight to a cafe and cooking chickens at 4:00 am for salads and sandwiches. What would you love to do if you weren’t in this role? I’d be a photographer for National Geographic, travelling and bringing our smaller, more diverse, communities to the world through pictures. What inspires you? Happiness, selflessness and people who live the life they have to the fullest. Who is your rolemodel? Maggie Beer. She is genuine, kind and true to the food industry. JEROME+LOUIS Converting a beloved passion into your life’s purpose often takes courage, a leap into the deep end and a faithful companion to endure it with you. This is exactly what childhood friends Jerome Batten and Louis Joseph encountered when they dreamed of turning their passion for fresh food and produce into a contemporary spin on the neighbourhood grocer. Three months ago, they rose the rollerdoor for the first time at Teneriffe’s Sourced Grocer – a providore of local produce and simple cafe fare that bases its very essence on celebrating the beauty of locally sourced food, pride in provenance and eating thoughtfully.
When Jerome Batten met Louis Joseph at the puckish age of four, their friendship stuck fast. Growing up together in the town of Murwillumbah in northern New South Wales, their friendship blossomed until, four years later, Louis and his family moved to Sydney. Despite the distance that now separated the two, there was no doubt that a lifelong friendship had been formed. The next 21 years saw the duo traversing the planet in search of experiences that would satiate their wanderlust. From Jerome’s sojourns spending winters on the ski fields of Colorado, working in London, and teaching English in Shanghai, to Louis’ wanderings through the Middle East and several years working for an investment firm in Vietnam, travel was not only an inspiration for the two, but also an important source of learning. And it was through their experiences travelling that Jerome and Louis’ passion for food evolved. “Some of my most memorable experiences were while travelling in the Middle East,” Louis recalls. “A lot of the culture was embodied in the food and hospitality – food is such a great window into people’s background and culture. In Beirut, they have a great capacity to enjoy life after enduring a great deal of hardship. Dining out is a big part of their culture, and there are some superb farmers markets run by a fellow called Kamal, which bring together people from all over the countryside into an old semi-decrepit square in the middle of Beirut. ” Jerome made similar observations

throughout his own travels, enamoured by the way food was an important thread in weaving together a community. For both gents, it was these experiences that planted the seeds of inspiration for what would become Sourced Grocer. “With Louis being in Vietnam, and me in Europe and Asia, we’d seen how these cultures embrace food and the way they interact through food and offer it through their markets – it’s cut fresh every morning and brought to a place and shared,” Jerome says. “We’d been talking about creating something together for a couple of years while based in different places. We both wanted a change from what we were doing and we had that great connection with food through growing up with families who were fortunate enough to enjoy good food.” Pooling their ideas and travel encounters, the boys set to work dreaming up something that would be worth putting away their passports for – at least for the time being. Inspired by their sensory memories of food whilst travelling, the two dreamed of creating a place where quality seasonal produce was celebrated, and a sense of community was woven throughout every carefully crafted fibre of the business. When it came to the location for their project, there seemed no better choice than Brisbane. “We felt Brisbane had a lot of opportunity – there were a lot of things happening in the foodscape and the greater community,” Jerome explains of the decision, which saw Louis and his girlfriend Anna pack up and move to Brisbane from Sydney.
“We’re at the doorstep of a lot of produce from the Sunshine Coast, and the Granite Belt and Northern Rivers region,” Louis adds. “If the goal of your enterprise is to showcase superb produce, you may as well get it on your doorstep.” While searching for the perfect locale to house their dream, the boys came across the Teneriffe location by accident. “We were driving around the area looking for places for Louis and Anna to live, and we noticed a sign on the building saying it was available,” Jerome recalls. “It was a really unique-looking building, but it wasn’t until we saw the space inside that we knew that it was something we could work with.” Where many people mightn’t have paid it a second glance, Jerome and Louis instantly recognised the simple beauty of the space. Once the contract was signed, they spent days and nights crafting the interiors from scratch (with friends and family pitching in to lend a hand). Next was the task of setting up relationships with the producers. With nothing but their passion and a unique idea to support their case, their technique was simply to appeal to like-minded people. “I think it was just about being genuine and explaining our thinking,” Jerome reflects. “A lot of the guys are on the same page as us, so the concept resonated with them.” And so Sourced Grocer was born. Visit on a typical Saturday morning and the scene is one imbued with community spirit, where revellers fill virtually every space available. Some sit at the wooden communal table,

skills that he brings to the table that I don’t have and I really respect him.” And Louis is quick to return the praise. “That runs both ways,” he says. “You need to be able to work off each other and trust each other and adapt and learn really quickly.” He adds that their efforts are buoyed by the support they’ve received. “I’m inspired by my girlfriend and the sacrifices that she and everyone else dear to me has made to help make this happen. We’re driven to do a good job and not let others down. It makes you take pride in your daily tasks, even if it’s as humble as stacking bananas or apples.” “We’ve really drawn on the support of our friends and family,” Jerome agrees. “And we really want to say thank you because we appreciate the support of everyone to let us have a go. It has been overwhelming and it makes you feel like you are doing something that is resonating with people.” The wisdom that the boys offer to the world is in the same vein. “Surround yourself with good people,” Louis offers, and Jerome agrees. “You don’t know how long you’re here for, so you’ve got to share your experiences with those who mean the most to you,” he adds. “Do what you want to do and try to have fun doing it.”

sipping a fresh espresso while engrossed in the morning’s paper. Others perch on cushions in the large windowsill, chatting animatedly. The bench below is drenched in sunlight, and a heated challenge of Connect Four takes place over a breakfast of sourdough, bocconcini, cherry tomatoes and basil. Inside, settled on milk crates and the staircase, people rest their plates of bircher muesli, falafel or croissants on their knees. This scene is exactly what Jerome and Louis hoped Sourced Grocer might become. “Part of what we’re trying to build is integrating into the neighbourhood and becoming part of people’s daily lives,” Jerome explains. “We’re very fortunate that people have responded to it.” Locals have embraced Sourced Grocer and its owners with enthusiasm. “Everyone knows everyone and it’s always a friendly, first-name basis,” Jerome says. “We’ve been invited to people’s places for dinner and we have locals bringing in stuff from their gardens. And that’s what you hope for.” Reflecting on the challenges of starting a business from scratch, the boys are clear on what has gotten them through it. “Speaking for myself, I’m very fortunate to be side-by-side with Louis going through it,” Jerome says. “There are

MARK BEST For some, food and its culinary incarnations are a life source – recipes are a blank canvas on which to create innovative dreams, and inventive flavour combinations act as gastronomic stimuli for creative expression. From the interior aesthetics to the seasonal ingredients used in the kitchen, Mark Best’s acclaimed restaurant Marque in Sydney is a true celebration of the power of food. Mark is set to inspire Brisbane gourmands with insights from his forthcoming book, Marque: a culinary journey, when he travels to Brisbane to prepare a special degustation dinner at local restaurant esquire on November 10.
Mark Best’s culinary career arrived unannounced. Whilst some careers are meticulously planned, for Mark, growing up in rural South and Western Australia, cooking and utilising seasonal produce was a way of life rather than vocational inspiration. As a teen, Mark kickstarted his working life as an electrician but, completely unbeknownst to him, an exciting career in restaurants was quietly biding its time. After bidding goodbye to his trade, moving to Sydney and falling into cooking, Mark’s career as a chef proceeded to skyrocket – including stints at revered restaurants L’Arpège in Paris, alongside Alain Passard, and Raymond Blanc’s Le Manoir Aux Quat’Saisons in the UK. Fast-forward to today, and Mark and his wife Valerie now steer the helm of one of Australia’s most successful restaurants, Marque, with Mark crafting artistic and groundbreaking French-style elegant fare. Mark is very proud of the praise that he and his team have garnered over the years including, most recently, Restaurant of the Year in the Gourmet Traveller 2012 Restaurant Awards. “After 13 years, to still be able to achieve these accolades is very exciting indeed,” he enthuses. “It means that we’re on the right track – that we’re continuing to push forward as a business, and a restaurant, and we’re not resting on our laurels.” A constant source of motivation for

the intrepid chef, his family – in particular his wife, Valerie – is the most essential ingredient in his day-to-day career progression. When speaking of Valerie, Mark’s voice fills with pride. “Without having a happy family life, all of this pursuit would be completely meaningless,” he shares emphatically. “When we set up Marque, we just wanted to be a small, classic suburban restaurant, with Valerie front-of-house and me back-of-house. Simply, every time we’ve achieved a goal we’ve aspired to improve. I’m totally passionate about the business and what we create as a team. I love it.” A combination of his own gastronomic style and his stalwart belief in the importance of using quality seasonal produce drives his continually morphing menu. “Seasonality is essential,” Mark emphasises. “Seasonal produce is the backbone of any quality restaurant. Marque is not a didactic experience. We just strive to give our customers what they are paying for – beautiful seasonal produce that we have put our own spin on.” When prompted to reveal his vision when planning the menus at his Surry Hills restaurant, the astute chef explains that it’s a collaborative process. “We have a fantastic team behind us. My head chef Pasi Petanen has been with me seven years now,” he shares. “New ideas evolve through a series of
conversations. But we’ve been doing it a long time now, so it’s easier to see the direction we want to go in.” Evolving, exploratory and innovative, the Marque philosophy constantly morphs and strives to remain at the height of creativity in the culinary world. “Constantly evolving is part of our ethos; evolution is the reason why we continue to achieve these accolades, and to excite our diners,” Mark says, explaining that the quest for continual change should be employed not as a gimmick, but should rather revolve around keeping things fresh and engaging. “We continually strive to improve what we do in regards to the cuisine, the service, the decor of the restaurant,” he says. “Things are always changing and moving forward. We tend not to reuse ideas, or go back to dishes. You can’t just change for change’s sake – because then you become lost.” Considering his own culinary inspiration, Mark does not hesitate to name innovative chefs who think outside the square. “I’ve always admired people like Alain Passard and Pierre Gagnaire,” he says. “They are people who have continued to push the boundaries of their own restaurant models. Pierre Gagnaire is amazing and incredibly creative, particularly for his age – he’s in his sixties. Amazing.” Mark is quick to assert that he doesn’t

believe that a dramatic career change such as his – from an electrician in a goldmine south of Kalgoorlie, to being one of Australia’s leading chefs – is an automatic reason to be crowned “some sort of lifechanging guru”. “Life pushes you in a certain direction,” he muses. “I never aimed to get here. It just happened.” For young dreamers currently navigating the throes of forging a fledgling career, Mark acknowledges the importance of mentoring, but highlights the need for personal innovation. “It’s imperative for young chefs to have access to rolemodels to look up to,” he shares. “I’m very happy to mentor all of my young chefs during their careers. My advice is there for the taking. You can emulate your heroes, but it’s also important to put your own spin on things – to try to make it an expression of yourself and your personality.” The 46-year-old chef is forthcoming when imparting advice for young chefs attempting to carve out a niche in the culinary landscape. “Try not to walk before you can crawl,” he advises. “Develop your own style
of creativity, rather than a mish-mash of styles from other chefs all over the world.” When pinpointing the source of his inspiration in business, Mark is a firm believer in the power of risk-taking when it comes to maintaining a successful venture. “Taking risks is absolutely important. It’s quite easy to become – not quite complacent – but more conservative once you reach your desired position. You might become artistically conservative and try to maintain the status quo,” he cautions. “I think you have to be really careful of that and I certainly try to continue to push against my better judgement, to maintain that risk factor. I guess that’s where the good ideas come from.” Prompted for his words of wisdom, Mark is quick to answer, employing a football analogy. “Always kick towards the wind,” he imparts. “It’s harder to kick into the wind than kick with it. I think that you have to forge your own path and do something that scares you. You should remain uncomfortable if you’re going to produce anything of any worth.”

willem dafoe The iconic smirk. The unmistakable laugh. The quietly controlled, yet oddly compelling timbre of his voice. When it comes to characters that linger on the psyche long after you’ve left the cinema, Willem Dafoe is a master. His ability to disappear into a persona, and then slowly reveal intricate layers that shift your perspective entirely, is an art form of which most thespians can only dream. Willem’s latest work is in Australian director Daniel Nettheim’s The Hunter, where he plays a mercenary sent by a European biotech company to the Tasmanian wilderness on a dramatic hunt for the last Tasmanian Tiger.
What attracted you to The Hunter? The fact that we were going to shoot it in Tasmania was very important. If they’d told me that they were going to shoot it anywhere else, I wouldn’t have been interested. It was a good opportunity to play the kind of character that I like, where there’s a clear transformation in the story. One of the things I like about the film is that there are elements where you don’t know what’s going to happen. And I think as you watch my character in particular, you don’t think you’re smarter than he is and you don’t know why he’s doing what he’s doing. It allows you to participate and wonder where things are going and what things mean. I think it puts you into a place where your imagination is rolling and you then start to see things through his eyes. You’re right there with him and it becomes your story. As an actor, do you feel a pressure to connect with the audience? I think that’s really the director’s responsibility. I was a real collaborator on this film but, normally speaking, an actor should be free to be a little irresponsible. I concentrate on the scene and on how I’m doing things – the quality of reacting to what’s going on. I try not to think about where I have to go, or what the audience is thinking, or even whom I’m telling the story to. You feel the freest when you’re doing it for your reasons and, if they’re true and you make something beautiful, it will make other people interested in it.

What do you love about going to see a film? I go to a movie to be moved and to be inspired. Dramatically, or empathetically, when I watch movies I’m always most moved when I see people taking care of each other. That’s the thing that always moves me – human connection. And not in a sentimental way, or a tested and tough way. It’s when people come together and recognise their common bonds, and the fact that everybody has a hard time and we should help each other. It’s tapping into an expression of love. What inspires you? When I have a shift in perspective – when I’ve taken something for granted and then I have a shift and I really see it or I think of it differently. And it’s usually through other people or through stories that you see that. One of things I love doing is going to art galleries. It’s not because I’m so sophisticated in my taste of art, but to look at beautiful things that are sort of useless in function, but speak to you and take you out of a routine and make you consider a different set of circumstances. Do you feel an affinity with nature? I grew up in a town of 50,000 people and it was quite agricultural, but nearby there were a lot of forests, lakes and Indian reservations. I wasn’t really a country kid, but it was a big part of my growing up. When I was young I was always out in nature. Nature is very important to me now, even though my lifestyle is very urban.
You come from a family of eight kids. What was your childhood dream? I never had one. I really bumped along in life – there’s no inspirational story about how I saw something and then went towards it! What’s been the greatest challenge you’ve had to overcome? In this modern world there’s a lot of cynicism, envy and anger – particularly with the internet and popular culture. I still am not very thick-skinned. I don’t read reviews because there are now a lot of entertainment writers writing as if they were critics and I don’t respect their point of view, so why give myself aggravation? But, at the same time, I’m curious so sometimes I do seek people’s opinion. I’m just disappointed when I find something that’s beautiful but other people don’t think it’s beautiful, because they can’t see it. That may be my arrogance or my ignorance, but it kills me, and sometimes the best things aren’t rewarded – maybe that’s the way it’s supposed to be. So in a way you aren’t encouraged to do the best things; you’re encouraged to do something else. It’s really a Paris Hilton world and, because information goes so viral so quickly and there’s no one overseeing the internet, it’s crazy how misrepresented things are. Where do you find peace in life? In my little rituals, in my friends, and in simple pleasures. I also find peace in performing – in good situations when I lose myself and I feel free. That’s a gift that performing can occasionally give you,

I’m always seeking that and I think that it’s a particular kind of peace. Do you consider yourself to be a success? I don’t think about success. Even when I was young, I loved that Bob Dylan song that said: ‘There’s no success like failure and failure’s no success at all.’ I think success can corrupt, particularly in my profession. I do have an awareness of it, but I’m only successful in that sometimes I get to do things that I like to do and sometimes they’re rewarding. When I was a young actor, all I asked for was to be a working actor, but then you get spoiled and you want more. And there are challenges that make you feel like a schmuck and like a loser, so do I feel like a success? In fleeting moments. Do I feel like a loser? In fleeting moments. And the rest of the time, it’s something in between! Do you believe in a god and, if so, which one? I don’t even ask myself that, but I would say that I think about these things everyday in the same way that I think about death everyday. But I don’t have an answer. I’ve always been interested in religion
and how people institutionalise their beliefs and organise them. And it’s also quite striking that a lot of the religions are very similar in their beliefs, but their manifestations are very different culturally. I’m not knowledgable about them, and I don’t speak to a god, but those are the things that interest me. What are your words of wisdom? Well, everybody’s path is different, but I think you need to get in the company of people who inspire you and excite you. I’m a firm believer in apprenticeship. I think it’s important to find out what you like and just get near it and not worry about what your function is. As an actor, if you see a great theatre and they aren’t hiring, offer to go out and get coffee for them so you can just be around those people and see what they’re about. And you’ll either get over it and you’ll learn about it and realise that you have a romantic view about it, or you’ll make yourself indispensable or maybe one day they’ll say: ‘Hey, we need somebody to come and read this, why don’t you come on tour with us next time.’ I believe you make those kinds of stories yourself through connections, and not through just studying and entering the job market.

Preheat the oven to 160°C (Gas 3). Spread the hazelnuts out on a baking sheet and place in the oven for 8–10 minutes. After 4 minutes, shake the tray around so that the nuts colour evenly. Remove the tray from the oven and tip the nuts into a tea towel. Rub them vigorously between your hands to remove as much of the papery brown skin as you can. Weigh out 60 g nuts, cut them in halves and reserve for garnish. Chop the remaining nuts finely to the texture of coarse breadcrumbs, then sieve them to remove the dust. Put the parsley, mint, onion, tomatoes and hazelnut crumbs into a large bowl. Add the remaining ingredients and mix well with your hands. Taste and adjust the seasoning if necessary. Mound the tabbouleh on a serving platter and arrange the reserved hazelnut halves around the base. Drizzle with hazelnut oil and serve.

Finnish-born, Canadian-raised jazz guitarist Ari Lahdekorpi first picked up the guitar at age 12 when his parents bought him a cheap instrument from a Sears catalogue. With no music teachers in the area of Northern Manitoba where he lived, Ari set about analysing the mechanics of the guitar and teaching himself to manipulate its strings into music. He has since grown to become one of the most respected in his field, both as an accompanist and solo artist – opening for the likes of Bob Dylan, Foreigner, and Joe Cocker. Silence Overthrown showcases his knack for Euro-style jazz.
Impassioned vocals and haunting musicality are two of the signature qualities found in the works of London quartet, The Boxer Rebellion. Its third album The Cold Still (produced by Ethan Johns, whose credits include Kings of Leon) embodies these qualities with aplomb. A solid offering of the indie persuasion, The Cold Still swings from poetic melodies and delicate guitars on tracks such as ‘Caught by the Light’ and ‘Both Sides Are Even’, to the energetic and rock-infused sounds of ‘Step Out of the Car’.
With a distinctly girlish voice that evokes feelings of the likes of Feist, Julia Stone and Sia, it’s easy to think that you have the artist Yuna pegged. Her folkish, perky strains indicate that she perhaps emerged from the indiefolk scene of America or Australia; in fact, she is a Malaysian singersongwriter who sings in both English and Bahasa Malaysia. Equally as catchy but with a significantly more electronic edge, Towa’s work as a solo artist is worth a listen. Now based in the Nagano prefecture in Japan, Towa is a celebrated DJ and producer in Japan, and has recently released his own range of designer sunglasses in collaboration with hip Japanese eyewear label, Effector. Sunny is his seventh solo studio album.

Exhibiting her work at the Institute of Modern Art’s pop-up Surfers Paradise location on Cavill Avenue, Justene Williams is a contemporary artist whose art practices involve a dizzying range of video, photography, performance and installation techniques. Her earlier work

john waters He’s curated Andy Warhol’s porn collection, been arrested for conspiracy to commit indecent exposure, and has a back catalogue of films that have won over the twisted hearts of four generations. The filmmaker behind cult classics including Cry Baby, Hairspray, Pink Flamingo and Polyester, John Waters’ impact on cinema has been prolific. The 65-year-old will soon bring his unique sense of humour and tales of his misdeeds to the stage at Brisbane Powerhouse on October 26, as part of his ‘deviously funny’ one-man show, This Filthy World.
Besides being obsessed with being Captain Hook, my childhood dream ... was to be on the 1950s television show, the Howdy Doody Show. My parents took me to be on it – I don’t know how they got me on there. I was also obsessed by the movies the nuns would tell us we’d go to hell for if we saw them. I kept a scrapbook as a kid and pretended that I owned a dirty movie theatre and imagined the horror it would cause my community. The first film I saw was … Walt Disney’s Cinderella. Every time the stepmother and stepsisters came on, I was happy, because Disney villains were always the best. My first camera ... was given to me by my grandmother. It was a little Brownie movie camera that I made my first movie on – called Hag in a Black Leather Jacket. My grandmother would have been horrified … if she saw that film. But she was always encouraging me. She was a world traveller and she was divorced, which back then was quite shocking if you were a Catholic woman. I think in our family she kind of liked me because, when I was growing up, other people weren’t always on my side. Even though she was very conservative, I think she identified with me. It took me a long time to realise … how supportive my parents really were. Nobody ever said that my movies were good and my parents were humiliated by the reaction in the press. But they did respect that I was obsessed by doing it. My father … had a company that he

started, very much like I started my company – he sold fire protection equipment and I sold shock value. I borrowed money from him and, when I paid him back, he was so amazed to get it back. I think he respected that at least I had a work ethic, even though I was in a world that horrified their values completely. They, I think wisely, let me know that I didn’t have to leave or run. I’m not saying that there weren’t times when it was rough or that I didn’t put them through hell. But as we got older, they lived long enough that we could work out all those issues. I still have challenges … I can’t even get the money to make the movie that I want to make right now. But I think you have to learn that a ‘no’ is free and that you have to ask people. In show business, you set yourself up for a life of rejection and you’re always going to be paranoid that it’s not going to last. And it doesn’t last – that’s why I have so many careers because I always knew that, if I couldn’t depend on a film, I could write a book or do a photography show or a speaking tour. Human behaviour is … amazing. One of the next films I want to make is called Liar Mouth, which is about a woman who steals suitcases at airports. I actually know someone who did that and she also used to steal the flight attendants’ purses on the plane. It’s amazing what people do – anything you could ever imagine, somebody’s done it. No matter what you look like ... you’re cute when you’re young.
I’m inspired by … Bobby ‘Boris’ Pickett, who had one hit record his whole life – ‘The Monster Mash’ – which he sang over and over. Imagine what that was like. But in a way it must have been freedom because he didn’t have to think up anything new! My dreams … have come true. My greatest achievement is that my career has lasted this long and has been totally understood by so many people. I find peace … through friends. I’ve had many friends for 40 years. If people have friends for that long, I think that’s a very good sign about their character. The reason my movies have appealed to four generations is ... because it’s joyous humour. I’m celebrating lifestyles that most people are against. I’m never judging people, looking down on them or laughing at them, which is what reality TV does. I never want to … retire. I want to keep doing what I’m doing. My dream now is to try to grow old gracefully and I think I already have. I’m 65 and a San Francisco newspaper ran a headline that said ‘John Waters is officially a dirty old man’, which really made me laugh. If the audience could leave This Filthy World thinking one thing … it would be that they felt better about themselves. And that some of the things they might have tried to hide about themselves would be a lot less possible to keep a secret. If you can laugh at the things about yourself that you feel uptight about, you can win. It’s a great feeling to be un-blackmailable.

For many Pride and Prejudice enthusiasts, Jennifer Ehle’s plucky portrayal of Elizabeth Bennet in the in the 1995 BBC mini-series has been cemented in television history as both a classic and iconic depiction. Before donning Miss Bennet’s bonnet, Jennifer made her stage debut as a toddler in a 1973 production of A Streetcar Named Desire, and has since been awarded numerous accolades for her stage roles, including a Tony Award and a Theatre World Award. In Contagion, Jennifer plays Dr Ally Hextall, a professor intent on finding a vaccine for an infectious disease before it engulfs the world in widespread chaos. The film features an all-star cast, including Matt Damon, Gwyneth Paltrow, Jude Law and Marion Cotillard.
As a teenager, Bryan Cranston grappled with uncertainty over his future career prospects – torn between life as a policeman or whether to try his hand at acting. After scoring a few low-key roles in regional theatre and advertisements, Bryan shut his university notebooks and bid his police-science studies goodbye. He has since played several key characters in long-running television shows, most notably Malcolm in the Middle and Breaking Bad – for which he has won three Emmy awards for lead actor in a drama series. Huddled within the Riau archipelago of Indonesia sits the jungle-laden island of Bintan. Just an hour’s catamaran ride from the frenetic buzz of Singapore, Bintan Island provides a weekend paradise for those looking to escape the city for some sun-kissed respite. The island’s lush rainforests are home to a wealth of colourful birds, cavalier monkeys and various other wildlife, while crystal waters caress the soft white sands of its beaches.

sear The pink and orange hue of dusk is smudged across the sky. As the perfectly warmed water of the South China Sea laps gently around my ankles, my toes burrow into the sand, wiggling in delight. Beneath the crystal-clear water, a pattern of undulating lines runs through the sand. It’s almost as if Mother Nature herself has absentmindedly run her fingertips through it while lost in a daydream. A curious fish boldly exploring the shallow pool around my feet darts capriciously about my toes, his black-andwhite striped body twisting about as he ponders the foreign object that stands before him. With a flash he then retreats out to sea, no doubt to recount his daring antics to fellow aquatic creatures who are perhaps less adventurous than he. As the waves roll out, they take with them numerous tiny conical shells that tumble through the water and across the white bed of sand with the alacrity of a child rolling gleefully down a grassy hill. Soon the shells once again embed themselves in the sand and I lean down and pluck one from its resting place for a closer inspection. As I peer into the entrance of its spiral, I glimpse a tiny claw retreating from sight. I feel as though I have stumbled upon someone in private conversation, and am almost compelled to apologise to the tiny creature for having trespassed upon its tranquillity. Night begins to cloak my surroundings and I venture further down the beach,
intrigued by the flicker of candlelight on a stretch of sand beneath a line of palm trees. A small frame constructed from lithe bamboo poles composes a roofless shelter, with diaphanous white curtains at its sides dancing a sultry routine in the clement evening breeze. In the centre sits a generously cushioned lounge behind a dark mahogany table laced with a lavish spread of local gourmet delights. The fragrant aroma of spice floating on the breeze beckons me closer and, with nobody in sight, I saunter nearer to satiate my curiosity. Upon the table is an Indonesian meal known as Rijsttafel – meaning ‘rice table’ – which consists of various side dishes such as sambal, egg rolls, satay and pickled vegetables served with portions of rice. Known as The Dinner of Legend, this gourmet ritual occurs each night for guests of the nearby resort and is accompanied by a whimsical reading of an Indonesian folk tale known as The Legend of the Violet Rainbow. My mouth waters at the sight of the delectable spread, but as this meal has clearly been prepared for someone else, I make a mental note for tomorrow evening’s dinner plan and wander away into the night. I wake up early the next morning, just as the sun is making its way across the horizon. The air is humid but seasoned by a cool breeze. Dawn has only just broken and when I pad down to the beach I find that I have it all to myself. Seizing the solitude, I begin a morning jog along the
water’s edge, my lungs drawing in the fresh seaside air and my limbs warmed by the gentle sunlight. I surge into a run, the cadence of my step splashing rhythmically through the water – still perfectly temperate despite the early hour. The rest of the morning is spent lounging about under the thatched pandanus umbrellas, interspersed by refreshing dips into the inviting azure water. While there has been talk of jellyfish frequenting the bay, the sealife I’ve encountered has been curious but guileless. As if on cue, my stomach begins to rumble just in time for the cooking class I’ve enrolled in. Somewhat curiously, despite being in Indonesia, today we are delving into the realm of Thai cooking, the keys to which, our teacher Ridwan tells us with a smile, are coriander, chilli, coconut, and palm sugar. On the menu today are Pad Thai, Thai Fish Cakes, and a saporous dessert composed of water chestnuts, tapioca flower and coconut milk. The class is more demonstrative than participatory but culminates in a three-course meal worthy of a high-end establishment. I partake heartily in the delectable spread before retreating to the beach for an afternoon’s nap nestled in the verdant paradise of Bintan. The cheerful chirp of birds playing in the trees above me creates a jovial ambience, while the soothing rhythm of crashing waves soothes my spirit as I slowly drift to sleep.
