When
you come to eat at Marsala Salsa in Johnson, owner Jan Chotalal hopes you feel like you’re coming home to your parents after a long time away.
“Your mom and dad, your family is all cooking. You walk into that house, and you have that wonderful memory of their cooking,” Chotalal says. “That’s what I wanted to recreate, and definitely we have accomplished that.”
Marsala Salsa is having its own homecoming of sorts. The restaurant ran for 22 years in Waterbury before closing in 2012 due to a mix of leasing issues and Chotalal’s breast cancer diagnosis. Last year, after over a decade of being closed, the restaurant reopened in Johnson.
Once again, the fusion of Caribbean, Indian, Mexican and Italian cuisine is available to diners in Vermont, and some are even making the 40-minute trek from Waterbury to get it.
“It's like coming home,” Chotalal says. “The smell of the food, the taste of the food, the first sip of that drink, first bite of that food brings back such wonderful memories of being in Waterbury, which has been a great accomplishment for the whole team here.”
Chotalal was a single mom with three kids and was finding it hard to find a job that paid well when she decided to open the original Marsala Salsa.
“I wanted to start a business,” she says. “I took a chance opening up an ethnic restaurant in Waterbury. The food that I grew up with, I wanted to bring that flavor here to Vermont.”
The kitchen of the Johnson location, which previously was home to a pizzeria, is still undergoing changes. With that, not all of the Waterbury menu items are available, though some customers order off the “secret menu,” she says. Popular dishes include curries and
Hibiscus Kiss
1 3/4 ounces 1800 Tequila
3/4 ounces Solerno orange liqueur
3/4 ounces hibiscus syrup
3/4 ounces fresh lime juice
In a shaker, mix 1800 Tequila, Solerno, hibiscus syrup and lime juice with ice. Rim margarita glass with hibiscus sugar. Strain margarita mix into glass.
2 ounces Smugglers' Notch bourbon
1 /2 ounce fresh lime juice
1 /2 ounce maple syrup
4 ounces ginger beer
Mix together the first three ingredients over ice. Pour in a 16-ounce glass and finish with the ginger beer.
Chotalal says there are some assumptions about the heat factor of the spices used in the Caribbean and Indian food, but that there are menu options that are not spicy. “The food has a lot of flavor,” she says. “It may have a Caribbean twist, a Mexican twist, but it is not spicy.” Chotalal explains that, in the early days,
she created a lot of literature to explain what certain spices were and how they were used for health reasons, which seemed to help the community’s understanding of the food.
“It’s all freshly done. It’s made to order, and that is a big part of why the flavor is so unique,” she says. Flavorful and unique combinations carry over from the food menu to the bar menu. Bartender Ethan McGovern says that Chotalal has done a good job curating a selection of

Chotalal says they make an effort to offer spirits made nearby. “We try to have the local stuff, such as the Smugglers' Notch, the Bar Hill, the White Lace from Black Flannel, along with the typical tequilas that people are familiar with,” she says.
“We came up with amazing mocktails as well,” she adds. “Everything that we do is refreshing; it’s fresh ideas.”Chotalal says she wants Marsala Salsa to be a trendsetter with its options.
“We like to offer a lot of stuff that is not on anybody else’s menu around,” she says. “We want to set the trend ourselves and not follow the trends.”

staple drinks that pair well with what the restaurant offers.When there are specials, McGovern says the team sits together at the bar to chat about what might go best with that night’s meal. Marsala Salsa has about 14 margaritas on their menu, and McGovern says they get asked about past margarita specials (and menu items from Waterbury) that they are happy to accommodate.
“Some people come in and they ask me for a coconut margarita — I know how to make anything not on the menu,” McGovern says. “I also tell people, ‘The spicy margarita is not on there, but I can make any of our margaritas in a little spicy fashion.’”
“We have quite the selection: We have sweet. We have sour. We have ones that have a little rum in there. We have ones that go well with a spicy rim,” he explains. “I haven’t found another spot around here where I can get a margarita that has Bailey’s in it that makes me go ‘yum.’” (That would be Jan’s Dirty Margarita, if you’re looking to try it yourself.)“We have some house favorites,” McGovern says. “People will come and get the Hibiscus Kiss because they know it’s got our own syrup and our own hibiscus sugar rim. Or they’ll come for the Johnson’s Mule because they know it has all kinds of local ingredients: local bourbon and local maple syrup.”
Serendipitously, both the Waterbury and now the Johnson location of Marsala Salsa have been in former hardware stores, which Chotalal says helps add to the homey vibe. “Definitely it’s a family atmosphere, it’s not a bar atmosphere,” she explains. “When people walk in, they say, ‘Oh my god, we feel at home. We feel so warm, so happy to be here’ … and that’s really nice to hear.”

Opened for play in 1900, the golf course at Ekwanok was designed by Walter J. Travis and John Duncan Dunn. It incorporates strategic bunkering, contoured greens and an imaginative routing in which not more than two holes are facing in the same direction. Ekwanok is the only club in Vermont to have hosted a United States Golf Association tournament. The course is designed to be walking and has the last remaining caddie program in Vermont. Combine bourbon, lemon juice, egg white and simple syrup in a cocktail shaker. Shake for 30 seconds.
Fill shaker with ice, cover and shake until outside of shaker is very cold, about 20 seconds. Strain cocktail into an old-fashioned or rocks glass filled with ice. Garnish with orange wheel and cherry.

2 ounces bourbon (or rye whiskey, if preferred)
Orange twist
Add the sugar and bitters into a mixing glass, then add the water, and stir until the sugar is nearly dissolved. Fill the mixing glass with ice, add the bourbon and stir until well chilled.
Strain into a rocks glass over one large ice cube.
Express the oil of an orange twist over the glass, then drop into the glass to garnish.
