15-minute preparation plus chill time Keeps for a few days.

Ingredients

150 g regular or dairy-free dark chocolate, broken into pieces, plus extra for serving

2 large ripe avocados*

2 tablespoons raw cacao or a good quality cocoa powder, sieved

2 teaspoons vanilla bean paste

3 tablespoons maple syrup

1 x 160 g tin of coconut cream

*source organic produce wherever possible

Method

1. Place a heatproof bowl over a pan of simmering water, making sure the base doesn’t touch the water.

2. Break the chocolate into the bowl and allow it to melt, then set aside to cool slightly (alternatively you can gently melt the chocolate in short bursts in a heatproof glass jug or bowl in the microwave). Allow to cool for five to 10 minutes.

3. Halve and de-stone the avocados, then scoop the flesh into a food processor or mini blender, discarding the skins.

4. Add the remaining ingredients and pulse for a few seconds. Scrape down the sides with a spatula, then pulse again to combine.

5. Pour in the cooled chocolate, then pulse a final time until creamy and smooth.

6. Divide the mixture between six small bowls, then pop in the fridge to chill for at least 30 minutes.

7. Serve with an extra grating of chocolate, cacao nibs, or fresh fruit if desired- it’s perfect on its own!

Take a portion to work for a guilt-free afternoon pick-me-up. Enjoy!
