Red elephants on our Christmas cover symbolise prosperity and protection. And because elephants are highly social animals, they are also considered symbols of loyalty, companionship and unity, so it is believed they bring harmony in family bonds. Perfect spirits for Christmas.

Notice the elephants have upturned trunks. This symbolises good fortune. Often in Asian, African and Indian festivals, people make offerings to elephants by anointing them with special oils and decorations, like our cover duo. It's a way of asking that families and communities be blessed with success and good fortune. From the Mayor City of Salisbury Mayor Gillian Aldridge OAM With the festive season now upon us it is a perfect time to take a break while reflecting on some of the year’s greatest achievements before another big year ahead. The recent opening of the Salisbury Community Hub was a wonderful experience which brought together all parts of our community to celebrate the beginning of a new chapter in the City of Salisbury. If you are yet to visit the Hub – located in Salisbury’s City Centre at 34 Church Street – it is worth exploring and offers a range of features including publicly accessible computers, charging stations, modern library with features including a 3D printer, café and a range of bookable and casual indoor and outdoor meeting spaces. Council’s customer services and home and community help services are also located at the Hub. Another exciting project underway is the Create-A-Place Public Art Program, which is transforming local spaces with vibrant artwork – budding artists should keep an ear out in the coming months for Council’s next round of expressions of interest! I wish you and your family a safe and very merry festive season and hope to see many of your faces at the upcoming Mawson Lakes Community Christmas Carols.

Community Conversations continued from page 5 Glamour in the department store I’m a lady in my 70s from the era of elegant shopping in big department stores. I remember when a trip to town (Sydney) to a fancy store like David Jones was a thrilling day out. Women dressed up in hats, handbags and gloves. They strolled along the street admiring the elaborate designer window displays and entered DJ at ground level to the sound of a live grand piano and sweetly scented air. Quality was everything, from stationery to beautiful gowns, and a surplus of staff to professionally fit underwear and footwear. Not anymore. Cost savings led to cuts to staff numbers and staff training, and cheap imports undermined the exclusive brands. The glamour of shopping began to wear thin and in its place came digital shopping offering convenience without having to dress up, travel to town, park and grow foot-weary. Sadly the big department stores are a fading icon of my youth. - Linda Bartrop

Hotel security Scary for us to hear about the robbery and stabbing at the Mawson Lakes Hotel because we often drive down the road to eat there and attend functions. The hotel was one of 36 pubs robbed this year. Hotel owners are calling on the police to do more, but police can’t be everywhere. Pubs are soft targets whose owners need to upgrade their security to protect their staff and patrons. They need more security guards, staff training for emergency situations, safer layout of pubs, and the use of technology, such as DNA spray and CCTV in gaming rooms and bottle shops. - B. O’Donnell, Salisbury Lost ducklings We have a lot of ducks in Mawson Lakes and if you are out walking you may see injured or orphaned ducklings. Despite the best efforts of mum to keep the family together, some naughty little ducklings wander off and get into


trouble with foxes, dogs and cats. Here is what to do. Firstly look for their parents or siblings and reunite them. If the parents are no longer to be seen, collect the tiny orphans. Give them a towel to snuggle into and a warm wheat bag or a warm soft drink bottle to prevent hypothermia which can be a killer. Ducklings can jump high so a box with a lid and air holes is suitable. What’s happening in Mawson Lakes by Beau Brug, Councilllor for West Ward

It’s been a year since you re-elected me to serve as your representative on Council and I would like to give you an update and send my Christmas wishes. Footpath Restored Good news! Access to and use of the footpath on Main St, Mawson Lakes linking The Bridges estate has been restored. This is in front of the current Emperor Apartments Development. No timeline on the completion of the entire development however. Signalised Pedestrian Crossing Works have started on the Pedestrian Crossing on Mawson Lakes Boulevard, adjacent to Endeavour College, Mawson Lakes. The pedestrian activated traffic lights will be green all the time until a pedestrian indicates they wish to cross. The crossing is designed to improve pedestrian safety. Mawson Lakes Christmas Carols On Saturday 14 December, gather the family for a night from 6PM at Mobara Park full of fun, food, face-painting, Santa and plenty of Christmas Carols. This event is organised by the Lions Club of Salisbury. The City of Salisbury is a proud sponsor. Please come out and support this great community event! As always I am free to help you with any council issues; via email, phone, face to face and I hold "Coffee with the Councillor" community meetings at local cafes. I am organising some more shortly.

Learning the ropes by Nigella Boats are part of my history. When I was a little puppy my dad Ben (Linda's son) was a rower and he would tuck me into his jacket and we’d go training on the river just as the sun was waking up. When he became a rowing coach we would head out in a noisy tinny and dash up and down the river. Later Ben took up sailing and I learnt the ropes on Sydney Harbour. Balance and swimming came to me at an early age. But it was a different kind of boat we recently looked at in Port Adelaide. These were old sailing ships that travelled the world with cargo. We checked out the Falie (100 years old) and the clipper City of Adelaide (1864). This ship transported goods and people between England and Adelaide. It was salvaged all the way from Scotland and is now being restored in Adelaide. Its new home will soon be Dock 2 so you can go and see it there for yourself. A perilous journey awaited these old ships and as I listened to awful tales of stormy shipwrecks I was glad I wasn’t "ship's dog" learning the ropes on these old timers.

Christmas Puddings Recipe by Sharna (12)

These cute mini Christmas Puddings are easy to make yet they look so clever. They make a great treat for christmas parties and are fun for the kids to assemble INGREDIENTS 1 packet marshmallow biscuits (try Arnotts Royales) Spearmint leaf lollies Jaffas or red smarties/M&Ms White chocolate suitable for melting METHOD Melt chocolate pieces in the microwave in 30 second bursts, stirring each time. Allow to cool a little. Spoon melted, cooled chocolate onto each biscuit. Top with a jaffa and a mint leaf. Press and hold in place for a few seconds until set.

Melt butter in a sauce pan, add onions and sauté on medium heat for 1-2 minutes, add pistachio nuts and sauté a further minute before adding the crumbs, lemon zest, cranberries and sage, season with salt and pepper, stir well and set aside. 3.Rinse chicken under cold water and dry with a kitchen towel. Season the inside of the chicken with salt and pepper, a sprinkle of paprika, rub the outside with oil and season with salt, pepper and paprika.

VALENTINE’S PANNA COTTA METHOD

In a small bowl, combine cracker crumbs, 2 tablespoons sugar, oats and butter. Press onto the bottom of an 8-in. square baking dish coated with cooking spray. Bake at 180°c for 9-11 minutes or until set and edges are lightly browned. Cool on a wire rack. In a large bowl, beat cream cheese and remaining sugar until smooth. Beat in orange juice and vanilla. Fold in beaten cream. Spread over crust. In a microwave-safe bowl, heat blueberry jam on high for 15-20 seconds or until warmed; gently stir in blueberries. Spoon over filling. Refrigerate until serving.

Pretty in Pink for Valentine’s Day. This is a kid-friendly, no-bake dessert. Divine but yet so simple.

INGREDIENTS

180 gms white cooking chocolate 2 cups thickened cream 1 tbs sugar 1 tsp vanilla essence 1 tbs hot water 1 1/2 tsp gelatine powder

METHOD

Place all ingredients, except water and gelatine, in a saucepan over medium heat until chocolate has melted. Place hot water in small bowl, sprinkle gelatine over and stir until dissolved. Combine with chocolate mixture. Add a few drops of red food colouring, mixing until you get an even pink colour. Pour into 6-8 small ramekins or glasses and set in fridge 4 hours. Next top with whipped cream. If desired, top with sprinkles. Serve or store in the refrigerator to serve later in the day.

METHOD

1. Preheat oven to 180C (160C fan forced). 2. Line base of tin with baking paper 3. Crush biscuits in a food processor. Add butter and mix together. 4. Press crumb mixture into base of 22cm tin. 5. Beat cream cheese and sugar in an electric mixer until smooth. 6. Beat in cornflour, then add eggs one at a time, beating each time just until smooth. 7. Add lemon juice and salt. 8. Add sour cream and beat briefly to combine. 9. Pour batter into tin and bake for 50 minutes 10. Cool completely in tin on a wire rack and refrigerate for several hours or overnight before serving.

5 TIPS FOR A PERFECT CHEESECAKE When you’ve got the know-how it's easy to make a fabulous looking cheesecake. Follow these tips: 1. Plan ahead Take the cream cheese out of the fridge at least 30 minutes before use so it's soft, easy to work with and you won’t get lumps in your cheesecake. 2. Build a perfect base Use a drinking glass to tightly press the biscuit mix into a straight sided dish. Chill in the fridge until firm before adding filling. 3. Don’t overtake If a cheesecake bakes for too long or at too high a temperature, it will be dry and the surface will brown and crack. It’s cooked if you gently shake the pan and the filling has a slight wobble in the centre. 4. Avoid cracking If you remove the baked cheesecake from the oven suddenly it can crack, so turn off the oven, leave to door ajar and rest your creation in the oven to cool completely, then chill it in the fridge. 5. Cut clean Cheesecakes can be messy to cut, so select a long-bladed knife, run it under very hot water and wipe dry. Cut the cheesecake in half, then in quarters, then slices. Rinse the knife after each cut and work quickly while the knife is hot and clean.
