A community staple just got more indispensable
Thetford is a small community, but with its proximity to Interstate 91 and the New Hampshire border, Bonnie Huggett says, there’s a large diversity of people that pass through.
The 73-year-old Huggett, who has operated Huggetts Mini Mart since 1991, says they see doctors and lawyers, loggers and other blue-collar workers.
“I think they all enjoy coming to Huggetts,” she says. “I’ve had many people say to me, ‘What did we do before Huggetts was here?’ You know, they had to travel quite far.”
The shop is adjacent to an automotive garage. Bonnie Huggett and her first husband ran the garage after taking over from his father, who had founded it. After her husband died in 1979, she ran it a bit longer before leasing the space to a separate mechanic business. In 1991, she added the expansion that would become the mini-mart.
Huggett said the mini-mart has one of the largest craft beer caves in the area and a large wine department. They also sell gas and traditional convenience store fare including chips, frozen foods, ice cream, CBD oil products, soda and an increasing volume of energy drinks.
“Energy drinks have become a real product out there,” Huggett said. “People are going crazy over them, more so than soda.”

In the early days of the store, a separate section was dedicated to a video rental service. As fewer people rented DVDs and videos, that portion of the business ended.
A community bank rented the space for a while and operated it through a separate entrance.
After they ended their lease, Huggett knew it would be hard to find anyone else who might want to rent it as a separate office. During COVID, Huggett used it as a storage space.
“It was hard to get products,” she said. “We would store extra stuff in there.”
Then, the store was approached by the Vermont Department of Liquor to see if they would be interested in using the space as an 802Spirits Agency Store.
At the end of January this year, Huggetts Mini Mart reopened that section of their store with a selection of locally distilled products and popular spirits from national brands.
“We were very pleased and happy to,” Huggett said. “It’s done quite well.”
While Bonnie Huggett doesn’t consider herself an expert on spirits, she says her son Toby Huggett, who works full-time at the store, is understanding of the liquors they offer.
“He’s well versed,” Huggett says. “He will gladly advise somebody if they’re unsure as to what they would like to buy. He does the same thing with the beer cave. He reads up on the liquor.”
The addition of the 802Spirits Agency Store in Thetford helps expand access to a region where the next closest locations are all more than 10 miles away. It’s just another way Huggetts Mini
Mart can serve its local customers.
“We try to emphasize neatness to our employees, to keep the store clean and organized,” Huggett says. “They do a good job. I have some fantastic employees.”
In particular, Huggett credited cashier Melinda Bolles, who has worked there for about seven years, as a dependable employee.
Huggett says she encourages employees to rotate and pull outdated products and try to stay off their cellphones while customers are present.
“My philosophy is, customers are one of the most important things,” Huggett says. She tries to find ways, even small ones, to put the customer first, explaining that if she needs
to talk to an employee and they are assisting a customer, she’ll wait til they’re done the transaction.
“If we have somebody, like an elderly person, who needs their gas pumped, we’re more than happy to oblige,” she says.
With more than 30 years of serving Thetford and its surrounding community, that approach seems to be working.
“It’s a great community, and we’re proud to be here.”

COVERED Cocktails Bridges
You might hear some call them “kissing bridges” as they offered a bit of seclusion in the yesteryear for couples looking to steal a kiss on a carriage ride home. These days, you may still catch a peek of couples kissing, though most visitors are stopping by for the scenery and beautiful craftsmanship of the bridges themselves, rather than their paramour.
CORNISH-WINDSOR BRIDGE WINDSOR, VERMONT
The state of Vermont has more than 100 covered bridges. With its relatively small geography and abundance of bridges, the state has the highest density of covered bridges per square mile in the United States.
Cornish-Windsor Bridge
Windsor
Cornish-Windsor Bridge is the longest two-span historically covered bridge in the country at 460 feet. Those descriptors are necessary for the superlative as Ashtabula, Ohio, constructed a modern 613-foot, four-span, covered bridge in 2008, and the Hartland Covered Bridge in Canada is the world’s longest at 1,282 feet, with seven spans and a single lane. The Cornish-Windsor bridge is a Town lattice-truss construction, which is one of three covered bridges that crosses the Connecticut River into New Hampshire. The other stateline crossing bridges are the Columbia Bridge and Mount Orne Covered Bridge. As an homage to the two states that the Cornish-Windsor Bridge spans, try a two-ingredient cocktail.

The oldest remaining covered bridge in Vermont has a unique feature. It’s one of the seven doublebarreled, or two-divided lane, bridges in the United States. The Burr Arch-style bridge is 199 feet long and is labeled as being built in 1820, making it one of the oldest covered bridges in the country as well. Other nearby covered bridges include Henry Covered Bridge and Silk Covered Bridge. Toast to the construction of this two-lane bridge with a Double Barrel cocktail.

2 dashes Angostura bitters
2 dashes orange bitters
1 ounce sweet vermouth
1 ounce dry vermouth
1 ounce whiskey (rye whiskey preferred)
Combine all ingredients in a mixing glass. Add ice. Stir ingredients for 10 to 15 seconds taking care not to let ice melt too much, diluting the drink.
Strain into glass.
Garnish with a maraschino cherry.
Schoolhouse Bridge

Built in 1871 near downtown Lyndon, the Old Schoolhouse Bridge is a single-span king post bridge. Once open to vehicle traffic, it is now open only to pedestrians and crosses the Passumpsic River. A modern bridge was built just north of it. Nearby are Chamberlin Mill Covered Bridge, Miller’s Run Covered Bridge, Sanborn Covered Bridge and Randall Covered Bridge. Water Under the Bridge
1 ½ ounces Beefeater gin
1 ounce watermelon juice
¾ ounce lemon juice
½ ounce Ancho Reyes liqueur
½ ounce lavender honey syrup
Mix all ingredients in a shaker. Strain into a coupe glass.
Garnish with a watermelon slice.

Honey
Bring water and lavender to a boil to make tea. Remove from heat. Add two parts honey to one part lavender tea. Stir until combined. Store in refrigerator for up to one month.
Emily’s Bridge/Gold Brook/Stowe Hallow Covered Bridge Stowe
While there are many covered bridges with New England charm and history, Emily’s Bridge (also called the Gold Brook or Stowe Hallow Bridge), built in 1844, also has an air of mystery. Stories say that a young woman named Emily vengeful spirit has been said to take swipes at passing cars leaving claw-like gouges. Others claim to hear a strange voice emanating from the 50-foot span. The Vermont Historical Society says this legend appears to have started in the late 1960s, and there’s been no evidence of an actual Emily or supernatural activity. While Emily wasn’t a witch in the story, this hauntingly purple cocktail feels like it fits the spirit of the tale.

1 ounce apple vodka
2 ounces blackberry liqueur
Purple edible glitter
1 teaspoon grenadine
Dry ice
Berries for garnish
In a shaker, combine the apple vodka, blackberry liqueur and glitter. Add an ice cube and shake briefly to chill. Add ½ teaspoon to 1 teaspoon of powdered dry ice to the bottom of a martini glass. Strain the liquor into the glass and top up with more glitter if desired. Gently pour grenadine about an inch from the drink's surface, creating a "bleeding" effect. Finish with approximately ½ teaspoon of powdered dry ice on top and garnish with berries.
Great Eddy/Village Covered Bridge

Spanning the Mad River, the second-oldest bridge in Vermont is a single-span Burr truss bridge built in 1833. In addition to travel lanes for vehicles, there’s a covered pedestrian walkway to one side. The bridge survived Hurricane Irene in 2011 despite the river level rising to eliminate any clearance the bridge had over the water. Pine Brook Covered Bridge is nearby in Waitsfield Commons while neighboring Northfield has five. With more than 80 of Vermont’s covered bridges built during the 1800s, try Brian Miller’s riff on the 20th Century cocktail.

Taftsville Bridge Woodstock
If you’re looking for a lovely covered bridge to photograph along with fall foliage, the Taftsville Covered Bridge offers idyllic views with a nearby dam. Its classic barn-red hue stands out with its reflection in the Ottauquechee River. The two-span timber-frame structure is the fourth bridge on that site after flooding washed away less robust bridges in 1807, 1811 and 1828. The 1836 version of the bridge was able to survive Hurricane Irene, though it needed two years of repairs. Nearby are the South Pomfret Covered Bridge and Woodstock’s Lincoln Covered Bride and Middle Covered Bridge. When you too need a little restoration, this mocktail can be served as a soothing tonic in two ways.
Spicy Lemon Ginger Tonic
10 ounces ginger, peeled, chopped
5 wide strips of lemon zest
1 cup lemon juice
¼ cup honey
½ cup water
Seltzer
Pinch of cayenne pepper, pinch of salt
Lemon slices for serving
Combine ginger, lemon zest, lemon juice, honey, pepper, salt and water in a small saucepan. Bring to a boil, then reduce heat and simmer until reduced about a third (30-40 minutes).
Strain through a fine sieve, pressing solids to release liquids. You can discard the solids.
To serve hot, add 2 tablespoons of the resulting liquid to a mug and top with hot water as desired.
To serve cold, pour 2 tablespoons of liquid over ice in a tall glass and top with seltzer.
Garnish either version with lemon wheels.
Dummerston Bridge

This is the state’s longest bridge that’s entirely within one state. The two-span Town lattice truss-style bridge is 280 feet long and spans the West River. The 152-year-old bridge is the only known example of master builder Caleb Lamson’s surviving work in Windham County. Nearby is the nearly-as-long Scott Covered Bridge (277 feet) in Townshend, and the Williamsville Covered Bridge and Creamery Covered Bridge in Brattleboro. During your visit to this region, you can stop by Vermont Vermouth in Brattleboro.

This single-span bridge built in 1852 is among the ranks of Vermont’s oldest covered bridges. It is a lattice truss-style that sits on mortared stone abutments (though one now has been faced in concrete). There are five windows on each side of the 80-foot-long, red-painted bridge. When it was added to the National Register of Historic Places in the 1970s, it was noted that it “remains structurally original, unreinforced by internal devices.” The bridge was damaged during Hurricane Irene but was repaired and reopened to vehicle traffic. Closer to the village center of Arlington is the Chiselville Covered Bridge. Apricot (a stone fruit) liqueur adds a little lift to the foundation of this version of a Stone Sour cocktail.

1 ½ ounces bourbon
½ ounce apricot brandy liqueur
¾ ounce lemon juice
½ ounce orange juice
1/3 ounce sugar syrup
3 drops of salt water
Shake all ingredients with ice and strain into an ice-filled, old-fashioned glass. Preference for a large block of ice rather than smaller cubes. Garnish with a wedge of apricot.
