Living in the land of pasta, pizza, and pastries, it can be difficult to find light dinner options. From heavy lasagnas to the classic Florentine steak you will leave the table with a stuffed belly. This season we wanted to bring you a lighter option for dinner: gluten free pasta. Pasta making can seem daunting at first. However, once you get this recipe down, you’ll be featuring it at every dinner party!

Ingredients: -1500g Gluten-Free Rice Flour, (extra for dusting) -50g potato starch -1 tablespoon corn flour -2 tablespoons xanthan gum -1/4 teaspoon fine sea salt -3 large free-range eggs -1 tablespoon extra-virgin olive oil -recommended: food scale, pasta maker

Mixing a. Begin by placing all of the ingredients in a food processor to mix into a rough dough. If you don’t have a food processor, mix ingredients together thoroughly in a large bowl. b. Move the dough from the bowl onto a flour-dusted surface and knead for about 5 minutes until it is smooth.

Rolling out the dough a. With Pasta Maker: Begin by cutting the dough into four even pieces and rolling out the dough on the machine’s widest setting. Add rice flour as needed and roll the dough through each setting twice until it is about 2 mm thick. As dough reaches 2mm set aside on a floured surface and cover with a damp towel. b. Without Pasta Maker: Form the dough into a cylinder, wrap in plastic, and let it rest for an hour or more.Next, divide the dough into 6 equal pieces. While working with one piece, keep the remaining 5 wrapped. Now, with the working piece of dough, dust both sides and roll into a 6-inch square. Re-dust the dough and roll it to a 6 by 12 inch rectangle. Continue rolling until the dough is 6 by 20 inches. ***Always roll from the center of the dough in one direction and frequently lift it from the workspace to apply more flour.
Shaping a. Either roll the pasta through the pasta machine on your favorite pasta shape setting, or, cut the pasta into the shape of your choosing. Once the pasta has been cut, move it to a floured baking sheet.
Cooking a. Place in a pan of boiling salted water for about 3 minutes and serve to your liking! Tricks of the Trade: Don’t let the pasta dry out. When you aren’t using it, always keep it wrapped in plastic or covered by a damp towel. Make sure you are always putting the dough on floured surfaces to prevent sticking. Don’t be afraid to put all your muscle into kneading. Finally, have fun and enjoy! BUON APPETITO!

Italy is a country known worldwide for its culinary genius. The foreign imitations of the most iconic Italian foods such as pasta, pizza, and gelato, don’t quite do the authentic products justice. Coffee, wine, and other Italian delicacies, incur the same problem. To start off the day in America, you might have coffee, pancakes, muffins, toast, eggs, or bacon either at home or in a restaurant. However, in Italy, breakfast is not a huge meal. Breakfast here usually includes espresso made with a stove top percolator, milk, dunking biscuits, or fresh fruit. If you don’t want to make breakfast, a lot of people go to their neighborhood bar. Here people order a simple espresso shot or a cappuccino and a croissant, plain or filled with cream, jelly, or chocolate. A savory sandwich made of focaccia, cheese, and prosciutto is also a favorite amongst breakfast goers. You have to keep in mind that coffees, lattes, and cappuccinos are very different from what you might be accustomed to. If you order a latte all you will get is steamed milk. In order to get what americans have come to call a
latte one will need to order a caffelatte which is milk and espresso. If you order a cappuccino after 10:00 am, you will get funny looks. Italians believe that consuming milk after this hour is not good for digestion. While ordering a regular brewed coffee will get you a tiny cup with a watered down espresso shot. Instead, embrace the Italian way of life and order a delicious espresso shot with ginseng, chocolate, or sugar. You will surely fall in love with this quick, flavourful drink, that will only cost you one euro. Like breakfast, an Italian lunch might become a completely new experience for you. In Italy, lunch is a two-course meal, primo piatto and secondo piatto. The primo piatto is usually a pasta dish or salad, while the secondo piatto is a protein entrée. However, on weekdays if you’re at work and there’s not much time to sit down and have a meal with wine before returning to the office, people may opt for a panino, slice of pizza, or a salad and a piece of fruit to get through the rest of the work day until aperitivo.In America, an aperitivo might be compared to happy hour. It’s early in the evening, you’ve

finished work, and are ready to let off some steam. This is when you call up some friends and meet at a place close to home to have a drink along with some light, appetizer-esque foods such as complimentary assortments of nuts, olives, cheeses or salami, and talk about your day. This isn’t so much food that it will ruin your appetite for dinner, of course, but something that will tide you over. A drink that the Italians most often drink during this time, due to their beliefs that it will engage your appetite, is the Aperol Spritz. This drink is composed of two parts: aperol, an orange citrus flavored liquor, three parts prosecco, and one part soda water. From this time spent mingling with friends, you then head to dinner. In Italy, life slows down. From walking down the street, to going out to dinner, Italians experience every moment. This means that dining in Florence is all about enjoying a leisurely meal and taking your time to enjoy all the flavors of the artfully prepared meal. Dinner can last for hours and Italians eat significantly later than Americans do. Maybe you skipped lunch and want to grab an early dinner at 5:00pm? Forget it. Most of
the time, restaurants will close for part of the afternoon before they open for aperitivo around 7:00pm. A more traditional restaurant in Italy begins serving their dinner menu after 7:30pm and does not become busy until 8:30pm or later. At dinner, similar to lunch, Italians rarely eat just one course. The traditional Italian courses start with appetizers (antipasti), then progress to pasta/rice dishes and soups (primi). Next, meat/fish (secondi) is served with vegetable side dishes (contorni) and, desserts (dolce) finish the meal. These courses are served with lots of time in between in order for customers to enjoy the different flavors of each dish. Courses are often served with different wines to enhance each specific course. Italians drink lots of wine, but in moderation of course! A glass for lunch, a glass of wine or a cocktail with an aperitivo, and more for dinner. Italians never overdo their alcohol consumption in a single sitting. Every dish has a specific wine that is paired with the meal and brings out its best flavors. Ask your waiter to help you order a glass that will compliment your meal perfectly. At the end of your meal don't expect a waiter

to bring you your bill. Restaurant staff will let you sit and chat until the restaurant closes, unless you ask for the check. After receiving the bill you might be alarmed at the extra charge on your receipt. You may also feel like you have to tip, but that is where the coperto comes into play. Historically, a coperto, or a fee per head, to cover the cost of bread and service, is charged. Nowadays, restaurants may or may not charge a coperto, but if you feel like the service is deserving, you can tip, but you aren’t obligated to like you are
in the States. It is entirely up to you and in no way expected: the waitstaff are all paid full wages and don’t depend on tips. After the evening meal, people often go for a digestive stroll. This is always a good excuse occasion to have a gelato while you walk, or indulge a limoncello or amaro to aid in digestion. Italian food is considered to be some of the finest in the world for a reason. While it might not be what you expect, it is wonderful in a way that is purely Italian. A presto amici miei!

THE THINKER: GARDEN CAFE When meandering along the streets of Florence, you are likely to pass a café that makes claims of a “secret garden” inside. If you are one who enjoys spending countless hours enveloped in a good read, or jotting down thoughts and stories from the week, walk right on inside. That “secret garden” offers a complete escape from the hustle and bustle of crowded cobblestone streets—a place to let your thoughts run free and your mind rest.
THE STUDENT: ITIT Trip Advisor’s #2 coffee shop, centrally located, plenty of study space, and one of the most Americanized in Florence, it’s not a surprise that this happens to be a study abroad student’s mecca. The iced cappuccinos are about as close to the mark as iced coffee that you will find in this traditional city. Major plus: the muffins are simply delightful!
THE TOURIST: NEWS CAFE This artisanal café is a popular tourist café for a couple of reasons: firstly, café artist/barista/owner Marco will top your cappuccino with beautiful sketches of anything from Firenze’s infamous Duomo to a kitty cat. Secondly, the prices are some of the best you will find, with a cappuccino ringing in at a whopping 1.30 euro!
THE ITALIAN: CAFE GILLI Established in 1733 by a Swiss family, Café Gilli is the oldest café in all of Firenze. Known to locals as a “sweet breads boutique,” it attracted many of Florence’s elite. It was part of the ‘salon’ culture of the time, and amongst the art, sculptures and musical instruments in this coffee house, great intellectual discussions took place. Both the coffee and the chocolate are very impressive, and today you’ll find it packed to the brim with both locals and tourists who may have heard the whispers of this Florentine legend.

There is something magical about stepping foot into Italy for the first time. The air, an unfamiliar language, even the sound of transportation is different. My first hour in Florence is now one of my favorite memories that was accompanied by a feeling so distinct. A feeling of uncertainty, but heavy with a promise that something life-changing was about to occur. After four months of being immersed in the Italian culture, I’ve come to know this: there are things you’ll learn by visiting Florence, and then there are lessons you’ll learn by living in Florence. The Italian culture is something special. Rich in history, art, literature, food, and so much more, there are many admirable aspects of living that we can adopt for a happier and more fulfilling life. After all, our travels transform us into walking stories, a compilation of places we’ve seen and people we’ve met. What better way to carry these experiences with us than to adopt pieces of a culture to make it our own? Here are a few simple ways we can integrate Italian culture into our everyday lives:

WALK Growing up in a small, rural town in America, walking was a foreign method of getting from one destination to another. In Florence, however, walking is the norm and is typically the quickest way to navigate the labyrinth of streets in the city. Walking, as simple as it seems, is something that can easily be integrated into our everyday lives. When we ditch the car and choose to walk when we can, we will not only be helping the environment but ourselves. Plus, I’m convinced a breath of fresh air can get our minds going in the right direction.
SLOW DOWN One thing I’ve noticed about the Italians is how they take their time. I don’t think this is something I ever really got used to, but it’s something I admire about them. Their pace of walking is slower, their dinners are longer and overall they don’t seem to be in a hurry too often. Slowing down can really help us to live in the moment more. It’ll give us time to notice details we might usually overlook, and I’m sure we’ll appreciate more when we give ourselves extra breathing room. Whether we choose to wake up a little earlier to make ourselves breakfast, or not to procrastinate, we can spend less time worrying and more time living. It’s the small things that make a big difference.
TURN IT OFF If you look around an authentic Italian restaurant, you’ll notice the lack of LED screens glowing on the faces of those at the tables. Wi-Fi is a luxury in Italy. Not every restaurant and store is guaranteed to have free access, forcing you to put your phone away. It’s the best way to get to know the person across from you and just goes to show we don’t need to be connected twenty-four- seven. Harboring meaningful conversation begins with something as simple as this and I promise you it is going to be more memorable than anything you see on social media!

LESS IS MORE Italians have a natural, poised nature about them. I notice this especially in their appearance. Their hair and makeup isn’t overdone and their style is composed of beautiful classics. Simplifying can be as easy as working with what we have instead of buying and consuming more. Coming from such a consumerist nation, this aspect of Italian culture may be harder to adopt. It requires a change of mindset which isn’t instant. It takes time and a clear conscious to make decisions that will ultimately transform your way of living.
Adopting a culture doesn’t have to be difficult. In fact, it’s best that we simply embrace what we love most about it and leave behind what we don’t. It’s all about being observant and open to a new style of living. Visiting is merely a peek in the window, an outside look in, while living requires opening the door and stepping inside. Living in Florence isn’t about the amount of time you spend there, but about what you do with your time while you’re there. Culture is moving, it’s transformational, but completely optional to embrace. I encourage you to embrace the unfamiliar because it might just be the most fulfilling way to live.

When the typical American tourist thinks of Italy, what usually comes to mind first is the idea of beauty. American’s drool over the thought of riding a gondola through Venice, or maybe touring the Vatican in Rome, climbing Brunelleschi’s Dome in Florence, or visiting the famous cathedral in Milan. Italy is thought of as this far-off land full of old beauty and classic style. This goes for not only Italy’s architecture, but also Italy’s landscapes and classic Italian cuisine. Italy is full of different natural sight. From mountains to tropical sea sides, you can enjoy the different foods in the birthplace of pizza or enjoy the tradition of aperitivo. Overall, when Italy jumps into the minds of Americans, beauty is one of the first words that comes to mind. Etro, an Italian based luxury brand, was first established in nineteen sixty-eight by Gerolamo “Gimmo” Etro. The company, like its logo, suggests it is rooted in beauty and creativity, striving for innovation and quality. Etro started as a textile company for both pret-a-porter and haute couture lines located in Milan. The company steadily grew to the point where the headquarters were completely renovated for the expanding design team. It wasn’t until nineteen eighty

The print came about after Gerolamo’s son, Kean Etro, returned from a trip to India and was inspired by the colors and culture of the area. Founded in Milan, Italy, it was only a matter of time before Etro expanded to leather goods. Their best seller at this time included trunks and bags that featured the paisley print. In nineteen eighty-five, the

Life is meant to be lived to its fullest, and for many, traveling the world is a crucial contributor in living this way. Unfortunately, especially in the United States, the ease of traveling is dampered by none other than cost and convenience. Try and book a flight in the US for two states over, and it’s 400 US dollars. Or better yet, take an Amtrak train only servicing limited destinations, and doesn’t come close to winning in the reliability category of making it anywhere on time. Taking that into account, living in Europe allows for much cheaper and reliable travel, not only within countries or provinces, but between them. If you are looking to move to Florence, the travel world will be at your fingertips. With it’s prime location in central Italy, not only is traveling the entirety of Italy easy, but getting around elsewhere in Europe is just as simple, and it doesn't break the bank. Living in Florence, I have taken weekend trips to Bergamo, Genoa, and Rome. I also spent a day in Venice. All of these cities marked off my lists, are credited to the train system in Italy. Contrary to the States, Italy, and most of Europe, have very advanced, and efficient train systems. Everything you need to know about the trains is here for all eager travelers.

Trenitalia is Italy’s predominant train system. Italo is an additional Italian train service, which is worth comparing, but Trenitalia seems to be the favorite of most. The train systems offer customers various options of purchasing. If you’re a planner and are adamant on having things in order, head to the train systems website, Trenitalia.com or italotreno.com. Here you can plan your trip, look at departure and arrival times, and purchase tickets. With that being said, if you are the spontaneous traveler wanting to travel on a whim, grab your stuff and head to the train station. Here you will find various kiosks that allow you to purchase tickets on the spot. The kiosks are essentially the same as online, and have different language options, in case you’re not quiet fluent in Italian yet.Trenitalia offers deals such as buy two tickets for the price of one on Saturdays, on non-regional trains, and discounts for children. Offers are also available for travelers returning on the same day. These are always good options for weekend or day trips, or for the budget traveler. Standard class, includes Free WIFI, nice seats, and a travel screen with travel information. Premium class includes leather seats that recline, free drinks and snacks, morning newspapers, power sockets, free WIFI, bar service in at least one coach, and a monitor for travel information. Business Salottino caters to the traveler who values their privacy, and allow for this with more private space, all mentioned drink amenities and come

Some trains offer 1st Class and 2nd Class, while others offer more extensive classes. Traveling economy is essentially the same as Standard class, including all ammenities, however offer better deals than Standard if purchasing in advance.. Business class is essentially the same, and Executive allows for maximum luxury and space, and has a meeting room available upon request for those business travelers. Most trains assign a coach and a seat number, however some may be first come first serve, depending on the train. The train systems include three main trains. Regional trains, Frecciargento, and Frecciarossa. Regional trains are generally cheaper, but take longer and make more stops. Frecciargento and Frecciarossa trains are fast and make less stops, and offer more class options than regional trains. From experience, the trains are wonderful and convenient options. With that being said, it’s a slight learning curve if you aren’t used to taking trains in the US. From experience, I’ve compiled a list of tips to help allow for the most convenient and seamless train travel ever.

This may sound trivial and self explanatory, but Europe doesn’t follow the same date format as the US. Instead of Month/Day/Year, Europe formats Day/Month/Year. This can easily confuse people and you may not realize until after the fact that you’ve bought a ticket for a different day, or worse, a different month. Be extremely careful, because tickets are almost always non-refundable, so you will have to purchase all new tickets if you can’t use the one’s you've purchased.
When booking a trip that includes connections to another train, make sure you look to see the amount of time in between the arrival of your train and the departure of the connecting train. Especially if you aren’t familiar with the area or station, you may want to book a train with longer time in between connections. This will ensure that you make it to the right platform and train with enough time.

Many trains make announcements regarding each stop, but from experience, not all trains tell you what stop you are arriving at. If your destination is the last stop on the train, then you will know when you arrive; however if you need to get off at a station that stops along the route to the final destination, it might be a good idea to set an alarm for a little before your destination time.
Although I’ve never had a bad experience with this, don't fall asleep with your purse sitting on the desk in front of you. Hold whatever it is that is important to you. If you are going to daze off, it’s in your best interest. With trains being the most prominent and convenient way of travel around Italy, you can also take trains outside the country. Florence offers night train service to Vienna, Austria for a decent price and has sleeping accommodations on board for additional euro.

Furthering trains, if you are looking to travel outside of Italy, flying is always an easy and cheap option in Europe. For weekend trips especially, where a checked bag isn’t necessary, check out airlines such as RyanAir, EasyJet, and Vueling. These airlines offer very decently priced trips. Add-ons such as checked baggage are where these airlines will trap your wallet, precisely why I recommend them for short trips where only a carry on is needed. The spontaneous traveler with no agenda can search the web for cheap places to visit. RyanAir is a good airline for this. Check out the Fare Finder tab under plan on RyanAir. Choose where you want to travel from, choose a budget, and find a list of places to travel to
within your price range. With the information and tips from my experiences, I hope that readers are sold on the ease and convenience of travel from Florence, Italy, to wherever your heart desires to travel. In the US you can drive everywhere, which is a wonderful experience, but Europe has innumerable places to travel that are cheap, easy, and comfortable. Europe offers travel worth being utilized by everyone who graces its presence. Florence, Italy, with it’s wonderful systems, and central location is a perfect place to reside, travel from, and return to. Not only is Florence a place that allows you travel from with convenience, it’s a place that you will always be excited to travel back too.
