t first blush, Ratu’s Liquor and Market, in Wilmington, may seem like many small Vermont stores. Take a step inside, however, and discover it’s not at all like anything, anywhere. Chalk it up to the colorful island vibe, the ever-present throb of reggae music weaving its way through the aisles or the store’s logo – a noble lion emblazoned over the colors of the Jamaican flag keeping watch over everything. The atmosphere doesn’t go unnoticed. “Usually, when people come in, they say this is the coolest liquor store they’ve ever been to,” Owner Jennifer Betit-Engel says. Ratu’s Liquor and Market can trace a lot of its DNA back to Christian Engel, who originally hails from Fiji and lived in Hawaii. Betit-Engel grew up in Vermont, and met her husband while studying in Seattle. When it came time to settle down, the two wanted to live near family. Engel preferred to live somewhere other than Fiji, she explains, and the cost of living in Hawaii is high – which made Vermont the natural choice. The couple purchased the store from Betit-Engel’s aunt four years ago this August, and it became theirs on Dec. 9 of 2013. They then set about making it their own. “Christian wanted to have some of the culture from his upbringing,” Betit-Engel says, explaining that the store’s name, ‘Ratu,’ is the word for ‘king’ from her husband’s home country. “And the name is easy to say without any kind of accent.” Written by Bill Burke | Photos by Matthew Thorsen 4 | 802spirits.com u j u n e 2017

They filled the 1,500-square-foot store with craft beer, fine wine, cigars, coffee, kombucha, and a selection of spirits. And while the warm breeze of the islands never seems far away, there is a very strong Green Mountain vibe throughout. “It’s boutique-like and it’s stuffed,” BetitEngel says. “We carry pretty much everything Vermont offers, a lot of special-orders and high-end liquors.”

people about bourbons,” Betit-Engel says. “He loves the Japanese whiskeys, but he tries really hard to find ones that are very affordable, but aged well – the Old Grand Dad Bonded, the Tincup American Whiskey. But WhistlePig is his favorite.” It’s yet another detail that the couple – parents of 7-year-old son Matai and 8-year-old daughter Talia – put in place to set the Wilmington store apart. Then there’s the omnipresent dub-bass thump of the store’s soundtrack. “Music is big for us,” Betit-Engel says. “So it’s reggae music, all the time. We laugh sometimes because we’ll be looking at the (security) camera and people come in and jam out and start dancing down the aisles.” It all goes into creating an atmosphere where customers feel welcome. Special orders are the norm, as much of the clientele consists of tourists and seasonal employees. Betit-Engel and her husband go out of their way to stock the shelves with items particular to those workers who arrive with the first snows. Drop by at the right time of the year, visitors will even find bottles of Pisco stocked – a drink particularly sought-after by Chilean and Peruvian workers who flock to the area during the ski season. “We really care,” Betit-Engel says. “It’s not always about numbers, it’s about the relationships. If somebody mentions something and we have it the next time they come in, it makes Visitors are greeted with the warm breeze of island art and music, which successfully merges with a Green Mountain vibe throughout.

She says the couple especially enjoyed creating the Vermont section of the store. Visitors will find a wide range of local craft beers, and almost every spirit crafted in Vermont, from Metcalfe’s Maple Cream Liqueur, (which she lovingly describes as “home-made Baileys with maple syrup”) to some locallycrafted and highly-respected whiskey. “Christian has lots of conversations with

them feel good that we care enough to bring it in for them. It’s not a store, it’s a family. I know it sounds cheesy, but that image is important. We want it to be their store. We want that for our store. We want it to be a place where ‘everybody knows your name.’ It’s a store where people feel it’s their place.” Or, as it might be said rather succinctly on Fiji, “Bula.” Please drink responsibly.

hen Bruno Lengyel, the owner/manager of Mangia e Beve first came to Vermont two years ago, he discovered a beauty that made it difficult for him to leave. So he didn’t. Bruno – diners, guests and friends know the affable restaurateur best by his first name – was born in Vittorio Veneto, Italy, and brought up in Hamburg, Germany. Now, Wilmington is home, and it’s where he opened Mangia e Beve, a fine dining establishment in the heart of this small southern Vermont town. “I saw a beautiful area and I stuck here,” Bruno says. Within six months, Mangia e Beve, which translates to “eat and drink,” opened its doors. With an outstanding menu and unmatched service in an upscale, romantic atmosphere, it caught diners’ attention immediately. Attentive servers wear shirts and ties and hustle to and from the dining room, which is lined with tables covered in white linen tablecloths. “We are a fine dining, Tuscan-style restaurant,” Bruno says from the West Main Street

destination. “We have a very nice selection of wines, nice beers and we do a couple of specialty martinis, as well.” The food, however, is what keeps guests returning over and over again – a detail that Bruno takes pride in. Pasta, meat and fish are regulars on the menu, crafted with fresh ingredients and time-tested recipes, and on Wednesdays and Thursdays he offers locals a three-course meal for $29. The hands-on owner even shops for ingredients himself, sourcing items locally whenever possible. “What I like best is people coming back consistently,” he says. “Even if it’s from far away. If they come twice a year to see us, they always come back twice a year. If they come four times a month, we’ll see them every time. We build friends and families – nice relations.” The bar is stocked with an extensive list of cordials, bourbon, Scotch, grappa, tequila, cognac and port wines, while specialty coffees and desserts are on-hand to round out any meal.

Inside, visitors will find an extensive wine list to go along with the authentic Italian fare. Bruno takes pride in the collection of more than 200 wines, something he says is “very unusual for this area. ” The exterior of the restaurant, on the other hand, sums up the soul of this dining destination perfectly: Tuscan with a touch of Vermont. “We put a lot of stone in to match the Vermont area,” Bruno says. What’s the philosophy of your bar program? “We always use fresh ingredients to make nice cocktails. We make sure it’s a nice presentation with a full glass. We have high-top tables in the bar, and it’s all the same menu – no exceptions. You can get everything in the bar that you can get in the dining room.”

What cocktail is Mangia e Beve best known for? “The Espresso Martini. We use freshly-brewed espresso, vodka and Kahlua. The difference is in the espresso. It’s freshly-brewed and makes it great.”

Share a behind the bar secret. “The secret to working behind the bar successfully is to make a lot of friends and get connected. Your philosophy must be to meet people. They get to know you and then they recommend you. I like all parts of the job, but that’s something I like – you meet more people behind the bar than you do behind a computer in an office, that’s for sure.”

What’s your favorite cocktail to make? “I like to make the Cosmopolitan because it’s a great cocktail – a classic. I also like making a Manhattan, but with special cherries. We use Amarena cherries (a small, dark cherry grown in Bologna and Modena). It gives it a great flavor like when you add smokiness to a dish. It’s the same thing. They’re very sweet, very ripe with a big, cherry aroma. Very different from the normal Maraschino cherries.”

Bourbon – Known as “America’s Native Spirit,” bourbon is a distinctly American take on this popular category. There are certain legal requirements that have to be met for a spirit to be designated as bourbon:

½ ounce Grade A maple syrup ½ ounce orange juice ¼ ounce lemon juice 4 dashes Angostura bitters ½ orange wheel 2 ounces bourbon 1½ ounces chilled seltzer Ice

In a rocks glass, combine the maple syrup with the orange juice, lemon juice and bitters. Add the orange wheel and lightly muddle. Add the bourbon and stir well. Fill the glass with ice and top with the chilled seltzer.

• It must contain at least 51 percent corn • It must be aged in new, charred oak barrels • It can be distilled to no more than 160 proof and put into the barrel for aging at no more than 125 proof • It must be bottled at 80 proof or more • It must be produced in the U.S. Bourbon can be sipped neat, on the rocks, or with a little water, but it also sits well in cocktails. Classic examples of bourbon include Wild Turkey, Jim Beam, Elijah Craig or Maker’s Mark. For bourbon with a higher rye content, and therefore a spicier flavor, try Buffalo Trace, Bulleit, Eagle Rare or Old Grand-Dad. Smaller, craft producers also provide great options.

Irish whiskey – There was a time,

not long ago, when Irish whiskey was but a blip on the international spirits consciousness. After a period of increased growth and popularity, however, Irish whiskey once again stands firmly in the spotlight. To be called Irish whiskey, the spirit must be distilled in the Republic of Ireland or Northern Ireland and it must be triple-distilled, which gives it a lighter, less smoky flavor and smoother finish. Single pot still whiskey, something unique to the Irish style, uses malted and unmalted barley, which helps give it a distinctive flavor. Its place in Irish culture, famed for its writers, artists and musicians is unquestioned. Whiskey itself is an Anglicized version of the Irish, “uisce beatha,” which means “water of life.” Classic examples of Irish whiskey include Jameson, Bushmills, Tullamore Dew, Redbreast and Teeling.

Room, in Burlington, (Ri Ra’s “sophisticated, mature other half”) offers a range of more than 100 whiskies, providing plenty of opportunity to sample a wide range of styles.

Canadian whisky – Typically a blend of spirits, Canadian whisky is usually lighter and

smoother than other styles, and its quality often relies on the expertise and skills of the master blenders. Each grain is fermented, distilled and then aged separately and blended at the end of the process. While other styles of whiskey are bound by hard-and-fast rules, Canadian whisky (no “e”) is free to test creative boundaries. In order to be labeled as such, Canadian whisky must be mashed, distilled and aged at least three years in Canada. That’s it. Just last year, Jim Murray’s Whisky Bible named Crown Royal Northern Harvest Rye its 2016 World Whisky of the Year. It was the first rye whisky to be released by the Canadian distiller. Skilled blenders craft complex, flavorful spirits that can be mixed or sipped straight. Classic examples of Canadian whisky include Crown Royal, Canadian Club, Black Velvet and Lot 40.

The 802 connection: One of the Vermont liquor agency stores closest to the Canadian border is the Derby Village Store. Just five miles from our northern neighbors, the store has seen plenty of customers from Canada during its more than 100 years in existence.

Try this: The Maple Leaf 12/3 ounces Canadian whisky 1 ounce lemon juice ½ ounce maple syrup

File a shaker with ice cubes. Add all ingredients, shake and strain into a chilled cocktail glass.

Try this: The Blarney Stone 2 ounces Irish whiskey 1 ounce freshly-squeezed lime juice from two limes Ginger beer, chilled

Add whiskey and lime juice to a cocktail shaker and fill with ice. Shake until well chilled, about 15 seconds. Strain into an ice-filled highball glass. Top with ginger beer and garnish with a lime twist.

Rye whiskey – Notable by its big, spicier taste, American Rye whiskey is similar in many ways to bourbon, however, it must be distilled from at least 51 percent rye and like bourbon, must be aged in charred, new oak barrels. Rye has a lengthy history in North America. In fact, George Washington distilled rye at Mount Vernon, and by Prohibition, it was the most-used spirit in any cocktail that called for whiskey thanks to its rich flavor profile. For years, rye took a back seat to the more popular bourbon, but recently, it’s gained a new lease on life with a renewed focus on quality. In many cases, it is used to mix popular cocktails, but it can also be sipped neat or on the rocks. The 802 connection: One of the better known rye whiskeys comes from right here in

Vermont – WhistlePig Rye Whiskey. It’s made in a 150-year-old renovated dairy barn in Shoreham and aged in Vermont oak barrels. Mad River Distillers also makes Revolution Rye.

2 ounces rye whiskey 2 ounces sweet vermouth 2 dashes Angostura bitters Maraschino cherry for garnish Pour the rye, sweet vermouth and bitters into a mixing glass filled with ice. Stir until outside of shaker is cold to the touch. Place a Maraschino cherry in a chilled cocktail glass. Strain contents of the shaker over the cherry and serve.

Scotch Whisky – Distilling the essence of Scotch down to a brief description is as complicated as its diverse and renowned flavor profiles. There several styles of Scotch Whisky, but this product of Scotland is greatly sought-after by aficionados who prefer its flavors – which can range from light and floral to rich and rounded to full bodied and smoky. Scotch is defined by an age-old set of requirements. In order to be classified as Scotch whisky, it must be produced at a distillery in Scotland from water and malted barley. It must be a minimum of 80 proof, and must be matured in oak casks of no more than 700 liters for at least three years. Scotch is usually served neat, with a little water or some ice. However, there are some cocktails that call for this respected spirit. Classic examples of Scotch whisky include Laphroaig, Cacallan, Bavlenie, Johnnie Walker and Dewar’s.
