EGG CUSTARD Ingredients: •2 eggs •2 cups milk •1/4 cup sugar •1 Tsp. vanilla extract Preparation: Preheat oven to 325 degrees Fahrenheit. Set four 6 inch ramekins inside a deep baking dish, large enough to hold the cups and have enough room for a water bath. Heat about 4-6 cups of water to a boil and set aside while you assemble the custard. In an electric mixer, beat the eggs and the sugar together on low speed until they just come together. Add the milk slowly, a splash at a time, while continuing to beat on low speed. Wait 5 seconds in between each addition. After doing this for 4 repetitions, add the rest of the milk. Add the vanilla extract. Pour the mixture through a strainer into a pour-spout dish. Pour the custard into the ramekins and top with a pinch of grated nutmeg. Before setting the baking pan in the even, pour the hot water in the baking pan around the ramekins to align with the level of the custard in the cups. Bake for 40-45 minutes. Test with a small knife at 40 minutes. Remove and cool completely on a wire rack. Chill in the fridge overnight.

TORRIJAS

Ingredients: bread slices 1 liter of milk 100 g sugar 2 cinnamon sticks olive oil beaten egg to fry sugar ground cinnamon

Preparation: Heat the milk with the cinnamon sticks and add sugar. Let it cool before soaking the bread. Soak the bread slices in the milk and then soak it in egg batter. Fry them in hot olive oil. Drain them well and put them on blotting paper to remove excess olive oil. then cover them with sugar and cinnamon (about two teaspoons of cinnamon powder per 100 g of sugar).

PESTIテ前S Ingredients: -100 ml of white wine -frying oil -2 tablespoons water -300 ml of honey -1 lemon peel -350 g of flour -100 ml olive oil -2 or 3 teaspoons anise in grain Preparation: Heat the oil in a saucepan with the lemon peel, and when it begins to turn brown, remove and let cool the oil, adding anise seeds (you can substitute a glass of anise). Mix oil with white wine in a bowl, add the flour gradually, stirring with a spoon, until mixture has consistency to work it. Then on a floured surface, knead until it is very soft and flexible (let stand 30 minutes at least). Spread the dough with a rolling pin leaving very thin, cut rectangles of 10 x 5 cm and roll around a corner pressing them well. Fry in hot oil,until brown. Mix honey with two or three tablespoons of hot water and dip the fritters fried in it. Let dry on a rack

SULTANAS Ingredients:

-6 egg whites -125 grams sugar -125 grams of shredded coconut

Preparation: Whisk the egg whites until they form peaks.Add the sugar and whisk to incorporate completely. Then add the shredded coconut and continue stirring until a homogeneous mass. If it looks too dry add a few drops of water until a thick but creamy mass. Having gained the mass, form balls and put it on the oven between 150 and 180 degrees. The cooking time will give us the color of sultanas.

ROSQUITOS DE VINO Ingredients: -1 cup sugar -1 cup of sunflower oil -1 cup white wine -vanilla extract -self-rising flour anise

Preparation: Mix sugar with oil. Add the white wine with the essence and beat it. Sift the flour and keep adding little by little until the dough is not very hard. The mass must be consistent enough to mold the rosquitos. Once the rosquitos are round molded, place them in a plate for the oven. Preheated oven, for 10 or 15 minutes. Put the rosquitos into the oven for 20 min approximately. Control they do not burn! Once out, cover them with sugar enough.

RICE PUDDING

Ingredients: - 2 1/2 cups (600 ml) of whole milk - 1/3 cup (66 grams) of uncooked short grain white rice - Pinch of salt -1 egg - 1/4 cup (50 grams) dark brown sugar - 1 teaspoon of vanilla extract -1/4 teaspoon of cinnamon -1/3 cup (40 grams) raisins Method 1 In a medium-sized, heavy-bottomed saucepan, bring the milk, rice and salt to a boil over high heat. Reduce heat to low and simmer until the rice is tender, about 20-25 minutes. Stir frequently to prevent the rice from sticking to the bottom of the pan. 2 In a small mixing bowl, whisk together egg and brown sugar until well mixed. Add a half cup of the hot rice mixture to the egg mixture, a tablespoon at a time, vigorously whisking to incorporate. 3 Add egg mixture back into the saucepan of rice and milk and stir, on low heat, for 10 minutes or so, until thickened. Be careful not to have

the mixture come to a boil at this point. Stir in the vanilla. Remove from heat and stir in the raisins and cinnamon. Serve warm or cold.

HEAVEN BACON RECIPE Ingredients for 4: - 6 egg yolks -250 gr. sugar -3 dl water For candy: -3 Tablespoons sugar -1 Tablespoon water Preparation -Put sugar in a saucepan with water to the fire and cook until the syrup turns golden. Dip a mold evenly and set aside. -In a saucepan bring the sugar and water and syrup to make a point of thread. Beat the egg yolks and add the syrup gradually, stirring rods -. Strain and pour the caramelized mold. -Bake in a water bath in the oven at 150 째 for about 20 minutes. -It should have be thick and have started to separate of side. Let cool in the fridge.

OIL BUNS Ingredients: Bread dough: - 500 g of bread flour - 250 grams of warm water - 50 grams of milk - 20 grams of powdered milk - 15 g of baker's yeast -10 grams of salt

After the 1st fermentation: 120 g of olive oil For finishing: Sugar for dusting Preparation: Knead the dough ingredients in the pan for a few minutes until it is all very well joined. Let stand until doubled in volume. We incorporate the olive oil and knead again, with patience we will see as the oil is adding to the dough. Divide the dough into small pieces of about 80-100 grams and we are giving buns the way we like. We let it rest again until doubled in volume. Before placing in the oven, sprinkle generously with sugar. Preheat oven to 250 degrees. Let bake at 200 degrees for 15-20 minutes depending on the part of the oven.

APPLE PIE

Ingredients: Taking as a glass of water (300 ml.) -1 glass of whole milk -2 glasses of flour -1 glass of sugar -4 Eggs -3 large apples -1 packet of yeast For decorating

-2 large apples -Peach Jam Preparation Put in a bowl all the ingredients (apples peeled and cored), blend until well blended and smooth. Pour into a mold, which we spread with butter and a little flour before. Decorate with the 2 apples, peeled, cored and cut into slices. We introduce in the centre of the oven (preheated to 180 째), 60 minutes.

Prick the cake with the tip of a knife to know if it's okay. If the knife is clean, we take out the cake. If it’s not ready , we leave for another 5 minutes at the same temperature. Take out the pie and spread peach jam with a kitchen brush.

OLIVE OIL BISCUITS Ingredients: -2 kg of flour -2 kg of bread dough -1kg and 1 / 4 kilo of sugar -1 litre of olive oil -500 grams of butter -100 grams of sesame -100 grams of anise spice -The peel of 2 lemon -500 gr toasted almond -a little of bicarbonate Preparation: Heat the oil with the lemon peel, set aside and add the aniseed. When the oil is cold add the remaining ingredients and knead gently. Leave the dough in a warm place until dough doubles in volume. Then form the biscuits and put in the oven. Preheat oven to 220 degrees. We've made the small: a ball of dough the size of a walnut, spread with the roller leaving very fine, put sugar on top the cover and put on the oven tray. Bake until golden brown

BREAD OF Cテ.IZ Ingredients: -300 gr ground almonds -300 gr of icing sugar - candied fruit -2 eggs -syrup -2 roasted sweet potatoes Preparation: First mix the egg whites with the ground almonds and icing sugar, kneading until the whole dough is consistent. Then we take the candied fruit and cut into thin strips. Next, separate the dough previously prepared into three equal parts.Take one of the parts and put on it the half of the chopped candied fruit. The nextt part we mix with the mashed roast potatoes and a little more of sugar. We put on top of the first part. We put the rest of the fruit on the top. Cover with the third piece of dough covering the side giving oval shape to simulate the shape of a bread, making also several grooves with a knife. 13


Then, with a kitchen brush extend the syrup on the bread. We put the bread of Cadiz in preheated oven at 200 degrees for ten minutes at medium height. Then, we will activate the grill and brown it for about ten minutes.

Fruit Salad Ingredients: -Assorted fruits: bananas, oranges, pears, grapes, apples, peaches and cherries -Orange juice -Sugar Preparation: Wash and peel fruit. Cut into small blocks and mix them all together in a bowl with orange juice If you want you can add a little sugar, but it is always better not to use it.
