Comrades In Arms During Ice Season The selling season is winding down, and hopefully you’ve enjoyed a successful summer. I’ve been in touch with several smaller ice companies who are rather new to the industry and they expressed awe and amazement, although they said they expected it to be busy. “We are selling as much as we can make,” is the refrain. The adrenalin that accompanies the sales is something the industry enjoys, yet is exhausted by it at the same time. The camaraderie keeps the hours and work tolerable, and the shared pride in manufacturing and packaging a pure, clear product provides the motivation to continue. No matter where I go, I’m always on the lookout for the local ‘ice guys and gals’ as I’m sure you are. There is something special about this industry which can’t be denied, avoided or extinguished. I’ve enjoyed growing up among you, and watching the next generation come in and grow up among us, too. My boys and I visited a third world country over the summer, and the first thing I set out to find were the ice guys. We found them, and their product was clean. It was like finding that port in the storm in some ways. With no air conditioning for the eight days we were in Roatan, pure ice was another part of the paradise. There is much in this issue having to do with sanitation and safety… the most imperative aspects of our industry.

Fecal bacteria found in drinks at UK branches of McDonald’s, Burger King and KFC Traces of fecal bacteria have been found in drinks at three of the world's biggest fast-food chains in the United Kingdom. An investigation has found that McDonald's, Burger King and KFC served ice in drinks contaminated by fecal matter. Investigators from the BBC consumer show "Watchdog" tested 10 samples at each of the chains and tested for traces of "fecal coliform," which carry a number of diseases. Coliforms were found in three samples of McDonald's drinks, six of Burger King's and in seven samples taken at KFC sites. Four of the samples taken at Burger King and five at KFC were described as having "significant" levels. In a response, reported widely by media, a KFC spokesman said: "We are shocked and extremely disappointed by these results." "We have strict procedures for the management and handling of ice, including daily and weekly inspections and cleaning of the ice machine and storage holds, as well as the routine testing of ice quality across our business." Burger King's response has also been widely circulated by media outlets: "Cleanliness and hygiene are a top priority for the Burger King brand." "The strict procedures we have in place are designed to ensure all Guests have a positive experience each time they visit our restaurants," the Burger chain added.
10 REFRIGERATION Magazine │August 2017
Neither KFC or Burger King were immediately available for a response when contacted by CNBC. A McDonald's spokesman told CNBC: "We have robust procedures in place with regard to the production, storage and handling of ice in our U.K. restaurants." "Nothing is more important than the safety of our customers and people and we will continue to review our procedures and training, working closely with our restaurant teams to ensure those procedures are adhered to at all times," the spokesperson said. McDonald's also cited comments from Tom Humphrey, professor of bacteriology and food safety: "It is pleasing that Escherichia coli (E. coli), the bacterium that is the most accurate and reliable indicator of fecal contamination, was not found in any ice samples from McDonald's restaurants. "Low levels of two other indicator bacteria, coliforms and enterococci, were found in some ice samples. These can be used as an assessment of water hygiene but, as they are widely distributed in the natural environment, they are not reliable indicators of potential health risks."

IPIA
RESPONSE IPIA responds to the BBC News Investigation on Contaminated Ice BBC News released a scathing report today on the quality of ice from three of the United Kingdom’s biggest coffee chains. The BBC News report found that ice from the chains found considerable fecal contamination – in fact 13 of the 30 samples (43%) found the contamination in the ice. Unfortunately, this study isn’t all that surprising to the IPIA. Indeed, a 2013 study and a 2015 study, both published in the Journal for Food Protection found that packaged ice sold in many of the retail locations sampled had high potentially dangerous Coliform bacteria counts and even E. coli and salmonella. These two studies, combined with the recent BBC News report confirm this is, in fact, a worldwide problem. All ice is not subject to contamination. And the IPIA recommends that consumers purchase packaged ice stamped with the Association’s ‘Ice is Food’ logo, which assures that the ice producer is inspected to rigorous quality and sanitation standards. Packaged ice products sold without the ‘Ice is Food’ logo are most likely not subject to these consumer protections.

COLD STAR ICE PLANT TOUR, LUNCH & ICE BAG THROWING CONTEST Wednesday, November 15th, 2017 – 12:00 pm – 4:00 pm In 1951 Floyd Ades purchased the Chino Ice Route from his cousin, the birth of Chino Ice Service occurred. In that era ice companies were shrinking. The refrigerator was becoming a household standard and the iceman a dying breed. However Floyd new the ice business well and he forecasted a change in the use of ice. Floyd had a vision of retail ice from vending machines and kept his regular ice delivery service to homes and commercial businesses into the early 60’s. In 1964 Floyd purchased his first S&S Vending machine and grew his ice company over the years. In 1973 he retired and sold his business to his eldest son Jerry. Jerry grew the ice vending company from 6 vending machines to over 25, but in 1976 the gas crisis occurred. Recreational use of ice slowed dramatically and margins eroded. Jerry envisioned higher margins by becoming a manufacturer and by 1989 Jerry grew Chino Ice Service to an ice manufacturing company of 80 tons/day. In 1990 Jerry’s son Dann graduated from college and entered the business full time. Prior to that Dann had worked in the business in every capacity, from packaging, maintenance,
distribution, and now management. Dann and Jerry had a vision for growth, so in 1998 they broke ground to construct a brand new ice plant designed to be expandable and yet compact. Starting with 100 tons/day they grew through acquisition and competitive growth. By 2009 Chino Ice Service produced 270 tons/day and transitioned to a more universal name, Cold Star Ice. By 2011 Cold Star ice had 4 facilities covering over 100 square miles in southern California. Jerry passed in 2009, however, Dann and his automation vision for the future became reality in 2015 when 2 robotic palletizers with full automation were installed. Then in 2017, the addition of another 100 tons making the facility 370 tons/day with space for a future 50 tons. We’ve been ice cool for over 66 years! Cold Star Ice prides itself on the same traditions of relationships, great service, and strong family values that Floyd Ades started back in 1951. The tradition continues……..

ON THE ROAD Ice is of major economic importance. In rural communities of developing countries, there is frequently a shortage of ice to support business activities. The result is loss of revenue, jobs, and substantial food spoilage. Three important community needs for electricity are: • Lights • Communications and Entertainment • Refrigeration
ISAAC SOLAR ICE MAKER The ISAAC Solar Icemaker operates in two modes. During the day, solar energy is used to generate liquid ammonia refrigerant. During the night, the generator is cooled by a thermosyphon and ice is formed in the evaporator compartment as ammonia is reabsorbed to the generator. The ISAAC Solar Icemaker is an Intermittent Solar Ammonia-water Absorption Cycle. The ISAAC uses a parabolic trough solar collector and a compact and efficient design to produce ice with no fuel or electric input, and with no moving parts. The daily ice production of the ISAAC is about 5 kg per square meter of collector, per sunny day. The construction of the ISAAC Solar Icemaker involves only welding, piping and sheet metal work, and there are no expensive materials. It is estimated that, when produced in-country where wages are low and transportation costs can be minimized, the 11 square meter ISAAC can be produced for less than $7,000. When produced in-country, the creation of urban employment is an additional advantage of ISAAC technology.
KEY FEATURES
The characteristics of the ISAAC which make it particularly well suited to provide refrigeration to unelectrified rural communities are: • It is solar thermally powered, avoiding expensive diesel fuel or photovoltaics 20 REFRIGERATION Magazine │August 2017
• Low cost construction requires only welding, piping and sheet metal work • Very low maintenance • T he quantity of ice is sufficient to support small scale businesses while maintaining sustainability in fragile environments, or provide low cost household refrigeration The ISAAC design was developed by Energy Concepts Company. Over forty systems have been built and twenty installed in seven countries. The ISAAC is on display in Annapolis, Maryland and at Sandia National Lab, Albuquerque, New Mexico. ISAAC is now being distributed and commercialized by Solar Ice Co.
PROVIDING JOBS TO REMOTE COMMUNITIES – BY PROVIDING ICE
The ISAAC Solar Icemaker makes enough ice at low cost to support many small scale businesses in rural unelectrified areas. Enterprises using ISAAC will be environmentally sustainable because no fuel is required. They will be economically sustainable because the cost of producing the ice by the ISAAC is sufficiently less than the value of the ice that it can easily be recovered by a microenterprise.
Lights, communication and entertainment require modest amounts of electricity and are affordable even at the high cost of electricity from emergency generators, diesel minigrids or photovoltaics. When refrigeration is needed also, the amount of electricity required from the power system increases drastically. Thus it is usually omitted to keep costs down. An ISAAC Solar Icemaker supplies refrigeration without the intermediary step of electricity and at a much lower cost. Thus ISAAC Solar Icemakers, in combination with mini-grids and/or photovoltaics, are a good method of supplying remote community needs. For example, ISAAC can provide domestic refrigeration. An ISAAC produces six blocks of ice each day, weighing ten kilograms each. If an icebox requires five kilograms of ice per day to stay cool, then one ISAAC will be able to supply domestic refrigeration to twelve households. The cost of a standard electric refrigerator, plus the constant requirement of expensive electricity, would be much higher.

McDonald's Employee Fired After Photo of Moldy Ice Cream Machine Goes Viral A McDonald’s employee says he was fired after posting a disturbing picture of the ice cream machine at the Louisiana location where he worked. The photo he tweeted quickly went viral, prompting an internet backlash for the fast food giant. The former employee, who preferred to be referred to only as "Nick," posted a picture of the ice cream machine’s drip tray, which is visibly coated in grime and sticky material. According to HuffPo, Nick says store managers are supposed to clean it but that he never saw them do when he worked there. He was employed from March until July of this year.
“This came out of McDonald’s ice cream machine in case y’all were wondering…” he captioned his tweet of the photo. Though it hasn’t quite hit major mainstream outlets, the image has been covered by Teen Vogue and Cosmopolitan and has been retweeted over 13,000 times and received over 15,000 likes. FoodBeast observed that the filthy ooze doesn’t end up in the ice cream, “but you never want to see photos like that coming out of a restaurant.” The outlet also reported that Nick’s tweets appeared to have inspired at least two other McDonald’s employees to tweet images of disgusting conditions.
