The Derby Village Store

f anyone needs anything in Derby, they usually head for the corner of Main Street and Route 111 – just as they have for more than 100 years. That’s where the Derby Village Store sits, and has since the days when customers would tie their horses out in front before heading inside for groceries, meat and in more recent decades, spirits. “We’ve been on this corner for a long time,” Owner/Manager David Bouffard says. “The previous owner remodeled it a few years before we purchased it, and we’ve done one since then, but you’d never know it’s 100 years old to look at it now.” A visit to the coffee counter near the front reveals a display of three photos – one of the store in its earliest days, one from the late 1940s, and one of the store today. black and white photo from nearly a century ago shows a pair of horse-drawn carriages in front of the longtime town landmark, with smartly-dressed Derby residents posing formally just feet from the front steps of the store. A lot has changed over the years – it looks quite different thanks to upgrades and refurbishments (“we remodeled the liquor store a year ago,” Bouffard says), but the small town feel remains. “We’re basically in between a small supermarket and a country store,” Bouffard says. “We’re kind of something in between. It’s very hard to distinguish – there are not a lot of stores like it.” At just under 2,500 square feet, it’s on the smaller side, but every available space is packed with useful items: the store’s specialty is its meat selection, but it also offers deli items, fresh produce, wine and a newlyinstalled growler station with six taps that feature Vermont-only brews. The focus on Green Mountain State-produced spirits is important for the Bouffards. “We have a Vermont section in the liquor store,” he says. “We carry Barr Hill Gin, the Boyden Valley products – the Vermont Ice Maple

Creme, Vermont Ice Apple Creme – the Vermont Spirits products, Whistle Pig, Smugglers’ Notch Gin and Vodka, the Dunc’s Mill products. “We remodeled the whole store two years ago and changed everything – new shelving, cases, auto doors – we re-did the whole store. Phase two was the liquor store last year. We took some of the area of the back room and enlarged the liquor store made it easier to access everything. It came out really nice and made it all up to date.” The Bouffards have owned the store, which employs 25 people, for 17 years, and the town’s residents have been supportive in part because it is a family business. The Bouffards three children – two sons and a daughter – all worked there through high school. “It’s a community store, and of course since we’re from the area, we know a lot of the people that come in,” Beth Bouffard says. “It’s kind of funny – it’s not a full-blown supermarket, but we can provide service just like a fullblown supermarket. It’s small enough where you can find what you want quickly. People respond to that.” The secret to their longevity is the focus on service, the Bouffards say. While the store is priced competitively with the larger chains, their belief is that it all boils down to the quality of service. “The store has always been run that way,” David Bouffard says. “It’s clean and we’ve got great people – probably the best people in the business. You have to have people who know how to take care of customers. If you don’t take care of your customers, someone else will. We’ve always run the business that way and we’ve been fortunate to hire good people.”

Heads in the Clouds When it’s time to take a break, David and Beth Bouffard head for the nearby Newport State Airport where they hop into their Piper Archer and take to the skies over the Northeast Kingdom for a bit of perspective. David, a licensed pilot, will take his wife to Bar Harbor for lunch, on a quick trip to Burlington, or even to visit a son in Rhode Island. nough with the April showers, already. As we head into the heart of spring, Vermont is beginning to live up to its nickname. The Green Mountain State is starting to bloom in earnest, as buds blossom and long-dormant flora springs to life.

From the Northeast Kingdom to the lower reaches of the Connecticut River, the forests, meadows and mountains are flowering. And what better way to celebrate this annual renewal than with an appropriately-themed cocktail? We’ve gathered a garden full of recipes that look too pretty to drink, but taste too good to pass up. Cheers to Mother Nature.

Red Clover is the Vermont state flower. This small,

fast growing biennial represents Vermont’s farms and fields. It’s easy to spot, if only because it flourishes from Derby to Stamford: Just look for its telltale three green leaves and purple flower. Honeybees gather nectar from it and some people have been known to make tea with it. We’ll settle for a drink in its honor. 6 | 802spirits.com u M AY 2017

8 whole raspberries 12/3 ounces Absolut Vodka ¾ ounces lemon juice

¾ ounces simple syrup 1/3 egg white

Muddle raspberries in a shaker. Add the vodka, lemon juice, simple syrup and egg white. Fill with ice cubes. Shake and strain into a cocktail glass. Please drink responsibly.

Buttercups crawl through fields, farms

and meadows throughout the state, brightening up the environment – but cause a bit of a headache for farmers. It spreads aggressively, is difficult to eradicate and can be toxic to livestock. While they’re lovely to look at, they’re not something you want to ingest. Unless it’s this deliciously sweet cocktail. prohibition-era concoction.

Columbine flowers are common to

the state. They’re tough (pretty much a prerequisite for any plant making its home in Vermont), and beautiful to look at. These perennials – also known as Granny’s Bonnet – have a lacy appearance, with distinctive bell-shaped, spurred flowers that range from light pastels to purple. Columbines are easy to grow, just as its namesake cocktail is easy to craft.

Lavender can be difficult to grow in

Vermont. Bees, however, we’ve got in spades. And Caledonia Spirits, in Hardwick, makes the most of the bees’ labor. Its Barr Hill Gin uses a neutral corn-based spirit, juniper and raw honey. Try a little homegrown gin (and some local honey) in this prohibition-era concoction. ➔ O N T H E COV E R

2 ounces Barr Hill Gin ¾ ounces lavender honey syrup* 1 ounce lemon juice *Lavender Honey Syrup:

¼ cup honey 1/8 cup hot water 1 teaspoon dried lavender To make the lavender honey syrup, combine hot water with honey and stir until evenly mixed. Add lavender, stirring to combine and let cool for 30 minutes. Pour through a fine mesh strainer to remove lavender. Combine all ingredients in a shaker full of ice. Shake vigorously for 10 full seconds. Double strain into a cocktail glass and garnish with a lavender sprig. Always drink in moderation.

Fill a brandy snifter (or medium sized glass) with the ice and cream. Add in the crème de cacao and butterscotch schnapps and serve.

breeze are beautiful to be sure, but the seeds of these tall, bright flowers have also being used as biodiesel fuel here in Vermont. Twenty acres of sunflowers were cultivated in Shaftsbury and another 10 acres in Newbury, which were then dried and pressed. The raw oil can then be converted to biodiesel, and the solid portion of the seed is used as livestock feed. The initial effort was a pilot program between Green Mountain Power, UVM Extension and Vermont Bioenergy Initiative. So whip up this flowery drink and raise a toast to sustainable, clean fuel.

Lago Trattoria: Family First Many restaurants claim to be family-focused. At Lago Trattoria, in Newport, it’s not just a marketing slogan.

andy Richardi is the bartender and sometime chef at the well-known Italian eatery. Her brother, Frank, is the owner. They’re joined by her husband, her sister-in-law, her niece, her daughter and her son. And visitors can expect to see her parents stop by on a daily basis. According to the mixologist, it’s just something in the Richardi DNA. “Our family grew up in the restaurant business,” she says during a break at Lago Trattoria’s spacious, comfortable bar. “My grandparents

were one of the first submarine shops in the country back in the early 60s.” The Richardis are originally from the Braintree area in Massachusetts. A quick conversation with the loquacious bartender reveals a heavy regional accent, and, despite her love of the Vermont north country, a strong connection to the Bay State and Boston’s professional sports teams. The drink menu features cocktails called We’re Going to Need a Bigger Boat (an ode to “Jaws”), the Big Papi (a nod to the Red

Sox’ David Ortiz), The Green Monster (named for Fenway Park,) and the Number 4 (in honor of Bruins legend Bobby Orr.) The choices are creative, and sometimes elicit some goodnatured ribbing from friends and customers visiting from just across the nearby Canadian border. “We get half Bruins fans and half Canadiens fans,” Richardi says, laughing. “It’s so funny, because we just got in some Coors Light glasses with the Bruins logo on them. We have some

whether or not they’re going to make it. It’s all about reading people. That’s why I’m more comfortable working behind the bar – I know when I have to watch my mouth, or when I can act a certain way, or I know when I can have loads of fun and crank music up. That is a bartending secret – really being able to read your customers.

What’s the most unusual request you’ve gotten? SD: Since we’re right up on the Canadian border – I know it’s not completely unusual – but lot of people ask for clamato juice. People will come in and say, ‘Sandy can you make me fruity drink or rum runner or one of the signature martinis.’ The only unusual thing I tend to get is people asking for clamato – clam and tomato juice.

What makes a perfect night at work? SD: A perfect night is when new customers meet old customers and as a result, everybody has fun. You don’t get as uptight if you’re having so much fun with everybody. And it rubs off on your customers. If they’re having fun, they’re going to come back. I enjoy having fun and not feeling like I’m at work. Even though you can’t drink, you’re enjoying their company and having so much fun that it’s like being out and having cocktails with them.

They’ll yell to Frank in the kitchen, ‘Why do you do this to us?’” Keeping things light is important for the outgoing Richardi. Quite often, the focus comes down to ensuring customers are having fun. And that, she says, creates loyal customers. “One of our regular customers is Donald Sutherland,” Richardi says. “He loves this restaurant. It’s great – he lives right across border, but when he calls, he knows Frank’s voice and name and he knows my voice and name, and he’ll ask, ‘Does Frank have lamb on? I’m coming in.’ It’s not so much who he is, but that he actually remembers everyone and respects everyone and keeps coming back. When you have somebody who is a farmer who keeps coming back, it’s great. But when you have someone like that who is also a regular, that’s fantastic, too. Doesn’t matter what you do, it’s just that this is where they come.”

What cocktail is Lago Trattoria best known for? Sandy Ricardi: We have a lot of cocktails, but I have to say that the biggest and longest selling martini is our Mangotini. It’s just called a Mangotini – no frills, no Boston connections, Always drink in moderation.

no nothing. I think it’s the fresh mango. People know that everything Frank does here is fresh – from his pasta to his raspberry purees to chocolate sauces to desserts. When it says mango puree, they know they’re not getting cheap mango juice. Frank processes his own mango puree. Besides, who doesn’t like a mango?

What’s the philosophy of your bar program? SD: For me, it’s all about great food, fantastic drinks and you’ve got to be having fun. Just having fun and not feeling like you’re an outsider. I have people that I know that are up here visiting, and some of my regulars are at the bar, and I want them all to feel at home. So I introduce them to the locals, and now they’re locals. I enjoy introducing new people to old people. I have local real estate agents who have now sold to some of my new people. I try to make it where it’s kind of like ‘Cheers’ – everybody knows your name. That’s exactly what it’s like.
