Date & Walnut Loaf Or muffins

225g Chopped pitted dates

1 tsp Bicarbonate of soda

85g Softened butter

85g Dark brown sugar

120ml Boiling water

1 beaten egg

225g Self-raising flour

85g Chopped walnuts

Method

1. Put dates, bicarbonate of soda, butter, sugar and boiling water in a pan and bring back to boil and simmer for a couple of minutes until the dates have broken down and butter has melted. Set aside to cool.

2. Preheat oven to 170 degrees and line a loaf tin with either a liner or greaseproof paper.

3. Once mixture is cold, add egg, walnuts and flour and combine to a smooth batter.

4. Transfer batter to your prepared tin and bake for about 50 minutes or until a skewer comes out clean.

5. Alternatively, instead of baking in loaf tin, you can ½ fill muffin cases and bake for 25 minutes.

6. Remove from oven and allow to cool on rack until ready to eat.
