that I probably had for 10 years. I had that drink on his table in two minutes and the guy was flabbergasted. It’s basically a Screwsdriver with a little Galliano floated on top – a very delicate, licorice flavor.”

Share a behind-the-bar secret. “You always want to get an exact pour – never too weak or too strong. We free pour, so you have to make sure you don’t overfill the glass. If you do, it makes for an unprofessional looking drink when it gets to the table. The mentality is that if you over-pour, you don’t want to throw it out. However, if you add more, you can’t get the glass to table without spilling it. For a more professional look, we’ll take the extra and serve it on the rocks in a side glass. That way your customer still gets value, and it’s still a professional looking cocktail with nice garnish.”

wner Jerry Szawerda may describe his restaurant, 56 Main Street, as being what is “probably the smallest bar in Vermont,” but what it might lack in square footage, it makes up for in hospitality expertise. Szawerda and his wife, Robin, own the family-run restaurant right on the small town’s main thoroughfare (thus the name), and have a long history in the business. “I’ve always been in the restaurant business,” Szawerda says. “My wife and I had our first restaurant when I was 24-years-old in 1980, and my father-in-law basically taught me how to tend bar.” The couple ran a popular seafood restaurant in Wallingford, Conn., for 14 years before the pull of the Green Mountain State drew them north. The couple has called Vermont home for 22 years now. “It’s a neat old building,” Szawerda says of the restaurant. “It was originally a bank block building, but it’s been a lot of things over the years – all kinds of retail shops, especially in the heyday of Springfield in the 40s, 50s and 60s, with brick walls and big iron beams and a high ceiling with café lanterns.”

When 56 Main Street first opened, the Szawerdas were operating on a tight budget. They opted to decorate the space with what they had on-hand, giving it a welcoming, warm feel. “We spiffed everything up and we’ve been making improvements for 11 years,” Szawerda says. The result? Great food at good prices, no TV, very soft music, excellent service and four stools along what is a friendly, knowledgeable and what may be “the smallest bar in Vermont.”

“We try to cater to locals first. We have a strong local following – we have a dinner club, a lunch club, a birthday club. All the villages around us also support us really well. We cater to locals and their families, with good pricing and good offerings. We like to think we have something for everyone. There’s a movie theater nearby, and people might hit us for a burger or some Mexican before catching a movie. Our motto is ‘do it right every time, every table.’ It brings a lot of repeat business.”

What’s your favorite part about working behind the bar? “It’s fun to be asked for an old drink. I don’t know all the modern drinks – sometimes I have to look them up, but I don’t get many requests for odd drinks. If somebody asks me for a Sidecar or a perfect Manhattan or an Old Fashioned – I can do that with one eye closed. Here’s an example: When I was in the Air Force when I was a kid, I used to like a Harvey Wallbanger, which has an unusual taste. You don’t really hear about them anymore. It was more of a 70s drink. Well, a guy came in said, ‘you won’t know how to make this, but I want a Harvey Wallbanger.’ Well I had an old bottle of Galliano

Tis’ the Season to Gather A Brief Guide to Holiday Hosting

s we enter the heart of the most festive month of the year, get-togethers and celebratory soirees are in full swing. And as anyone who is planning such a gathering knows, there’s a lot that goes into planning a successful holiday party – whether it’s a few cocktails over dinner with friends or a full evening of dining and entertainment with a dedicated mixologist. Decking the halls can take a lot of preparation, but the bottom line is this: Don’t let the planning turn an enjoyable occasion into a stressful event. Because even though there’s a lot more than cocoa and cookies that goes into making a festive holiday party, there are ways to prepare that will leave you free to enjoy your guests – and to ensure they head home safely. Here are some suggestions to keep in mind.

Know How Much to Buy Here’s how to determine how much beer, wine or spirits to purchase: • Determine the number of guests that will be attending. Take that number and multiply it by the number of hours the party will last. This determines the number of servings. For example, a party of 20 people lasting three hours would require about 60 servings. 10 | 802spirits.com u D E C E M B E R 2016

Know When to Ask for Help If you expect fewer than 20 guests, you may be able to act as host and spend time with visitors. With more than 25 guests, however, it may be time to think about hiring or designating a dedicated bartender – someone who can meet guests’ needs while watching out for the safety of everyone in attendance.

Pre-Mix Know when it’s time to roll up your sleeves and when to rely on convenience. • Consider pre-mixed, holiday-themed cocktails. Prepare them ahead of time in a pitcher, ready to serve, and you’ll save time at the bar. Be sure to have ice on-hand to chill drinks. • A ‘do it yourself’ bar can give your guests a chance to get creative. Set out the necessary elements ahead of time: glasses, ice, a selection of mixers and an assortment of spirits.

Be a Responsible Host Part of your responsibility as a host is not only entertaining guests, but ensuring they have a safe night. • Know who’s driving. Make sure designated drivers have plenty of non-alcoholic drinks.

Encourage guests to carpool with a designated driver and have a list of taxis available or assist guests with a car sharing app like Uber or Lyft. If someone doesn’t have a way home, offer to let them stay the night. • Serve more than finger food. Offer your guests food such as cheese, nuts and meat, which slow the alcohol’s absorption rate. • Offer plenty of non-alcoholic options. Serve alternative beverages such as virgin cocktails, juice, soda and water. • Obey the law. Check I.D. on anyone you don’t know at your gathering. Never serve alcohol to anyone who’s under 21 or already intoxicated. • Designate a bartender. Choose someone who can mix drinks with proper proportions and keep an eye on guests. Know the signs of impairment, which can include a lack of coordination, aggressive behavior, being talkative or indifferent, and exhibiting slurred or incoherent speech. • Wind things down. Consider closing the bar an hour before the party’s end. Follow these suggestions and you’ll ensure your get-together is s merry and bright as the holiday season itself. Please drink responsibly.

Celebrate the season – and your family’s sweet tooth – with these recipes for delicious desserts that include the special ingredients of spirits.

Stollen Bites Courtesy King Arthur Flour | Yield: 40 bites Sponge 1 cup (4¼ ounces) King Arthur Unbleached All-Purpose Flour ¾ cup (6 ounces) lukewarm water 2 teaspoons instant yeast Fruit ½ cup (2 ¾ ounces) dried pineapple, chopped in ¼ inch dice ½ cup (2 ¾ ounces) golden raisins or dried cranberries ½ cup (3 ounces) candied cherries, snipped into quarters 2 tablespoons (1 ounce) rum or brandy Topping ½ cup (1 stick, 4 ounces) butter, melted 2 cups (8 ounces) confectioners’ sugar, glazing sugar, or non-melting sugar

Dough 2 ½ cups (10 ½ ounces) King Arthur Unbleached All-Purpose Flour 6 tablespoons (3 ounces) softened butter ¼ cup (1 ½ ounces) Baker’s Special Dry Milk or nonfat dry milk powder 1 /3 cup (2 3/8 ounces) granulated sugar 1¼ teaspoons salt 1 teaspoon almond extract 2 teaspoons vanilla extract 1 tablespoon orange zest or 1 /8 teaspoon orange oil ½ cup (2 ½ ounces) toasted almonds, chopped

Making the sponge: Mix together and set aside for 1 hour, or for up to 4 hours. Mixing the fruit: Mix together and set aside to allow the fruit to absorb the liqueur. Dough: Combine sponge and dough ingredients (except for almonds), mix, and knead to make a soft, shiny, elastic dough. Towards the end, knead in soaked fruits (along with any liquid) and almonds. Allow dough to rise, covered, for 1½ – 2 hours. Turn dough out onto a work surface and divide it into 40 pieces, rolling each piece into a ball. Place balls on a greased or parchment-lined baking sheet, leaving about one inch between them. Cover and let rise for about 45 minutes, until balls are puffy. Bake stollen bites in a preheated 350 degree oven for about 18 minutes, until light brown. Remove from oven and cool for 10 minutes. Toss stollen in melted butter, then confectioners’ sugar. Cool completely before wrapping and storing. Stollen bites keep well for a week at room temperature; freeze for longer storage. Toss with confectioners’ sugar again just before serving, if desired.

Double Chocolate Bourbon Brownies

Courtesy New England Culinary Institute 1 cup chocolate chips 12 ounces (1½ sticks) butter 3 cups sugar ¼ cup bourbon 6 eggs 1¾ cups all-purpose flour ¼ cup cocoa powder, sifted 1 teaspoon salt 1 cup chocolate chips (for garnish) Line a cookie sheet with parchment paper. Spray with cooking spray. Melt butter and first measure of chocolate chips (1 cup) in a large bowl over a pot of simmering water. Once melted, take bowl off heat and cool to room temperature.

Golden Eggnog Cupcakes Courtesy King Arthur Flour | Yield: 2 dozen cupcakes 1½ cups (24 tablespoons) unsalted butter, Preheat oven to 325 degrees. Line two standard at room temperature muffin pans with cupcake papers or tulip muffin 2 cups sugar papers. ½ teaspoon grated nutmeg 1 teaspoon salt; reduce to ¼ teaspoon salt Beat together butter, sugar, nutmeg, salt, and if you use salted butter eggnog flavor until light and fluffy. Beat eggs in 1¼ teaspoons eggnog flavor* one at a time, beating well after each addition, 4 large eggs and scraping bottom and sides of the bowl. Stir ¼ cup dark rum or brandy, optional in rum or brandy. 3½ cups King Arthur Unbleached Whisk flour and baking powder together. Beat All-Purpose Flour in half the flour mixture, then half the cream. Re 2 teaspoons baking powder peat, being sure to scrape the bottom and sides 1¼ cups heavy cream* of the mixing bowl occasionally. Bake at 350 degrees until set. Brownies will form a thin crust and puff up at approximately 30 to 35 minutes. Cool and enjoy.

Remove the pans from the oven. Cool the cakes in the pans for 10 minutes, then turn them out onto racks to cool completely. If you’re going to ice them, wait until they’re completely cool to do so.

Jim Beam Bourbon Milk Punch

2 ounces Jim Beam Original 2 ounces whole milk 1 ounce half-and-half 1 teaspoon superfine sugar 1/4 teaspoon vanilla extract 1/4 teaspoon grated nutmeg 1 Cinnamon stick (optional) In a shaker half-filled with ice cubes, combine the bourbon, milk, half-and-half, sugar, and vanilla extract. Shake well. Strain into a highball glass and garnish with the nutmeg and cinnamon stick.

Pinnacle Naughty List Hot Cocoa 2 ounces Pinnacle Whipped Vodka 5 ounces hot chocolate

Mix ingredients and serve in a mug. Garnish with whipped cream and chocolate shavings.

2 cups apple cider 1/2 stick (1/4 cup) unsalted butter 1/4 cup packed dark brown sugar 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1/4 teaspoon ground cloves 1/8 teaspoon salt 2/3 cup dark rum Bring water, butter, brown sugar, cinnamon, nutmeg, cloves, and salt to a boil in a 2-quart saucepan over moderately high heat.
