Village Inn and Restaurant makes having a keen sense of character an important skill. “You can have someone who’s been to prison in one seat, and then the person next to him could be Father O’Malley,” McKeown says. “You have to be able to speak to any person who walks through that door. “Like I said, this is where the real people come.”

What do you like most about bartending? “I like to live vicariously through people. And I enjoy the stories and the banter that goes back and forth over the bar. I make people happy for a living, so there are a lot of different things

I

f there’s a word that best describes the atmosphere at the Jay Village Inn and Restaurant, it may be ‘genuine.’ This northern Vermont establishment serves the best of what the Green Mountain State has to offer — outstanding generosity, warmth, enthusiasm and top-notch hospitality. The mission here is to make sure everyone is comfortable. Just one tip before stopping by: don’t try putting on airs. “I always like to say that this is where the real people come,” says owner Holly McKeown. “Our clientele is absolutely amazing.” McKeown and her husband, J.R., have operated the iconic inn for nine years (though she’s been a part of the place for nearly 13 years), and Holly runs the intimate, comfortable bar. The restaurant and dining room is on the first floor and the inn’s 15 rooms are located on the

second floor. Ask a knowledgable local, however, and you’ll be directed to a highly soughtafter spot just inside. Call it an insider’s tip. “We have a wood burning fireplace that’s the most popular seat in Jay from December until April,” McKeown says. The building itself is iconic. A renovated farmhouse, wide barnboard wraps the entire structure, giving it a classic Vermont ambience. But it’s what’s inside that sets this place apart. There are certain requisite skills someone who wants to work at the Jay Village Inn and Restaurant must have. “It’s not like I hire just anybody that comes through the door” McKeown says. “It has to be a special person to work the bar here. Not just any schmo can do it. It has to be someone who gets along with the clientele and can read them.” The variety of guests that frequent the Jay

to like about the job. I love hearing about people’s travels, what they’ve done and seen in their lives. I like to hear the good, the bad — everything. I think it’s mainly about seeing people happy.”

What’s the philosophy of your bar program? “I think it’s the quality of our drinks. The fact I think I’ve been making drinks in the area for as long as I have, word has gotten out that people get what they pay for. That, and the recipes I’m using. I’m still trying to come up with new recipes or make recipes better.”

Share a behind-the-bar secret. “A lot of what we do is smoke and mirrors. If you do it well, it looks like you’re great at your job. And I think a lot of it is recognition. It’s just not working with your blinders on. You have to keep your head up and your head in the game.”

What’s your favorite cocktail to make? “I’m really proud of the way we do our Moscow Mules — only we call it the Mountain Mule. Instead of using ginger beer we do a fresh ginger puree. I do 30 pounds at a time — I peel

it, I cook it, and then we add a few different things to it. The puree ends up looking a little like horseradish and it takes all day to make it. We use a healthy scoop in every drink we make. It is definitely the healthiest drink we make. We also do a fall one with apple cider, Captain Morgan Rum and instead of lime we use fresh orange wedges and then land it in the stainless with club soda. We make an Island Mule with rum and triple sec and throw bitters in it.”

If you weren’t a bartender, what would you be? “I’d like to think I’d be something along lines of a psychologist. It’s all about balancing people’s personalities — getting to know about them and reading them. You have to be able to read your customer — there’s just no other way around it.”

What advice would you give to aspiring bartenders? “You know those crazy-busy nights when it feels like you can’t get your head above water? Those are the best nights to work. If you feel like you can’t handle it, just remember that the end of the night comes at some time.”

Warm Up to Cognac Swirl It, Sip It or Mix It: Rich Textures and Flavors Perfect for Any Setting

T

here’s a chill in the air and a fire in the hearth, which can mean only one thing: It’s cognac season. As the snow falls and the sun dips below the horizon, there may be no better way to relax at the end of the day than settling into an overstuffed chair with a glass of cognac – which is the enduring image of the spirit. However, there’s much more to this classic than the staid image of sipping it in wood paneled rooms lined with leather bound books. The spirit has dusted off its previously stodgy image in recent years, popping up in hiphop lyrics and starring in music videos. Leave the monocle behind and get to know cognac. All cognacs are brandies, but not all brandies are cognacs. The primary difference between the two is that in order to be classified as such, it must be produced in the Cognac region of France — located a few hours’ drive southwest of Paris and just north of Bordeaux. Cognac is created by double distilling white wines and then aging it in French oak casks, where it develops tannins, color and complexity. The resulting spirit, eau de vie (literally, “the water of life,”) is stored, and that’s where it begins to take on the characteristics that make it unique. The grading of the cognac — which often decides how it ultimately will be consumed — depends entirely on how long it’s allowed to age. The youngest eau de vie in the blend dictates the age of a cognac. If a 10-year-old cognac is blended with a cask of 20-yearold spirit, it is aged at 10 years.

There are three primary grades of cognac: The Very Special (VS) grade has been stored for at least two years in oak casks. A straw/yellow color will tell you that it’s a fairly young cognac. Blend this grade of cognac with a mixer or water. This grade of cognac will be your bartender’s best friend. Good examples of VS grade cognac are Hennessy VS, which features flavors of citrus, apple, fresh grapes and French oak, and Courvoisier VS, with strong notes of fresh fruit and a fresh, oaky taste.

The Very Special Old Pale (VSOP) has been stored and allowed to age for at least four years. As you choose cognac of higher quality, you’ll want to take it neat – though a drop of water at this grade wouldn’t turn heads, either. Remy Martin VSOP balances flavors of ripe fruit and subtle notes of licorice, and Hennesy VSOP Privilege offers light aromas of clove and cinnamon with flavors of honey and a lingering finish.

The Extra Old (XO) grade of cognac has been stored for a minimum of six years, and some premium blends of XO have been known to spend at least 20 years in storage. Older cognacs tend to take on an amber or auburn/red hue.

There are rituals associated with sipping cognac that can enhance the experience. Choose a tulipshaped wine glass or a low, spherical glass or snifter; pour a two ounce serving. Hold the glass for a while – allowing the cognac to hand-warm to room temperature releases aromas. Swirling it in the glass can enhance it even further. Inhaling the aroma can ignite sensations ranging from fruity to floral. Younger cognacs may present fruity aromas, while floral notes will be present in slightly older grades. In XO cognacs, especially those older than 20 years, spicy notes should appear. After swirling it in the glass, notice the beads that slide down the sides of the glass. Thicker legs indicate a higher sugar presence and thinner legs leads to more alcohol or heat on the palate. Sipping the cognac allows it to pass over the palate slowly, allowing the complex flavors to emerge, and the lingering finish to present itself. While cognac is produced in France, by definition, the French don’t consume a great deal of it. Only 1-2 percent of the cognac produced in France actually remains there. The rest is exported. The U.S. remains the top market for cognac by volume, according to the Bureau National Interprofessional du cognac. The Bureau also announced that, once again, shipments of cognac have risen during their 2016-2017 campaign to reach their highest levels to date, both in volume and in value. Cognac exports have continued to grow for the third consecutive year, with an increase of 10.2 percent in volume and 15.2 percent in value.

Jim Beam Bourbon Milk Punch

2 ounces Jim Beam Original 2 ounces whole milk 1 ounce half-and-half 1 teaspoon sugar 1/4 teaspoon vanilla extract 1/4 teaspoon grated nutmeg 1 cinnamon stick (optional)

In a shaker half-filled with ice cubes, combine the bourbon, milk, half-and-half, sugar and vanilla extract. Shake well. Strain into a highball glass and garnish with the nutmeg and cinnamon stick.
