Devonshire Scones

250g Self-raising flour

2 tsp Baking powder

60g Butter

30g Caster sugar

1 egg

150 ml Buttermilk

Jam and cream to serve

Method

1. Preheat oven to 220 degrees and line a baking tray with parchment paper.

2. Sift flour and baking powder in a large bowl and rub the butter into the flour until the mixture feels like fine bread crumbs. Stir in sugar.

3. Break egg into measuring jug and make up to 150ml with the buttermilk (if you can’t get buttermilk, add lemon juice to milk and allow to stand for 10 minutes).

4. Bring together the mixture until it’s a sticky dough. Don’t overmix.

5. Put mixture onto lightly floured surface and gently roll out and cut into rounds with a pastry cutter.

6. Brush the scones with milk and bake in oven for about 10 minutes until lightly golden brown.

7. Cool and serve with jam and cream.
