For the love of it Matt Moran talks a lot about love and respect. Not that he’s getting soft – he’s just lucky enough to be able to talk about his work this way, even after nearly thirty years. “I don’t know what made me fall in love with cooking,” says Matt. “I hated school, school hated me so I left at fifteen to work at La Belle Helene. I knew I was doing well because I never got the bollocking the other kids got.” Matt thrived on the discipline, even the hundred hour weeks and quickly recognizes the same spark in kids working for him. “If you are passionate you’re always going to be better at it, no matter what.”
Matt speaks with enormous respect about his twenty-two year business partnership with Peter Sullivan. “I wouldn’t be where I am now if it wasn’t for Pete, I mean every word of it, he’s an amazing man. We make a great team.” He explains they were never just two mates out to have a go - they handpicked each other to open their first restaurant in 1991. Soon enough they were winning awards and have shown an uncanny ability to read the market ever since 5
- from the fine dining at their flagship ARIA restaurants, to the relaxed neighbourhood setting at CHISWICK. Peter and Matt’s businesses include ARIA Sydney, ARIA Brisbane, CHISWICK, ARIA Catering, Opera Bar and River Bar and Kitchen. “Chefs today can’t just cook the food they want to cook. Listen to your customers, the market.” he says. “We listen to feedback from everywhere. It’s very hard, but mcgrath.com.au

criticism will make you a better person – I keep telling my chefs that!” Matt and Peter’s ability to respond to demand is certainly well illustrated at CHISWICK, which quickly gathered popularity for it’s relaxed dining, shared plates and locally grown produce. The menu features lamb and beef from the Moran farm along with produce from their onsite garden. Even
though the garden isn’t quite big enough to make them self-sufficient, everything grown is used. Presently lush with edible flowers, lettuce, radishes and waist-deep basil, it provides a stunning visual reference to their food passion and principles. Restoring this historical site in Woollahra was clearly worth it given a table at CHISWICK is currently one of the toughest to get in Sydney. Describing their sizeable team as exceptional Matt says “we expect a hell of a lot and make them accountable but we give them a voice. Gone are the days with a chip on my shoulder when I decided that’s how it is, that’s how it stays. Sometimes I bring that back a bit,” he laughs, “but it’s a collective. I’m influenced by my guys who have worked with Heston, Gordon or whoever - I want to learn from them.”

Matt admits he is hard on his team when it comes to the numbers. “I like to make money like everyone else – it lets us do what we love. When someone comes in with white truffles, I know I’m not going to make a cent on them but I want the guys to see them and use them. There’s always a part of me that does it for the love.” As one of Australia’s most recognizable chefs, Matt is the public face of the partnership and is forthright about the pay-off. “Obviously it helps the restaurants. I have a different life doing the media side of it. Pete sees the benefits for all of us.” Matt says he gets a buzz doing television and while he enjoyed some of his shows more than others, he is definitely keyed-up about his next project, Paddock to Plate with Foxtel. This time it’s his
show and he gets to do the cooking with like-minded producers and growers. “It’s the best of everything I’ve ever done in television.” Filming the series will also allow Matt more time with his other love – the family farm -where Matt’s father continues the five generations of Moran farming heritage. With enough happening to keep them inconceivably busy, hopefully Matt and Peter stop from time to time to notice all they have achieved.
