Sergi Arola a sus 40 años presenta un currículum envidiable. Seguro de sí mismo, emprendedor y resuelto a mantenerse rodeado de lo que más le importa, su família, su equipo y la gastronomía. Cocinero de excepción, persona de bandera.
¿Y cómo se consigue todo lo que tu has conseguido con sólo 40 años? No creo que haya conseguido nada. Creo que he trazado un camino y me mantengo en el camino que me tracé. No tengo conciencia de haber conseguido nada. Entiendo que el éxito es algo efímero y carente de interés. Al final lo que perdura es lo que eres capaz de crear a tu alrededor más inmediato, tu familia, tus amigos, tu equipo,… eso es lo que de verdad importa. Luego, la repercusión del éxito o la dimensión del éxito en el fondo es fatua, es tremendamente volátil y cada vez me interesa menos. And how have you achieved everything you have achieved by age 40? Do you still recall the advice Ferrán Adrià gave you? Ferran taught me three of the most important things any chef should know, at least when you begin to move, shall we say, in the elite. First, stick to your path: be very clear about what you want and stick to it. Then come sacrifice and self-criticism. If you are not the most critical of anyone of your work, if you’re complacent with what you do, it will be impossible for you to do anything truly good, anything great.
Todos tus proyectos presentan caracteres muy diferentes, desde el bocadillo hasta el menú de 140 euros ¿cómo los definirías a cada uno de esos lugares? Vi cool, Sergi Arola Gastro, Arola Bcn, Durius River Café… No creo que sean tan diferentes. Creo que en el fondo son muy iguales. De hecho, todos parten de la misma filosofía, de cómo me gusta comer a mí y relacionarme alrededor de la mesa a mí. A mí me puede gustar mucho estar en un restaurante carísimo pintando la mona y también con un bocata y una cerveza o desayunando esta mañana en el Pinocho. Puedo tener muchísimos defectos pero lo que no soy es clasista, no soy elitista. Diferencio muy bien lo que es alta cocina de lo que es alta gastronomía porque lo diferencio muy bien lo que es cocina de lo que gastronomía. All of your projects have very different personalities, from sandwiches to a set menu costing 140 euros. How would you define each of these venues: Vi Cool, Sergi Arola Gastro, Arola BCN, Durius River Café… I don’t think they’re that different. I think that deep down they’re all very similar. Yo al final del camino sentía que no me llenaba ni profesionalmente, ni económicamente, ni en ningún sentido. Si no tiene ningún sentido ¿entonces? Consideré que había acabado esa etapa. Quería recuperar una esencia bistroniana sin ser bistrot porque no lo es. Y sentirme libre. Tengo una máxima: prefiero sentirme libre a que me digan que lo soy. Y la sigo muy a rajatabla. Sergi Arola-Gastro, you seem to be returning to the essence of who you are. Is that accurate? More than anything it’s a reaffirmation of my commitment to my customers. My relationship with Occidental Hotels wasn’t going any further. At the end of the road I no longer felt professionally fulfilled, or economically compensated, or contented in any way. If it makes no sense, what am I doing there? I just felt that that stage had come to an end. I wanted to get the essence of a bistro back without being a bistro, because it isn’t. And I wanted to feel free. I have a maxim: I prefer to feel free than have someone tell me that I am. And I follow it to the letter. In your enterprises, your wife Sara plays a key role as manager. And she is the driving force behind it all, to some extent. If I hadn’t had Sara I would never have gotten involved in all this because being a head chef would have been a much easier life for me. Now I also have to deal with the typical problems of a businessman.

Pero es que además, mi hermano es absolutamente superdotado para el trabajo que hace aquí en Arola Barcelona. Nadie sería capaz de hacerlo mejor que él, sin duda. Te podría decir con total honestidad que el 80% del éxito de este restaurante se debe a mi hermano. In Barcelona your manager is your brother Eduard. What ingredient is family in your life? There’s no person in the world I trust more than my brother. It’s a blood tie that goes beyond ethics or anything else; it’s absolutely sentimental. But it’s also because my brother is extremely talented at the work he does in Arola Barcelona. No one would be able to do it better than him, hands down. I can tell you in all honesty that 80% of the success of this restaurant is thanks to my brother.
¿Hay algún fracaso en tu carrera profesional? Jajajaja, claro. Muchos. Muchas cosas que haces con ilusión y se rompen. Pero hay que sobreponerse. Los fracasos no valen que pierdas el ánimo porque lo que te rodea y las cosas importantes siempre valen más la pena. Have there been any failures in your career? (Laughing) Of course, many. Many things that you undertake with enthusiasm but that don’t work. But you have to get back on your feet. Failures are worth nothing if you get discouraged, because everything around you and the important things are always more worthwhile.
¿Cómo se digieren las estrellas Michelín y premios como “mejor cocinero del año”? Rápido, dejándolas y volviendo a empezar de cero. Fíjate si eran importantes. A ver, a mí me encantaba el reconocimiento de Michelín pero el reconocimiento de Michelín te obliga a si tienes una querer dos y si tienes dos tener mentalidad de tres y a mis socios no les importaba. A mis socios sólo les importaba el dinero. Lo que premia Michelín es un compromiso y un trato con el cliente, un saber hacer las cosas, una relación, una calidad, no es mercadeo. How do you digest the Michelin stars and prizes like “best chef of the year”?
¿La alta cocina es polémica porque se ha democratizado? Entre otros factores. Siempre hay intereses creados y luego hay egos. Pero yo me quedo con la generosidad de Ferran Adrià, Arzak, del mismo Santamaría, que han sido el primer colectivo capaz de salir a la palestra y explicar sus trucos. Yo recuerdo las primeras veces en que entré en algunas cocinas en que los jefes de cocina se daban la vuelta para que no vieras cómo preparaban determinadas salsas,… Hoy en día no sólo no pasa eso sino que es como una competición de haber quién consigue preparar lo más novedoso o más suculento. I perquè Eivissa? Why Ibiza? Bé… la veritat és que aquesta illa té quelcom especial. És un fantàstic lloc de vacances, on es troben gent de tot el món i de totes les condicions. Això fa que sigui un lloc rabiosament actual i cosmopolita, on sens dubte Wesselton havia de ser-hi. Well, the truth is that this island has something special. It’s a fantastic vacation spot where you can find all kinds of people from all over the world. That makes it a thoroughly up-to-date, cosmopolitan place where Wesselton obviously had to be.
I d’aquests dos anys, quin balanç en faries? So how would you take stock of these two years? Un balanç molt positiu. Al principi ens suposà un esforç considerable (sobretot a nivell logístic, ja que no hem d’oblidar que estem en una illa) però la veritat és que la gent ha respost molt bé a la nostra proposta, tant el turisme com els propis eivissencs.
