Q A

Why did you start 931 Beauty Co.? I wanted women in this area to have a high-end salon experience without having to drive to Nashville. From

the greeting to the consultation, lounging in a robe with a glass of champagne or wine, to the aesthetic of the building and the energy, I created an upscale relaxing atmosphere for the clients to enjoy — both women and men.

While you are getting an awesome hair experience, you are also getting all the little details that make you feel beautiful and elegant, it is really about an aesthetic. Being from Los Angeles and getting more of an experience in the California market of hair dressing, I wanted to bring a certain style of hair, fresh and trendy, to Columbia. We offer weekly memberships, have a huge hair extension clientele, as well as the newest techniques that you would typically have to drive up to Nashville to get. As our business has grown, we have had nothing but support from the Columbia community. We turn the salon visit into an experience.

Q A

What sets your business apart from other salons in the area? When I decided to open 931 Beauty Co., I wanted to create more of a brand of salon along with a team where

we all helped each other. This has now turned into a complete training program for our hair stylists. We have a salon coach that comes in and works with every single one of us to set goals, both personally for myself and the staff, and for their professional paths creating more of a career than a job in the hair dressing industry. We base most of our work on education where everyone here has mandatory education requirements. They all start in the associate program and work their way up to different levels based on their monthly ratings. The monthly ratings lead to promotions, which help advance the stylists in their careers and achieve their personal goals.

Q A

How did you get started in the profession? I actually went to beauty school to avoid college (laugh, laugh). I did not know what I wanted to do with my life,

but I knew I wanted to have fun with whatever I did. I started off in the industry and immediately assisted a Vidal Sassoon artist for two years. I basically did all the washing and blow drying for two years and learned. From there I went to corporate salons and then, when I had my daughter, I decided to start a mobile service in Beverly Hills doing in-home services. I really wanted to be a stay-at-home parent and we moved to Tennessee from California where again I started doing hair out of my home. As my clientele grew, I quickly realized I needed a space outside of my home so I started 931 Beauty Co. in May 2018 with one employee and now we have 12. MAURYCOUNTYLIVING.COM

Q A

How do you balance work and being a mother? That is a great question! Some days I have my kids both here with me tearing up the salon, but I do what I have

to do for my kids and family. It can be a struggle and I think every mother wrestles trying to balance work life and motherhood. It is always a balancing act, like having to answer the phone with a baby on my hip screaming or having to leave work early because of a sick child, we have all been there at some point. It is a work in progress, but each day is getting easier. As the salon grows, I can delegate more responsibilities letting me work behind the chair instead of behind the scenes.

Q A

Why do you love your job? I absolutely live for the days where women cry happy tears in my chair. I see clients who have suffered tremendously,

whether they lost their hair from chemotherapy or their hair is falling out because they lost their three-year-old child to cancer, they come in to be pampered and feel beautiful again. We all cry together when they see themselves after we have added hair extensions and for the first time in many months, they feel beautiful again after enduring so much personal stress or heartache. Through this whole pandemic I have realized that when we do not feel good on the inside, the one thing we do have control over is the outside appearance. What that does for our psyche is imperative to our wellbeing. I always say we are ‘hairapist’ because we listen to people. We listen because sometimes we are the only friends they have at that specific time and moment. People choose a stylist because they like them, there is a synergy and they communicate well together, it is like a happy marriage. If you can make a client feel absolutely stunning, you see it all over their face and that is a fantastic feeling to have!

Q A

What do you love about Columbia? Columbia’s artistic community and culture are incredible. I think downtown is so charming! There are

also all these little pockets of Columbia like Hatcher Lane (wink, wink) where new and exciting things are happening. It’s just fun exploring. For me, what really sets Columbia apart from other places I have lived are the people. There is a warmth and a sense of togetherness like I’ve never experienced before. Recently my mother unexpectedly passed away and it was a very hard time for me and I must say the outpouring of love and support my family received was mind blowing. Neighbors were bringing home cooked meals to our door. Our sweet clients from the salon made hospital visits to check in on me. This was the kind of stuff I only thought happened on TV. The love my family and I received during this time will not soon be forgotten. I knew when we arrived to this town four years ago there was something special about it, but to actually experience how this community supports others is something I will always be grateful for. I am so proud and humbled to be a part of the growth of Columbia and it is my passion to ensure 931 Beauty Company gives back to the community as much as it has given to me and my family.

In fact, with more than 20 years in the industry, the Nutrition Faktory orders direct cutting out the middleman which means customers are getting wholesale pricing! A kitchen is the heart of any home. It’s a place where

memories are made — in addition to delicious savory

foods and sweet treats. The best kitchens are equipped

with helpful tools to not only make cooking easy but also fun. So, whether you are a self-proclaimed home chef,

1 Fish Spatula You’re probably already thinking to yourself ... a fish spatula is for, well ... fish. And you’re right! But, did you know that a fish spatula can be used for so much more? Designed with a wide head that tapers toward the handle and large spaces between its slots, a fish spatula is commonly used for all types of delicate foods. Much more versatile than a traditional spatula, one of the best uses for a fish spatula is for removing warm cookies or pastries from a sheet pan. Also, with its sharp and sturdy edges, it’s also great for breaking up ground beef in a pan. Also, a fish spatula’s slotted shape can work in a pinch when you’re frying foods and don’t have a slotted spoon or traditional spatula on hand. All in all, a fish spatula is a practical and easyto-find tool that you’ll definitely want to add to your kitchen collection.

Dual Grater

If you love using a grater, you’ll definitely love a dual grater. This handy gadget combines fine and course grating surfaces in one easy handheld unit. Dual graters are perfect for citrus zest, nutmeg, hard cheeses (like parmesan), and vegetables. While dual graters are excellent tools for prepping food and baking, you can also use them for garnishing dishes. You can add a variety of colors, flavors, and textures to your food presentation by adding a little zest (literally). It’s even fun to use a dual grater when making fancy cocktails and adding a splash of ginger or lime to make it just right.

3

Digital Pocket Thermometer

When cooking meat do you ever ask yourself or a family member, “Does this look done to you?” Especially with pork, it can be hard to determine when the meat is cooked to perfection. You don’t want to overcook it, because let’s face it: no one likes a tough pork chop. However, you also don’t want to undercook it and risk getting sick. That’s why it’s important to know at what temperatures trichinosis and salmonella are killed. With pork, it’s best (and safest) prepared with the center registering 145 degrees and chicken at 165 degrees. You can eliminate the guessing of “Is this fully cooked?” with a handy, thin tip digital pocket thermometer. Yes, these look very similar to the ones you may have in your bathroom cabinet. However, the biggest difference in digital thermometer for cooking is its special thin tip designed for puncturing meat and gauging higher heat.

4 Portable Induction Cooktop If you’ve ever lived in a home with a double oven, you can attest to the convenience of all the desserts and dinners you can make in those ovens simultaneously. When the holidays come around, you can pack them with casseroles, side dishes, and cakes. It’s so wonderful having all that extra space to cook food and have it all prepared in one setting. Well, as nice as it can be to have double ovens, a majority of cooking actually happens on the stove top. More times than not, you’ll have all four burners going full blast and still need to finish cooking one dish to start another. A wonderful solution we have at our luxury today is found in having a portable induction cooktop, which can be a gamechanger for preparing holiday meals, outdoor gatherings, or when you just need an extra burner. Portable induction cooktops are great for cooking with kids,

too, as once the pot is removed from the burner, the heat is eliminated and immediately begins to cool. Another thing that can make them safer for cooking is that you can use the portable cooktop on a different counter or island to keep them away from the stove top. Portable induction cooktops also take less energy than traditional stoves, and they and cook food much faster.

— DELICIOUS HAPPINESS —

Comforting Carrot Cake By Kathy Fox As we look forward to the warmer weather of spring and the beautiful colors it brings, many people enjoy planting vegetable gardens and reaping the fruits of their labor. One very abundant root vegetable in gardens is the brightly colored orange carrot. Carrots are versatile and delicious and can be used in so many ways, whether to complement a delicious steak dinner, spruce up a veggie tray, or add sweetness to a delectable carrot cake dessert. No one actually knows where the modern-day carrot cake smothered in cream cheese frosting originated, but it does appear to have evolved from the carrot pudding of the middle ages, when sugar was hard to come by in Britain and carrots were used as sugar substitutes. The modern-day carrot cake, according to food historians, most likely descended from Medieval carrot puddings enjoyed by Europeans for centuries. Recipes for carrot pudding can be found as far back as the 10th century in Arabian cookbooks, but there were no references to carrot cake until the 19th century. For years now this sweet and moist spiced cake, loaded with carrots, and covered in a cream cheese frosting has been served at parties, weddings and family events. In fact, George Washington even served carrot cake at many of his parties. This wonderful carrot cake recipe originated at the cafe at the 16th century Crathes Castle in Scotland and is probably the best carrot cake you will ever have. This one-bowl carrot cake recipe is so easy to make — you will be delighted by your scratch-made marvel. Whether you are already a fan of carrot cake or prefer a chocolate decadent dessert, give this incredibly special recipe a try, as the result is a very comforting and tasty dessert. Who knows, this carrot cake might just become your new favorite dessert!

TIP ❱❱ For an even richer taste, substitute dark brown sugar for the granulated sugar or use a combination of the two.

Cream Cheese Frosting 1 box powdered sugar, 16 ounces 1 package of cream cheese, 8 ounces 1 stick butter, softened 1 teaspoon vanilla

Mix all ingredients until smooth. Frost the cake once cooled completely.

TIP ❱❱ The original recipe does not have nuts, so if you are craving that nutty flavor and crunch, add chopped pecans or walnuts to the batter or frosting. If frosting is your thing, make it four layers and indulge in sweetness!

This recipe was contributed by Deb Smith and was given to her more than 20 years ago when her family visited the Crathes Castle in Scotland.

THE URBAN

Retreat By Katie Baker

PHOTOS BY HOLLY DOBBS PHOTOGRAPHY

Voted as a “Top Ten Best Small Town”

by Southern Living Magazine in 2019, it was only natural Columbia would become a magnet for weekend

explorers looking to book a mini-

vacation in a quaint, Hallmark movielike town. With the staycation being a popular way to vacation since the

pandemic, even travel websites have adjusted their search engines to

showcase mini-farm getaways, city

center flats, and the small-town retreat over luxurious cross-country locales. In fact, according to the National

Association of Realtors in 2020, sales of homes intended for vacation use saw a

44% gain over homes sold for vacation use in 2019.

MAURYCOUNTYLIVING.COM

|

37

The home they purchased in Maple Court, later coined the “Maple Roost”, had everything Holly and Jimmy thought their visitors would want in a staycation. “The house had a really good feel to it, and at 1,750 square feet there is plenty of room to move around, while it’s small enough to still feel cozy and intimate,” says Holly. Guests are welcomed into Maple Roost by a large inviting living room with comfortable furniture, a gas fireplace, and a corner record player for guests to play provided vinyl tunes. A second smaller den with office space is situated in the back of the house for the visitor that needs to work and play during their stay.

After months of staying home and with no long-distance travel plans, Columbia residents Holly and Jimmy decided to purchase their own getaway in Columbia, Tennessee. The couple frequently entertained out-of-town guests in their home and noticed a limited number of available options for guest accommodations where guests had their own space to stay and explore the city. “Columbia is perfect because you get the amenities of a small-to-medium-size town, without some of the downsides of a big city. Our home’s central location made it ideal for visitors from bordering states, as well as Tennessee’s big cities like Nashville, Knoxville, and Memphis,” said Holly. Armed with that thought, the couple set out to purchase the perfect small-town vacation home, and soon enough, a quaint home within walking distance of the Columbia Square caught their attention.

Off the living room is a comfortable dining room and updated kitchen large enough to cook in. The classic black and white kitchen is accented by rooster décor, sourced from local vintage shops, as a nod to the home’s name. Jimmy and Holly raise chickens and stock the fridge with farm fresh eggs from their roost, which is how their daughter came up with the name Maple Roost. “The name was the perfect blend of the location of the home and our farm eggs, so we decided to go with it,” explained Holly. While searching for the right home to buy the couple agreed they wanted something that was turn-key ready so they could focus their creative energy on the interior décor. When asked to describe their style, Holly remarked, “The catchall description would probably be “eclectic.” It’s got a bit of traditional, some modern, and a touch of farmhouse elements. I would say that one of the highlights is the original artwork in it, which includes some of my local photos, a painting by my mother, and even a small piece by my daughter making the artwork span three generations!”

TURNKEY: A PROPERTY THAT HAS BEEN FULLY RENOVATED SO THAT AN INVESTOR CAN IMMEDIATELY “TURN THE KEY” AND MOVE IN. Art is a fun way to set the tone for a home and the couple pulled from their collection when decorating Maple Roost. In the living room is a black and white photograph by photographer Melvin Sokolsky. Holly purchased it years ago at a gallery in Los Angeles and it was one of a series of photographs taken for a 1963 Vogue magazine shoot that features a model being suspended from a crane outside a Parisian flat overlooking the Seine River. The piece is one of many unique touches the Dobbs have incorporated into their retreat. In the kitchen, guests are welcomed with water and refreshments placed in a James K Polk garden box from the 2018 Polk Ball. Should guests want to know more about Columbia’s connections to the late President, they can take a short walk down West 7th Street and tour the nearby James K. Polk Home and Museum.

Maury County is home to some of Tennessee’s most stately homes, and guests of Maple Roost need only to turn a corner to reach all five of Columbia’s Historic Districts — West Sixth and Mayes Place Historic District, Columbia Commercial Historic District, Columbia West End Historic District, and Athenaeum Historic District. A stroll through these neighborhoods showcases an array of architectural styles from the 1800s to the early 1900s. Historic placards line the front lawns of some of Columbia’s most notable homes that have been beautifully preserved by their current owners.

MAURYCOUNTYLIVING.COM

|

39

Maple Roost is less than a mile from Columbia’s downtown Square, but the couple hopes visitors will venture out to other notable attractions in Maury County. “We felt that Columbia offers just enough rural aspects where visitors can breathe fresh air and have a relaxed feeling that they don’t get in a busy congested city. In addition to the Square, Columbia and Maury County is full of gorgeous farmland, local parks for hiking, shopping at The Factory at Columbia, plus our historic Antebellum homes, like the Rattle and Snap and Elm Springs Plantations as well as Historic Rippavilla — all within a short drive from Maple Roost,” said Holly.

TOP WEBSITES FOR THINGS TO DO IN MAURY COUNTY visitcolumbiatn.com & visitmaury.com

Despite the challenges of the pandemic, Maury County continues to draw new businesses and entrepreneurs looking to set up shop in an idyllic landscape. “The locally owned boutiques and restaurants on the Square are what distinguish downtown,” says Holly. Visitors to the Maple Roost can easily immerse themselves in the Columbia culture like a true local would, and who knows, they might decide this is just the place they never want to leave. n KATIE BAKER is a local Realtor and owner of the Katie Baker Group with RE/MAX Encore in downtown Columbia. Cottage at the Ridge PART ONE By Kathy Fox

We are all dreamers and dreaming big gives us the freedom to think about life and

what we really want out of it even when it does not seem possible. Some just dream big while others make their dreams a reality. This past year has no doubt presented many

challenges for the world, but in rural Spring Hill, Tennessee, Brad Rempel and his wife,

Rebekah, had a vision they wanted to share with the community — a beautiful cottage at the ridge with breathtaking views of middle Tennessee.

However, when all the publishing houses on Music Row shut down due to COVID in March 2020, there became a need to have a place to write songs and forced Brad to find a safe place to write. Brad explained, “If we could have a little kitchen in there and a place where I could have guys to come with a lot of space where we could ride four wheelers, write the songs, and record them we would be set. There’s even Tequila’s Mexican restaurant down the road where we could go afterwards, that would be the perfect day right there.” From that point the dream of building a garage grew into designing a more functional space out of necessity. The process of designing and building the cottage has been a lot of teamwork between Brad and Rebekah. “I love interior design and Brad has the business mind, so I feel we’re a good team in that way. Then when we started deciding what this is going to be we had so much fun designing it, but honestly he was more into because I didn’t think I believed it was really going to happen,” Rebekah said.

At that time the land was not for sale, but Brad kept hoping it would be someday. As part of the country music duo High Valley, Brad

loved this ridge in rural Spring Hill so much that the band shot the video for “I Be U Be” in 2016 in front of the pond with the hill in the background on the property. “I literally called our label and said I know this road with a beautiful view where we want to shoot the video, so there’s a lot of connection for us to this property,” Brad remarked. Rebekah chimed in saying, “I used to think he was just crazy because there was so much land, but he told me he wanted to own it one day. Brad is a big dreamer! I’m not as big of a dreamer, I’m a super content kind of person and I don’t go there, but being with him I’ve learned to just go with the flow and dream with him. His dreams do come true a lot of the time.” 44

The plans for the cottage started as a drawing on a scrap piece of paper with a garage in the back and some living space in the front with a kitchen and a possible loft. With a Mennonite upbringing, Brad heard there was a Mennonite population nearby and was told Summertown Metals could “erect a barn in two minutes.” With nothing to do because of COVID, one day Brad hopped in his car to see if he could hire them to build the cottage. Derek Stoll, one of the Summertown Metal owners, met with Brad and drove him around for an hour looking at structures and literally that day on a handshake it was agreed they would build the cottage. From that

point Josh Lapp, with Summertown Metals, took over and made the little paper drawings into a 3D rendering and architectural drawings bringing them all to life. Then on September 15, 2020, they broke ground, and the project was officially underway. With construction moving forward, that meant it was time to focus on the exterior and interior décor. Originally the exterior color was going to be white, until Rebekah saw black wood siding in a photo on Pinterest. “I was inspired when I saw the photo of the black exterior and wondered how that would look up on the hill. I definitely thought it would look better than white, but Brad thought it was just a little too risky,” Rebekah explained. At the same time, some friends were in the process of building a house in The Grove and were using the color iron ore on their accents. When Rebekah and Brad went to look at their friend’s house, Brad came around to the “bold idea” of the dark colored exterior because the shade was spectacular.

“I can’t wait to see the cottage pop up on the hill when the trees bloom and the landscaping will be done, it will be so pretty. From that day forward the cottage flipped from white to black, you can even see the change on Instagram,” Brad chuckled. Another exterior feature on the cottage that is visible immediately is the standing seam metal roof. The dark colored metal roof adds a sheen to the cottage’s exterior, as well as character with the vertical seams finishing the dramatic look. One more notable feature on exterior is the outdoor shower. “We added this cool shower on the side of the house, which is perfect to clean up in after spending the day outdoors,” Brad commented. “It wasn’t included in the original plan but is the perfect addition.” As progress moves forward at the Cottage at The Ridge, the May/ June issue of Maury County Living will feature the finished interior and completed cottage. Stay tuned to see how Rebekah and Brad partner with Ashley Furniture to create a cozy, colorful, and comfortable living space for themselves and their guests. From the modern chic furniture, to the built-in bunkbeds that can sleep

Music TO Menus By David Sota

According to songwriter Paul Marino, a good song and good food both start with a great concept. Over the past 35 years, he has made his living as a songwriter, producer and performer. In the past few years, Marino has taken the same inspiration he poured into his music into developing menus. “I love the creative process and have an entrepreneurial spirit,” said Marino. “I wanted to try something outside of music to use my creativity.” In 2016 Marino ventured into his first restaurant concept and opened Red 7 Pizza. “I learned a lot about what it takes to open a restaurant. There are so many moving parts, from the food side to the business side. We made a lot of mistakes, especially in the early years, but we’ve learned a lot too,” Marino explained. For the past few years Marino had been considering a new venture, a fusion of Italian and Southern fare and in 2020, opened Barino Italian Southern Eatery. “I built Barino from the ground up; from the

name and the design of the logo to the interior, the lighting, and the furniture to the creation of most of the menu items. I spent a year coming up with the idea of blending Italian with flavors here in the South,” stated Marino. “I toured all over the country for years and became sort of a restaurant junkie so when I started formulating ideas for a restaurant, I built it around a concept I would like with an inviting atmosphere.” In December 2019, Marino began building out his vision in a building he acquired in the Columbia Arts District, just off the downtown square. He set out to create a restaurant with a menu that encompassed Italian items along with an Italian and Southern fusion. Some of the recipes came from family and some were born out of inspiration from traveling the country and various trips he took to Italy. In some ways, you can say he is passing down recipes from generations as well as his own family. Furthermore, Marino came up with many of his own creations along with wonderful recipes he has

adapted from friends he met along the way. Barino Italian Southern Eatery is a casual fine dining restaurant where nearly everything is made from scratch, from the house-made pasta, sauces, dressings, and desserts. “We use quality ingredients as well as locally grown produce as it is available. We even smoke our own brisket and pork,” exclaimed Marino. It is a labor of love and for diners at Barino, they experience that love in the food and

a team that loves their work. We focus diligently on providing an excellent work atmosphere and training atmosphere. From their classic spaghetti with marinara and fettuccine alfredo to their signature brisket Marsala and marinara infused with house-made BBQ sauce and topped with pulled pork. Marino remarked, “People are loving the unique and interesting choices on our menu.” Marino knows just like music, food is more fun and often much better when working with a team of chefs, cooks, and talented like-minded people. Marino commented, “One of the strengths for both Red 7 and Barino is our quality staff and excellent service to our customers. Great service is a byproduct of

We treat each other with politeness, kindness, and respect — and that gets passed on to our customers.” By simply creating a great atmosphere, a positive experience, and quality, both Red 7 Pizza and Barino Italian Southern Eatery have become community favorites. for seven years, selling at farmers markets, grocery stores and beyond. She later helped run a bakery cafe in Antigua, Guatemala, taking ownership of the savory menu and launching the sell-out Sunday Dinners. David attended pastry school in San Francisco, and worked in bakeries such as Tartine and Jane, as well as Milo & Olive in Los Angeles, before opening a TripAdvisor top-rated bakery cafe in Antigua, Guatemala, which is where he met Bethany. Now based in Columbia, Tennessee, the couple worked out of the kitchen at Columbia State for a year selling their baked goods at farmers markets and to wholesale clients. In June 2020, amidst the pandemic, they opened their bakery inside the Factory at Columbia and have been overwhelmed by the support of the local community. Every week, you can stop by the bakery to find their artisanal sourdough breads, signature pop tarts, handmade pastries, cookies, daily lunch specials and more. Some of the delicious items that can found on the daily menu include cinnamon babka, country sourdough bread, strawberry pop tarts, and oatmeal chocolate chip and peanut butter cookies. Of course, there are many other mouth-watering varieties available. For those on a restrictive diet, many of the menu items are naturally vegan, while others are — or can be — ordered with a vegan option. Considering one of the owners is vegan, you will appreciate how important it is to them to offer delicious vegan baked goods. Listed on the website you will find the weekly lunch menu (designed vegan first) and schedule of flavors for the regular bakery items for the week.
