rachael’s welcome Christmas is without a doubt, our favourite season at Mathilda’s. From our round of bumper Christmas events to Christmas shopping & theming – it’s hard not to get caught up in the fun & excitement of the silly season. As we head into our round of Christmas markets, we have cause for double celebration with news that we will now hold events in: Launceston (TAS), Geelong (VIC), Newcastle (NSW), Townsville (QLD) & Toowoomba (QLD). There’s nothing like spreading a little Mathilda’s cheer beyond the big city limits! We are also celebrating the launch of our new market venture, Tween2Teens Market. If, like me, you have a fashion conscious tween you are sure to rejoice over our planned ‘tween friendly’ brand which will showcase age appropriate & unique fashions for our soon to be teenagers. We hope you enjoy our Tween feature in this edition & look forward to welcoming you to a T2T event near you very soon! And before you ask - our Christmas printables were so popular last year, we have again included them in this edition for you to print & create in just a few easy steps. Last but not least, we are inviting our loyal Mathilda’s following to offer us feedback regarding our market events - things that you like & those that you would like to see improved. Rebecca is involved in many research projects related to General Practice & has disseminated her research through medical journals & conferences around Australia. hey don’t call it the silly season for nothing. Christmas, while a great amount of fun, can also lead to some serious stress in the kitchen! I’ve put together some ideas to simplify your Christmas menu & take the frazzle out of the Festival season.

f you know you’ll have leftovers it’s time to get creative! ‘Revamps’ as we like to call it (rather than leftovers), are a brilliant way to get on top of your weekly menu. The ‘revamps’ philosophy is all about transforming ‘leftovers’ from a boring rerun to an exciting sequel, without hardly any work! Growing up it was a way my mum & dad taught us the value of food, using your creativity & getting involved in the creation of dinner. It is worth testing it out at Christmas so you can use this strategy all year.

with the kids: Try this child- friendly asparagus quiche Ingredients • Sliced nitrate free ham or smoked salmon (50g or 6 slices) • 1 onion chopped • 3 eggs • ½ cup plain flour (or Besan/Chickpea flour) • 1 ½ cups milk • 1 cup grated cheese • salt & pepper to taste • 1-2 bunch asparagus • fresh/dried herbs Method Preheat oven 200C or 180C (fan). Grease a baking dish. Chop ham/salmon into slices (using child friendly knife*) Put in baking dish. Put chopped onion into baking dish (adult should chop the onion). Crack eggs into a bowl & whisk, then add the milk. Measure flour, add to eggs/milk & mix well. Add cheese & seasonings then pour over the ham & onion in the baking dish. Chop woody ends off asparagus with child friendly knife* & arrange on top. Bake for 25-30 minutes. Meanwhile, make a salad.

• 1 ½ cup (375g) mascarpone • ½ cups (160ml) single (pouring) cream • 2 tablespoons brown sugar • 18 sponge finger biscuits • 1 cup (250ml) dessert wine • 250g strawberries, trimmed & sliced • 300g fresh raspberries • 1 cup (250ml) single (pouring) cream, extra • 1 tablespoon icing (confectioner’s) sugar, sifted Place the mascarpone, cream & sugar in a bowl & whisk until soft peaks form. Set aside. Lightly grease & line a 7cm x 32cm tin with non-stick baking paper with enough paper to hang over the sides.

Dip 6 sponge fingers in wine & place in the base of the tin. Top with half the strawberries & half the raspberries. Spread with half the mascarpone mixture. Dip another 6 sponge fingers in wine, place on top of the mascarpone & top with remaining berries. Top with remaining mascarpone mixture. Dip the remaining sponge fingers in wine & place on top of the mascarpone. Cover with plastic wrap, place on a baking tray & weigh down with cans of food. Refrigerate for 8 hours or overnight. Turn out onto a serving plate. Place the extra cream & sugar in a bowl & whisk until soft peaks form. Spoon over the trifle to serve. Serves 8.

wrapping paper We simply loved this idea that we saw on the Mollymoo blog. You can’t get a more personalised & lovingly made gift-wrap than one you have created yourself! The kids will love adding their personalised touch to the papers & it couldn’t be easier to do. Simply take a roll of drawing paper, brown Manila paper or craft paper & using paints, buttons, twine, rubber stamps & paint create your own masterpieces.

Jar ingredients • 3/4 cup (110g) plain flour • 1/4 tsp baking powder • 1/4 tsp bicarbonate of soda • 1/4 tsp salt • 1/3 cup (75g) firmly packed brown sugar • 1/3 cup (75g) caster sugar • 3/4 cup (65g) rolled oats • 100g craisins (dried cranberries), see variation • 130g white chocolate chips Extra ingredients for making cookies • 125g butter, melted & cooled • 1 egg, lightly beaten • 1 tsp vanilla extract

Sift flour, baking powder, bicarbonate of soda & salt into a bowl. Spoon the flour mixture into a 1L (4-cup) capacity glass jar. Top with brown sugar, then caster sugar. Top with oats, craisins & then chocolate chips. Seal jar. Give as gift. Baking To make cookies, preheat oven to 190C. Line 2 baking trays with baking paper. Empty jar into a large bowl. Add butter, egg & vanilla. Stir until well combined. Shape tablespoons of mixture into balls & place on baking trays approximately 5cm apart. Bake for 10 to 15 minutes, swapping trays halfway during cooking, or until edges are lightly browned. Turn biscuits onto a wire rack to cool. Serve.

WHAT DOES IT ALL MEAN?

Confused by nutrition labels? Emma Owers explores how to decipher the nutritional panel before your next supermarket visit.

N

utrition information panels on packaging in Australia are governed by Food Standards Australia New Zealand (FSANZ) but most consumers find them difficult to decipher & nutrition claims to be confusing. Here is a simple guide to how to interpret the most important parts of the nutrition information panel to help you weed through health claims & misleading packaging. You might want to take your reading glasses along for your next supermarket visit though – the panel can often be quite small!

WHAT WILL I FIND ON THE NUTRITION PANEL? According to FSANZ guidelines, there are six main categories that must be listed on a nutrition information panel. These are: - amount of energy in kilojoules & kilocalories - grams of protein - grams total fat & saturated fat - grams of carbohydrate & sugar - amount of sodium (a component of salt) In addition, if a food makes a statement on its packaging,

for example, ‘a good source of calcium’, the nutrition information panel must provide information on the calcium content of that particular food to justify the claim.

Herbs & spices, tea, coffee & mineral water do not require nutrition information panels, as they provide no significant nutritional value while foods that are not packaged


or have packages less than 100 square centimetres or are packaged at the point of sale do not need to show nutrition information panels.

Ingredients lists must be provided & be listed in order of descending weight e.g. the first ingredient listed contributed the largest amount to that product & the last ingredient contributed the least.

ENERGY

Packaged foods must also provide information about the percentage content of the key or characterising ingredient of that product. As an example, apple pie would need to provide the percentage content for apples. Many foods nowadays are known to cause severe allergic reactions or anaphylaxis. Foods containing peanuts, tree nuts, milk, sesame seeds, egg, shellfish, fish, soy or wheat must have these ingredients declared on their label (including trace amounts). Gluten is also a potential allergen & must be declared as well as sulphite preservatives (if 10mg or more per kilogram is present in the food). Use By & Best Before dates, as well as warning statements about things such as caffeine or artificial sweeteners, additives & information on genetic modification can also be included on labels. SO HOW DO I INTERPRET THE LABEL? Often it is more useful to use the ‘per 100g/100mL’ column in order to compare products, instead of the ‘per serve’ column, as the serving sizes are

The energy value (in kilojoules) of the food shown is derived from the total fat, carbohydrate, protein, fibre & alcohol that is in that food & that is used by your body when the food is digested.

FAT You will always find the total & saturated fat content listed on the nutrition information panel (and often the trans, polyunsaturated or monounsaturated fats if the product has made a health claim). High levels of saturated fats in a food can be detrimental to your cholesterol & heart health. For general health, aim for foods that provide less than 10g of fat per 100g (or less than 10% fat). Preferably, we want these foods to have less than 1/3 of that fat being of the saturated variety. However, for children under the age of 2, low fat products should be avoided due to the high-energy needs of children at this age for their growth & development.

PROTEIN

carbohydrate content is derived from the starch & sugar content of a food. Carbohydrate is our body’s most efficient source of fuel & helps to fuel our brain & muscles throughout the day as well as helping to maintain energy levels & moderate our hunger. The sugar content of foods is also listed separately & includes the natural occurring sugar in the foods as well as those added to products during processing. For general health, aim for less than 10g of sugar per 100g for general products, but you can allow for up to 25g for cereal-based products to allow for things such as dried fruit.

SODIUM Sodium is found in many processed foods as it is a flavour enhancer & also a preservative. High sodium intake is linked with higher blood pressure levels & risk for stroke so lower sodium choices are always preferred.

DIETARY FIBRE This is not required to be listed on the panel (unless a health claim related to fibre, sugar or carbohydrate is made by the product). Higher fibre choices aid in healthy bowel activity.

INGREDIENTS LISTS

Protein is also an important macronutrient for development & growth in all children. The highest sources are from meat, fish, egg, poultry, cheese & milk/milk products. Vegetable based sources include nuts, beans, lentils, dried peas & cereals.

CARBOHYDRATE Carbohydrate is found in breads and cereals, pasta, rice, milk, some vegetables, legumes and fruits. The total

Watch out for high sources of fat, sugar or sodium in the first few ingredients listed on the packet as these will likely contain high amounts of these items. Common terms used for sugar include white, brown, raw & caster sugar as well as honey, golden, maple or corn syrup, fructose, glucose, sucrose, lactose, maltose, dextrose, disaccharides, malt, mannitol, molasses, monosaccharides, sorbitol or xylitol.

HEALTH CLAIMS • ‘Baked not fried’ sounds healthy but products with this statement on them may still contain high amounts of fat so check the nutrition information panel to be sure. • ‘Percentage fat free’ is a reliable indicator of total fat content, for example, 99% fat free indicates that a product contains 1% fat or 1g of fat per 100g that is acceptable for general healthy adults who are watching their weight. • ‘Low fat’ is also a reliable claim as it indicates that the product contains 3g of fat per 100g or 3% total fat. • Health claims that specify a nutrient’s link to a health condition can only be listed if there is evidenced based research available to verify that claim, e.g. a statement such as ‘rich source of calcium for strong bones & teeth’. • ‘No cholesterol’, ‘low cholesterol’ or ‘cholesterol free’ on foods derived from plants, (e.g. margarine or oil), are meaningless as plant based foods contain virtually no cholesterol.

DINING OUT When eating out, nutrition information panels will not always be available. Often food chains will be able to provide a brochure with the nutrition information panel for their menu or you can refer to the many websites & free mobile phone applications such as Calorie King, Weight Watchers or apps created by private health care funds.

A HAT FOR HAPPINESS?

A

t the time of writing this article, the hats on my rack are piling up. Today I’m wearing my GP hat, my teacher hat & primarily, my mother hat. On the days when I am not in the practice, my other job is to educate GP registrars (doctors completing their GP training). Last weekend I attended an inspirational session facilitated by a senior colleague on “making learning fun”. The group was reminded that the outcome of learning should be that the learner does something differently tomorrow that they didn’t or couldn’t do today. This concept is inde-

pendent of whether you are a child or adult (although some academics would argue the differences between these groups). My interest was particularly captured when my colleague pointed out that children find it difficult to clean their room, do their homework or remember the number of countries that make up Europe BUT they can easily recite the 100 plus types of Pokemon & their magical powers or name every Barbie DVD & its storyline. He explained that absorbing the factual stuff uses the same mental processes as the more mundane things & does all

have a purpose. Over the weekend, these theories were proven to me with my eldest child. She is not academically inclined (nor mathematically) & is “limping” through to high school so she can choose the things she likes to do. She is a drama queen & songstress for whom homework is a tedious chore that she feels has no point but to – & quote – “tell me when I can read well enough to read a script”. My favourite line though is “I don’t need maths as I’ll be so famous I’ll have an accountant.” One could only hope! So this week our drama queen attended a drama workshop.

This concept of guidance was again put to the test when I did my monthly Saturday morning stint at the surgery. A particular patient had been seen by 3 other practices that week & felt like she was not improving (she in fact had a viral chest infection that was running a normal course). No one had taken the time to explain to her how things would pan out & after discussing some options for making her feel better (putting aside the useless antibiotics she had been given), she left the consult gratefully informed with plans for the next day & signs of what to look out for if things got worse. As she walked to the front counter she told me I should see the little one in the room next door who looked a bit unwell – it was my youngest with a belly ache. Ah yes, back to my mum hat – I was supposed to have finished work an hour earlier to be home & caring for her.

You don’t need to be a superstar or high-powered ‘mumpreneur’ to face the pressures of raising children, working & managing personal relationships. Dr Rebecca Stewart explores the many roles of a working woman & the importance of just being happy!

Day 1 was extreme exhaustion & the child of the night was in bed by 7:30pm but not before accurately reciting two pages of Shakespeare’s Midsummer Night’s Dream. Day 2, she came home & wrote a fourpage play script, beautifully structured, totally unprompted & proceeded to type it upon the computer (thank goodness for spell check). Day 3 was the compromise on the script & the reworking with her friends at the drama workshop. Day 4 was a presentation of the finished drama piece & 2 other memorized performances. For me though, the most important outcome from the week was a child with improved

self-esteem & resilience who reinforced the fact to me that it’s not just the nerdy kids that make the world go around & that learning (just like my colleague had indicated) could indeed stretch beyond the academic stuff. This of course, got me thinking about how our education system approaches kids that don’t quite fit the mould. It is hard for teachers with so many little ones & limited resources to bring out the best in all & there is no doubt they do a great job. As parents, however, it’s our job to go the extra mile & provide our children with the opportunity to explore activi-

The simple truth is – there is no interchangeable hat that will capture all of our roles & obligations. Juggling motherhood, family life & working will always be an interesting game but knowing what role we play in all of these aspects will make life easier. Recognising that we are influenced by so many domains is important & makes my job of guidance as a GP, but most importantly as a mum, that little bit easier. Guiding my little drama queen through the confusion of what she is “meant to be” & helping her to find things that make her feel good was quite rewarding. I figure if she is feeling good & is resilient she will succeed & if she doesn’t, it doesn’t matter as she will certainly be happy.

esearch indicates that we are struggling with these guidelines. A recent study found kids aged 9-16 are online an average of 99 minutes every day! Older children are online over 2½ hours a day... well above safe guidelines (and that’s not including TV or time on the computer when not online). Why does it matter? After all, technology isn’t all bad is it?

amilies are increasingly connected to technology – but the online connections we are creating can easily impact on the quality of our personal connections that matter so much for our wellbeing.

Researchers are discovering that technology can have some concerning negatives. These include: - A negative impact on physical, social, psychological, & cognitive wellbeing. - Exposure to unwanted & even dangerous content and people. - The increased risk of addiction to the online world.

The Australian Department of Health & Ageing has published guidelines suggesting that children aged five to eighteen have a maximum two hours screen time per day. Children between two & five should have no more than 30 minutes per day, & screen time is not recommended at all for kids under two.

what should parents do? With growing online access, parents are wondering what the best course of action might be. The following suggestions may be useful: + Have a simple conversation with your kids about the issue: You might discuss the government’s suggested guidelines, or others that align with your own values & feelings. Plus you can sensitively chat about the potential online dangers that exist. + Work with your children to develop appropriate solutions: Rather than ‘laying down the law’, it can be helpful to listen to your children’s ideas & arrive at mutually agreeable limits or policies around being online. + Install filtering software: You can download free filters for PC’s & laptops, tablets, & smartphones. + Establish technology free zones: For safety, & to minimise too much use, it can be useful to only allow online access in public areas of the house. + Establish technology free times: To keep connections strong in the real world, encourage one night (or more) a week that is technology free after five. Spend time together talking, playing games & eating. Make it more fun to have the phone & computer off than on! Technology can be good & bad. As parents monitor their children’s online behaviour & set effective limits with their kids, it’s more likely to be good.

This is a fun holiday idea – perfect for enjoying the warm Spring sunshine & getting the kids away from the xbox! Draw pictures or apply photos of treasure hunt items to an old egg carton then send the kids out with their carton to find & fill! Best of all, you can tailor the treasure items to suit your child’s age, follow a theme & even hide little trinkets around the garden. So much fun!

bbq mango cheeks with honey & yoghurt gelato

Ingredients • 215g (1 cup) caster sugar • 250ml (1 cup) water • 160ml (2/3 cup) honey • 520g (2 cups) Greek-style yoghurt • 300ml pouring cream • 3 ripe large mangoes, cheeks removed, peeled • Olive oil spray • 2 tbs unsalted pistachio kernels, coarsely chopped • Honey, extra, to serve Method Place the sugar & water in a small saucepan over medium heat & stir until the sugar dissolves. Reduce heat to low & cook, without stirring, for 4 minutes or until the syrup thickens slightly. Remove from heat. Stir in the honey. Transfer to a large bowl & set aside to cool. Add the yoghurt & cream to the sugar syrup & stir until well combined. Pour the yoghurt

mixture into a square 23cm (base measurement) cake pan. Place in the freezer for 6-8 hours or until firm. Use a metal spoon to transfer one-quarter of the yoghurt mixture to the bowl of a food processor & process until smooth. Transfer to a sealable plastic container & place in the freezer. Repeat, in 3 more batches, with the remaining yoghurt mixture, adding each batch to the container. Cover & place in the freezer for 4 hours

Tackling a ‘tween’ birthday celebration presented a whole new challenge for the Mondocherry team but combining fashion with food & a good dose of fun made for a memorable occasion. Happy 11th birthday Hannah!

With a Funky Fashion party theme agreed upon, the Mondocherry creatives set about styling an event suitable for even the most chic fashionista. Little hatboxes which were found in a craft shop were painted in stripes & used as invitations. A little felt hat was slipped inside the box with party details secured to the box’s base. Pops of fuchsia enhanced the predominantly black & white colour palette while folded & taped newspaper created a wall of dresses hung on coat hangers, hats & other must have fashion accessories. A clever addition to the day was the use of an iMac (with photobooth program) to create a photo booth. A vintage trunk full of dress up items including masks, wigs, feather boas, fans, parasols, moustaches & glasses was put to use as the party girls took great delight in striving poses for individual & group photos. Well known fashion houses (yes,

even Chanel was present at this party!), formed the basis for fashion treasure hunt clues, with the girls searching the house & solving puzzles throughout the course of the hunt. We implemented clues such as pictures of actresses on the red carpet with our funky party fashionistas having to correctly identify which ones had been voted best & worst dressed. The girls loved matching photos of iconic styles with the correct era also.

A big highlight on the day was a craft activity allowing the party guests to paint a pair of canvas shoes, which they could then take home. Some pre-planning is required for this activity – you must remember to obtain their shoe sizes when accepting RSVPs! In true fashionable style, the party food was minimalistic with old fashioned favourites (including sausage rolls & pies) teemed with little cocktail umbrellas & dress shaped biscuits (thanks to a biscuit cutter from Lark). The birthday cake was a grey hat – an edible version of the invitation. A clever styling feature we thought! The party theming was completed with blank paper mache paper bags that were painted & filled with various items. Once the girls had taken a silly photo, these were inserted into the bag slot to personalize each bag & ensure that each girl left with their own individual memory from the day. Oh to be a eleven years old again!
