I hope you are enjoying the beautiful weather and feeling good about life.

For those of you who are struggling, my wellbeing article this month is about anxiety. This coincides with “Mental Health Month” which have been in existence since 1949 and have yearly themes relating to mental health issues - this year’s theme is anxiety.

No matter where you are in the world, you can’t ignore the fact that King Charles’ coronation is taking place in May. Moira’s Kitchen features coronation recipes including the main dish, Coronation Quiche direct from the Royal’s website. I have brought back Coronation Chicken and Victoria Sandwich which we featured for the Queen’s Jubilee last June as some of you may have missed the issue.

Health this month is all about the benefits of lemons – something we take for granted and which surround us in our region – you may be surprised at the extent that lemons can benefit your health.

Whatever you are doing this month, remember you only have one life – so live it to the full and remember to reach out to others who may need a listening ear or a little help.

Talking Wine

The Aragón wine region lies in the northeast of Spain and prides itself on many UNESCO protected historical monuments and eye-catching architecture in uenced by its Moorish history.

The vineyards of Aragón region cover more than 4 billion square feet and the region is divided into two by the river Ebro. It has two mountain ranges, the Pyrenees, and the Iberian Range. The rich landscape and unique climate are ideal for grape growing. The region has four designations of origin, DO Cariñena, Calatayud, Somontano and Campo de Borja.

Whilst they all produce exceptional wines, DO Somontano is one of the most popular ones, created in 1984 with the main wine production centred in the town of Barbastro. The name “Somontano” – “beneath the mountain” de nes the geographic area which runs from the foothills of the Pyrenees down to the Ebro valley.

Originally the Aragón wine region produced bulk, entry level wines which in most cases were the result of wine cooperatives. In more recent years, modern wine making technology has allowed wineries to develop their skills and in turn develop quality wines with more complexity, balance, and nesse.

One of the oldest wineries in Somontano is Bodegas Osca with underground cellars that date as far back as 1480. A family business to this day, with an incredible history and stories of gallant knights and feudal lords. Owned by the Borruel family which includes Gregorio as oenologist, Félix the viticulturist and Angel as GM and sales director. Their philosophy is a mix between tradition and modern, traditional and avant-garde production. The modest production in the vineyard converts into 1,500 hectolitres per year with meticulously hand-crafted wine that is produced in small stainless-steel tanks with just 10,000 litre capacity. A family with a passion for perfection and certainly worth a visit if you take a tour to this part of Spain.

The grape varieties used for red wine production are Garnacha, Tempranillo, Merlot, Pinot Noir, Syrah, Moristel and Parraleta, whilst for white wine they are Macabeo, Garnacha blanca, Chardonnay and Gewürztraminer.

Aragón wines are renowned for quality and coveted around the world, why don’t you give them a try.

King Charles III Coronation

The signature dish for Queen Elizabeth’s Coronation in 1953 was “Poulet Reine Elizabeth” which became known as Coronation Chicken. For the coronation of King Charles, the signature dish is Coronation quiche.

Coronation Chicken

Ingredients

1 Cooked breast of chicken

6 tbsp Mayonnaise

2 tbsp Mango chutney

2 tbsp Sultanas

Chopped coriander or parsley

3 tsp Curry powder

1 tsp Cinnamon

1 tsp Cumin

2 tbsp Chopped apricots

Method

1. Dice cooked chicken (this is great for using left over chicken).

2. Mix the mayonnaise, and all the spices together – check it’s to your taste, I like to taste the curry in mine.

3. Add in the sultanas and apricots (or leave out if you don’t like them).

4. Bring together & garnish with chopped coriander or parsley if you prefer and serve.

Coronation Quiche

(direct from the Royal Family website - royal.uk)

A deep quiche with a crisp, light pastry case and delicate flavours of Spinach, Broad Beans and fresh Tarragon. Eat hot or cold with a green salad and boiled new potatoes. x1 20cm Flan Tin

Method

1. Sieve the flour and salt into a bowl; add the fats and rub the mixture together using your finger tips until you get a sandy, breadcrumb like texture.

2. Add the milk a little at a time and bring the ingredients together into a dough.

3. Cover and allow to rest in the fridge for 30-45 minutes.

2. Lightly flour the work surface and roll out the pastry to a circle a little larger than the top of the tin and approximately 5mm thick.

3. Line the tin with the pastry, taking care not to have any holes or the mixture could leak. Cover and rest for a further 30 minutes in the fridge.

4. Preheat the oven to 190°C.

Ingredients

125g Plain flour

Pinch of salt

25g Cold butter, diced 25g Lard

2 Tablespoons milk

Or 1 x 250g Block of ready-made shortcrust pastry

Filling

125ml Milk

175ml Double cream

2 Medium eggs

1 Tablespoon chopped fresh tarragon, Salt and pepper

100g Grated cheddar cheese,

180g Cooked spinach, lightly chopped

60g Cooked broad beans or soya beans

5. Line the pastry case with greaseproof paper, add baking beans and bake blind for 15 minutes, before removing the greaseproof paper and baking beans.

6. Reduce the oven temperature to 160°C.

7. Beat together the milk, cream, eggs, herbs and seasoning.

8. Scatter 1/2 of the grated cheese in the blind-baked base, top with the chopped spinach and beans and herbs, then pour over the liquid mixture.

9. If required gently give the mixture a delicate stir to ensure the filling is evenly dispersed but be careful not to damage the pastry case.

10. Sprinkle over the remaining cheese. Place into the oven and bake for 20-25 minutes until set and lightly golden.

Moira’s Kitchen .. I tried the recipe and added a little garlic and smoked paprika to the spinach as it wilted to give it a bit more flavour. I used a slightly bigger tin and added more eggs but could have added even more for a deeper quiche, but it was still a winner.

Date & Walnut Loaf Or muffins

Ingredients

225g Chopped pitted dates

1 tsp Bicarbonate of soda

85g Softened butter

85g Dark brown sugar

120ml Boiling water

1 beaten egg

225g Self-raising flour

85g Chopped walnuts

Method

1. Put dates, bicarbonate of soda, butter, sugar and boiling water in a pan and bring back to boil and simmer for a couple of minutes until the dates have broken down and butter has melted. Set aside to cool.

2. Preheat oven to 170 degrees and line a loaf tin with either a liner or greaseproof paper.

3. Once mixture is cold, add egg, walnuts and flour and combine to a smooth batter.

4. Transfer batter to your prepared tin and bake for about 50 minutes or until a skewer comes out clean.

5. Alternatively, instead of baking in loaf tin, you can ½ fill muffin cases and bake for 25 minutes.

6. Remove from oven and allow to cool on rack until ready to eat.

Rustic Toffee Apple Pie

Ingredients

Pastry:

280 g Plain flour

140 g Cold unsalted diced butter

3-4 tbsp ice cold water

2 tbs castor sugar

Method

Filling:

4 Bramley or Granny Smith

apples, peeled, cored and sliced

1 cup Dark brown sugar

2 tsp Cinnamon

2 tsp Cornflour

2 tsp Water

1. To make the pastry add the flour and diced butter to a food processor and blitz until it resembles fine breadcrumbs and then add just enough cold water until it comes together as a dough. Knead briefly. If doing this by hand, lightly rub together the flour and butter and then add the water and bring together as a dough.

2. Place dough on sheet of clingfilm and chill in fridge for at least 30 minutes.

3. To make the filling, bring together the apples, sliced or diced, together with the sugar and cinnamon in a large pan and heat until sugar has melted, and apples begin to soften.

4. Add cornflour and water to apples and continue to cook for a couple of minutes until everything is combined. Remove from heat and allow to cool.

5. Lightly grease your pie plate or tin and preheat oven to 180 degrees.

6. Remove pastry from fridge and cut in half.

7. Roll out the pastry and drape into your tin. Place a piece of baking paper on top and add baking beans or rice to weigh down the paper and bake blind in oven for 10 minutes. Remove from oven and carefully remove paper and baking beans. Leave to cool for 10 minutes.

8. Roll out the remaining half of pastry just a little bigger than your tin.

Devonshire Scones

Ingredients

250g Self-raising flour

2 tsp Baking powder

60g Butter

30g Caster sugar

1 egg

150 ml Buttermilk

Jam and cream to serve

Method

1. Preheat oven to 220 degrees and line a baking tray with parchment paper.

2. Sift flour and baking powder in a large bowl and rub the butter into the flour until the mixture feels like fine bread crumbs. Stir in sugar.

3. Break egg into measuring jug and make up to 150ml with the buttermilk (if you can’t get buttermilk, add lemon juice to milk and allow to stand for 10 minutes).

4. Bring together the mixture until it’s a sticky dough. Don’t overmix.

5. Put mixture onto lightly floured surface and gently roll out and cut into rounds with a pastry cutter.

6. Brush the scones with milk and bake in oven for about 10 minutes until lightly golden brown.

7. Cool and serve with jam and cream.

Victoria Sponge

Method

1. Preheat the oven to 180°C/Fan 160°C/gas 4.

2. Grease and line two sandwich tins with baking parchment.

Ingredients

225g Softened butter

225g Caster sugar

4 Large eggs

225g Self-raising flour

2 Level tsp baking powder

2 x 20cm Greased and lined sandwich tins

For The Filling and Topping:

4tbsp raspberry jam

A little castor sugar for dusting top (or non-traditional – fill with jam and whipped cream & dust with icing sugar)

3. Measure the butter, sugar, eggs, flour and baking powder into a large bowl and beat until thoroughly blended.

4. Divide the mixture evenly between the tins and level out.

5. Bake in the preheated oven for about 25 minutes or until well risen and the tops of the cakes spring back when lightly pressed with a finger.

6. Leave to cool in the tins for a few minutes then turn out, peel off the parchment and finish cooling on a wire rack

7. When completely cold, sandwich the cakes together with the jam (or jam and cream if non-traditional)

8. Sprinkle with sugar to serve.

LEMONS - The SUPERFOOD that could prolong your life!

For many of us, we are fortunate to live in an area filled with beautiful citrus groves. In fact, the Valencian region is the largest exporter of citrus fruits in the world. Oranges and lemons surround us here in our region, but have you considered what benefits you can get from lemons, other than a slice in our gin and tonic?

Lemons are a low-calorie food choice that provides a variety of nutrients and general health benefits. Although lemons are generally added to food and drinks there are many benefits to making lemons a daily part of your diet. Here are some you may not have known about:

Antioxidant

Lemons are part of a team of substances called antioxidants which group together to fight free radicals which can damage your cells and lead to health problems. Lemons have the highest level of eriocitrin, a flavonoid which is a strong antioxidant agent that could inhibit many diseases.

Keep Wrinkles Away

Lemons are full of vitamin C which your body must get from food sources as it can’t create it. It naturally helps make collagen which keeps the springiness in your skin – without it, wrinkles start to appear and although that’s a natural part of aging, you can slow it down with the right vitamins and nutrition.

Lowers Blood Pressure

Both the peel and the juice of the lemon squeezed into a glass of water can help with blood pressure issues. The ideal time to drink is before or with breakfast in either warm or cold water. This kick starts your day, but you can drink at any time of the day and especially good before meals. Ditch the sugary, fizzy drinks, and replace them with lemon water. Remember reaching out for fizzy drinks is often a habit and you can control and change your habits when you are mindful of what you are drinking. If you are taking blood pressure medicines, don’t stop or reduce your intake without checking with your doctor.

Pump Up Your Heart

Lemons are good for heart health as they are high in fibre which helps lower bad cholesterol (LDL). This enables the blood to flow more freely through your arteries, which in turn lowers risk of blockages in the arteries. Lemons are also rich in flavonoids which scavenge free radicals to improve glucose tolerance and insulin sensitivity. According to the US National Library of Medicine, the intake of citrus flavonoids has been associated with improved cardiovascular outcomes.

Boost Your Brain

When you feel sluggish or have that afternoon dip in energy, a large glass of water with lemon will re-energize you and help you clear your mind. A big glass of water will also do this, but the addition of lemon adds potassium which helps the water rehydrate the brain and enables more oxygen to reach the brain. The flavonoids also help protect against general cell breakdown and inflammation of the brain which can lead to Alzheimer’s and Parkinson’s disease. Drinking water with lemon protects your brain cells from toxic substances.

Kills Bugs

It’s that salad time of the year and you want to ensure there are no hidden bugs in your greens. Because of the high acid content in lemons, it can help kill bacteria that may be on your food or your chopping board. Mixing half and half, vinegar, and lemon juice, and adding it to your lettuce or greens and letting it sit for 15 minutes should ensure, as well as adding flavour, it eliminates any bacteria.

Improve Cholesterol

Lifestyle, diet, stress, and lack of sleep can add to poor heart health including the development of high levels of cholesterol. According to an article in India Times, a popular tea in India, made with lemon, ginger and garlic could be the answer to lowering cholesterol. Loaded with antioxidants, minerals and vitamins from ginger, lemon and garlic, the natural components help reduce the fat and assist in unclogging the arteries. Simple to make, just get a pan and add 5 cups of water, 3-inch piece of ginger root and 4 cloves of garlic and bring to the boil. Turn off the heat and then add the juice from 3 lemons with a little bit of the lemon zest. Store the drink and warm it up

Kidney Stone Prevention

A diet too high in animal protein and sodium can lead to the formation of calcium that creates painful little rocks called kidney stones. The citrates in citrus fruits, lemons, and limes, binds to the calcium and helps block the formation of the stones. Studies have shown that drinking one half cup of lemon juice concentrated in water each day can reduce kidney stone risk.

Gum Health

Bleeding gums could relate to a lack of vitamin C in your system. Lemon is a natural antiseptic which can be helpful in helping with skin problems and helping you to protect your gums.

Fresh lemon juice can help reduce toothache when dabbed on the aching tooth. Also, dabbing lemon juice onto your gums can stop them from bleeding. Be aware that lemon juice is acidic and too much acid can damage the enamel on your

Weight Loss

As with anything in life, to get a positive result you need focus and commitment. If you are looking for miracle weight loss, I am sorry to say you are not going to find it. However, as part of a healthy regime of eating and exercise, there is hope. Lemon diets which involve a detox and only drinking lemon water should be avoided as they are too restrictive and unhealthy.

Including lemon water, with all its amazing health benefits, in your new healthy regime can make a lot of sense.

• Lemon water has diuretic properties, helping you lose excess water that is stored in your body.

• Remember that lemons have flavonoids with antioxi dant properties that can help detox and cleanse your intestinal track.

• Lemon juice is high in vitamin C, beneficial for your health and can assist in burning fat.

• Lemon peel is high in pectin, a type of fibre that keeps the food longer in the intestine and avoids the blood sugar spikes, keeping you full longer and minimising the risk of snacking.

In conclusion, there are immense benefits of adding lemon juice and a little lemon zest to some water and making this part of your daily regime.

ANXIETY - Mental Health Awareness Month

Mental health month has been around and observed in US every May since 1949 and was originally started by the Mental Health America organization. Every year it focuses on a different theme and this year it is ANXIETY.

Even with several global awareness programmes relating to mental health issues, there is still a stigma associated with mental health and people hesitate to seek help or even talk about it with family and friends for fear of being judged. During Covid, Mental Health America chose “tools 2 thrive” as its theme to help people coping with depression, stress etc. and tried to help people find something to be positive about.

What is anxiety?

Anxiety is a feeling of worry, nervousness, or unease about something with an uncertain outcome.

Words associated with feelings of anxiety:

Worry Concern Apprehension Unease Fear Agitated Nervous

The opposite would include calmness and serenity.

When you have anxiety, recognizing the symptoms and taking steps to manage the condition before resorting to medical assistance is the first course of action.

Are you anxious? Maybe you’re feeling worried about a problem at home, at work or with friends? In life, everyone experiences anxiety from time to time. For most people, feelings of anxiety come and go, only lasting a short time. Some moments of anxiety last anywhere from a few minutes to a few days.

For some people, these feelings of anxiety are more than just passing worries or a stressful day at work. Your anxiety may not go away for many weeks, months, or years. It can worsen over time, sometimes becoming so severe that it interferes with your daily life.

Symptoms of Anxiety:

Shortness of breath

Panic attacks

Sleeplessness

Withdrawing from social gatherings

Anxiety -v- Fear

Increased heart rate

Irritability

Weakness Trembling

Fear is an appropriate response to a perceived threat often referred to as the flight or fight response. This means that it is natural to react to a potentially dangerous situation. Where it gets out of control is when you are seeing threats and feeling uneasy about situations that are not putting you in danger.

Fear and anxiety can be differentiated e.g., fear is short lived, present focused, i.e., the danger of the moment and geared towards a specific threat. Anxiety on the other hand is long lasting, promoting excessive caution and interferes with your mechanism to cope constructively.

What Causes Anxiety?

Unfortunately, it is not well understood what causes anxiety and anxiety disorders. For some people, genetics will play a part, for others it may have stemmed from a medical illness where the first signs were physical rather than mental. Traumatic experiences either in the past or more recently can trigger worry and concerns.

When should you see a Doctor?

Treating anxiety and mental health issues is better early on rather waiting until symptoms get worse. It can be difficult to tell when anxiety is a serious medical problem rather than a bad day at the office.

You should visit your doctor if:

• you feel as though you’re worrying so much that it’s interfering with your daily life (including hygiene, school or work, and your social life).

• your anxiety, fear, or worry is distressing to you and hard for you to control.

• you feel depressed, are using alcohol or drugs to cope, or have other mental health concerns as well as anxiety.

• you are experiencing suicidal thoughts.

• you are experiencing suicidal thoughts or are performing suicidal behaviors.

Find the right Professional Help

If your Doctor agrees that “talking therapy” is suitable for you, find the right professional and engage their services and support. Remember dealing with anxiety and anxiety orders takes time and is an ongoing journey. Be patient.

Self-Care

Coping with anxiety is a 24 .7 journey and even if you have a therapist, there are things you can do for yourself to help reduce your anxiety.

Exercise – exercise release endorphins that make you feel good. Get enough sleep.

Get yourself outside.

Healthy diet – focus on what you are consuming and eat for health.

Avoid alcohol and/or drugs. Stop smoking.

Make a daily routine.

Meditate

Read a book.

Keep a diary of how you are feeling and any triggers. Reach out to people.

Talk – don’t keep things inside

Remember there is always someone worse off than you. Find something to be grateful for and remind yourself daily that you are in a good place and deserve the best.

The region of Aragón, although quite small, played a major part in the drive to restore Iberia to Christian control. The earliest battle to displace the Muslim invaders was won by the Visigoth king Pelagius (More commonly known in Spain as Pelayus) at the battle of Covadonga. A battle which was fought amongst the stunningly beautiful mountains of the Picos de Europa. Successive victories for Pelayo meant that, somewhat uniquely in Spain, Aragón were never again to suffer the Moorish domination that persisted in much of Spain for up to another 700 years. It is fitting therefore that by the fifteenth century, it was King Alfonso II from Aragón who joined forces with Isobel the catholic of Castilla following their dynastic marriage in 1469 to finally end Moorish rule in Spain at Granada in the year1492.

The city Zaragoza, has grown to become the thriving capital city of Aragón. Situated halfway between Madrid and Barcelona, the city has developed a buzzing economy Popular as an attractive tourist destination, with a lively and vibrant street culture and enjoying all the facilities that you would expect in a major city, they also have the added bonus of being associated with the internationally famous Rioja wine producing industry with many different types of grapes grown in the surrounding fields.

On the banks of the river Ebro which flows through the city from Cantabria on its journey to meet the sea at Tarragona, you find many of the magnificent centuries old buildings that make this city such a pleasure to visit. Mini cruises, canoes, and rowing boats full of happy visitors float effortlessly across the calm waters of the river. Tall ornate buildings line the banks of the river, throwing mirror images across the water. Buildings like the stunningly eye-catching Basilica de nuestra Senora de Pilar. A building with an equally ornate interior. Nearby are the wonderfully sturdy walls of the Aljaferia Palace. A Magnificent tribute to the skill and ingenuity and skill of 11th century inhabitants of this imaginative city. A fabulous building with lots of interesting stories attached to it. If you like diversity, how about the Cathedral de San Salvador which offers Moorish, Romanesque and Neoclassical architecture. This is a city that gives you everything. Wide open cafe filled squares. Ideal for people watching. Beautifully constructed buildings with lovely exterior and interior finishes. Attractive gardens. Good shopping, if that is your thing. Or you can do it the lazy way by taking to the water. Or use a hop on hop off the city tourist bus.

We are not finished yet though. Just over an hour's drive away from Zaragoza is the most delightful 800 year old Monastery de Piedra. An awe inspiring monastery, situated in an oasis of quite magical gardens. A wonderful selection of green broad leaved trees, tropical plants, racing silver streams, cascading waterfalls. You can even go behind one of these to view the world from the other side. In this beautiful place it would be hard not to feel a sense of peace and contentment rushing over you. But just in case that doesn't work we will also on this day out take you for lunch at the monastery restaurant.

Finally, Belchite. A reminder of some of Spain's darkest days. Belchite is a timely reminder of the futility of war. Hosting as it did, a battle during the civil war which led to the destruction of the town and 5,000 deaths. A sobering but interesting visit. For this one a local guide will be on hand to help us understand the enormity of what happened there.

This is a varied and extremely interesting visit to one of the less visited regions of Spain which is offered by David's Coachtrips.

Is it a good option to transfer your house in Spain to your children?

Transferring your assets to your heirs prevents them, after your death, from having to transfer, for example, your house to your name, since you have already done so during your lifetime and, therefore, this property will not form part of your inheritance after your death. In this way, your heirs can have tax advantages at the time of your death, in case you have more assets.

But what do you know about the taxation of this transfer?

You have to take into account that when making a donation, there are 3 different taxes that come into play in order to make a good decision, which does not involve a high economic cost for your pocket or that of the person receiving the donation. These taxes are: Donation Tax, Personal Income Tax, and Municipal Capital Gains Tax, if what is being donated is a real estate property.

But be careful, the responsibility for the payment of each of these taxes is different, some have to be paid by the person who makes the donation and others by the person who receives the donation.

For example, if you are a tax resident in Spain and you decide to donate your Spanish house to your son, you will declare the increase in value of your house, which is the difference between the acquisition value and the donation value, and you will do so when making your income tax declaration. Your son who receives the donation, on the other hand, will have to declare the Donation Tax, as well as the Municipal Capital Gains Tax.

It is advisable that you, when considering this type of operation that may affect your pocket, have an expert in the matter, who can advise you on the repercussions, and who knows the type of reductions that may be available, if, for example, the person receiving the donation is your son or daughter. This advice will ensure that all those involved in the donation are aware of the real financial cost of the operation.

Healthy ageing is dependent on many factors such as absence of disease, good physical and mental health and social interaction, especially through team sports or group activities.

At Formentera WFC our primary goal is to provide a group sport for the over 50’s, where the emphasis is on physical and mental wellbeing. We also appreciate that there are those who do not wish to engage at a competitive level and we complement the sporting aspect with a varied social events calendar for those who are looking for companionship, opportunities to socialise and reduce isolation.

We understand that people in an ageing dynamic have concerns about the safety of participation in sport and the chances of being injured. To that end we offer varying levels of engagement, starting with the fun open Wednesday weekly sessions, where the player decides their own level of involvement. The next level challenges players at the Friday training sessions and is aimed at those who wish to enhance their knowledge tactically and physically. This leads on to participation in competitive friendlies, tournaments and the Costa Blanca walking football league.

We are honoured to be fully affiliated to Formentera CF and receive fantastic support from the local townhall. Over the weekend 25th27th May we host our own annual invitational tournament and with the support of many local businesses we are proud to present an international flavour of walking football to the Formentera community.

According to a recent study, travellers rank an ocean cruise as the best overall vacation experience. In addition to being fun, a cruise vacation provides a number of health benefits which are supported by third party research. Cruise Lines International Association (CLIA) revealed 12 reasons why taking a cruise is a great choice for vacationing and the overall health of the cruise traveler.

"People today seem more stressed than ever before. Vacations are important to allow the mind and body to re-energize and relax," said Susan Krauss Whitbourne, Ph.D., professor of psychological and brain sciences at the University of Massachusetts Amherst. "A cruise vacation in particular provides a variety of places to see as well as the chance to take part in on-board activities in a safe and healthy environment."

"The great thing about a cruise is that you can do as much or as little as you want, and you'll still have a nice break from your daily routines at home, " Whitbourne continued.
