TOP CHEF: MEET MICHAEL RITENOUR by Chase Kiddy CK So you’re Michael Ritenour, the Executive Chef here at Massanutten? MR That’s true. CK So you’ve been a chef for 30 years? MR Maybe a little more. I’ve been with Massanutten for 20. CK What are some things you like to cook with? MR I’m a big seafood guy. I like wild game as well. CK How would you describe your cooking style? MR Eclectic. To be a chef in America, you have to be able to cook everything. CK Do you have a favorite cooking tool, or a favorite spice? MR I’m partial to the southwestern spices and chilis. CK What’s a dish or a spice you don’t care for? MR Hmm, that’s a tough one. We do so many different things that I try to be good at everything. You never want to be the jack of all trades, master of none kind of thing. Right now, we’re transitioning to different menu concepts across the mountain. There’s a greater emphasis on the growing farm-to-table movement. It's a Shenandoah Valley tradition we can offer to our guests. CK Where did that idea come from?

MR We were early to adopt the idea of food straight from the farm in the 90s, before anyone was ever talking about it. We're lucky to live in the Shenandoah Valley where we have access to fresh and local ingredients.

MR Local everything. Before, you didn’t always say local. Pointing it out on the menus. And we have made certain stylistic changes that bring those things more to the forefront. CK What was the driving force behind converting the Woodstone Deli & Pizzeria to the VA BBQ & Pizza Co.?

MR Cheesecake, brownies, cookies, bread—all the baked goods for the mountain are made at Sweetz. CK What else is happening on the mountain?

MR Barbeque makes people happy!

MR Well, there’s the new ski school now and next big project is the renovations to the deck at the Ski Lodge.

CK What’s the reception been like?

CK How will that effect your job?

MR Fabulous so far.

MR You never know. [laughs.] I mean, it will. It makes it bigger. Moving food from the Ski Lodge kitchen has a huge impact on what we do every day. We have ideas and thoughts on how to accomplish this, but you just never know until you dive in to the project.

CK Why did all the Fareways menus change? MR Fareways was always sort of a melting pot approach. Prior to this year, the prevailing thought was there has to

THE WESTERN SLOPE Massanutten has been steadily building a reputation for national caliber bike riding and racing. We’ve got a total of 30 miles of mountain bike trails on our Western Slope. Our blazed trails traverse wooded terrain, and are suitable for intermediate to advanced riders. Not sure if you’re ready for off-road? Contact our mountain bike staff, and they’ll suggest trail recommendations to meet your comfort and ability level. The Mountain Bike Center, in addition to renting, is also a full service bike shop and carries cycling accessories. Our shop can perform most repairs on site. A Kaleidoscope of Color

WHY LEAVES CHANGE COLOR OR A succession of warm, sunny days and cool, crisp but not freezing nights seems to bring about the most spectacular color displays. Two factors influence autumn leaf color-leaf pigments: length of night and weather. The timing of color change and leaf fall are primarily regulated by the calendar, that is, the increasing length of night. As days grow shorter, and nights grow longer and cooler, biochemical processes in the leaf begin to paint the landscape with Nature's autumn palette. There are three pigments in leaves: • CHLOROPHYLL, which gives leaves their basic green color. It is necessary for photosynthesis, the chemical reaction that enables plants to use sunlight to manufacture sugars for their food. Trees in the temperate

zones store these sugars for their winter dormant period. • CAROTENOIDS, which produce yellow, orange, and brown colors in such things as corn, carrots, and daffodils, as well as rutabagas, buttercups, and bananas. • ANTHOCYANINS, which give color to such familiar things as cranberries, red apples, concord grapes, blueberries, cherries, strawberries, and plums. They are water-soluble and appear in the watery liquid of leaf cells. During the growing season, chlorophyll is continually being produced and broken down and leaves appear green. As night length increases in the autumn, chlorophyll production slows down and then stops and eventually

all the chlorophyll is destroyed. The carotenoids and anthocyanins that are present in the leaf are then unmasked and show their colors. Certain colors are characteristic of particular species. Oaks turn red, brown, or russet; hickories, golden bronze; aspen and yellow-poplar, golden yellow; dogwood, purplish red; beech, light tan; and sourwood and black tupelo, crimson. Maples differ species by species-red maple turns brilliant scarlet; sugar maple, orange-red; and black maple, glowing yellow. Source: USDA Forest Service

Whether you’re looking for fun family activities, romantic day trips, or the tastes and sights of autumn, Massanutten Resort and our neighboring communities offer plenty to see and do. Apples have been an important crop in the Shenandoah Valley for almost 200 years. Walking through the rows of an orchard and being surrounded by the greens, yellows, and deep reds around you gives you the feeling that you could be in any moment of history. There’s something so satisfying about standing on your toes and reaching up to the branch that holds your perfect apple. Many orchards encourage people to bring their own picnic to enjoy while taking in the fresh air and scenic views of the mountains. Whether it’s Summer Rambo or Gala in the late August or the Pink Lady that waits until November to ripen, apple season in the Shenandoah Valley is brimming with these crisp, delicious fruits.

MULBERRY HILLS FARM in Mount Crawford has both pick-yourown and pre-picked pumpkins and gourds for all your pie, bread, and decorating needs. They also have a menagerie of friendly farm animals. BACK HOME ON THE FARM in Harrisonburg has a 7-acre pumpkin patch, a 5-acre corn maze, a lavender maze, and a cat’s cradle maze. This farm holds events like Rubber Duck Racing and Pig Races and offers fun activities like a giant slingshot and an underground slide.

PUMPKIN BUTTER 1

/2 cup white sugar /2 cup brown sugar 1 Tbsp. ground cinnamon 1 Tbsp. pumpkin pie spice 1 5 lb. fresh pumpkin seeded, peeled, and cut into 2 inch cubes or 16 oz. canned pumpkin purée

Combine the sugars, cinnamon, and pumpkin pie spice in a bowl. Place about a 1/4 of the pumpkin into the bottom of a slow cooker and sprinkle with 1/4 of the sugar mixture; repeat layers 3 more times. Cover and set on low. Cook for 8 hours and stir once or twice during cooking. When the pumpkin is a dark, golden color, place an immersion blender into the slow cooker, and blend the pumpkin butter until smooth. If using canned pumpkin, place all ingredients in slow cooker on low and cook for only two hours.

CHEF'S RECIPES SWEET POTATO FRIES 2 large sweet potatoes ¼ cup olive oil 1 Tbsp. course sea salt 1 tsp. cracked pepper Cut sweet potatoes in strips resembling French fries (your favorite size). Preheat oven to 350° F. Toss potatoes in olive oil then season evenly on both sides. Let excess oil drain away then arrange so they do not touch each other on a baking sheet. Bake for 15 minutes, then flip over and finish until crispy brown for about 10 minutes. Skyline Drive, a national scenic byway, provides easy access to most trails. Featured hikes, listed here with the Skyline Drive milepost information, include: • MILEPOST 41.7 Stony Man Summits and lower cliffs. This is a short and pleasant hike with a moderate 500' elevation change, yet offers some of the best vistas in Shenandoah National Park. 3.5 miles, Easy • MILEPOST 45.6 Hawksbill. Guided tours are one of the best ways to see and experience these special places. Massanutten’s Ski Slopes feature 14 trails which cover 72 acres. There are 3 green trails rated easiest, 6 blue trails rated more difficult, 3 black diamonds rated most difficult, and 2 terrain parks which feature freestyle terrain: rails, boxes, and jumps. Over the past 43 years Massanutten’s average winter season is from December 10th through March 17 th. These dates often vary based on weather. Although Massanutten can make its own snow, our snow makers require consistent periods below 32 degrees. Humidity and wind also affect snow making operations. Low wind, low humidity, and low temperatures are the ideal conditions for our snowmakers to cover the slopes. Water is pumped from Painter’s Pond to our various “snow guns” which mix water and compressed air and it will freeze and fall to the ground as snow.
