BEHIND THE BAR Bartenders/Owners Jamie Persky and Mark Rosman
M
ark Rosman and Jamie Persky like to do things a little differently. Take, for example, Plate – the couple’s 91 Main St. restaurant in Stowe. While some travelers to the Green Mountain State may stop for a bite expecting a mom-and-pop eatery, Rosman and Persky thought they’d offer guests an alternative. “We put a lot of effort into being the oddball – which I think has worked out,” Rosman says. We’ve been doing it for four years, which is a good sign. But there are those who come up and it’s not what they’re expecting. They want that small town vibe, and we’re not that. Once we fill up, it’s very city-like, and it was designed to be that way.” Plate has a tangible West Coast feel and California-influenced menu that fills a need for the couple, who moved east from Los Angeles. sourced vegetables and dishes with vegan options and an array of salads. It’s a marriage (both literally and philosophically) of a West Coast sensibility and Vermont flavors. The result, they like to say, is “California inspired, Vermont made.” And that vibe, it seems, is contagious. “The fun part is that the people who come to work for us get that feeling,” Rosman says. “That’s why they love working for us. Turnover has been very low, which is great because of the atmosphere my wife and I created.” Even the couple’s decision to move to Stowe 15 years ago came about rather unconventionally. The pair decided to leave city life behind and toured New England looking for just the right spot. They visited Rhode Island and Connecticut before heading north and traveling along Route 100 into Stowe. As the car rolled to a stop at the intersection of Main Street and the Mountain Road, the future became clear. “We came to the stop sign at the Green Mountain Inn and decided right there to move here,” Rosman says. “It all happened very quickly but it was a great decision.” Step inside the welcoming restaurant and the urban feel becomes apparent. Muddle the celery in a rocks glass and then combine the vodka, grapefruit juice, lemon juice and simple syrup in a shaker. Shake with ice and then pour into the rocks glass. can interact with mixologists and chefs as they prepare meals and whip up creative cocktails. “There’s a lot of activity going on,” Rosman says. “There are seats at the kitchen bar, so people can talk to the chefs and watch them cook. If they want anything special or off board, they can discuss and be included in the process.” Rosman and Persky often find themselves behind the bar, mixing drinks and pitching-in. What was your first night behind the bar like? Mark: “It was nerve-wracking. I was hired because I had lot of restaurant experience, went to culinary school, could pull a beer and make a martini, but that was the extent. The manager said, ‘we’ll teach you everything.’ I started listening, making, remaking and it all worked out.” Share a behind the bar secret. Mark: “It’s just enjoying your job, your life and understanding what it’s all about. We have a very close-knit family atmosphere here as far as everybody is willing to help everybody. A chef and I were talking last night about how, before leaving kitchen, everyone will check to see if anybody else needs help. There’s a lot of hugging and high fives and thank yous.” What do you like most about working behind the bar? Mark: “I like the interaction with people the most. We’ve been here now for 15 years, and Always drink in moderation.
we have a lot of people who come in that we consider family. I’m interested in seeing those people every week and talking to them. It’s a great community here, and it’s because of the people here. It’s really nice coming from a big city where people come and go – so many of them it becomes a blur. Here you see people over and over and you build relationships that are that much more meaningful. I like to keep that up. Then on other side of it, being a tourist town, it’s great to meet new people from all over the world.” What advice would you give aspiring bartenders? Jamie: “Just be real. There’s always something going on, and it’s hard. It’s a hard job. In our case, every seat is vital to us. People don’t come in just to eat, we don’t’ have a television – which is a calculated move – but it makes a huge difference. It’s a very social bar, and 95 percent of the people that come in for a drink also eat. I like to say keep your eyes open and don’t get stressed out. Make eye contact and put people at ease. That’s a big thing. I would say don’t try too hard, and don’t be slick. You don’t need to be tossing bottles around and trying to do tricks. For us it’s all about being genuine.”

Getting Into the Holiday Spirits Desserts with a Touch of Something Extra
Golden Eggnog Cupcake
W
hy not add a little extra figgy to your pudding this year? We’re deep into the holidays now, which means it’s also high dessert season. Gatherings will undoubtedly include sweet bites, so consider making yours more memorable by adding a dash of liquor to the recipe. Introducing spirits to the classics can reveal additional dimensions and flavors, but experts warn that too much liqueur can overwhelm or mask desired elements. Whether it’s brandy, bourbon, rum or cream liqueurs, consider it akin to adding a dash of an extract – as something that can surprise with unexpected sweetness or flavors. Whether you’re hosting in your own home or traveling, it’s good form to have something sweet ready to offer. Start with a pair of sweet recipes from King Arthur Flour, which operates from its headquarters in Norwich, Vermont.

Juice from 1/2 squeezed lime 2 ounces sweetened cranberry juice 2 ounces vodka 4 ounces ginger beer or ginger ale Ice Lime wedges and cranberries to garnish Fill copper mug with ice. Combine lime juice, cranberry juice, vodka and ginger beer in mug. Stir. Garnish with lime wedges and fresh cranberries.
Golden Eggnog Cupcakes Courtesy King Arthur Flour • Yield: 2 dozen cupcakes
1½ cups (24 tablespoons) unsalted butter, at room temperature 2 cups sugar ½ teaspoon grated nutmeg 1 teaspoon salt; reduce to ¼ teaspoon salt if you use salted butter
4 large eggs ¼ cup dark rum or brandy 3½ cups King Arthur Unbleached All-Purpose Flour 2 teaspoons baking powder 1¼ cups eggnog
Preheat oven to 325 degrees. Line two standard muffin pans with cupcake papers or tulip muffin papers. Beat together butter, sugar, nutmeg, salt and eggnog flavor until light and fluffy. Beat eggs in one at a time, beating well after each addition, and scraping bottom and sides of the bowl. Stir in rum or brandy. Whisk flour and baking powder together. Beat in half the flour mixture, then half the cream. Repeat, being sure to scrape the bottom and sides of the mixing bowl occasionally. Spoon 1/3 cup of batter into each of the prepared cups. Bake the cakes for 28-30 minutes, rotating pans halfway through. When done, the top of a cupcake should bounce back when lightly touched, and a toothpick inserted into the center of one of the cupcakes in the middle of the pan should come out clean, or with just a few moist crumbs clinging to it. Remove the pans from the oven. Cool the cakes in the pans for 10 minutes then turn them out onto racks to cool completely. If you’re going to ice them, wait until they’re completely cool to do so.

Caribbean Rum Cake Courtesy King Arthur Flour
Rum Cake Base 2 cups King Arthur Unbleached All-Purpose Flour 1½ cups sugar ½ cup unsalted butter, softened Rum Soaking Syrup ½ cup unsalted butter ¼ cup water 1 cup sugar
½ cup pastry cream filling mix or instant vanilla pudding mix, dry 2 teaspoons baking powder 1 teaspoon salt ½ cup vegetable oil ½ cup white or golden rum ½ teaspoon vanilla
Preheat oven to 325 degrees. Spritz a 10 to 12 cup Bundt pan with cooking spray. Sprinkle on pecan or almond flour and turn pan to coat evenly. Place all cake ingredients except rum, vanilla and butter rum flavoring in bowl of stand mixer and blend on medium speed for two minutes. Scrape down bowl after one minute. Add rum, vanilla and flavoring (if using) to batter and blend for another minute. Pour batter into prepared Bundt pan and spread level with a spatula. Bake cake for 50-55 minutes. You may smell the nut flour toasting at first. When done, the cake will test clean on a cake tester. Leave cake in pan to cool slightly while you make the soaking syrup. In a medium-sized saucepan combine syrup ingredients, except vanilla. Bring to a rapid boil then reduce to a simmer and cook for about 5 to 8 minutes, until syrup thickens slightly. Remove from heat and stir-in vanilla. Pour about one quarter of the syrup over cake (still in the pan). Allow syrup to soak in. Repeat until all syrup is used. Cover pan loosely with plastic wrap and allow cake to sit out overnight to cool completely and soak in syrup. When ready to serve, loosen edges of cake and invert on to your serving plate. Serve with hot coffee or tea. The cake is very moist, fragrant and freezes very well. Optional: Decorate top of cake with powdered sugar and add a ring of maraschino cherries before serving.
As pecan pie recipes go, this one is quite simple. Add-in the perfect complimentary flavors of bourbon and you may have whipped up a new family favorite. This version substitutes healthier Vermont maple syrup, in place of corn syrup.

¾ cup pure maple syrup 3 tablespoons bourbon whiskey 1½ cups pecan halves ½ cup dark chocolate chips 1 (9-inch) unbaked pie shell
Preheat oven to 350. Melt butter in a small saucepan. In a medium bowl, add beaten eggs. Stir in brown sugar, flour, vanilla, maple syrup and bourbon until combined. Add melted butter. Mix in the pecans and chocolate chips until combined. Pour mixture into pie shell. Place shell on sheet tray and bake in the oven for 50-60 minutes.

1 cup (2 sticks) unsalted butter 3 ounces semi-sweet chocolate ½ cup unsweetened cocoa powder 2 cups sugar ½ teaspoon coarse salt ½ tablespoon vanilla extract 3 eggs 1½ cups all-purpose flour 1/3 cup Sailor Jerry Rum For caramel sauce: ½ cup sugar 1 ½ tablespoons water ¼ cup cream 1 ounce Sailor Jerry Rum Coarse sea salt

Preheat oven to 350 degrees and butter a 13-by-9-inch baking pan. Place butter and semisweet chocolate in a medium sized sauce pan and heat on low. Stir every few minutes until completely melted and smooth. Remove from heat and stir in cocoa powder, sugar, salt and vanilla. Beat in eggs one at a time until completely mixed in. Stir in flour and then rum until completely mixed. Using a rubber spatula, scrape batter into prepared baking dish and smooth the top. Place in the oven to bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Place on a cooling rack for 1-2 hours on until completely cooled. I usually like to refrigerate mine so they cut easier. While waiting on the brownies to cook and cool, start on the caramel sauce: Add sugar and water to a small sauce pan and bring to a boil over high heat. Do not stir. Boil the syrup for 6-8 minutes or until a deep amber caramel forms. Remove from heat and stir-in cream. Add Sailor Jerry Rum and stir until combined. Pour the caramel sauce into a large mug or heatproof cup and let it cool slightly. Place in the microwave or on top of the stove to keep slightly warm. When ready to use, drizzle on top of the brownies and then sprinkle sea salt on top.

A Brief Guide to Holiday Hosting There’s more that goes into making a festive holiday party. Here are some suggestions to keep in mind.
Know How Much to Buy Here’s how to determine how much wine or spirits to purchase: Determine the number of guests that will be attending.
Obey the law. Check ID on anyone you don’t know at your gathering. Never serve alcohol to anyone who’s under 21 or already intoxicated.
Take that number and multiply it by the number of hours the party will last. This determines the number of servings. For example, a party of 20 people lasting three hours would require about 60 servings.
Designate a bartender who can mix drinks with proper proportions and keep an eye on guests. Know the signs of impairment, which can include lack of coordination, aggressive behavior, being talkative or indifferent, and slurred or incoherent speech.
Be a Responsible Host Part of your responsibility as a host is not only entertaining guests but ensuring they have a safe night. Know who’s driving. Make sure designated drivers have plenty of non-alcoholic drinks. More than finger food. Serve food such as cheese, nuts and meat, which slow the alcohol’s absorption rate. Mix it up. Serve alternative beverages such as virgin cocktails, juice, soda and water.

Wind things down. Consider closing the bar an hour before the party’s end. Encourage carpools. Encourage guests to carpool with a designated driver and have a list of taxis available.
