Sarah & Luke understand ice cream sandwiches will not solve the world’s problems. Rather, they represent a way of choosing in life. Meet Sarah & Luke, Mom and Dad of Gramwich. We first encountered them on a sweltering summers day, toting their hand crafted Gramwich cart through Prospect Park. The team makes graham cracker ice cream sandwiches with pure and simple ingredients: fresh milk, cream, sugar, eggs and natural flavors (mint chip being our personal favorite). Gramwich fulfills more than an afternoon craving. Trained as Architects, the young couple is driven by creativity. Frustrated by the politics of their industry, they sought an outlet to reaffirm their will to create. How? By handcrafting and homemaking. Sarah explains, “Human beings have an innate desire to create, to work with our own two hands, and to see the product of that effort.” What separates Gramwich is its foundation in fostering choice. By producing every crumb, crust and wrapper, Sarah & Luke are choosing creativity over politics. The irregularities in each batch are cherished, as a reminder of the beauty of human error. They began the business with the assertion that “we spend a large part of our lives doing things we think we are supposed to do. We go to college, have professional careers, get married, buy houses, and have kids.” Although the couple hopes to pursue these things themselves, they aspire to discourage it as a requirement. “When we do something out of obligation, we deprive ourselves of choice. We do because we must, not because we want. Choice is one of our most basic human rights. It asserts our willingness to live over the universe’s letting.” “Everyone has an opportunity to create a ‘Gramwich’ in their lives. It might not make them rich or successful or even popularly recognized. But it will assert their willingness to take part in the beautiful experience we’ve all been gifted, the experience we call life”.
