THE TRADITION OF THE MARCHE REGION Baking to a fine art since 1976 True to the Mediterranean Diet. In the heart of central Italy, facing the Adriatic Sea and nestled in the rolling green hills, Marche is a region rich in the history and culture of food. In Marche, the secrets and traditions of bread making have been handed down from generation to generation and are still used to this day by the region’s bakers.
They use the same flavour and ingredients that characterise Marche’s regional products both sweet and savoury, unique because they are made with wheat flour and Italian Extra Virgin Olive Oil, two fixtures of Italian fine dining. The Forno Mascia Bakery was founded on these values.

an artisan family bakery
Since 1976 the Forno Mascia Bakery has been perfecting the art of baking and is dedicated to preserving the memory of the master bakers of Marche. At the age of 25 and 23, brothers Nicola and Luigi Mascia decided to take on the most noble and ancient job of all time making fresh, homemade bread, which they have done every day for the last 38 years. They began to work in a small existing bakery in Pesaro, where, since the post-war period, people went to bake their home-prepared bread and cakes. They learnt how to knead flour and water under the guidance of the old baker, eager to follow in his footsteps. A great deal of passion, a lot of work and many long days were spent mastering the tricks of the trade. From dusk, the brothers would begin to knead the dough, working throughout the night and without the aid of machinery and technology.

In 1977 they began to manage the business under the name of Forno Fratelli Mascia - the Mascia Brothers Bakery - and with a little help, their dream of running a family-owned artisan bakery became a reality. Today, after 40 years, the team of pastry chefs and bakers still have that same passion and expertise that helped to create this family business and they still bake their original products: bread, cakes, biscuits, buns, pizza, flat bread, pastries and traditional specialities. This is the story of Forno Mascia, an artisan family run bakery in Pesaro, proud to be part of Le Marche and its rich food history.
OUR PHILOSOPHY. The philosophy of the Forno Mascia Bakery is simple: we follow traditional recipes that are in keeping with Marche’s baking culture and we choose only the best ingredients, working in a safe environment and ensuring that we attend to each individual customer’s needs.

The traditional Crescia al Formaggio or Easter Cheese loaf is a typical recipe from Marche, which is usually prepared during the Easter period. Made with parmesan and pecorino cheese, Extra Virgin Olive Oil, black pepper and local spices. A version with chunks of cheese is also available. Delicious slightly warmed‌ or even tastier with the filling of your choice. The distinctive scent of pecorino cheese is enhanced by long proving process - around 24 hours - which locks in an intense savour and increases the nutritional value.
