assion, creativity and determination: These are the first key ingredients Matt Grant needed when he decided to create his award-winning Linchpin Amari Aperitivo. The Burlington bartender, who has worked at Leunig’s Bistro & Café at Church Street Marketplace for 14 years, has an appreciation for Italian amaro liqueurs. Before he created his aperitivo, the Vermont spirits market did not have a home-grown amaro. “I kind of love the world of amari in general, the bittersweet Italian liqueurs, and they are all very different. They are all like their own little cocktail in a bottle. I was always playing with fortified wines and vermouth,” Grant recalls. His decision to experiment and create his own brand won over a lot of his fellow bartenders, who enjoyed using it as a mixer with various cocktails. He also won over Craig Stevens, the owner of Wild Hart Distillery in nearby Shelburne. As Grant’s contract distillery, Wild Hart produced the first bottles of what became Linchpin Amari Aperitivo in January 2023. Grant’s new amari spirit is now sold at nearly 40 802Spirits stores statewide. Grant says he was in his third production cycle in November. “Craig Stevens helped me bring it to the market. He was just pivotal in my journey,” Grant says. Amaro, which means bitter, is an Italian herbal liqueur that includes several blends depending on the herbs, botanicals, roots, wines or spirits used to create them and age them in bottles or barrels. It is generally consumed as an after-dinner spirit. But it is also used as a mixer to enhance whiskey, bourbon and other spirits. Grant’s aperitivo is intended to open up one’s palate with a burst of citrus flavors. “Primarily, the way I envision it and selling it is in the spritz category. I have seen it used more and more as a mixer. It is 13% ABV, so it is pretty low, but it goes well with whiskeys and mezcals,” Grant says. He adds that it can used as a substitute for triple sec and Cointreau. As a versatile spirit, Grant believes his niche product will continue to be embraced by home mixologists and professional bartenders. Grant’s journey to creating his version of liquid gold began when he experimented with creating his own vermouth for years. “I found that wine is a tough thing to work with. doing was making spirits with sugar and botanicals that I added to the wine. When I started tasting it by itself, I realized I did not need to make the wine,” Grant says. It took six months during his spare time away from his bartending duties for Grant to hone his aperitivo and get the flavor he wanted. To mass produce the new amari spirit and sell it across the state, Grant needed a partner. He found one in Craig Stevens at Wild Hart Distillery. Grant says that Stevens recognized right away that his aperitivo had great marketing potential. “He saw that the juice was good,” Grant recalls. Toward the end of 2022, Grant says they produced 70 cases for the first production cycle, 50 cases for the second cycle and more in November. (There are 12 bottles in a case.) Eventually, Grant would like to see his Linchpin Amari Aperitivo sold in other states. San Francisco Spirits Awards. At 43, Grant is very content tending bar at Leunig’s Bistro & Café. The New Jersey native moved to the Burlington area after graduating from college and has lived in Vermont for 20 years. His first job in the restaurant business was at an Applebee’s. He began his bartending career at an Italian restaurant in Williston. “I enjoy what I do,” he says. Creating his amari aperitivo has also made him a better mixologist who has a greater appreciation of what it takes to distill spirits before they end up in the bottle behind his bar. “To learn more about how a spirit is made, distilled and created is cool,” Grant says. He also enjoys seeing how other bartenders are incorporating the aperitivo into their cocktail recipes in ways he never would have imagined. Grant’s greatest affirmation that he has created something special always comes from his patrons. “Whenever people come in to the bar and try it for the first time and say how much they love it, it’s a great feeling,” he says.

Halvorson’s Upstreet Café At this Church Street Marketplace eatery in Burlington, multiple inches of snow in January and February translate into a unique outdoor opportunity. Patrons at Halvorson’s Upstreet Café can belly up to the snow bar and order their favorite cocktails. This event is so much fun that it makes city denizens wish for a blizzard. A brisk whiskey cocktail is definitely a must at this snowbound establishment.
In a medium saucepan bring enough water to cover ginger to a boil. Add ginger and reduce the heat to medium low. Simmer for 30 to 35 minutes. Strain ginger, reserving 1 tbsp. of water.
Wipe the saucepan dry, then add cooked ginger, reserved cooking liquid and enough sugar to equal the weight of the cooked ginger. Bring to a boil, then reduce heat to medium low. Stir frequently. Simmer for 15-20 minutes, or until the liquid has totally evaporated and the sugar begins to crystalize. Move ginger to a parchment-lined baking sheet and cool completely. Store in an airtight container.
Whiskey Ginger CANDIED GINGER:
Fill a rocks glass with ice. Add whiskey then ginger ale. Garnish the rim with a lime wheel. Thread the candied ginger pieces onto a toothpick and serve.

2½ cups whole milk ¼ cup granulated sugar 2 tbsp. cocoa powder 1 tsp. pure vanilla extract 6 ounces chocolate chips or chopped bittersweet chocolate ½ cup Rumchata 1/3 cup warm caramel Whipped cream, for serving Cinnamon sugar and cinnamon stick, for garnish
1½ ounces bourbon whiskey, or brandy ½ ounce peppermint schnapps In an old-fashioned glass filled with ice, pour the bourbon or brandy and peppermint schnapps. Stir to combine. Serve and enjoy!

2 ounces WhistlePig PiggyBack Bourbon ¾ ounce WhistlePig Barrel Aged Maple Syrup 1 ounce freshly squeezed lemon juice 2 dashes of bitters 1 egg white
Garnish:

2 parts Roku Japanese Gin ½ part green tea simple syrup (or agave) ¾ part fresh lemon juice 5-7 mint leaves
Garnish:
Mint sprig
Combine mint leaves and green tea simple syrup into a shaker and gently muddle to extract the oils from the mint. Add other ingredients and ice, shake for 10-15 seconds. Fine strain into a rocks glass over fresh ice. Garnish with mint sprig.
