Montpelier Mixologist Celebrates Food, Family and Fun

ome people progress through their career with visions of a porch and a rocking chair at the end. Not Debra Lewis. “My biggest fear is having to retire,” says Lewis, the head bartender at Sarducci’s Restaurant and Bar in Montpelier. “I love that restaurant and all the people in it.” Lewis began her career at Sarducci’s 24 years ago, first bussing tables but quickly finding herself behind the bar. For nearly two-

and-a-half decades she’s greeted customers, gotten to know them, mixed up their favorite cocktails, listened to their stories and provided some good-natured ribbing when required. “When people walk through that door, they feel it,” Lewis says. “They can feel the warmth. They sit at my bar and tell me that everyone there seems happy and that everyone is friendly to each other. And the truth is, with so many personalities here, there are very seldom any personality conflicts. That’s because of the

people behind us. If someone has a problem, there are hugs and open arms. It’s because of those two women.” The women Lewis refers to are Sarducci’s founders Carol Paquette and Dorothy Korshak. The pair were working and managing restaurants in central Vermont in the mid-1990s when they decided to open a destination featuring fresh, locally sourced, authentic Italian food. Since 1994, it’s been one of the best-known go-to spots for great Italian fare. “They (Paquette and Korshak) would never ask an employee to do something they wouldn’t do themselves,” Lewis says. “That’s what makes a great boss and a great restaurant. They’re awesome. For example, they don’t have an air conditioner in their office because the cooks in the kitchen can’t have one. That’s the kind of people they are.” It’s an approach that’s helped forge a meaningful bond and a sense of loyalty between the Barre resident, her coworkers and her customers. Lewis’s personal cell phone will often start ringing at 11 a.m. with regulars looking to reserve a table that night. Lewis makes sure they’re well taken care of. “Those are the people that carry us through the winter,” she says. “We make sure we always have room for those local people. Even during foliage season – we keep openings for them.” It’s a sense of belonging Lewis doesn’t expect to change anytime soon. “Our head chef, Jeff Butterfield, is the heart and soul of the place now,” she says. “In a few years he’ll be the new owner, and he doesn’t plan on making any new changes to the way we do things — which is awesome for anyone who works here.”

What was your first night behind the bar like? “It was exciting. I had already been a bartender at my mother’s restaurant, and I had been waitressing a little while there. Once I started, I ended up having a full bar every Saturday with reservations because we raised hell and had such a good time. It was fun. I’ve always felt very comfortable here. Nothing is overwhelming about Sarducci’s.”

“Be yourself and have fun. And do a good job on your work. Do your work well. Work hard, have fun and most of all, be yourself.”

“Well, this is unique, but we do have one that the customers call ‘The Debbie Margarita.’ It’s just a Cuervo margarita with Grand Marnier on top, but even the head chef asks for it by that name. But we do have a cocktail that’s really great called the Forbidden Sour. It’s Barr Hill Gin with pomegranate liqueur and fresh lemon juice.”

If you weren’t a bartender, what would you be? “I love my job so much that I can’t imagine doing anything else. I guess I’d be a salesman selling something. I can sell. I’ve been told that before. If someone comes in, I’ll look at a customer and say, ‘How about some oysters?’ Next thing he’s saying, ‘Yeah, that’s a good idea.’”

Share a behind-the-bar secret. “Being able to mix drinks and talk to people at the same time is a real skill. When people get busy, sometimes they can’t talk. People will tell me, ‘Debbie you have eyes in the back of your head.’ This weekend we did over 1,600 covers from Friday to Sunday. On a Friday night I can do 350. I’m making every drink, juice, milk, soda for the whole restaurant. That’s a lot of drinks. While I’m doing that, my mouth is still running. That’s a skill. Being able to communicate with customers while doing your job.”

At the end of a shift, I… “Sit down at the end of my shift at Sarducci’s — it’s always so busy that I have to come home and unwind for three hours. That’s how busy it is. I can leave the restaurant at 11 p.m. and at 2 a.m. I’m wide awake and wired. So I try to relax. I watch TV — probably ‘CSI’ because it’s the only thing on at that hour.” Always drink in moderation.

s my blindfold is removed i n the foyer of Steven Soderbergh’s office—he’s

notoriously wary of journalists—I try to remember the list of things his low-powered publicist insisted I not ask him about: his life, his work, his appearance, and (crucially) his upcoming VicePresidential run. Waiting for his arrival, I use my smartphone to peruse the pdf I was sent entitled RULES OF ENGAGEMENT, which details the do’s and don’ts (mostly don’ts) of interviewing Dr. Soderbergh (Pratt, 2010). The takeaway is this: don’t look him in the eye, and only talk about Singani 63. The following is an unedited transcript of our conversation.

TAS: Dr. Soderbergh, thank you for— SS: Actually, my friends call me “Milord”. TAS: Oh…well. “Milord”, I didn’t—

SS: I didn’t discover it, man, it’s been around since the 16th century! That’s more years than you have brain cells! Some Spanish missionaries or monks or something brought these white muscat grapes from Alexandria and planted them in the Andes so they could party on the road. And now you’re here. TAS: Let me rephrase— SS: Please do! TAS: How did you find out about Singani 63? SS: At the start up party for Che—my unappreciated masterpiece about the most photogenic revolutionary of the 20th century—my Bolivian casting director, Rodrigo Bellott, gave me a bottle. TAS: What did you like about it? SS: That’s a very personal question. Next. TAS: Can you describe its qualities? SS: Can you outrun a cheetah? TAS: No. I don’t think so. No. SS: Then you realize how inane your question is. TAS: What does it taste like? SS: Like something I want to drink! Ye gods! Why would I spend six years and my own money importing something I didn’t like to drink? TAS: I was trying to give people an idea of what to expect— SS: They should expect something exceptional, unless they think becoming invisible isn’t exceptional. This isn’t some swill peddled by a billion-dollar corporation and fronted by a paid-for

celebrity in the hopes of making a profit off an unsuspecting public—this is a unique spirit brought to the United States of America in order to line my pockets with cash from discerning, adventurous souls with a penchant for the truly authentic. Shorts and t-shirts have replaced bulky coats — which means we may want to keep a closer eye on what we’re sipping. With garden parties, barbecues and picnics filling up our calendars, there will likely be plenty of opportunities to sample some great cocktails. And while it’s true that alcohol can be rather calorie-dense, there are options that will allow even the most calorie-conscious cookout attendee to partake. A typical 80-proof spirit, like rum or vodka, contains about 96 calories for every 1.5 ounce

serving — about the size of a shot. But here’s where things get complicated: Calories in mixed drinks can add up quickly thanks to a number of elements, including the proof of the alcohol and the size of the drink. The higher the alcohol content, the higher it will likely be in calories. While a 1.5 ounce serving of 80-proof liquor can have 96 calories, a 90-proof serving can contain 110 calories and the same size serving at 100-proof can contain 124 calories. A common question, then, is ‘what is the best cocktail I can drink while I’m on a diet?’ In some cases, simplicity works. A vodka and soda will contain just 96 calories, thanks solely to the vodka. Just fill a glass with ice, add vodka and top with soda water. Including a bit of fresh lime juice will add four calories, but also a bit of flavor. Likewise, a rum and diet cola will get all of its 96 calories from the rum. Combine the ingredients and serve over ice. (Squeeze in a little lime juice to transform it into a Cuba libre.) On the other hand, there are spirits that, while tasty and provide the opportunity to indulge in exotic or unusual flavors, bring with them higher calorie counts. According to delish.com, Everclear grain alcohol can have as much as 285 calories per 1.5 ounce shot, partly due to its high alcohol content. Likewise, Bacardi 151 can have 185 calories per shot. It’s not a simple rule, however. Though it’s only 30-proof, schnapps can have 195 calories in a single shot because of its high sugar content. Similarly, liqueurs tend to have higher calorie counts because they’re typically higher in sugar. As for cocktails, drinks like the mojito (approximately 220 calories and 25 grams of sugar) and the margarita (approximately 275 calories) fall into the high calorie category — depending, of course, on how they’re prepared and what the ingredients are. Luckily, distillers have produced ready-todrink options that cut the calories while keeping the flavor. 11/2 ounces Svedka Vodka 1 ounce watermelon schnapps 1/2 ounce cranberry juice 1/2 ounce lemon juice 1/2 ounce simple syrup 1/4 ounce blue curaçao Soda water Build in the glass. Add watermelon schnapps and cranberry juice over ice, then carefully add lemon, simple syrup and vodka for the the white layer, then carefully layer the blue curaçao to create the color separation and gently top with soda. Garnish with watermelon balls on a cocktail pick.
