How does matcha taste? Its taste is strong and plant one – some would discern spinach, others do grass and similar to umami (the fifth taste). The taste depends on origin and a grade of a green tea. Quality of tea used for production of Matcha Tea is crucial, since there are many imitations of the genuine Japanese matcha exploiting green teas of low quality.

Once upon a time, in 1191, drinking of green tea (and matcha) was introduced into Japan by the Zen master Eisai, who was travelling a country and seeding tea plants. As written in his book Kissa Yojoki: “Tea is an unrivalled natural medicine for body and soul. Everywhere, people embark to grow tea, their longevity follows.” Since this moment, tea has become a “secret medicine” of the Buddhist monks and the imperial court. In the 16th century, a new dimension of tea drinking was discovered by another Zen master, Sen-no-Rikyu, after a tea ceremony was developed by him. This highly sophisticated drinking of tea strongly influenced perception of the Japanese tea in the

Western countries. And it is matcha, that is used during these ceremonies. Thanks to spread of tea ceremonies, matcha become to be popular among the samurai, too. For 800 years, matcha has had remained a secret and privileged tea for the Japanese nobility, till drinking of matcha went through its revolution in the 21st century.

Matcha is 100% pure green tea. Dried pulp of the youngest tea leaves is milled to a very fine powder. There is no fermentation involved in production of matcha, no colouring, additives or preservatives added.

All teas descend from the same plant, Thea (formerly Camellia) sinensis, related to camellia. It is a wooden shrub originally from South China, usually maintained up to one-meter high, suitable to be harvested. The tea plant can be a source of origin of white, green, oolong, black (known as red in China) or pu-erh tea, depending on a specific variety, region and production process.

DESCRIPTION A dry mixture for preparation of wholegrain cookies or sweets with milled organic green tea matcha. One package is enough for three baking trays of confection.

CONTENT Wholegrain wheat (73 %), organic cane sugar, organic milled green tea matcha (4.4 %), corn starch, organic dried lemon peel The product contains gluten. The product does not contain GMO.

DIRECTIONS TO USE The contents of the bag pour on a kitchen board, add 180 g of softened butter (or other shortening), 2 egg yolks and knead a pastry, then put into a fridge to chill (for about two hours). Roll the chilled pastry out on the dusted board and cut out pieces or fill up mould according a type of confection. Bake in an oven heated up to 170 °C for 5-10 minutes.

Store the product separately from aromatic materials, at least 5 cm out of wall, in a room with relative humidity max. 75 %. Packed in the Czech Republic
