Cooking up a career White Mountains Community College, Omni Mt. Washington team up on culinary program A partnership and apprenticeship program between Omni Mount Washington Resort’s in-house Bretton Woods Culinary Academy and White Mountains Community College will be offering an answer to hospitality workforce challenges and an opportunity for students to learn from a top tourism destination. Designed to address a shortage of highly trained culinary professionals in New Hampshire, the three-year apprenticeship program will provide comprehensive training and full-time employment for students pursuing an associate degree in culinary arts from WMCC’s Culinary Institute. “Apprenticeships are a proven approach for providing high quality culinary arts training that benefit both students and industry partner hosts,” said Kurt Hohmeister, associate professor at WMCC, a former executive chef, and culinary instructor at WMCC for over 30 years. “We’re joining forces to give students the best possible educational experience while Omni Mount Washington Resort fills an immediate staffing need and helps shape the next generation of culinary leaders.”
The apprenticeship program is modeled on a successful 20-year partnership between the Balsams Grand Hotel, which is currently undergoing redevelopment, and WMCC. The program launched the careers of many accomplished chefs, restaurateurs, and others in the culinary field, many of whom have offered to help with the newest industry partnership. Target: spring Balsams developer sees construction of long-awaited project starting soon Dixville Capital LLC, the company with plans to revive the Balsams Resort, is poised to begin construction of the North Country landmark in the spring. Meanwhile, officials said they’re hopeful that the work will begin just as its lead lender, Service Credit Union,
awaits the OK from the NH Business Finance Authority, which is considering guaranteeing the $28 million loan. Start of construction would be a major milestone in the project, which backers and economic development officials in the region see as essential for the North Country. The first phase of construction includes renovation of the resort’s historic Hampshire and Hale houses as well as construction of a new 400room Lake Gloriette House Hotel and Conference Center, with Nordic baths and spa, and a marketplace and an expansion of the former Wilderness ski area.
Lead developer Les Otten has been bullish about the project since coming on board in 2015. In that time, the $170 million project has hit more than its share of hurdles, mostly involving financing and regulatory issues. Despite that, more than 120 families and individuals have made a 5 percent refundable deposit toward purchase of a unit in the Hampshire and Hale and Lake Gloriette houses. Those pre-sale contracts represent $26.1 million in future sales, Otten said. He said deposits have been received from future purchasers in 18 states, including California, Colorado and Texas as well as Ontario, Canada.
For a change Multimillion-dollar transformation will turn Manchester hotel into a DoubleTree by Hilton The Radisson Hotel Manchester is about to undergo a multimillion-dollar redesign and transformation into a newly branded DoubleTree by Hilton, officials announced Wednesday. During the renovations, which are expected to be finished by the end of the year, the hotel will continue operations, temporarily rebranded as The Manchester Downtown Hotel. “Our location has been a staple in downtown Manchester since it opened 34 years ago, hosting presidential candidates, local dignitaries, rock stars and thousands of events,” said Kim Roy, general manager of the property. “This upcoming alignment, combined with extensive modernizations, will further enhance our guests’ experience and help attract more visitors, meetings and events to downtown Manchester.” She said the hotel will undergo a redesign and refurnishing process that includes: 6
• Renovated guest rooms • A new restaurant, bar and dining options • Reconfigured lobby • Addition of a Hilton Honors Lounge • Business center expansion • Renovated meeting spaces • A new market featuring beverages and snacks “DoubleTree by Hilton is one of the strongest and most well-respected hotel brands in the world, and our associates are very pleased to be able to provide this new hotel and its services to the community,” said Roy.

The great outdoors Recreation is an $8.7 billion industry in New Hampshire If you needed any further proof that New Hampshire is indeed an inviting place for people who like to spend their leisure time outdoors, then a recent study might convince you. According to a report from the Colorado-based Outdoor Industry Association, outdoor recreation in the Granite State annually generates $8.7 billion in consumer spending and $528 million in state and local tax revenue. The report found that 69 percent of New Hampshire residents participate in outdoor recreation each year, and are more likely to participate in day hiking and kayaking than the average American. In fact, the report says, more jobs in New Hampshire depend on outdoor recreation than the state’s high-tech sector. There are 79,000 jobs in the outdoor recreation space and 44,000 in the high tech sector. Employees working in outdoor recreation jobs pull in $2.6 billion in wages and salaries. In putting together the report, the authors counted a wide variety of activities to be included in the outdoor recreation category: camping, fishing, hunting, motorcycling, off-roading, snow sports, trail sports, water sports, bicycling, skateboarding and wildlife viewing. Nationally, the report says, the outdoor economy generates $887 billion in consumer spending annually, which results in $65.3 billion in federal tax revenue and totaling state and local tax revenue at $59.2 billion. Five Event Planning T
Tips from McLean Communications’ Marketing & Events Manager E Having worked in the events space for more than 10 years, McLean Communications’ Marketing & Events Manager Erica Baglieri shared her top takeaways when it comes to organizing a business event.
1
Your audience will determine your venue:
Look at the demographics and size of the audience expected to attend your event; this will help narrow down your venue choice, says Baglieri. Figuring out the format of the event — whether a lectureseries, panelists or awards ceremony — will determine what seating style would be best. Should the room be laid out as if it were a classroom? Should there be large roundtables that are only filled to half maximum capacity to allow everyone to face forward? “The seating is important because that will affect the space,” says Baglieri, who has learned a stage is always necessary. “For any business event, whether there’s a panel or its an awards ceremony, a stage is incredibly important because it takes the event to the next level and makes the audience focus on the presentation,” she says. Above: Edward Prewitt, editorial director for NEJM Catalyst, speaks at NH Business Review’s Health Care Trends event. At left: Baglieri, center, with other members of the McLean Communications crew at NH Business Review’s BOB Awards. Both events were held at the Grappone Conference Center. 2
Consider personalities when selecting panelists:
Fortunately, in a state as small as New Hampshire, you may know many of the people you’re considering asking to be a part of your event. Baglieri suggests selecting panelists who have no problem speaking in a large event setting. Including a panel with some varying personalities (shy away from all quiet speakers) will ensure there’s some lively interaction. Each panelist should be selected to speak about a specific focus or perspective of the topic, providing the attendee with what they’re seeking to get from the event. “There’s a reason the panelists are there; they each cover a point,” says Baglieri.

3
Engage the audience in multiple ways:
Building audience engagement is number one when it comes to planning an event. “The biggest trend is moving toward the digital world, whether using mobile apps or social media to engage the attendee,” says Baglieri. Having a Twitter hashtag allows the audience to share information online and communicate in real time during the event or pick up the conversation after it has ended. Live broadcasting the event is becoming more popular, especially as more groups take advantage of Facebook Live, which then brings the event’s profile page to the top of followers’ newsfeed. Even after the event, McLean Communications sends out each presentation via an email blast, allowing attendees to go back and see what they missed, if they had to leave early. In case of a particularly quiet audience, Baglieri also recommends planting individuals in the audience to ask questions, which often inspires others to participate. And ensure the event materials provide attendees with some additional information for the road. “We’ll give them additional nuggets of information that adds to the event’s value,” she says.
4
Make sure there’s an AV tech handy:
If you’re going to run any video, “You’ll want an experience AV tech onsite for the entire event,” says Baglieri. They’ll have extra cables or microphones. “We’ve had a microphone break on us multiple times,” she warns. Don’t let AV techs setup the video and leave. Larger hotels have their own AV tech that may leave the room, but ensure you know who to call if something goes wrong.

5
Have an integrated marketing approach:
“It’s important to have the widest array of techniques,” says Baglieri, listing off e-blasts as well as social media and web ads as McLean Communications’ most useful tools to increase audience attendance. Marketing plans should “integrate print, radio and, if you can, T.V.” Engaging with local influences, whether bloggers or individuals with a strong social media presence who would push the event, also “makes a huge difference in attendance,” says Baglieri. You can find these influences through examining who is engaging with your brand by retweeting or who regularly attends your events. Some may be willing to spread the word for free, while others can be encouraged with free tickets.

Keeping track of meeting trends for 2018 From security and technology to venues and snacks, here’s what’s happening around the world The overall cost per attendee per day for meetings and events around the globe increased in 2017, and that increase is to continue rising. That bit of news is among the predictions contained in CWT Meetings & Events’ 2018 Meetings and Events Future Trends report. (CWT Meetings & Events is a division of global travel management company Carlson Wagonlit Travel.) “Costs are rising in key meeting and events markets, globally,” said Cindy Fisher, senior vice president at CWT M&E. “With a 3.7 percent increase in hotels and 3.5 percent rise in air fares projected for 2018, that trend is likely to continue.” In the U.S. and Canada, she said, cost per attendee per day increased by 3 percent in 2017 with new supply growth slightly exceeding demand. In the U.S., hotel and
10
air travel prices are both expected to increase by 2.5 percent as 2018 progresses, with expectations that new supply growth and increasing demand will be about evenly matched. Meanwhile, hotel prices are expected to increase in 2018 as well. On top of that, domestic leisure travel has been increasing, meaning some hotels and resorts may limit group blocks at peak times.
Latest trends But going beyond statistics to the root of what it means to hold a meeting or event, the report also explores the latest industry trends and recommendations. Among them:
MEETINGS & CONVENTION PLANNER 2018
• Safety and security: It used to be that visible security personnel and ID checks were considered negatives for attendees. But today, visible security may add to the attendee experience, at the least because it reassures attendees that the meeting organizer takes security seriously. CWT M&E also notes that meeting organizers are tightening security procedures industry-wide. • Digital security: While Wi-Fi is a minimum expectation of event attendees, easy-to-access Wi-Fi can be vulnerable to hacking. CWT M&E recommends strong cybersecurity at both the head office and the event site, and the company suggests changing the event Wi-Fi password everyday and notifying attendees through the meeting app. • Registration: Here, technology needs to start catching up, as attendees become more accustomed to check-in kiosks and other automated registration technologies, compared with the manual meeting registration process they often encounter. It’s part of the goal of making the attendees’ experience as simple as possible.
• Social media and event apps are factoring in during sessions rather than after presentations and conferences end. That includes polling attendees to engage attendees in real time. • Systematic data collection, across multiple events, compounds the value of data by enabling companies to compare and analyze multiple events both together and against each other. • Procurement teams are becoming more involved in event management in order to lend costtracking and -management skills to the bottom line. • Room layout is veering from tradition to sofas and even standing meetings. • Unique venues are playing host to events, especially when such a venue reflects the company’s brand. But CWT M&E cautions that it also can increase planning time and cost, so keep an eye on attendee experience versus cost. • Snacks at every break are yielding to a qualityover-quantity approach favoring local and healthy food and beverages. The localized approach also can increase an event’s impact by differentiating events from each other.

The many lucrative benefits of live streaming Why webcasting is an important part of the event-planning process By Dale Ouellette A recent article published in Meetings & Conventions Magazine listed the top 10 trends in live events for 2018. Number two on the list was live streaming, or webcasting. Why would this be so high on the list? Aside from the obvious benefit of reaching a global audience for an extended period, webcasting your event provides many lucrative benefits: • Engage new audiences: Webcasting your event allows your brand to reach new and global audiences that previously weren’t accessible to you either due to calendar conflicts, location or time zone. • Pay-per-view: This is particularly attractive for those running training courses or seminars and has the potential to boost your revenue while providing valuable Continuing Education credits. • Sponsorship opportunities: Whether through video rolls, banner ads or some
12
MEETINGS & CONVENTION PLANNER 2018
other form of display — sponsors relish the opportunity of reaching a targeted demographic. • Boost audience engagement: With the potential to include active participation through live Q&A, social media and chat rooms it has the ability to match, if not exceed, your event’s in-room engagement. • Include remote presenters: Combining video conferencing technology with webcast technology allows presenters to present from anywhere.
Even considering all these positives, some companies still have objections. • Objection 1: Webcasting is too complex for us. Maybe so, but hiring the right managed service provider can make it easy. Cameras, microphones, encoders: they can provide it all. They can also offer you a customizable player so your webcast will look as unique as your brand.
• Objection 2: Webcasting is way too expensive. This isn’t true any more. New technology has brought the cost of webcasting and video production to affordable levels. Utilizing your Facebook Live or YouTube Live account can keep cost down while providing valuable marketing and SEO benefits. • Objection 3: Webcasting will dilute my live attendance. Finally, we come to the most common objection to webcasting your events. If you’re in the business of selling tickets, the question is a logical one. But it’s not the only question you should ask. Here’s a more important one: Is the value of watching your event online the same as being there in person? The content is the same. The ability to ask presenters questions is the same. So don’t give it away for free — create a new revenue stream with Payper-View. If you don’t feel it has the same value, start thinking about live streaming in a different way: Stop thinking of webcasting as a replacement for live attendance, rather as a marketing tool for next year’s event. Webcasting doesn’t have to be about this event at all. Webcasting is about your next event. Think about all the on-the-fence prospects who ultimately decided to stay home this time. What if they could really see what your event is all about? Don’t you think a fair number of them might make a different decision when your next event comes around? When you think about live streaming as a marketing campaign, everything starts to fall into place.
Of course, for live streaming to make a marketing impact, you have to webcast more than static videos of people speaking. You’re promoting your event as a great live experience, so show it off! Let people be a fly on the wall during your networking sessions. Do man-on-the-street style interviews with your attendees. Show your attendees gathered for check-in in the morning. Give people online a look at how great your cocktail hour is.
You should show online viewers whatever it takes to make them think, “Wow! I really should’ve been there!” When you do that, and you start to see how rapidly your event-over-event attendance grows, you’ll agree with us: Webcasting (or live streaming) is one of the most important parts of your event-planning process. The Seven Regions of NH New Hampshire is made up of seven very different regions, each as exciting as the next. The Seacoast, Dartmouth-Lake Sunapee, Lakes Region, Merrimack Valley, Monadnock Region, White Mountains and Great North Woods are filled with natural beauty, cultural events and classic New England living. It’s one family vacation idea after another, and the only way to truly appreciate it all is to see it for yourself. Use the list at left to learn more about each of New Hampshire’s distinct, yet equally unforgettable, regions.
GREAT NORTH WOODS Halfway between the Equator and the North Pole, the Great North Woods is at once rugged and inviting. This is where travelers over the centuries have come in search of beauty, adventure and inspiration, while enjoying legendary North Woods hospitality. Here is where you can go take a hike to watch the sunrise before breakfast, go fly fishing after lunch and get dressed up for an elegant dinner at a grand hotel. Whatever your passion, from fine dining to snowmobiling to camping under the stars, the Great North Woods is a destination in which to indulge it.
WHITE MOUNTAINS If one New Hampshire region is synonymous with recreation, it’s the White Mountains. Forty-eight 4,000 foot peaks are found here, along with the highest mountain in the Northeast, 6,288-foot Mt. Washington; but it is the 800,000-acre White Mountain National Forest that truly shapes the region.
LAKES REGION The Lakes Region: the name alone stirs memories of blissful, sunny days spent on the water, the joy of vacations, boat rides and camp, when everything moved at a slow summer simmer; and you connected with people and places that still resonate within you today. Summer may be the Lakes Region’s best-known season, but wrap the hillsides in spring green, the blazing colors of fall or a thick blanket of snow, and it is every bit as magical. While there are 273 lakes and ponds in the Lakes Region, one lake dominates them all: Lake Winnipesaukee.

DARTMOUTH-
LAKE SUNAPEE
If only one region of New Hampshire could be known as a study in contrasts, it would be the Dartmouth-Lake Sunapee Region. Named for Dartmouth — Hanover’s Ivy League college — and Sunapee — the crystal clear lake, State Park, and mountain, all of the same name — the region includes quiet country roads and rolling farmland, pristine lakes, a bustling hub of higher education and medicine, and some of today’s favorite family activities and recreation.
MONADNOCK REGION
Specializing in golf outings and business meetings Newly renovated function rooms State-of-the-art technology
Seating up to 225 theater and 150 banquet Natural lighting
Convenient from I-89 at Exit 13 in Grantham, NH
For information, contact bn@eastmannh.org
For the New England of picture books, you need go no further than the Monadnock Region. Here you’ll find small villages where white clapboard churches and town halls edge manicured town greens. Rolling fields with neatly planted rows quilt the hillsides, and country roads lined by rock walls invite exploration at a leisurely pace.
MERRIMACK VALLEY In New Hampshire, where the capital’s name, Concord, is a synonym for harmony, it’s not surprising to find music and the performing visual arts central to life in the city and the entire Merrimack Valley Region. The state’s three largest cities — Concord, Manchester and Nashua — have an especially rich cultural life, with a variety of offerings year-round.
SEACOAST New Hampshire’s seacoast captures the essence of New England’s oceanfront. In just 18 miles of coastline, there are long, sandy beaches, working ports, offshore islands, surf-stung rocks, and popular resort towns and villages that date back nearly four hundred years. Many visitors begin their tours of New Hampshire along the coast, drawn by the sound and scent of the sea, and intrigued by all the region offers. MEETINGS & CONVENTION PLANNER 2018
